델파이 기법을 이용한 한국에서의 Home Meal Replacement (HMR) 개념 정립 및 국내 HMR 산업 전망 예측 (Conceptualizing and Prospecting for Home Meal Replacement (HMR) in Korea by Delphi Technique)

  • The purposes of this study were to conceptualize the Home Meal Replacement (HMR) in Korea and to gather professionals' opinions of prospect and task for HMR industry in Korea. A total of 67 experts participated in a three round survey by Delphi technique, which was used to integrate and share the each expert's professional idea. According to the result, HMR was translated into 'Gajeongsiksa daeyongsik' in Korean and given definition to 'a meal taken directly or through brief cooking process at home by purchasing ready to eat or ready to end-cook type of food'. As the result of categorizing HMR products of Korean food, 'I. Ready to eat' such as side dishes, kimchi, salad, sandwich, kimbab, and so on and 'II. Ready to heat' such as rice, porridge, retort food (soup, broth, curry, spaghetti, etc.), frozen pizza, grilled food, jabchae, instant soup, and so on were construed in a limited sense of the HMR. In addition, 'III. Ready to end-cook' such as frozen dumpling, frozen pork cutlet, seasoned meat, powder-type soup, and so on as well as these two kinds were interpreted in a broad sense of the HMR. In the prospect of HMR industry in Korea, the Korean HMR industry would develop continuously accompanied by increasing of consumers using HMR products. Introduction and generalization of HMRs would serve the convenience for meal preparation and then influence the change of home meal pattern. Nevertheless, it was concerned about that using HMRs might have limitation on solving the problems of dietary life including irregular meal, skipping a meal, and so on and influence the nutrition imbalance. For the development of HMRs, developing various menu and the packaging materials for HMR products, constructing the thorough sanitary management, and strengthening R & D for the HMR of Korean food were the future tasks in Korean HMR industry.

  • Purpose - The continuously fluctuating consumer who desires simplicity and convenience has had much influence on the food industry. This trend has led to a new food market sector known as HMR (Home Meal Replacement). This study aims to understand the status of the HMR market in United States. Research Design, Data, and Methodology - In order to research the status of the HMR market, quantitative analysis and secondary research were carried out. By using data from Euromonitor, Agriculture and Agri-Food Canada, we have estimated food segment sales contributions to the HMR market in United States. Results - HMR products are being sold in various channels such as traditional stores, convenience stores, and even farmers' markets. Some restrictions on the HMR products exist for food safety. Conclusions - HMR industry in United States has expanded continuously. To keep pace with the growth of the HMR market, the United States government has focused on food and safety regulations with regards to the products used in HMR. Finally, this study discusses the implications for Korean HMR market.

  • Due to the nature of HMR food that is susceptible to contamination, its safety management is becoming more important. The relevant food types in food code corresponding to HMR foods are addressed, and the criteria for hygiene indicator bacteria and food poisoning bacteria, and storage and distribution standards according to the product type were presented. The government's safety management for HMR foods is basically carried out through the Food Sanitation Act. Those who intend to do HMR business must complete business registration or declaration, hygiene education, health examination of employees, and comply with legal obligations such as HACCP application. The government confirms compliance with legal requirements through hygiene inspection and monitoring inspection of products. However, the safety of HMR foods is not realized by the safety management system alone. A food safety culture should be established in which industry workers and consumers carry out actions to ensure food safety.

가정식사대용식(Home Meal Replacement) 소비자의 시장세분화에 관한 연구 (A Study on Market Segmentation of Home Meal Replacement Consumers)

  • 본 연구의 목적은 (1) 선택결정요인에 따른 가정식사대용식(HMR) 소비자를 세분화 하고, (2) 각 세분시장의 독특한 인구통계적인 특성과 구매행태를 조사하는 것이다. 이를 위해 총 266개의 응답을 SPSS 19.0을 이용해 분석하였다. 통계분석은 빈도분석, 교차분석, 요인분석, 군집분석, 다변량 분산분석, 판별분석이 사용되었다. 요인분석 결과 음식의 질(food quality), 디자인(design), 편리성(convenience), 접근성(accessibility) 과 같이 4개의 요인이 도출되었다. 도출된 요인을 이용해 군집분석을 실시한 결과 2개의 세분시장이 파악되었으며, 각각 고관여 HMR 소비자와 저관여 HMR 소비자로 명명되었다. 고관여 HMR 소비자는 모든 선택결정요인에 걸쳐 저관여 HMR 소비자에 비해 더 중요하게 지각하고 있는 것으로 나타났다. 또한 두 집단은 인구통계적 특성과 구매행태에 있어 차이가 있는 것으로 나타났다. 위와 같은 통계분석 결과에 따른 시사점이 결론부에 제시되었다.

