  • The understanding of seasonal forage intake of grazing deer is essential for the development of supplementary feeding strategies in southern Australia. The alkane technique is used in other animal species for estimating feed intake of individual animals and their diet composition. To assess the potential of using alkanes as a marker for predicting feed intake of fallow deer, the daily faecal recovery of alkanes and excretion rate of dosed artificial alkanes (C32 and C36) were measured with 6 deer fed three forage based diets. The artificial alkane capsule designed for use in sheep is suitable for fallow deer. Faecal samples need to be collected over days 7-19 after dosing. The daily excretion rate was 40 mg for C32 and 37 mg for C36. The faecal recovery of natural alkanes is incomplete and the faecal concentrations of alkanes need to be adjusted for an accurate estimation of intake. The actual feed intake of 6 experimental deer over a 5 day period was accurately estimated ($R^2$=0.52) using alkanes.

  • This study was performed to evaluate the congeners of polychlorinated dibenzo-p-dioxins(PCDDS) and polychlorinated dibenzofurans(PCDFs) in Korean foods among children in Korea, in comparison with the findings in their mothers. The PCDDs and PCDFs intakes of 24-h diet duplicates were estimated from the previous Korean reports. In Korean children and their mothers of this study, major sources of lipid intake were plant-based foods(62% for children, 66% for their mothers). The women took 34% of lipid from animal sources, among which meats were leading sources of animal lipids(30%). Fish and shellfish were accounted for 4% in total lipid intake. Daily intake of PCDDs and PCDFs in the children md their mothers were 0.002-3.188 and 0.002-2.717 pg WHO-TEQ/day in animal sources and ND-0.283 and ND-0.296 pg WHO-TEQ/day in plant sources, respectively. PCDDs/PCDFs intake from animal origin was the major exposure source for both children and their mothers in Korea. Among the 17 PCDD/Fs congeners, 2,3,4,7,8-pentachlorodibenzofuran was assumed to be the effective exposure marker for diet intake.

  • Objectives: This study was conducted to estimate usual meat intake distribution, which may have been over/underestimated when estimations were made using only the third food codes of the Korea National Health and Nutrition Examination Survey (KNHANES). Methods: For this purpose, 24-hour recall data from the 2009 Korea National Health and Nutrition Examination Survey, which conducted a partial 2-day survey of food intake, were used. The Multiple Source Method (MSM) was used to estimate the distribution of the usual intake of red and processed meats. Results: The results of this study show that the mean intake of red meat was 45.07 g while that of processed meat was 4.33 g. These results are slightly higher than the consumption calculated using only tertiary food code, and the difference was statistically significant. Furthermore, characteristics of the estimated usual intake distribution were a smaller standard deviation, increased lower percentiles, and decreased upper percentiles compared to the 2-day mean intake distribution for both red and processed meats. The proportion of individuals not consuming red meat decreased substantially from approximately 37% to 0.7%. The proportion of consumption that exceeded 90 g, which is the upper limit of red meat intake recommended by the National Health Service (NHS), was only approximately 10% in the distribution of usual intake. Conclusions: As the consumption of processed foods is expected to continuously increase, caution is needed regarding the processes used to calculate food (group) intake to avoid over/underestimation. Moreover, use of KNHANES data to calculate the proportion of the population at risk of insufficiency or excess intake of certain nutrients or food (group), based on one day intake that does not address within-individual variation, may lead to biased estimates.

  • This study assesses the sodium intake of adults by 24-hour urine analysis, dietary records review and a food intake questionnaire. Subjects were 236 adult female in Daegu. The results are summarized as follows: Sodium intake as indicated by the 24-hour urine analysis was $5,805.4\;{\pm}\;3836.8\;mg$. This was significantly higher than intake indicated by dietary records ($4415.4\;{\pm}\;1935.1\;mg$) and the dish frequency questionnaire (DFQ 55) ($4293.5\;{\pm}\;1526.5\;mg$). The results of the 24-hour urine analysis and DFQ 55 showed that sodium intake was higher for the 65-to-74-year-old age group than for other age groups (p < 0.05, p < 0.05). Review of dietary records to examine typical sodium intake by food groups showed that 53.7% of the sodium consumed by subjects in all age groups came from seasonings and spices ($2399.0\;{\pm}\;1526.5\;mg$). The analysis of sodium intake by food groups using DFQ 55 showed 34.2% of their sodium came from consumption of kimchi (p < 0.001) and kimch, soup, stew and fish jorim accounted for 57.8% of total sodium intake. The results indicate positive correlation between age and sodium intake, as shown by the 24-hour urine analysis and food intake questionnaire (p < 0.05). Therefore, these results would be valuable as basic data for planning nutrition education for sodium intake reduction.

  • In an SI engine, the characteristics of the air flow is important not only for the design of the intake system geometry but also for the accurate measurement of the induction air mass. In this study, an air flow rate measurement using the ultrasonic flow meter and hot wire flow meter was conducted at the upstream of the intake port and the throttle. At the upstream of the intake port, the pulsating flow into the cylinder affected by the pressure wave was detected directly with the flow meters instead of pressure sensors. At the upstream of the throttle, the reverse flow phenomena were showed by comparing the flow pattern measured by the hot wire air flow meter and the ultrasonic air flow meter. The results of this study can be used for the analysis of the tuning effect in the intake manifold and estimation of the error in real time measurement for the air flow rate.

