Changing Focus and Development of Korean Clothing and Textiles: 1959-1990 (한국 의류학 연구의 현황과 재조명 : $1959\~1990$)

  • Clothing and Textiles was introduced in the 1950s to Korea and has been developed. At this moment, it seems to be valuable to identify state of art of researches in clothing and textiles field. The purpose of the study was to investigate trends of subject-matter emphasis in clothing and textiles. The data were included clothing and textiles related research articles published in three professional journals from 1959 through 1990 and condensed at 5 year intervals. The identified 620 articles with clothing and textiles subject-matter emphasis were categorized in six areas: clothing construction, textiles, history of costume, design and aesthetics, socio-psychological aspect of clothing, and fashion merchandising. The results were as follows: 1. Since 1959, there has been a significant growth in terms of the number of research as well as in quality of research particulary considering the short history of the field. 2. The number of each area research was ranked as follows: 1) textiles (217) 2) history of costume (173) 3) socio-psychological aspect of clothing (88) 4) clothing construction (79) 5) fashion merchandising (34) 6) design and aesthetics (22) and others (7) 3. In the area of textiles, the most dominant area was clothing management (102 out of 217) and clothing hygenics research was getting increased from the late of 1980 through Journal of the Korean Society of Clothing and Textiles. 4. In the area of history of costume, most of the research have been published through Journal of Korean Costume Society. History of korean costume was the most dominant area (120 out of 173) and history of eastern costume area was getting increased from the late of 1980s. 5. In the area of socio-psychological clothing, the research was accelated in the beginning of 1980s through Journal of the Korean Society of Clothing and Textiles, while the research was decreased a· little in the late of 1980s. 6. In the area of clothing construction, it was revealed its decrease the percentage of total number of research and most of them were published through Journal of Korean Home Economics. 7. In the area of fashion merchandising, there has been continuous increase in the number of research from the late of 1970s to 1990, present. For the future direction, implications for interdisciplinary and ecological approach were suggested.

A Survey on the Children한s Notion in Kimchi(I) - Children한s Preferences for Kimchi - (어린이의 김치의식에 관한 실태조사 (I) - 김치 선호도에 관한 조사 -)

  • A survey on the kimchi preference among elementray school students in Pusan was conducted in April of 1995 to get basic information needed for the development of special kimchi for the children. Total of 1100 children in 2nd, 4th and 6th grade from public and private elementary school participated in this survey. Sixty eight percent of students answered that they like kimchi. However, kimchi preference(17.6%) among other side dishes-pork cuttlet.ham.sausage(54.1%), egg roll(9.4%), soysauced beef(8.2%), toasted laver(6.3%), bean sprout namul(3.0%), danmooji(1.0%), and squash namul(0.4%)-was relatively low. It can be interpreted that elementary school student prefers processed food specially animal food to kimchi. The hot taste of the kimchi was the number one reason of their dislike of kimchi, and it was the most important reason for those also like kimchi. Thus it can be thought as the representative taste of kimchi. Chinese cabbage kimchi was found to be the most favorite kimchi and kakdugi(seasoned pickles of cubed radish), nabak-kimchi(mildly seasoned water based kimchi that is mixture of chinese cabbage and cubed radish) and jchonggag kimcchi(seasoned pickles of pony tail radish) and cucumber kimchi were followed in order. Among the various ingredients in kimchim children like cabbage best but they didn't like galic, ginger, green onion and fermented fish sauce which give strong flavor in kimchi.

  • A survey on the children's thought for kimchi intake and practical amount of kimchi consumption were conduction in April of 1995 to get basic information needed for the development of special kimchi for the children. And the effects of nutritional guidance on consumming kimchi was also investigated. Total of 1100 students in 2nd, 4th, and 6th grade from public and private elementary school participated in this survey. The eighty three percent of student think they should eat kimchi mainly because kimchi is good for the health(48.0%) and kimchi is our traditional food(31.8%). However, only 26.5% of children consume more than 5 pieces($4{\times}5cm$) of kimchi per mela and 64.5% consume less than 1~2 pieces. This shows that children's opinion(p<0.001), preference(p<0.001) and actual consumption(p<0.001) for kimchi was found to be very significant. Thus the nutritional guidance is important as much as the development of children's kimchi. Children wanted kimchi which is sweet, mild hot and not too strong in flavor. Ingredients children wanted in kimchi were pear, apple, tangerine, carrot and onion. Children's most favorite foods cooked with kimchi were stir fried kimchi rice and kimchi stew. But children did not like kimchi hamberger, pizza topped with kimchi and rice cooked with bean sprout and kimchi.

