Development of Culinary Tourism in European Countries

  • The scientific paper studies the impact of tourism and traveling on the economic level of development of countries at the macro level and its relationship with other sectors of the economy. Tourism is one of the budget-forming factors of every economy. This work describes the main trends in the development of tourism. It is determined that about one third of tourism revenues are generated by the food sector, i.e., the culinary niche of tourism. Culinary tourism is a new direction of tourism, but it is developing quite dynamically in the EU. Culinary is an important part of rural tourism in the EU and culinary tourism is actively promoted at fairs and festivals. In recent years rural tourism has been developing both at the international level and in Ukraine, primarily due to its features, which include the implementation of the principles of sustainable community development, preservation of local traditions and cultural values, gastronomic events to promote them. The aim of the article is to study the theoretical aspects of the development of gastronomic tourism in the world, to analyze the actual condition of gastronomic tourism in the EU and Ukraine, identifying prospects and ways to develop regional gastronomic tourism. The methodological and informational basis of the work is analytical reports and researches related to the development of event tourism and statistics. Systematic and logistical approaches to the studied problems were used to achieve this goal. Various general scientific and special research methods were also used. Based on PESTLE analysis, key aspects of the external environment of gastronomic tourism in Ukraine are identified. We took into account the principles of sustainable development: political, economic, social, technological, legal and environmental. The main trends in the development of gastronomic tourism in the world are studied and it is found that the greatest development in the coming years will be the trend of combining gastronomic and event tourism on the basis of sustainable development. The main preconditions and possibilities of introduction of this holistic approach to the strategy of development of the tourist branch of Ukraine are determined. A model of sustainable value chain of gastronomic tourism in the region is formed and the main advantages of its implementation are identified: formation of a regional brand, preservation of culinary traditions, development of green farming, minimization of negative impact on the environment, sustainable development of communities.

관광지의 훼손행위 감소를 위한 이용자 관리 (A Study on the Improvement of User Management for Decrease of Vandalism in Tourism Destinations)

  • 본 연구는 이용객의 올바르지 못한 행위로 일어나는 관광지의 훼손을 방지하기 위해 공원녹지 분야의 이용자 관리 중 커뮤니케이션 기법의 이용 관리에 관한 정보 제공을 제시하고 이를 도입하기 전 관광지에서의 적용 가능성을 살펴보고자 하였다. 그와 더불어 관광지 관리 및 훼손행위 규제, 훼손행위 감소를 위한 이용자관리 수용 여부 등 이용자관리에 관한 관광객의 인식을 파악하였다. 본 연구결과에 따르면 이용객들은 관광지 훼손의 심각성을 인지하며, 훼손행위가 관광지 만족도에 영향을 미침에 따라 규제의 필요성에 대해 긍정적으로 대답하였다. 특히, 이용 관리 정보와 관련하여 이용 관리 정보 제공 유무에 따라 자원훼손에 대한 책임인식이 다른 것으로 나타났는데, 정보를 제공받은 집단이 제공받지 못한 집단에 비하여 환경 및 자원훼손에 대한 책임인식이 높게 나타나 앞으로 자원훼손 예방에 있어 이용 관리 정보가 중요한 요인으로 파악되었다. 또한, 그와 더불어 이용자 관리 중 법적 규제, 관리사무소의 계도 등도 적극적으로 수용할 것으로 나타나 앞으로 관광지 차원의 이용자 관리방안 정립이 필요한 것으로 나타났다.

저탄소 녹색성장을 위한 템플스테이 활성화방안 -템플스테이 체험전·후의 삶의 질에 대한 인식의 차이를 중심으로- (Activation Programs of Temple Stay for Low Carbon Green Growth)

  • 관광의 발달과 더불어 관광객들에게 다양한 관광상품에 대한 욕구가 발생하였으며, 이에 따라 관광객들의 욕구충족을 위한 여러 관광상품의 개발이 필요하게 되었다. 또한 환경적인 문제의 발생과 더불어 환경을 고려하는 관광상품의 개발이 대두되었으며, 이를 혼합한 관광상품의 발전이 필요하게 되었다. 이에 따라 본 연구에서는 급속도로 발전하고 있는 템플스테이를 재조명해보고, 관광객들의 템플스테이 체험전과 체험후의 삶의 질의 차이를 통하여 저탄소녹색상품으로의 발전가능성을 탐색하고자 하였다. 본 연구의 진행을 위하여 템플스테이 이용객을 대상으로 템플스테이 이용전과 이용후의 삶의 질의 차이를 조사하였으며, 그 결과로는 다음과 같다. 우선 연령대가 높아질수록 참선, 다도 등의 사찰 체험과 불교문화체험에 만족을 하고 있었으며, 삶의 질을 묻는 11개문항 중 2개의 문항을 제외한 9개의 문항에서 유의한 차이를 보이고 있어 삶의 질을 향상하는데 템플스테이 이용이 도움이 되는 것으로 나타났다.

