Paljak Roofs and Modern Joseon Architecture in North Korea: Selection and Exclusion (팔작지붕과 북한의 현대 조선식 건축: 선택과 배제)

  • Modern Joseon Architecture is North Korea's unique building style that interprets Korean traditional architecture in a modern way, and its most distinctive design feature is the Paljak roof that decorates the upper part of the buildings. This paper argues that continuous attempts at characterizing the nature of traditional Korean architecture in the late 1950s and early 1960s developed the theoretical rationale for the exclusive use of the Paljak roof in Modern Joseon Architecture. It also argues that the construction of the Pyongyang Grand Theater and the Okryu Restaurant during this period became a decisive moment for the formalization of the Paljak roof. The double roof rafters and gables and the "cheerful yet solemn" roofline were considered as main characteristic features of the Korean roof and the Paljak roof perfectly fits this description. Particularly, in North Korean society where Kim Il Sung became idolized as an impersonalized deity, an anecdote in which Kim Il Sung fixed a prominent gabled roof in the Pyongyang Grand Theater into a Paljak roof has allowed for the roof to gain an exclusive status. Hence, almost all Modern Joseon Architecture since the 1960s accepted the Paljak roof's monopoly position, rather than experimenting with other traditional roof types.

The Gap Analysis of Recognition and Preference for Korean Traditional Foods and Restaurants between Foreign Visitors and Foreign Residents (외래관광객과 주한외국인의 한국음식 및 전통외식업체에 대한 인식 차이 비교 분석)

  • This study was prepared to present the research data for the promotion of Korean foods and restaurants in Korea and abroad by an analysis of the recognition and preference of Korean traditional foods and an importance-performance analysis of Korean restaurants by foreign visitors (n=351) and foreign residents (n=365). The most recognized Korean foods among foreigners were Bibimbap>Kimchi>Bulogi>Galbi>Samgyetang;however, the most preferred Korean foods were statistically different; Bibimbap>Kimchi>Bulgogi>Galbi>Rameyeon by foreign visitors and Bulgogi>Bibimbap>Galbi>Samgyetang>Kimchi by foreign residents. Especially, the preferences for Samgyetang and Dakgalbi were increased whereas that for Kimchi was decreased in foreign residents. The Korean foods were described as 'hot and pungent' and 'spicy' by foreign visitors, but 'hot and pungent', 'non-greasy' and 'salty' by foreign residents. In choosing a restaurant, 'quality of food' was most important among foreigners, but 'proper price' was considered more significant than 'sanitation and cleanness' by foreign residents compared with foreign visitors. The satisfaction with Korean restaurants of foreign residents was lower than that of foreign visitors. An analysis of importance and performance of Korean restaurants by foreigners was performed. There were significant differences in the evaluations of Korean restaurants between foreign visitors and foreign residents (p<0.05). The importance of the attributes related with 'foods' and 'sanitation' were rated higher by foreign residents. On the other hand, foreign visitors rated the importance of the attributes related to 'eating environment' and 'employees' more highly. Foreign residents significantly rated the performances of Korean restaurants lower in each attribute except 'additional free side dishes' and 'communications'.

A Study of Present Circumstance of Uniform Design for Korean Restaurant Employees in Hotels (호텔 한식당의 유니폼 디자인 현황에 관한 연구)

  • The purpose of this study was to survey the present circumstance of uniform's design and to suggest a design for employees who work for Korean restaurants in Hotels. The subject of study are 10 restaurants which are located in the first class hotels in seoul. And the period of research were 2 months between November, 2003 and December, 2003. The result of research was analyzed by various methods - which consider the frequency, percentage, T-test, crosstabs, and one-way ANOVA. The results are as follows: $1.40{\%}$ of subject adopt a general style which is not traditional style and $60{\%}$ of subject do a Han-Bok or casual Han-Bok which is traditional style. 2. About satisfaction of uniforms, $50{\%}$ of people who is wearing general style has been satisfying their uniform. And $33{\%}$ of people who is wearing traditional style has only been satisfying. 3. People prefer uniform that is made of wrinkle free fabrics and has pockets. In shape of design, they want that ankle-length of trousers, 7/8 sleeves's jackets with waist line-length, and narrow ends. They prefer that a coat has a knob button and there is a zipper in a skirt.