Health Promotion Behavior and Related Factors on the High School Students Who Live in a Dormitory (고등학생의 기숙사생활 여부에 따른 건강증진행위와 관련요인)

  • Objectives: The purpose of this study is to find out practicing the health promotion behaviors and the factors relating their health promotion behavior between high school students who live in dormitory and the one who live in their house. Method: This study was carried out by using with questionnaire answered by 1,572 students. Some students are from two academic high schools, and the others are from two girl's high schools in Northern Kyungpook Province from the 27th through 30th of June 2005. Among them, 1,562were included in final analysis. The collected data was analyzed through frequency and percentage, mean and standard deviation, chi-square test, t-test and multiple regression. The data was analyzed using a SPSS/win ver. 12.0. Results: Analysis showed that the total score of practicing health promotion behaviors was 115.1. In case of male students, the score for students in dormitory was 119.6 and the one attending school from house was 114.9(p<0.05). In case of female students, score for students in dormitory was 113.7, and the score for students who live in house was 114.7. According to the data from multiple regression of analysis which has the health promotion behavior practice as a subordinate variable, in male students' case the degree of health promotion behavior practice becomes type of live in a dormitory, high in proportion to their parents' interest in health, disease of student and family, perceived health status, and the perceived self efficacy and the perceived benefit of the health promotion behavior. As to the female students, their health behavior practice becomes level of family economics, high in proportion to their parents' interest in health, perceived health status, and the perceived self efficacy and the perceived benefit of the health promotion behavior. Conclusions: On consideration of above findings, through the systematic development of health education program, we induced to desirable direction for the changeable factors of actions to health promotion for the health. and through the connective guidelines between the school and the home, we have to adapt to effective health promotion program for the health management of the young boys and girls.

A study on the Needs for Nutrition Management Program for Elderly Who use Welfare Facilities (노인복지시설 사용자 중심의 영양·식생활관리 프로그램 요구 분석)

  • Objectives: This study was performed to investigate the nutritional status, health conditions, eating habits and experience and demand for nutrition dietary management of senior citizens. And these data are formed foundation of development of nutrition dietary management education program and contents in welfare facilities for the aged. Methods: We visited 3 public health centers, 3 senior citizens centers, and 4 welfare centers in Seoul, Gyeonggi-do, Chungnam province, and Daejeon area and carried out interview by semi-structured questionnaire for senior citizens older than 65 years who use those facilities. Results: The study included 17%, 30.7% and 52.3% of senior citizens from public health centers, seniorcitizen centers and and welfare centers, respectively. The age range of 43.9% of the population was 65-74 years and and 56.1% were older than 75 years. We observed that 83.2% of subjects took some medicines due to diseases that they have and 58.0% took prescription medicines for hypertension. The thing that they considered the most when selecting food was 'the taste'(p<0.05). Regarding the level of practice to keep the dietary life, they answered more than 'average' for most of items but answered less than 'average' for lot of salt intake, drinking, exercise. For the experience of nutrition dietary life education, only 19.8% answered 'Yes' and the service for nutrition dietary life management showed the highest score in the demand for 'provide nutritious food'. For the size of consulting group for nutrition/dietary life education, the public health center and welfare center preferred a larger group size but the senior citizens center preferred a smaller group. With regard to who will carry out the consulting, the demand for dietitian was the highest and the operation type showed the high demand in the order of consulting, education. The contents that they want to have consultation in nutrition dietary life education were diet therapy for diseases and the ordinary diet therapy for health. Conclusions: This study suggested the management of nutrition dietry life necessitates qualitative measures according to the different types of welfare facilities. For these, it is in need of development of counseling and education program included therapy for disease. Above all, the policy to secure dietitian of welfare facilities for the aged to perform these should be achived.

Nutritional Survey for Working Females at a Factory (사업장(事業場) 근로여자(勤勞女子)의 영양실태(營養實態)에 관(關)한 연구(硏究))

  • For the purpose of the better dietary management and to emphasize of importance in nutrition education for 949 woman workers at the dormitory of wig factory in Seoul, the nutritional survey was conducted for seven days from August 13 th to 20 th of 1969. The survey included food and nutrient intakes, physical measurement, clinical findings and biochemical measurement were conducted for the randomly sampled 44 subjects. According to the survey results, their heights was under the standard and the 82% of the total subjects was the age ranges from 16 years to 20 years old. Their daily menu was not planned properly and the concept of 5 basic food groups was not utilized in their menu planning. The balanced meal should be emphasized in this factory. Calories and protein intakes are low compared with the recommended allowance and especially animal protein intake is low. Fat intake is only 8.8 grams for capita per day. Vitamins and minerals intake are also low. Clinical and biochemical survey indicated various vitamin deficiencies and anemia which is mostly due to the iron insufficiency.

