Antihyperlipidemia and Antiarteriosclerosis of Hizikia fusiformis in Sprague-Dawley Rats (톳(Hizikia fusiformis)의 Sprague-Dawley계 흰쥐에서 항고지혈증 및 항동맥경화증 효능)

  • The effects of dietary supplementation with Hizikia fusiformis on anti-hyperlipidemic activities were investigated in an animal study in which normal rats were fed Hizikia fusiformis, Hizikia fusiformis ethanol extract and Hizikia fusiformis ethanol extract residue. Serum total lipid and triglyceride levels were significantly (P<0.05) reduced in rats fed Hizikia fusiformis ethanol extract residue at a dose of 200 mg/kg body weight when compared to hyperlipidemic control rats. There were also significant decreases in serum total cholesterol and LDL-cholesterol levels in the rats fed Hizikia fusiformis ethanol extract residue at 200 mg/kg body weight. In addition, the atheroscrelosis index and superoxide dismutase in blood lipids were significantly (P<0.05) lowered in rats fed Hizikia fusiformis ethanol extract residue at 200 mg/kg body weight, as compared to control rats. In conclusion, Hizikia fusiformis and Hizikia fusiformis ethanol extract residue had beneficial antihyperlipidemic and antiarteriosclerosis effects.

Quality Characteristics of Sulgidduk Added with Hizikia fusiformis Powder (톳가루를 첨가한 설기떡의 품질특성)

  • This study was performed to examine the optimum addition amount of Hizikia fusiformis powder to be used with rice flour in the preparation of Hizikia fusiformis Sulgidduk (traditional rice cake). Hizikia fusiformis powder was added to rice powder at ratios of 5, 10, 15 and 20% (w/w). The moisture content of Sulgidduk was increased with the addition of Hizikia fusiformis powder, whereas the pH content was decreased. The addition also lowered the lightness and yellowness values but increased the greenness value. Mineral contents were increased. Hardness, springiness, and brittleness were decreased, and cohesiveness was increased as the added powder content also increased. In the sensory evaluation of Hizikia fusiformis Sulgidduk, color, flavor, taste, softness, chewiness, moistness, cohesiveness, and overall acceptability characteristics were all highest at the 10% addition level. Thus it can be proposed that this is the ideal level of Hizikia fusiformis addition in terms of the sensory properties of the cooked product.

  • The purpose of this study was to investigate the nitrite scavenging activity of the ethanol and water extracts obtained from Hizikia fusiforme and Sargassum fulvelum using sodium nitrite under different pH conditions. The nitrite scavenging activity was appeared in all the extracts examined and it showed the highest value at pH 1.2 The ethanol extract of Hizikia fusiforme provided higher activity than the water extract of that. Ohterwise, the nitrite scavenging activity of Sargassum fulvelum ethanol extract was similar to that Sargassum fulvelum water extract. There was significant difference among concentration of extracts Hizikia fusiforme and Sargassum fulvelum. Also, nitrite scavenging activity of the extracts Hizikia fusiforme and Sargassum fulvelum decreased with higher pH condition. In addition, the activity was increaed with higher concentration of extracts Hizikia fusiforme and Sargassum fulvelum in the course of reaction time 30 minute to 3 hour.

The Effect of Dietary Hizikia Fusiforme on the Reduction of Blood Pressure and Total Cholesterol in Jeju Women Divers (제주 해녀의 식이성 톳 섭취를 통한 혈압 및 총콜레스테롤 감소 효과)

  • The purpose of this study was to investigate the changes of blood pressure and total cholesterol after eating Hizikia fusiforme for 8 weeks with 100g of rice per day. As a result, the systolic blood pressure of the group ingesting Hizikia fusiforme significantly decreased. Second, diastolic blood pressure decreased significantly in both groups, but there was no difference between groups. Third, the systolic - diastolic blood pressure difference showed a significant decrease in the group of ingestion of Hizikia fusiforme, while that of the group without intake of Hizikia fusiforme increased. Fourth, total cholesterol decreased significantly in the group consuming Hizikia fusiforme but increased in the group not consuming Hizikia fusiforme. The above results indicate that total intake of 100 g of dried Hizikia fusiforme per day was effective in decreasing total cholesterol and reducing systolic blood pressure.