Assessing the Factors Influencing Preference for the Restaurants in Tourist Areas (관광지역 음식점에 대한 선호도에 영향을 미치는 요인 평가)

  • The objective for this research was to clarify the preference for alternative restaurants with different combinations of factor levels: local specialty food, non-local specialty food, very attentive service, moderately attentive service, not attentive service, traditional decoration, modern decoration, \10,000, \15,000, and \20,000. Total 230 copies of questionnaire were completed. Conjoint experiment method was used to develop full restaurant profiles. Ordinal probit model was used to measure the effects of factor levels on the preference. Results of the study demonstrated that the ordinal probit model analysis result for the data also indicated a good model fit. The effects of factor levels on the preference were statistically significant. As expected, the estimates of implicit price to pay were statistically significant. Moreover, the customers were more willing to pay for local specialty than other factor levels. The customers also considered the food factor as a very important factor. This research suggested that the customer's decision-making process for restaurants was best modeled as a conjoint experiment method that combines various factor levels. And it showed the results could be used as good data for understanding the relationships between the factors and preference in choosing food and restaurants in tourist areas.

Measuring the Tourist Preference for Restaurants in Eastern Area of Jeonnam (전남 동부 지역 음식점들에 대한 관광객 선호도 평가)

  • The purpose of this study was to measure the estimated coefficient and marginal willingness to pay of attribute level: origin logo, origin description, traditional food, fusion food, service guarantee, and price, which influence tourist preference for restaurants. Also, the study identified the attribute which confers the highest importance to tourists. Conjoint experiment and the ordinal probit model were used for this study. A total of 210 surveys were conducted by tourists. The findings from this study were as follows. First, the effects of all attributes on tourist preference for restaurants were statistically significant. Second, tourists regarded an origin logo as the very important attribute, and were more willing to pay for the case where the menu contained origin logo. These findings suggested new marketing opportunities for restaurant managers. Although this study provides some evidence on the value of the local product brand to tourists, a similar measure has not been developed for local residents. This is an area in need of future research.

  • There has been increased interest in revealing how well-being and selection attribute affect customer satisfaction and customer loyalty. Recently, there are growing needs to pursue health and better life, and this study has proposed to explore the relations between well-being and selection attribute and customer satisfaction and customer loyalty. The results are as follows. First, well-being significantly affected customer satisfaction and customer loyalty, showing that well-being was an important variable for improving customer satisfaction and loyalty for Korean traditional pastry. Second, selection attribute had significant influence on customer satisfaction, but not customer loyalty, which are supposed to confuse the minds of customers who select traditional pastry. In this respect, it is concluded that customer satisfaction and loyalty were made according to the customer needs to be more healthier and pursue better life based on the colors and tastes of Korean traditional pastry.

A Study on Perception and Globalization of Korean Food among University Students with Food-Related Majors (한식 및 한식세계화에 대한 조리전공 대학생의 인식 연구)

  • The purpose of this study was to investigate perceptions and globalization of Korean food among university students with food related majors. Self-administer questionnaires were completed by 386 students, and data was analyzed using descriptive statistics, t-test, ANOVA and regression analysis. The students in food-related majors had positive perceptions of Korean food. They had perceptions of Korean foods as 'fermented foods', 'seasonal foods', and 'medical foods' and have 'various spices'. Most students agreed that Korean foods need to be 'creatively transformed' and 'localized' in order to globalize successfully. Localization, fusion and creative transformation of Korean food are more important than simple adherence to traditional Korean food. There were statistically significant differences in perception between students in different majors. Students majoring in traditional Korean cuisine showed a more positive perception and attitude toward globalization of Korean food.

