Quality and Antioxidant Properties of Cookies Supplemented with Cabbage Powder (양배추 분말을 첨가한 쿠키의 품질 및 산화방지 활성)

  • The feasibility of incorporating cabbage powder (CP) as a value-added food ingredient into convenient food products was investigated using cookie as a model system. CP was incorporated into cookies at amounts of 0, 2, 4, 6, and 8% (w/w) based on total weight of wheat flour. pH level and moisture content of cookie dough decreased and increased significantly, respectively, with increasing levels of CP (p<0.05), whereas density was not directly affected by levels of CP incorporation. The spread ratio of cookies and their hardness increased significantly while the loss rate decreased significantly with increasing levels of CP (p<0.05). In terms of color, lightness and yellowness decreased while redness increased significantly (p<0.05) with increasing levels of CP. 2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis-(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS) radical scavenging activities were significantly elevated by CP addition, and they increased significantly as CP concentration increased in the formulation (p<0.05). Finally, consumer acceptance test indicated that the higher than 4% of CP incorporation had an adverse effect on general consumer preferences. In contrast, cookies with moderate levels of CP (2%) were recommended based on overall scores to take advantage of the antioxidant properties of CP without sacrificing consumer acceptability.

Preparation and Characterization of Gluten-free Muffins Using Fractured Tofu and Normal Corn Starch (파지두부와 옥수수전분을 이용한 글루텐 프리 머핀의 제조와 특성)

  • This study investigated the effects of the mixing ratio of tofu paste and normal corn starch on the characteristics of gluten-free (GF) muffins. Soft wheat flour for wheat flour-based muffins (control) was replaced with the mixture of tofu paste and normal corn starch (NCS). The mixing ratios of tofu paste and NCS were 1:6.4 (S100), 1:5.1 (S80), 1:3.8 (S60), 1:2.6 (S40), 1:1.3 (S20), and 1:0 (S00), based on their total solid contents. GF muffins of S40-S100 developed the porous, sponge-like structure without crumb collapse. The weight and baking loss did not significantly differ in the control and GF muffins. By decreasing NCS in GF muffin batters, the moisture content, firmness, and crumb redness/yellowness of GF muffins increased, while their volume, specific volume, and crumb lightness decreased. Nevertheless, these characteristics (except for firmness) of S100 were much closer to those of the control. In the preference test, however, S60 (possessing lower attributes than S100 and S80) was most favored among GF muffins, and was very similar in all evaluations (except for appearance) to the control. Overall, the mixture of tofu paste and NCS would be a potential material to replace soft wheat flour in muffins.

Effect of Zeolitic Imidazolate Framework-7 in Pebax Mixed Matrix Membrane for CO2/N2 Separation (CO2/N2 분리를 위한 Pebax 혼합막에서 Zeolitic Imidazolate Framework-7의 영향)

  • In this study, a mixed matrix membrane was prepared by putting the zeolitic imidazolate framework-7 (ZIF-7) synthesized in Pebax-1657 and Pebax-2533, which are representative poly(ether-b-amide), and the permeability properties of single gas such as N2 and CO2 were investigated. From the gas permeation results, in the case of N2, both the Pebax-1657/ZIF-7 and Pebax-2533/ZIF-7 mixed matrix membranes showed a similar phenomenon in which the permeability decreased with the incorporation of ZIF-7. For CO2 permeability, the tendency was slightly different depending on the type of polymer. In the Pebax-1657/ZIF-7 mixed membrane, the CO2 permeability decreased in the range of 0~3 wt% of ZIF-7, and increased at higher contents. The CO2 permeability of the Pebax-2533/ZIF-7 mixed matrix membrane gradually decreased without increasing the permeability in the range of 0~5 wt% of ZIF-7. Regarding CO2/N2 selectivity, both mixed films showed a tendency to increase with increasing the ZIF-7 content. In particular, Pebax-2533/ZIF-7 5 wt% showed the best gas permeation performance compared to other mixed matrix membrane. This is thought to be because ZIF-7 shows better compatibility with Pebax-2533 than that of Pebax-1657 and also better CO2 selective property.