Studies on the Contamination of Kimchi Material - Pesticide Residues in Vegitables - (김치의 오염(汚染)에 관(關)한 연구(硏究) - 김치 재료(材料)의 농약오염(農藥汚染) -)

  • In order to investigate the level of pesticide residues in the vegetables for Kimchi materials (Chinese cabbage, radish, red pepper, garlic and cucumber), which were produced in Andong district, organochlorine and organophosphur pesticide residues were analyzed using gas chromatography. The results were as follows; 1) In chinese cabbage, radish and some other vegetables harvested in early summer (June), organochlorine and organophosphur pesticide residues were detected in almost all of the samples tested, and a few of them showed a level higher than the organochlor APR(allowable pesticide residues). 2) Heptachlor, the soil insecticide was the most abundantly detected pesticide among the four organochlorine pesticides tested (Dieldrin, Endrin, BHC, Heptachlor) in this study. 3) Somewhat higher concentrations of organochlorine pesticides were detected in all kinds of sample vegetables harvested in late summer than in those harvested in early summer. And the frequency of organochlorine pesticide contamination was also increased, but the frequency of organophosphur pesticide contamination was decreased. 4) In the vegetable harvested in late autumn, level of organochlorine pesticide residues and frequency of contamination were markedly decreased and organophosphur pesticide residues (Diaginon, Malathion, Thiometon, EPN) were rarely detected. 5) The results of this study indicates that to take a lot of vegitables grown in summer was somewhat uncomfortable than those grown in autumn.

The Effect of Various Microorganisms Found in Urinary Tract Infections on Creatinine (세균성(細菌性) 요도염(尿道炎)의 감염균(感染菌)이 요중(尿中) 크레아티닌의 양(量)에 미치는 영향)

  • 영양실태조사 및 사람을 대상으로 하는 많은 영양적 연구에서 요중(尿中) 여러 성분(成分)들의 배설량을 측정하기 위해 만 하루의 소변을 완전히 채취하기는 매우 어려우므로 임의시간(任意時間)의 소변을 채취하여 사용한다. 이 경우엔 흔히 요성분(尿成分)의 농도는 요중(尿中) 크레아티닌을 양(量)을 기준으로 하여 표시되는데, 크레아티닌은 요중(尿中) 일일(一日) 배설량이 개인에 따라 알정하고 요양(尿量)에는 상관없이 비교적 일정한 속도로 배설 된다고 간주되기 때문이다. 그러나 비교적 높은 발생율을 갖는 세균재(細菌在) 요도염(尿道炎)에서는 감염균(感染菌)이 크레아티닌을 파괴할 가능성이 있고 따라서 이 경우의 요중(尿中) 크레아티닌의 여러 용도(用途)는 비합리적으로 될 수 있다. 본 연구에서는 이 가설을 규명하려고 한다. 첫 실험에서는 감염균(感染菌)이 요소(尿素)를 암모니아로 파괴함으로써 형성되는 요(尿)의 알칼리성에 대한 크레아티닌의 안정성(安定性)을 알아 보았다. 건강인(健康人)의 요중(尿中) 크레아티닌과 완충액에 용해시킨 순수 크레아티닌을 pH $4.5{\sim}9.0$으로 조정하여 $37^{\circ}C$에서 6일간 배양시켰다. 잔존한 크레아티닌을 측량한 결과, 크레아티닌은 완충용액이나 요(尿)에서서 모두 산성 pH에서 보다 알칼리 pH에서 더욱 안정(安定)함을 보여주었다. 1일간 배양 후엔 거의 변화(變化)가 없었고 6일 후에나 $4.2{\sim}8.0%$의 감소율을 나타냈을 뿐이다. 두번째 실험에서는 감염균이 크레아티닌을 성장(成長)을 위한 질소급원으로 사용하는지를 결정하기 위해 세균성(細菌性) 요도염(尿道炎)에서 자주 발견되는 13종류(種類)의 박테리아를 건강인(健康人)의 요(尿)와 크레아티닌을 질소급원으로 하는 합성배지(合成培地)에 $37^{\circ}C$로 배양하였다. 대부분의 박테리아는 크레아티닌함양(含量)을 감소시키지 않았다. 그러나 Pseudomonas aeruginosa와 Klebsiella pneumoniae는 합성배지중(合成培地中)의 크레아티닌을 상당량 파괴시켰고, 그 파괴율은 그들 성장율과 평행하였다. 배양 6일후에는 크레아티닌이 Pseudomonas aeruginosa에 의해 처음 양(量)(500mg/100m1) 의 12.8%가, Kleobsiella pneumoniae에 의해서는 11.8%가 감소되었다. 감소율은 크레아티닌의 처음 농도가 낮을수록 커져서 50mg/100ml 일 때는 각각 21.1%와 28.2%이었다. 더욱이 Klebsiella pneumoniae는 황산암모늄과 요소(尿素)같은 다른 질소급원이 크레아티닌과 공존(共存)할 때에도 크레아티닌을 어느 정도 파괴함을 보여 주었다. 결론으로, 세균성(細菌性) 요도염(尿道炎)환자의 요(尿)의 알칼리성은 요중(尿中) 크레아티닌양(量)에 중요한 영항을 주지 못한다. 그러나 본(本) 연구(硏究)에서 사용된 Klebsiella pneumoniae와 가능하게는 Pseudomonas aeruginosa 같은 몇 감염균(感染菌)은 크레아티닌을 그들 성장(成長)의 질소급원으로 사용하여 요중(尿中) 크레아티닌양(量)을 저하시킬지도 모른다. 특히 요(尿)에 요소(尿素), 요산(尿酸)같은 다른 질소급원이 크레아티닌에 비해 비교적 낮은 비율로 존재할 때에, 예(例)를 들면 저(低)단백식사(食事)인 경우, 감염균에 의한 크레아티닌의 파괴율이 더 클 것으로 기대된다.