Consumer survey of foreigners and Koreans about Korean and Thai foods and restaurants (한국음식과 태국음식에 대한 국내.외국인의 소비자 의식비교)

  • This study was conducted to investigate the consumer perceptions of Koreans and foreigners towards Korean and Thai foods and restaurants. Self-administered questionnaires were collected from 129 foreign residents and 291 Koreans who have been members or the Thai travel association in the seoul area. statistical data analysis was performed using the SPSS v 10.0 program. From the evaluation of Korean and Thai foods and restaurants by foreigners, Thai foods/restaurants showed significantly higher ratings in the attributes of 'Food appearance', 'Food smell', 'Overall food taste', and 'Exotic food taste' In the attributes of 'Use of various food seasonings', 'Variety of food ingredients', 'Variety of menu', 'Food sanitation', and 'Fast restaurant service', Thai food/restaurants showed higher ratings than Koreanfood/restaurants. Korean foods were considered more salty than Thai foods. However, overall satisfaction of Thai and Korean foods/restaurants was similar at about '3.7' points on the 5-point Likert scale. From the evaluation by Koreans, there were no significant differences in the attributes of 'Food appearance', 'Food smell', and 'overall food taste'. however. the rating or 'Exotic food taste' was significantly higher in Thai foods. In the attributes of 'Use of various food seasonings', 'Variety of food ingredients', and 'Variety of menu', Thai food/restaurants showed higher ratings than Korean food/restaurants. Interestingly, the evaluation of sanitation of restaurants was opposite to that of foreigners.

  • This study was conducted to find out the actual condition of dining-out and the preferences of restaurant and food according to age groups and sex distinction in Pusan area. The survey was conducted on 564 peoples who live or work, including students aged more than 4th grade in elementary school in Pusan area. The results of the questionnaires are as follows ; The reasons of prefferring restaurant were in order of "delicious taste", "comfortable atmosphere" and "economical price", and of no prefferring restaurant were in order on "untasty", "unsanitary" and "unkind employees". Female and student group were more in the items of unexperinced food than male and older group. The menu of preferring were in order of "sliced raw fish", "pizza", "bulgogi", and of no preferring were in order of "dog soup", "gopchang jengol", "ox tail soup" male and older group showed a relatively highest preference for "traditional food", however, female and younger(student group and young group) showed a relatively highest preference for "fast foods". The reasons of prefferring food were in order of "delicious taste", "something like" and "abundance of nutrition", and of no prefferring food were in order of "untasty", "hatred food" and "doesn't suit constitution". Male and older group showed a relatively highest preference for "abundance of nutrition", however, female and younger showed a relatively highest preference for "foreign food". A Study on Preference for Purchase and Ingestion of Kimchi among Busan Residents (부산 지역 주민들의 김치 구매 및 섭취 선호도에 관한 연구)

  • The purpose of this study is to investigate the preference for purchase and ingestion of Korean traditional food Kimchi among the different age groups in order to find a way to increase Kimchi consumption. The result of a questionnaire is from 51 male respondents(14.6%) and 299 female ones(85%). This indicates that most of the female respondents buy Kimchi. Second, 61.7% of the respondents have experience purchasing ready-made Kimchi. Third, the most preferred purchase place of Kimchi is a big mart or a department store. Fourth, the important factors of purchasing come nutrition, price, brand, color or package in that order. Also, 60.9% of respondents show that they "should eat Kimchi". Fifth, the reason of eating Kimchi is taste in the age groups under 20s and 30s and above 50s. Lastly, the analysis on the importance of ingestion shows as follows: respondents in their 20s are 57 persons(16.3%), 30s 59(16.9%), 40s 162(46.3%), and 50s 72(20.6%), showing 40s the highest among them.