  • Mean concentration and daily intake of sorbic acid were estimated through the analysis of food samples obtained from Korea FDA and food sanitation inspection agency during $1999{\sim}2000$. Total number of samples were 14,129, among which the number of detected samples were 2,561 (detection rate was 18.13%). Contribution rate to total estimated daily intake (%) of sorbic acid in the categorized food were the highest in processed fish product. Total estimated daily intake $({\Sigma}EDI)$ for age groups were the highest in $30{\sim}49$ years old and ranged from 3.42 to 9.25 mg/person/day. Estimation of average food intake for each food item per person per day was based on data in national nutrition survey and national food disapperance data in 1998. Total estimated daily intake of sorbic acid was 20.40 mg per body weight of 55 kg. This value was 1.48% of acceptable daily intake evaluated by FAO/WHO and 33.03% of theoretical maximum daily intake.

  • This study assessed the nutrient intake for Korean adolescents using the estimated usual intake. The usual intake of 1,763 adolescents aged 12-17 years old was estimated from one-day 24-hour recall data in the 2010-2012 Korean National Health and Nutrition Survey. The nutrient intakes of four groups according to sex (male and female) and age (12-14 and 15-17 years old) were then assessed in reference to the 2015 Dietary Reference Intakes for Koreans. For macronutrients, the proportions of subjects below and above the Acceptable Macronutrient Distribution Ranges (AMDR) were calculated. The Estimated Average Requirement (EAR) cut-point method was used to assess insufficient intakes of protein, vitamin C, thiamin, riboflavin, niacin, calcium, phosphorus, and iron; the full probability approach was used to assess the insufficient intake for iron among females. The proportions of subjects over the Tolerable Upper Intake Levels for vitamin C, niacin, calcium, phosphorus, and iron and the proportions over the Intake Goal for sodium were calculated to assess excessive intake. The proportions of subjects above AMDR for carbohydrates ranged from 22.5% to 38.0% by group. The proportions of subjects by group with insufficient intake for vitamin C, riboflavin, calcium, phosphorus, and iron ranged 29.1-39.7%, 22.5-34.3%, 73.1-89.3%, 14.3-43.6%, and 23.2-55.5%, respectively. The proportions of subjects by group with excessive intake for sodium ranged from 91.5% to 99.3%. The results of this study represent important basic information to establish nutritional standards for school lunches as well as to decide on relevant nutrition policies for adolescents.

  • Objectives: The aim of this study is to examine the possible changes over the past ten years in the estimated daily dietary lead intake (Pb-D) stemming from the variation of daily intake amounts for each food group. The following factors were considered; 1. time trends in Pb-D as the estimated values, 2. the time trend in Pb-D by food groups 3. the most influential food groups for dietary Pb intake. Methods: Estimated Pb-D was drawn from food consumption according to food groups reported in the Korean National Health and Nutrition Survey and the lead contents of each food group as reported in 23 prior publications. Results: The estimated Pb-D in a 2009 survey was 40.8 ${\mu}g/day$, of which 22.5 ${\mu}g/day$ (55.1%) was of plant origin and 18.3 ${\mu}g/day$ (44.9%) was of animal origin. Meats and poultry, fish and shellfish among foods of animal origin and beverages of plant origin had the largest contribution in Pb-D among the food groups. Conclusion: Over past ten years, daily lead intakes have slightly increased among men. Otherwise, no clear variation is apparent among women.

  • The potential of the spot urine sampling technique as an alternative to performing a total urine collection to predict the microbial nitrogen supply was evaluated in crossbred bulls. In a completely randomized design, 20 growing crossbred bulls were assigned four levels of feed intake (120, 100, 80 and 60% of voluntary dry matter intake) on diets comprised of wheat straw and concentrate mixture (50:50). After three months of experimental feeding, a metabolism trial was conducted for ten days, during which spot urine collections were performed every 6 h post feeding on days 9 and 10. The daily urinary excretion of allantoin (A) and purine derivatives (PD) decreased with the reduction in feed intake while creatinine (C) excretion remained similar in animals fed at different levels. The microbial nitrogen (MN) supply calculated from the PD excreted in total urine (35.08 to 72.08 g/d) was higher at increased levels of feed intake. PD concentration in spot urine samples had poor correlation with feed intake except at 12 h post feeding. A/C ratio and PD/C ratio in spot urine samples remained similar irrespective of sampling time and significantly (p<0.01) correlated with daily urinary PD excretion, digestible organic matter intake and dry matter (DM) intake. However, no significant differences were evident in these ratios among animals fed at levels 120, 100 and 80% of voluntary dry matter intake (VDMI) at different times post feeding. These results suggests that the spot urine sampling technique to predict the microbial protein supply is not suitable for detecting small differences in MN supply and hence, estimation of PD excreted in total urine (mmol/d) is necessary to assess precisely the MN supply in crossbred bulls.