A Study on the Rheological Properties of Branched Polypropylene/silicate Composites (분지형 폴리프로필렌/실리케이트 복합체의 유변학적 특성 연구)

  • Branched polypropylenes (LCB-PP) with a long chain branch were prepared by the solid-state and molt-state reaction. Divinylbenzene (DVB), 1,4-benzenediol (RES), and furfuryl sulphide (FS) were used as branching agents of fabricate LCB-PP/silicate composites. Chemical structures, thermal properties, and rheological properties of the LCB-PP were determined by FT-IR, DSC, TGA, and dynamic rheometer (ARES). The chemical structure of the LCB-PP was confirmed by the existence of =C-H stretching peak of the branching agent at $3100cm^{-1}$. From DSC and TGA results, the melting reaction was more effective than the solid state reaction in the manufacture of LCB-PP, which was additionally certified by rheological properties. Based on rheological properties, FS was the best for branching efficiency of PP. Compared to PP, LCB-PPs indicated an increase of complex viscosity in the low frequency and shear thinning tendency, and G'-G" plot represented an increase in elasticity and the heterogeneousness in a melt state. Rheological properties of LCB-PP/silicate composites were observed with the silicate content. When 5 wt% silicate was added in LCB-PP, distinct changes in the shear thinning and the slope of G'-G" plots were observed.

Characteristics of RDF Char Combustion in a Bubbling Fluidized Bed (기포 유동층 내에서 RDF 촤의 연소 특성)

  • The feasibility of applications of the char obtained from a gasification process of municipal-waste refuse derived fuel (RDF) as an auxiliary fuel was evaluated by combustion experiments. The higher heating value of the RDF char was 3000~4000 kcal/kg and its chlorine content was below the standard requirement demonstrating its potential as an auxiliary fuel. In the combustion exhaust gas, the maximum $NO_x$ and $SO_2$ concentrations were 240 ppm and 223 ppm, respectively. If an aftertreatment is applied, it is possible to control their concentrations low enough to meet the air pollutant emission standard. The HCl concentration was relatively high indicating that a care should be taken for HCl emission from the combustion of RDF. Based on the temperature distribution within the reactor, the concentration change of $O_2$ and $CO_2$, and the amount and the loss on ignition of solid residue, it was inferred that the combustion reaction was the most reliable when the excess air ratio of 1.3 was used.

Preparation and Characterization of UV-cured Polyurethane Acrylate/ZnO Nanocomposite Films (자외선 경화형 폴리우레탄 아크릴레이트/ZnO 나노콤포지트 필름의 제조 및 특성 분석)

  • A series of polyurethane acrylate/ZnO (PUA/ZnO) nanocomposite films with different ZnO contents were successfully prepared via a UV-curing system. The synthesis and physical properties including morphological structure, thermal properties, barrier properties and optical properties, and antimicrobial properties were investigated as a function of ZnO concentration. FTIR and SEM results showed that these PUA/ZnO nanocomposite films did not have a strong interaction between PUA and ZnO, which may lead to no increase in thermal stability. By incorporating ZnO nanoparticles, the UV blocking and antibacterial properties increased as the content of ZnO increased. Specially, the oxygen permeability in composite films changed from $2005cc/m^2/day$ to $150cc/m^2/day$ by adding the ZnO nanoparticle, which indicates that the PUA/ZnO nanocomposite films can be applied as good barrier packaging materials. Physical properties of the UV-cured PUA/ZnO nanocomposite film are strongly dependent upon the dispersion state of ZnO nanoparticles and their morphology in the films.

