A Study on the Nutritional Effects of Boiling Water Extracts of Mugwort Powder in Rats (쑥의 수용성추출성분(水溶性抽出成分)이 백서영양(白鼠營養)에 미치는 영향(影響))

  • This study was intended to observe some nutritional effects of the boiling water extracts of mugwort powder in albino rats. Forty young male albino rats of Sprague-Dawley strain, body weight of $77{\pm}5g$ were employed for the experiment. They were divided into 5 dietary group, 0 (control), 1, 2, 4, and 8g% mugwort powder extract supplemented into the control diet, and fed each corresponding diet to the rats for 4 weeks. They were observed on intake of food and protein, efficiencies of food and protein, amount of energy intake, growing rate, and levels of hematocrit and hemoglobin in the blood. The amount of intakes of food, protein and energy was the highest in the group fed on 4g% mugwort extracts supplemented diet than any other groups studied. The efficiencies of food and protein in the groups fed on mugwort extracts supplemented diets were all lower than that of the control group. The growing rate of the group fed on 1g% mugwort extracts supplemented diet was the highest, however, there was no significant difference among them. The levels of hemoglobin of the groups fed 4g% or 8g% mugwort extracts supplemented diet was higher than that of the control, but not significant.

A Study on Recognition and Using behavior for Tofu(Soybean Curd) (두부에 대한 인식 및 이용실태에 관한 연구)

  • To investigate of the recognition and using behavior on the Tofu, 46.3% of male and 53.7% of female adults in Daegu and Kyungbuk area were surveyed. The main results are as follows : 96.4% of the participants usually preferred the Tofu owing to health and about 68.4% of them had purchased Tofu made of domestic soybean. In addition, the responses to 7 questions about the Tofu were also measured on 5 point Likert scale. The item "Tofu is healthy food" and "Tofu is digestive food" were totally received the high point but "Tofu prevents osteoporosis" earned the lowest. Female had generally better knowledge of Tofu than the counterparts. Most participants relatively knew and had eaten common Tofu, soft bean curd, uncurdled bean curd, fried bean curd against functional Tofu such as Tofu added with omija, surimi, spinach, etc. But they intended to eat functional Tofu such as Tofu added with green tea, black sesame, spinach, omija. Furthermore, 60.7% replied "increasing" prospects for the Tofu consumption. 40.0% of adults said the plan should be "Make of good quality domestic soybean" for the purpose of better improvement to consume.

Content Analysis of Webzine for Gist-based Health Message Design (핵심정보 중심 건강 메시지 디자인을 위한 웹진 내용분석)

  • Gist-based message design is essential in the Internet in which a lot of health messages are created and shared constantly. This study intended to identify the characteristics of health messages in a webzine and explore a way to design gist-based health messages. A total of 72 webzine articles published in Korean Ministry of Food and Drug Safety were selected, and text and visual messages of the articles were analyzed in terms of content types, the frequency and position of gists, and intuitive expression. The articles were also categorized regarding the characteristics of health messages through cluster analyses. This study found that most texts of the health articles consisted of facts and methods, while most visual messages represented concepts. In addition, both text and visual messages had limitations in presenting a gist effectively. It was also necessary to explore an effective way to improve an intuitive understanding of jargon and quantitative information in health messages. Based on these findings, this study provided suggestions for the design of gist-based health messages in the Internet.

The Study on the Enzyme Activities in Korean Bee Honey (한국산 벌꿀의 효소활성에 관한 연구)

  • This report is intended to describe as brief as possible the result of study on purity of the Korean Bee Honey. Purity of bee honey was measured by scaling the enzyme activities of two different honey groups: such as, the standard group and control group each including the samples of honey originated from the resource of acarcia, chestnut or miscellaneous origin. The samples of honey were collected from different sources: to wit, honey belonging to the standard group were collected from the township of Seoboo, Yangju county, Kyunggido province, Korea, while honey belonging to the control group were collected from the street side shops, market or the companies producing the secondary food from honey. The results of this study were summarized as follow: 1. It was found that honey belonging to the standard group contained less moisture than those belonging to the control group. Republic of Korea Ministry of Health and Social Affairs Food Control Regulation stipulates that honey must contain moisture less than 20%. The samples of' both groups contained moisture more than 20%, although honey belonging to the control group were relatively more so than honey belonging to the standard group. 2. Honey belonging to the standard group were found stronger in sugar reduction activities than those belonging to the control group. It was also noted that honey of acracia origin was strongest in reduction activities of the three different origin in the same group. 3. $\alpha$-Amylase and $\beta$-amylase were discovered to have activated more strongly in honey belonging to the standard group than those belonging to the control group. The enzyme activitie, varied depending on the origin of plant where honey comes from. For instance, honey of miscellaneous origin indicated the strongest activities in $\alpha$-amylase while honey of chestnut origirt indicated strongest in $\beta$-amylase.

