This study was conducted to investigate the desalinizing effect of some vegetable crops (beet, crown daisy, kale, lettuce, spinach, sweet com, and tomato) in salinized soil. The soil was treated with highly concentrated nutrient solutions and the growth of these crops was compared and soil salinity was monitored. The plant height of lettuce and crown daisy inhibited severely in with EC $5dS{\cdot}m^{-1}$ salinized soil. Soil EC level was the lowest in soil where tomato was cultivated followed by corn and kale. The residual level of $NO_3$ was higher in soils used for cultivation of corn, tomato, and kale, that of K was higher in soils used for cultivation of corn, tomato, and beet, and That of $P_2O_5$ was higher in soils used for cultivation of corn and tomato. Although the desalinizing effect was greatest by tomato and corn after 60 days of cultivation. Quality of the these crops was low and the cultivation periods of these crops overlapped with that of the main crops. Kale, on the other hand showed less growth inhibition in salinized soil, greatest desalinating effect based on fresh weight. In addition this crop only needs 30 days of cultivation period. Therefore, kale was most efficient crop in desalinizing considering crop quality, a short cultivation period, and nonoverlapping cultivation time with the main crops.
Kale leaf had similar contents of vitamin C, $NO_3$, p, Ca, Mg, and Fe with reported values. Among these internal quality factors, $NO_3$ content which has been a concern recently, ranged from 139 to 429 mg in 100 g fresh kale leaf, Kale showed high vitamin C content ranging from 106 to 203 mg in 100 g fresh leaf. The relative concentration of chlorophyll and b value color had a high correlation coefficient (r) with vitamin C, $NO_3$, Mg and Fe content. The relationship between $NO_3$ content and the relative concentration of chlorophyll was given by the following linear equation: $NO_3$ content : 21.55 + (5.907 ${\times}$ the relative concentration of chlorophyll) with an r of $0.910^{{\ast}{\ast}}$. Correlation between $NO_3$ content and b value was also very dependable (r = $-0.901^{{\ast}{\ast}}$). Vitamin C content and the relative concentration of chlorophyll showed a high correlation, r = $-0.858^{{\ast}{\ast}}$. Among internal quality factors, vitamin C content increased with decreasing $NO_3$ content and their correlation coefficient was high (r = $-0.795^{{\ast}{\ast}}$). Consequently, $NO_3$ content of kale leaf could be inferred from an external nondestructive method, such as the relative concentration of chlorophyll. We may be able to produce high quality kale leaves containing high amount of vitamin C and low content of $NO_3$ using this method.

This study was carried out in order to compare the residue levels of pesticides among lettuce, kale and perilla leaf depending on the morphological characteristics of plant. Residue levels were investigated at the zero, second, fifth days after last application, 9 species of systemic or non-systemic pesticide were twice applied with 7 days interval by knapsack power sprayer with 2 heads fan shape nozzle. Ratios of leaf area to weight ($cm^2$$g^{-1}$) were 58 of perilla leaf, 27 of lettuce and 23 of kale. Ratios of leaf area to weight of perilla leaf was 2.1 times higher than that of lettuce. Residue levels of perilla leaf were 1.3 to 2.3 times higher than those of lettuce at the day of spraying and 1.3 to 3.3 times higher at the fifth day. Therefore the differences of pesticide residues between perilla leaf and lettuce were affected by the ratio of leaf area to weight. Residue levels in lettuce were 2.4 to 7.3 times higher than those in kale at the day of spraying because the adhesive effect of pesticide particles on kale leaf was low.
The aim of this study was to evaluate the effect of kale (Brassica oleracea acephala) juice supplementation on serum lipid levels and phospholipid (PL) fatty acid compositions in hypercholesterolemic men. Thirty-two men with hypercholesterolemia (>200 mg/dl) were recruited among the faculty and staff at Y University after annual health examinations. The subjects consumed 150 ml of kale juice per day for a 12-week intervention period. Dietary and anthropometric assessments were performed before and after supplementation, respectively, to ensure that the subjects maintained their usual diet and lifestyle throughout the intervention. Serum concentrations of HDL-cholesterol and the ratio of HDL-cholesterol to LDL-cholesterol were significantly increased (p<0.001) after intervention. Serum LDL-cholesterol concentration and atherogenic index were significantly reduced (p<0.001). Levels of 12:0, 14:0, $18:1{\omega}9$, $18:3{\omega}6$, and sum of monounsaturated fatty acids (MUFA) in serum pholspholipid (PL) were significantly increased, while $22:4{\omega}6$ level was significantly reduced (p<0.05). It can be speculated that kale juice, containing large amounts of antioxidant nutrients, contributes to changes of serum-PL-fatty acid compositions and the improvements of serum lipid profiles. This study demonstrates the supplementation of regular meals with kale juice may favorably affect serum lipid profiles and serum-PL fatty acid compositions and, hence, could lower the risks of coronary artery disease in men with hypercholesterolemia.