Optimization of White Pan Bread Preparation by Addition of Black Barley Flour and Olive Oil using Response Surface Methodology (흑맥가루와 올리브유 첨가 식빵의 제조조건 최적화)

  • The purpose of this study was to determine the optimal amount of 2 ingredients, i.e., black barley flour ($X_1$), and olive oil ($X_2$), for the production of white pan bread from black barley flour. The experiment was designed according to the central composite design of response surface methodology, which showed 10 experimental points, including 2 replicates for black barley flour and olive oil. Significant differences were found in the results of the physical and mechanical properties analysis of each sample, including weight (p<0.05), volume (p<0.01), specific loaf volume (p<0.01), color L (p<0.01), color a (p<0.001), color b (p<0.05), hardness (p<0.001), springiness (p<0.01), cohesiveness (p<0.01), gumminess (p<0.001) and chewiness (p<0.05). Significant differences in the sensory measurements were observed in color (p<0.01), appearance (p<0.01), texture (p<0.05), taste (p<0.05) and overall quality (p<0.05). The optimum formulation, which was calculated using the numerical and graphical methods, was determined to be 18.00% black barley flour and 1.80% olive oil.

The Analysis on the Trend of the Women's Wear Researches - In Consideration of the Apparel Related Journals Publication Listed on the KCI(Korea Citation Index) from 2001 to 2010 - (여성복 관련 연구경향 분석 - 2001~2010년까지 학회지 게재논문 중심으로 -)

  • The purpose of the study was to offer in-depth understanding of the women's wear research trend in South Korea and thus to provide insights from the findings throughout the study to set appropriate directions for further development of women's wear related researches in the clothing and textile study area. The study considered research papers published by the 6 major apparel related journals listed on the KCI(Korea Citation Index) i.e. journals of the Korean Society of Clothing and Textiles(KSCT), the Korean Society of Costume(KSC), the Costume Culture Association (CCA), the Korean Society of Fashion Business(KSFB), the Korean Home Economics Association (KHEA) and the Korean Society for Clothing Industry(KSCI). A total of 380 research papers that were related with women's wear published from 2001 to 2010 were selected for the study and analyzed in the form of descriptive statistics using the SPSS Software ver. 18.0. The analysis was categorized according to the journals, years and research theme. The research themes were divided into various categories such as, clothing construction, textile science, fashion aesthetics and design, costume history and culture, apparel psychology and fashion marketing. The results derived from the research were: (1) the ratio of the research papers on the women's wear to the total papers published from 2001 to 2010 by the 6 subject journals was 380 to 6,815, i.e. 5.6% of the total papers; (2) journal of KSCT published the most women's wear research papers (N=149, 39.2%) and then the rest in order were the journal of CCA (N=69, 18.2%), the journal of KSC (N=68, 17.9%), the journal of KSFB (N=52, 13.7%), the journal of KHEA (N=39, 10.3%) and the journal of KSCI (N=3, 0.7%); (3) the proportions of the research themes for the women's wear study were in the order of the case study in marketing (N=135, 35.5%), body measurements and sizing systems in clothing construction (N=88, 23.2%), fashion design and aesthetics (N=83, 21.8%), pattern-making (N=63, 16.6%), and color study (N=11, 2.9%) and so on.