A Study on Worker's Dietary Life according to Workplace Scale (사업장 규모에 따른 근로자의 식생활 실태)

  • This study is intended to research workers' health, diet and the demand of nutrition education service in Seoul and Gyeonggi-do province. We implemented the survey from September 2012 through August 2013, and analyzed the data from 589 workers' questionnaires out of 890. For the analysis of the compiled data, we utilized the SPSS version 18.0 statistical package program. The study showed that majority of the workers participated in the survey consisted of 447 male (75.9%) and 142 female (24.1%). BMI showed that these men were overweight ($24.5{\pm}2.72$) and women were normal weight ($22.2{\pm}2.70$). Participants often diagnosed with hypertension or hyperlipidemia. In terms of health status, 34.5% answered satisfactory, the most concerned illness was high blood pressure, and the bad eating habits were often associated with general overeating and excessive intake of salt. 65.5% of participants had a meal three times per day. 49.4% of male participants had a meal less than 15 minutes and 66.2% of female participants had a meal between 15 and 30 minutes. The average of workers who needed to nutrition education is 3.74+0.85. The most desired way of learning was through counseling (36.7%), with overweight and weight management identified as the most interested topics. A relatively high portion (80%) passed the nutrition knowledge assessment test. According to the survey the highest rate of full-time employment is 85.2% which showed in small work places (the number of people on meal plan was 100~300), however the lowest rate of full-time employment showed 70.0% in large workplaces (the number of people on meal plan was within 1,000).

CVD-related Knowledge, Perception, Belief and Prevention Behaviors of Korean Blue-collar Workers: Needs Assessment for Developing the Intervention Program through Qualitative Approach (한국 생산직 근로자들의 심혈관질환 관련 지식, 인식, 신념 및 예방행위: 내용분석을 통한 심혈관질환 위험 감소 중재 프로그램 개발을 위한 요구사정)

  • Purpose: This study intended to grasp real context of Cardiovascular disease (CVD)-related factors of Korean blue-collar workers, especially CVD-related knowledge, perception, beliefs, benefits and barriers of behaviors according to the health belief model. Methods: We interviewed twenty two workers working in two small-sized companies and performed two series of focus group interviews. Data were analyzed by deductive content analysis approach based on Elo & $Kyng{\ddot{a}}s$. Results: Excepting participants who have CVD risk factors, most participants had lower level of CVD risk perception. The level of CVD knowledge was low but there was difference by gender. CVD-related beliefs were 'fatal disease', 'caused by lifestyle' and 'difficult to prevent by themselves'. The risk reduction behaviors were motivated by current or family history of hypertension. But there were barriers to interfere practice of preventive behaviors such as poor quality of food provided by cafeteria in the workplace, frequent overtime, victim mentality as one of vulnerable social group, housework and financial burden, lack of facilities for rest and physical activity in the workplace. Conclusion: To develop intervention for reducing CVD risks in Korean blue-collar workers, we need to focus on improving CVD knowledge and perception and modifying work-related environments such as low quality of food and lack of facilities for rest and physical activity in the workplace.

The effects of Very Low Calorie Diet using meal replacements that contain Herbal extracts on weight reduction and health promotion (한약추출물을 함유한 식사대용식이가 체중감량과 초저열량식이의 부작용에 미치는 영향)

  • Background: The VLCD that supplies only 400-800kcal meal per day has a lot of problems and can severely harm the health. Certain herbs are known to the side-effects such as weakness, skin dehydration, and dizziness. If VLCD with meal-replacement containing these hearbs can effectively minimize the side-effects, it make weight management easier and reduce any possible danger the health. Objectives: This prospective, double-blinded study is intended to compare the severity of symptoms induced by VLCD and weight loss between the case group supplied with meal-replacement herbal extracts(n=29) and controlled group supplied with meal-replacement not containing herbal extracts(n=29). This was with 52 volunteers for 4 weeks. The measurements of this experiment were as follows: symptoms caused by patients' subjective judgments, the result of blood test illustratingerol level, total protein etc., and changes in overall weight, fat mass and lean body mass. Result: we concluded that there are no significant differences in weight change between case group and controlled group, and that the total protein at the end of trial was significantly higher in case group than in controlled group, and triglyceride level at the end of trial was lower in case group than in controlled group. As expected, the side-effects such as hair loss and dehydration in skin are also lessin case group than in controlled group.