This study was carried out to investigate the residual characteristics of flubendiamide in kale to establish pre-harvest residue limits (PHRL) and the removal efficiency according to the washing solvent and method. Field tests were conducted at two different greenhouses, field 1 (Anseong-si, Gyeonggi-do) and field 2 (Incheon-si, Gyeonggi-do). According to the safe use guidelines kale was sprayed with flubendiamide twice every 10 days and harvested 0 (after 2 h), 1, 2, 3, 5, 7 and 10 days after the final application. The biological half-live of flubendiamide in kale was calculated based on dissipation curves of the pesticide in samples analyzed by liquid chromatography coupled with tandem mass spectrometry. In the analysis, method limits of quantitation (MLOQ) were 0.01 mg/kg, and recoveries performed with two different fortification levels of 10 MLOQ and maximum residue limit (0.7 mg/kg) were 104.2±3.6 and 101.9±10.2%, respectively. The dissipation rate constant of flubendiamide in kales were 0.2437 at field 1 and 0.1981 at field 2. PHRL calculation equations obtained using the dissipation constants estimated as follows: if the residual concentration of flubendiamide in kale on 10 days before harvest is less than 8.0 mg/kg, the residual concentration on the harvest would be under MRL. The removal of flubendiamide from kale was the greatest when it was washed with vinegar (39.8%), followed by baking soda (31.7%), calcium powder (30.2%), neutral detergent (27.2%), and tap water (15.9%). The results of this study would be useful for both farmers and consumers to produce or consume safe agricultural products.
The present study was attempted to investigate the antioxidant capacity of popular yellow-green vegetable juices (kale, Angelica keishei, carrot, small water dropwort) and to investigate the effect of vegetable juices on protecting oxidative damage to DNA in cultured Chinese hamster lung (CHL) cells. Antioxidant capacity was analyzed by TRAP assay (Total radical-trapping antioxidant potential). Cellular DNA dmamage was measured by SCGE (single-cell gel electrophoresis, also known as comet assay. Cells incubated in medium with PBS (negative control) or with various concentration of the freeze dried green juices (25, 50, 100, 250 $\mu\textrm{g}$/$m\ell$) resuspended in PBS were treated with $H_2O_2$ (200 ${\mu}{\textrm}{m}$) as an oxidative stimulus for 5 min at 4$^{\circ}C$. The physiological function of each vegetable juice on oxidative DNA damage was analyzed and expressed as tail moment (tail length X percentage migrated DNA in tail) . Kale juice had the highest TRAP value suggesting that kale has the highest antioxidant capacity followed by Angelica keishei, small water dropwort and carrot. Cells treated with $H_2O_2$ had extensive DNA damage compared with cells treated with PBS or pre-treated with vegetable juice extracts. All green juices inhibited $H_2O_2$-induced DNA damage with kale being the most effective juice among the tested juices. These results indicate that green juice supplementation to CHL cells followed by oxidative stimulus inhibited damage to cellular DNA, supporting a protective effect against oxidative damage induced by reactive oxygen species. Shinseoncho and kale were made into green vegetable juices by building block [shinsenocho branch (SB), shinsenocho leaf (SL), kale branch (KB), and kale leaf (KL)]. Fluctuations in their phenolic contents and antioxidant capacities were analyzed during refrigerated storage at $4^{\circ}C$ for 28 days. Total polyphenolic contents of leaf parts showed a decreasing tendency after 4 days (SL) or 7 days (KL), whereas branch parts showed fluctuating values during the entire storage period. The 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical scavenging capacity was rapidly decreased in SB and in SL at 28 days (P<0.001), whereas KL showed a slightly increasing tendency after 14 days. For the 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging capacity, SL showed a sharp fall at 28 days (P<0.001), and KL showed a decreasing tendency after 14 days (P<0.001). SB showed a steady decrease during the entire storage period and KB indicated a nearly zero (0.97%) at 28 days. Pearson's coefficients for the correlation between antioxidant capacities measured by the ABTS and DPPH assays, and the total polyphenolic contents were determined. The results showed that the ABTS assay (r=0.934, P<0.001) was more strongly positively correlated with the total phenolic contents than the DPPH assay (r=0.630, P<0.001). In conclusion, when considering all building blocks, green vegetable juices, including kale and shinseoncho may have kept antioxidant capacities for up to 14 days under refrigeration, and the ABTS assay better reflects a positive correlation with the total phenolic contents when compared to the DPPH assay.