Effects of Various Pretreatments on Quality Attributes of Frozen and Thawed Peaches (전처리 방법에 따른 냉동 복숭아의 품질 특성)

  • The aim of this study was to investigate the effect of pretreatments on quality of frozen peach. Pretreatments including steam blanching, water blanching, high pressure, and osmotic dehydration were applied to two varieties (Daeokgye and Hwangdo). Pretreated peaches were frozen and thawed at $-20^{\circ}C$ and $5^{\circ}C$, respectively. Steam blanching and osmotic dehydration with ascorbic acid reduced ${\Delta}E$ values without change of pH and acidity. Osmotic dehydration with sucrose decreased drip loss and increased brix. Freezing/thawing resulted in an increase of maximum force, while maximum force decreased with increasing time of steam and water blanching. Furthermore, osmotic dehydration with calcium chloride increased maximum force. High pressure decreased maximum force of Daeokgye and increased that of Hwangdo compared with non-treatment. Total polyphenol content, DPPH radical scavenging activity, and ABTS radical scavenging activity were improved by pretreatment including steam blanching, blanching, and osmotic dehydration with ascorbic acid.

Impact of Protein and Lipid Contents on the Physical Property of Dried Biji Powder (건조비지분말의 물리적 특성에 대한 단백질과 지질 함량의 영향)

  • The effects of chemical compositions (protein, lipid, and dietary fiber) on the physical properties of dried biji powders were investigated. The raw biji was freeze-dried (control) and hot-air dried (untreated). The untreated biji was further defatted and deproteinated. The prepared biji powders were analyzed for the proximate composition, total dietary fiber (TDF), water absorption index (WAI), water solubility index (WSI), swelling power, solubility (including the quantification of soluble carbohydrate and protein fractions), and final viscosity (using a rapid visco analyzer). Control and untreated biji powders exhibited the similar chemical compositions. The defatted biji possessed higher TDF, although its protein content did not significantly differ for control and untreated ones. The deproteinated biji consisted mainly of TDF. WAI and swelling power increased in the order: deproteinated > defatted > control > untreated biji powders. WSI and solubility increased in the order: control > untreated > defatted > deproteinated biji powders. The similar patterns were observed for soluble carbohydrate and protein fractions. The deproteinated biji revealed the highest viscosity over applied temperatures, while the untreated one was lowest. Overall results suggested that the physical properties of the dried biji powder were reduced by protein and fat, but enhanced by dietary fiber.

Permeation Rate of Salt and Sugar into Cabbage Pickles and Sensory Changes During Storage (배추 피클에서의 염과 당의 침투속도 및 저장 중 발생하는 관능변화에 대한 연구)

  • The rate of salt and sugar into pickled cabbages was determined, and physicochemical characteristics, such as sensory, texture, and pH, of vinegar pickled cabbages during storage were examined at different storage temperatures and vinegar concentrations. The rate of salt and sugar penetration was faster in smaller size and on leaves rather than the stem of cabbage. Also, higher salt and sugar concentration and higher storage temperatures led to increase in salt and sugar permeation rate. As a result of sensory test, lower storage temperature is the most suitable, and 6% vinegar concentration was the mostly appropriate. Hardness and cohesiveness were decreased significantly at the initial $1^{st}$ week storage time, but storage temperature did not show any significant effect. Addition of vinegar contents enhanced the hardness, but decreased cohesiveness. The pH was lowered with increasing vinegar content, indicated most significant factor on pickled cabbage. In general, salt and sugar contents rather than storage temperature have greater influence on permeation rate, and especially, addition of vinegar affects the texture of pickled cabbage.

A Comparison of Rheological Measurement Methods of Instant Cooked Rice by a Texture Analyzer (텍스처 분석기를 활용한 즉석밥 물성 측정 방법의 상호 비교)

  • Various rheological methods to measure the hardness of instant cooked rice by a texture analyzer were investigated and compared. Specifically, instant white rice samples with a wide range of hardness were subjected to four different rheological tests with disk, cylinder, rod, and cone probe whose results were inter-correlated. All the measurements demonstrated that the hardness of instant rice was reduced with increasing moisture content and showed negatively linear relationships. Out of the four tests applied in this study, the highest coefficient of correlation ($R^2=0.9268$) was observed distinctly in the cone probe test, where both compressive and shear forces can be applied to deform individual rice grains. However, the cylinder probe test had the lowest coefficient of correlation ($R^2=0.7247$) because it may be ineffective in causing direct deformation of individual rice grains. Furthermore, when the hardness values (N) were converted to stress (Pa), highly linear correlations ($R^2{\approx}0.99$) were observed between the tests with similar probe geometry and force application.