Appraisement and Purchase Consciousness of Consumer on Organically Grown Products (유기농산물에 대한 소비자의 평가와 구매의식)

  • This paper focussed to find out the consumer appraisement and purchase consciousness on organically grown products since public pay more and more attention on organic food and market for organic products has been grown very rapidly. It is intended to deliver the necessary information at first time in Korea to the policy maker for environmentally sound agriculture, establishment for marketing strategy and consumer movement related with it. 66.2% of investigated consumer ever purchased the organic products, and they are inhabitant in apartment complex, belongs to high income group and eldly people, and used to buy frequently at 45.8%. For the reason why they choose the organic products ; 84.7% for health and safe, 48.6% for taste. But the reason why they not choose the organic products ; 56.7% for unconvenient to shop an organic food, 51.4% for expensiveness. On the purchasing the consumer mainly rely upon the certification label(67%), the marketing place(29.6%) and information and recommendation of shopkeeper(23.6%). Korean consumers intend to buy an organic products if variable products and crops are offered in the market and offered at reduced price. The group purchased intensively the organic goods appraise for an organic products positively, and group who do not express any careless intend never to purchase an organically grown products because of its high price. Consumer indicated the support policy and action program by government(69.2%), research & development on organic agriculture and its extension activity(48.8%) are necessary to stimulate an organic agriculture in Korea.

Prioritizing for Selection of New High-heat Risk Industries and Thermal Risk Assessment (신규 고열 위험 업종 선정을 위한 우선순위 및 온열 위험 평가)

  • Objectives: The climate crisis has arrived and heat-related illnesses are increasing. It is necessary to discover new high-heat risk industries and understand the environment . It is also necessary to prioritize risks of industries that have not been included in the management target to date. The study was intended to monitor and evaluate the thermal risk of high-priority workplaces. Methods: A prioritization method was developed based on five factors: occurrence of and death due to heat-related illnesses, work environment monitoring, indoor work rate, small heat source, and limited heat dissipation. it, was applied to industrial accidents caused by heat-related illnesses. Wet bulb temperature index and apparent temperature were measured in July and August at 24 workplaces in seven industries and assessed for thermal risk. Results: The wet bulb temperature index was in the range of 23.8~31.9℃, and exposure limits were exceeded in the growing of crops, food services activities and accommodation, and building construction. The apparent temperature was in the range of 26.8~36.7℃, and exceeded the temperature standard for issuing heatwave warnings in growing of crops, food services activities and accommodation, warehousing, welding, and building construction. Both temperature index in growing of crops and building construction were higher than the outside air temperature. Conclusions: In the workplace, risks in industries that have not be controlled and recognized through existing systems was identified. it is necessary to provide break times according to the work-rest time ratio required during dangerous time period.

Establishing new principles for nutrient reference values (NRVs) for food labeling purposes

  • Many countries such as The Republic of Korea have established their own nutritional standards, collectively termed Nutrient Reference Values (NRVs), and they vary due to the science which was reviewed, the purposes for which they are developed, and issues related to nutrition and food policy in the country. The current effort by the Codex Alimentarius Committee on Nutrition and Foods for Special Dietary Uses (CNFSDU) to update the NRVs that were established following the Helsinki Consultation in 1988 represents an opportunity to develop a set of reference values reflecting current scientific information to be used or adapted by many countries. This paper will focus on possible approaches to selecting or developing reference values which would serve the intended purpose for nutrition labeling to the greatest extent possible. Within the United States, the Food and Drug Administration (U.S. FDA) is currently reviewing regulations on nutrition labeling to better address current health issues, and is expected to enter into a process in the next few months to begin to explore how best to update nutrient Daily Values (DVs), most of which are still based on the Recommended Dietary Allowances (RDAs) of the Food and Nutrition Board, U.S. National Academy of Sciences, last reviewed and revised in 1968. In this presentation, I review the current purposes in the U.S. for nutrition labeling as identified in the 1938 Food, Drug, and Cosmetic Act as amended, the scientific basis for current nutrition labeling regulations in the United States, and the recommendations made by the recent Committee on Use of Dietary Reference Intakes in Nutrition Labeling of the Institute of Medicine (2003) regarding how to use the DRIs in developing new DVs to be used on the label in the United States and Canada. Based on these reviews, I then provide examples of the issues that arise in comparing one approach to another. Much of the discussion focuses on the appropriate role of nutrient labeling within the Nutrition Facts panel, one of the three major public nutrition education tools in the United States (along with MyPyramid and Dietary Guidelines for Americans).