  • Zingiber officinale and Hizikia fusiforme(sea weed fusiforme) have long been used for food sources in Korea. The present study was performed to investigate the ex vivo effect of Zingiber officinale and Hizikia fusiforme on NO production in macrophage of mice. Seven to eight week old mices(Balb/c) were fed chew diet ad libitum and water extract of Zingiber officinale and Hizikia fusiforme was administrated orally at two different concentrations (50 and 500 mg/kg B.W.). every other day for two or four weeks NO(nitric oxide) production by activated macrophage was assessed by measuring nitrite, the stable NO metabolite, using Griess reaction assay. NO production were significantly enhanced in Zingiber officinale group at 500 mg/kg B.W. and in Hizikia fusiforme group at 50 mg/kg B.W. compared to the coresponding control groups. In conclusion, this study may suggest that Zingiber officinale and Hizikia fusiforme(sea weed fusiforme) extracts enhance the immune function by regulating NO production in macrophages of mice.

Effect of Adding Barley Flour and Hizikia fusiformis Powder on Physicochemical and Sensory Characteristics of Jeungpyun (톳가루와 보릿가루 첨가가 쌀가루 증편의 이화학적·관능적 특성에 미치는 영향)

  • This study investigated the physicochemical and sensory characteristics of Jeungpyun prepared with various levels of barley flour and Hizikia fusiformis powder. The pH, volume, and spreadability of the dough as well as the moisture content, color, texture, and sensory evaluation of Jeungpyun were analyzed. The results show that the pH of dough decreased in all sample groups with fermentation time and ultimately revealed a pH level ranging from 5.36~5.44. The spreadability of the dough significantly decreased as the substitute amount of barley flour increased; the sample group with 1% Hizikia fusiformis powder showed a significantly larger spreadability than the sample group with 2% Hizikia fusiformis powder (p<0.01). The moisture content of Jeungpyun significantly increased as the substitute amount of barley flour increased (p<0.01). Lightness and yellowness were reduced as the substitute amount of Hizikia fusiformis powder increased. In measuring texture, the 50% sample group with a high substitute rate of barley flour was observed to have high characteristics of hardness, gumminess, and chewiness. The results of the acceptance test show that the sample group with substituted 50% barley flour and added 2% Hizikia fusiformis powder had a higher acceptance than the sample group with 0% barley flour in terms of color, flavor, texture, and overall acceptance.

Quality Characteristics of Jeolpyun with Hizikia fusiforme Powder (톳가루를 첨가한 절편의 품질 특성)

  • This research focused on the effects of adding Hizikia fusiforme to Jeolpyun. We were able to demonstrate in this study that Jeolpyun after the addition of Hizikia fusiforme had the potential to become a functional food. Jeolpyun with 0, 2, 4, 6, and 8% of Hizikia fusiforme was analyzed by water content, color, sensory and textural characteristics immediately after production and one day later. The five different types of Jeolpyun did not show any significant differences in water content. However, all the Jeolpyun with Hizikia fusiforme showed slightly higher water retention ratio than the control after storage. As the result of Hunter's color values, lightness decreased significantly as the amount of Hizikia fusiforme increased. Redness increased in the Jeolpyun with Hizikia fusiforme compared with the control. Yellowness was highest in the Jeolpyun with 2% of Hizikia fusiforme and decreased with an increase in its content. In the textural analysis, hardness, chewiness, adhesiveness and gumminess of Jeolpyun with 2% and 4% of Hizikia fusiforme were similar to those of the control, whereas springiness of Jeolpyun with 2%, 4% and 6% of Hizikia fusiforme were similar to that of the control group. Cohesiveness significantly decreased as the amount of Hizikia fusiforme increased. When the Jeolpyun was preserved for one day, all five Jeolpyun showed significant increases in hardness, gumminess and chewiness. However, their adhesiveness significantly decreased. Cohesiveness decreased in all Jeolpyun except for the 8% Jeolpyun. In sensory evaluation, color and aroma became stronger as the content of Hijikia fuziforme increased, and 2% Jeolpyun showed similar hardness with the control. Jeolpyun with Hijikia fuziforme showed no difference in cohesiveness with the control, but the adhesiveness showed a little increase when compared to the control. The overall acceptability of 2% Jeolpyun showed slightly higher than control. After one day of storage, Jeolpyun with 2% of Hijikia fuziforme also showed the highest overall acceptability. And the overall acceptability showed the biggest decrease in the control group. Overall acceptability showed strong negative correlation with color, aroma and hardness, and showed strong positive correlation with cohesiveness and adhesiveness. After one day of storage, overall acceptability showed a decrease in correlation with color and smell and an increase in correlation with cohesiveness, compared to before storage. Results of multiple regression analysis showed that hardness had the biggest influence(-) on the overall acceptability of Jeolpyun, aroma and cohesiveness ranked second(-) and third(+) respectively. After one day of storage, cohesiveness had the biggest influence on the overall acceptability of Jeolpyun. Color and adhesiveness ranked second(-) and third(+) respectively. It can be seen that different factors influence overall acceptability of Jeolpyun after storage.