COVID-19 전후 소비자의 간편식 구입 빈도 결정 요인 비교 (Analysis of Determinants of Home Meal Replacement Purchase Frequency before and after COVID-19 based on a Consumer Behavior Survey)

  • The purpose of this study was to estimate the influence of the determinants for home meal replacement (HMR) purchase frequency before and after COVID-19. Multinomial logistic regression was applied to the 2018~2020 Consumer Behavior Survey for Food data from the Korea Rural Economic Institute (KREI). Gender, age, number of households, monthly income, use of eating out, delivery and takeout order service, HMR food safety concern, the frequency of cooking at home, grocery shopping, and eating alone were applied as the explanatory variables to explain HMR purchase frequency. The results are as below. Compared to the previous year, the growth rate of HMR purchase frequency in 2020 was relatively high, indicating that the COVID-19 outbreak acted as a catalyst. Unlike in 2018 and 2019, there was no statistical difference in the HMR purchase frequency between single- and multi-person households in 2020, with indicating multi-person households began to emerge as one of the major HMR consumption groups. Unlike 2018, the 2020 HMR purchase frequency showed a statistically positive relationship with those of grocery shopping and eating alone. There was a positive relationship between the frequency of eating out/food delivery orders and HMR purchases. The more often cooking at home occurred, the less HMR food was purchased.

Study on Influence of Korea's Selection Attributes of HMR on Trust, Customer Satisfaction, and Repurchase Intention

  • Purpose - The current study conducted research on influential relationship of Korea's selected attributes of home replacement foods (HMR) with trust, customer satisfaction, and repurchase intention. Design, data, and methodology - This study was conducted on consumers in Seoul and the metropolitan area (Gyeonggi and Incheon) who have purchased home replacement foods (HMR). The survey was conducted for 30 days from March 1st, 2021 to March 30th, 2021. Among total of 300 surveys distributed, 250 surveys were collected, and 199 surveys, excluding ones with missing value and outliers (51 surveys), were used for analysis. Results - The results empirical analysis based on earlier studies are as follows. First, as a result of analyzing which variables of selection attribute factors of home replacement food (HMR) have an effect on trust, healthiness, reasonable price, and convenience had a positive effect, and quality of food and diversity did not have a significant effect. Second, as a result of analyzing whether trust has a significant effect on customer satisfaction, it was found that it had a positive effect on customer satisfaction. Third, as a result of analyzing whether trust has a significant effect on repurchase intention, it was found to have a positive effect. Fourth, as a result of analyzing whether customer satisfaction has a significant effect on repurchase intention, it was found that customer satisfaction had a positive effect. Conclusions - The current study aims to develop various new products of HMR and establish differentiated marketing techniques tailored to consumer needs.

소비 트렌드에 따른 가정간편식 개발 전략 (A study on the development strategy of home meal replacement in relation to the consumption trends)

  • Due to the increasing demand for convenience and simplicity, Home Meal Replacement (HMR) has become a key trend in the food service industry. This study researched the current consumer trend and analyzed the national and international HMR product trend, aiming to find useful insights for the field. Results showed that in order to expand the HMR market demand, it is possible to consider diversifying the product category by making customized premium products, such as products for the elderly, infants, patients, and sports players, or products with enhanced nutritional fortification. From the industrial aspect, centralization through Central Kitchen (CK) and implementation of the scientific and advanced ISO and HACCP system are necessary. Lastly, to develop high value-added HMR products, it is deemed essential to utilize the so-called 'food tech', the technology which integrates core technologies of the fourth industrial revolution into the food industry.

  • The purpose of this study was to compare and analyze the importance and satisfaction of consumer selective attributes by home meal replacement (HMR) types using local ingredients. This study was conducted from December 4 to December 8, 2020. A total of 380 responses organized according to preferred types of HMR (100 for Ready to Eat (RTE), 92 for Ready to Heat (RTH), 88 for Ready to Cook (RTC), 100 for Ready to Prepared (RTP) were used for the final analysis. Statistical analysis was conducted by descriptive analysis, paired t-test, and importance-satisfaction analysis by HMR type. Findings of this study showed significant differences in consumer selective attributes by HMR type. RTE and RTC need to improve quality while RTH needs to improve quality and packaging. Notable selective attributes were quality, packaging, and information. They were located in different quadrants of each HMR type. All other attributes appeared in the same quadrant. Further research is needed to determine differences in quality, packaging, and information for each HMR type. Results of this study provide basic data for developing products and marketing strategies for each type of HMR products using local ingredients.

태국 가구 규모에 따른 가정간편식 소비행동 (Home Meal Replacement (HMR) Consumption Behavior of Thai Consumers by Household Size)

  • This study was conducted to provide basic data for product development and marketing strategies for the Thai home meal replacement (HMR) market, to reflect the changing trends in household sizes in Thailand. The results of analyzing the characteristics and differences of HMR consumption behavior between single-person households and multi-person households in Thailand were as follows: It was found that single-person households use HMR to save money and for the convenience in cooking and preparation. In the preference by HMR type, multi-person households showed a higher preference for all types of products than single-person households. Thai consumers, regardless of their household size, mainly use department stores and large shopping malls to purchase HMR, and they most prefer to get information through Internet advertisements. The shelf life, quality, taste, hygiene, and freshness of HMR were the main considerations for their selection. Based on the results of this study, the Thai market requires the development of HMR products that are reasonable in terms of cost and preparation time. In addition, it is necessary to develop products that can satisfy consumer needs, such as nutritional enhancement and therapeutic foods, products that are organic, eco-friendly, cater to various menus, and address the premium segment.