Dimethylamine (DMA) is the immediate precursor of carcinogenic N-nitrosodimethylamine (NDMA). In vitro and in vivo experiments using whole strawberries, and garlic and kale juices were conducted to determine concentrations of DMA and trimethylamine (TMA) in foods and urine. Experimental diets [an amino-rich diet as nitrosatable precursors in combination with added nitrate-containing drinking water without (TD1) or with whole strawberries or garlic or kale juices (TD2, TD3 and TD4, respectively), or a diet of low in nitrate and amino (TD5) were incubated in simulated saliva and gastric juices at 37$^{\circ}C$ for 1 hour. We also studied the urinary excretion of DMA and TMA after consumption of the experimental diets (TD1~TD5). Urine samples were obtained for 18 hrs after consumption of experimental diets and concentrations of DMA and TMA were measured in the digested diet and urine. The DMA concentration after incubation in experimental diets (TD1~TD5) was 4.7$\pm$0.3, 6.7 $\pm$0.2, 7.9$\pm$0.2, 7.1$\pm$0.2 and 0.3$\pm$0.1 mg/kg, respectively. Urinary excretion of DMA (TD1~TD5) was 22.0$\pm$5.0, 28.3$\pm$4.3, 29.2$\pm$4.1, 27.4$\pm$4.5 and 20.4$\pm$3.1 mg/18 hr, respectively. Consumption diets with added strawberries or juices of kale or garlic increased urinary TMA and DMA, suggesting that those precursors were excreted and not converted to the carcinogen, NMDA.

Drought is a major obstacle to high agricultural productivity, worldwide. In drought, it is usually presented by the simultaneous action of high temperature and drying. Also there are negative effects of plant growth under drying conditions. In this study, the effect of Bacillus velezensis YP2 on plant growth-promotion and soil drying stress tolerance of kale plants, Brassica oleracea var. alboglabra Bailey, were investigated under two different conditions; greenhouse and field environments. Root colonization ability of B. velezensis YP2 was also analysed by using plating culture method. As a result of the greenhouse test, the YP2 strain significantly promoted the growth of kale seedlings in increasement of 26.7% of plant height and 142.2% of shoot fresh weight compared to control. B. velezensis YP2 have the mitigation effect of drying injury of kale by decreasing of 39.4% compared to control. In the field test, B. velezensis YP2 strain was also found to be effective for plant growth-promotion and mitigation of drying stress injury on kale plants. Especially, relative water contents (RWC; %) were higher in B. velezensis YP2 treated kales than in control at 7, 10, 14 day after non-watering. The root colonization ability of YP2 strain was continued at least for 21 days after soil drenching treatment of B. velezensis YP2. Our result suggested that enhancement of plant growth and drying injury reduction of kale plants were involved in kale root colonization by B. velezensis YP2, which might be contributed to increasing water availability of plants. Consequentially, the use of B. velezensis YP2 might be a beneficial influence for improving productivity of kale plants under drying stress conditions.

Thioltransferase, also known as glutaredoxin, is an enzyme that catalyzes the reduction of a variety of disulfides, including protein disulfides, in the presence of reduced glutathione. Thioltransferase was purified from kale through ammonium sulfate fractionation, DE-52 ion-exchange chromatography, Sephadex G-75 gel filtration, and Q-Sepharose ion-exchange chromatography. Its molecular size was estimated to be about 31,000 daltons on SDS-PAGE. The purified enzyme has an optimum pH of about 8.0 with 2-hydroxyethyl disulfide as a substrate. The enzyme also utilizes L-sulfocysteine, L-cystine, bovine serum albumin, and insulin as substrates in the presence of GSH. The enzyme has $K_m$ values of 0.24-0.67 mM for these substrates. The enzyme was partly inactivated after heating at $80^{\circ}C$ or higher temperature for 30 min. The enzyme was stimulated by various thiol compounds such as reduced glutathione, dithiothreitol, L-cysteine, and $\beta$-mercaptoethanol. This is a second example of a plant thioltransferase which was purified and characterized.