Effects of Dietary Hizikia fusiformis on Growth and Immune Responses in Juvenile Olive Flounder (Paralichthys olivaceus)

  • An eight week feeding trial was conducted to investigate the effects of dietary supplementation of hizikia (Hizikia fusiformis) on growth performance, immune responses and resistance of juvenile olive flounder (Paralichthys olivaceus) to Streptococcus iniae. Four experimental diets (designated as Hiz 0, Hiz 2, Hiz 4 and Hiz 6) were formulated to be isonitrogenous (50% crude protein) and isocaloric (17.2 MJ/kg DM). Hizikia powder was added at 0%, 2%, 4% and 6% in diets Hiz 0, Hiz 2, Hiz 4 and Hiz 6, respectively. Three replicates of fish groups (15 fish/tank) were fed one of the experimental diets. At the end of feeding trial, no significant differences were observed in final body weight, specific growth rate, protein efficiency ratio, feed utilization and feed intake among fish groups fed the experimental diets. However, there was clear trend that the growth performances of fish were improved by the increment of dietary hizikia showing a positive growth effects. Mean phagocytes activated with nitro-blue-tetrazolium were significantly increased with the increment of dietary hizikia. The cumulative mortality was significantly (p<0.05) lower in the fish groups fed Hiz 6 diet (no mortality) than that in the other fish groups for 15 days of S. iniae challenge test. The findings of this study suggest that a dietary supplementation of hizikia could enhance the nonspecific immune response and improve the resistance of juvenile olive flounder to S. iniae.

Effect of Steam-Dried Hizikia fusiformis Powder on the Rheological and Sensory Profile of Bread (자건(煮乾) 톳 분말 첨가가 제빵의 물성 및 관능품질에 미치는 영향)

  • To establish the optimum formular for processing bread with steam-dried Hizikia fusiformis flour(SHF), it was incorporated into wheat flour by the ratio of 0, 1, 3, 5 and 7% based on a flour weight. Evaluation was performed on the rheological and sensory profile of bread, such as specific loaf volume, water holding capacity(WHC) and height, appearance and Hunter's color value, mechanical texture properties, and sensory value. Increase in the addition of SHF led to the tendency that the expansive force of dough fermentation reduced, and an increase in the textural properties of bread. And cohesiveness, gumminess, and chewiness indicated the tendency of a little reduction as influenced by adding more dried Hizikia fusiformis powder. As for sensory properties and flavor components of the white bread, in case of color and flavor, more than 3% of increase in the addition of the dried Hizikia fusiformis powder led to a drop in preference, and more addition led to a fall in taste and softness. Overall, it was found that adding less than 3% of dried Hizikia fusiformis powder is proper for dough in breadmaking.

Optimization of Cookies Prepared with Hizikia fusiformis Powder Using Response Surface Methodology (톳 분말 첨가 쿠키의 최적화)

  • This study was performed to determine the optimal manufacturing conditions of cookies prepared with Hizikia fusiformis. The variables in Hizikia fusiformis cookies production were the amounts of Hizikia fusiformis powder, butter, and sugar. Six sensory characteristics were used for sensory evaluations, including color, appearance, taste, brittleness, hardness, and overall acceptability. The optimal amounts of the three variables were found to be 6.00 g for Hizikia fusiformis powder, 100.00 g for butter, and 70.00 g for sugar against flour powder 200 g, which satisfies a target sensory score (7.0/9.0) according to the response surface method. Cookies with these optimal amounts of Hizikia fusiformis powder, butter, and sugar were tasted by 114 consumers and showed a high acceptability score (7.21). Females preferred the flavor of Hizikia fusiformis significantly more than males did (p<0.05). Older consumers (${\geq}30$ years old) scored significantly higher than younger consumers (${\leq}29$ years old) in texture (p<0.05). Spread ratio and hardness scores of Hizikia fusiformis cookies were lower than those of control cookies. Color analysis results of Hizikia fusiformis cookies were significantly lower in brightness and redness, and higher in yellowness than control cookies (p<0.01).