농촌관광개발정책이 농촌지역사회에 미치는 공익적 효과에 관한 연구 (A Study on Public Effect of Rural Tourism Development Project on the Rural Community)

  • Rural tourism has been identified as providing opportunities to revitalize the rural economies since early 2000s. During last decade in South Korea, government has enacted many policies aiming to establish tourism support programs as well as instigating activities between rural and nearby urban districts. In particular, the promotion of the rural tourism has been actively sought in various forms of products and services, such as green tourism village, village festival, one-company one-village campaign and etc. However, in order to prepare effective policies, it is very crucial to identify measureable evaluation criteria that can be used to assess socio-economic situations of the rural districts. Such criteria should be objective, timely and provide insights about living conditions of local residents and relevant properties. They can also be used to evaluate if progress is being made after the policies are implemented. While considerable efforts and resources have been invested to aid the tourism programs in South Korea, we still lack such systematic means to quantify and evaluate its impact on rural districts. In this work, we have applied regional deprivation analysis on well-established community experiential and recreational business in rural villages throughout the country based on three criteria (i.e., population, local commerce, and buildings). Surprisingly, the result shows that the implementation of the community experiential and recreational businesses did not bring any noticeable changes to at least one of the evaluation criteria. We concluded that the current government policies on revitalization of rural tourism at the village scale is insufficient for bringing meaningful socio-economic impacts to rural districts, with rare exceptions.

농산촌 개발마을 사례별 마을개발사업에 대한 지역주민 의식 (Awareness of Local Residents on the Village Development Project According to the Types of Rural and Mountain Village Development)

  • 본 연구의 목적은 농산촌 체험관광마을별로 마을개발사업의 현황과 내용 그리고 이에 대한 지역주민의 의식을 조사함으로써, 향후 산촌에 체험관광 도입 시 정책개발에 필요한 기초 자료를 제공하는 데 있다. 농산촌 체험마을형태인 산촌개발마을, 녹색농촌체험마을, 농촌전통테마마을, 그리고 산촌개발사업이 완료된 마을에 농촌체험마을 사업이 들어간 혼합형 마을의 각 지역주민을 대상으로 면접 설문조사를 실시하였다. 연구결과, 마을개발사업의 결과에 대한 인식에 있어서는 산촌개발마을인 객현리와 녹색농촌체험마을인 부래미마을은 여러 면에서 긍정적 반응을 보인데 반하여, 혼합형 마을인 신론 도원리는 마을개발사업으로 인한 변화기 마을에 거의 없는 것으로 인식하고 있었다. 마을개발사업에 대한 만족도는 주민소득 향상이라는 측면과 가장 높은 상관을 나타내었다. 또한 모든 체험마을의 형태에서 지역주민은 서비스 교육, 리더십 강의 등 교육의 필요성과 참여의향이 높게 나타났고, 녹색농촌체험마을 사업이 실시된 마을에서 마을의 발전방향으로 체험프로그램 개발에 중점을 두어야 하는 것으로 나타났다.

호박분말 효소가수분해물의 항산화활성 (Antioxidant Activities in Enzymatic Hydrolysates of Pumpkin Powder (Cucurbita spp.))

  • 본 연구는 늙은호박, 단호박 및 애호박을 다양한 탄수화물 분해효소로 소화하여 조제한 효소가수분해물의 총 폴리페놀 함량과 항산화 활성을 측정하였다. 조회분, 조단백질 및 조섬유는 애호박이 높았으며, 탄수화물은 단호박이 높았고, 조지방은 서로 비슷하였다. 애호박 분말의 모든 효소처리군의 총 폴리페놀 함량은 늙은호박과 단호박의 가수분해물에 비하여 좀 더 높았다. 애호박 분말의 AMG와 Termamyl 소화로 조제된 효소가수분해물의 DPPH 유리기 소거활성 또한 늙은호박 및 단호박에 비하여 매우 높게 나타났다. 한편, Visozyme 처리 가수분해물을 제외한 늙은호박과 단호박의 대부분 가수분해물은 애호박보다 더 높은 superoxide anion 소거활성을 나타내었다. 애호박 가수분해물(Ultraflo 예외)의 hydrogen peroxide 소거활성은 다른 호박의 효소 분해물 보다 약간 높았으나, hydroxyl radical 소거활성은 모든 호박 품종에서 14% 미만으로 낮았다. Nitric oxide 소거활성은 단호박 및 애호박의 Viscozyme 분해물에서 매우 효과적이었으며, 다른 효소가수분해물의 경우에도 BHT보다는 낮았으나 $\alpha$-tocopherol보다 높은 활성을 나타내었다.

새만금.군산경제자유구역의 생태관광 방향 (A Study on the Ecotourism Policy Direction of Saemangeum.Gunsan Free Economic Zone)

  • Saemangeum is the largest reclaimed land in Korea. Saemangeum is the large scale project responding to the economic demand of globalization, and a government initiated new development business with a vision of global Free Economic Zone(FEZ). Jeollabuk-province conducted a international competition to establish a global-scale, creative development plan and grow the Saemangeum as an international destination of economy, and a world-wide brand. SGFEZ has much to offer in terms of tourists attractions and breathtaking scenery. And tourism is one of the important industry in SGFEZ. Many tourist facilities will be construct in SGFEZ. Environment is the important issue in many field of study. Recent days, green growth come into the spotlight in Korea. But even as SGFEZ prepares for its future global tourists attraction, so much of the tourism policy directions remains unconsidered. The objective of this study was to suggest tourism policy direction, especially concentrated on ecology tourism policy direction of Saemangeum Gunsan Free Economic Zone(SGFEZ).

철도-자전거 연계관광 활성화를 통한 철도 녹색이미지 제고 (Enhancement of the green image of the railroad thorough the connected tour of the railroad and the bicycle)

  • This study is designed to provide a facilitation program of the railroad tourist business that the bicycle is connected with the railroad. The sustainable growth will be achieved thorough the green growth being able to coexist with environment. To deal with the transportation problems -the environmental pollution caused by a large number of cars and the energy depletion, the traffic congestion- in our society is the prerequisites for the green growth. There is the need focusing on the expansion of the green network and the policy implementation of utilizing the bicycle, the formulation of the social consensus for environmental preservation. This provides the opportunity that we create the customer values and reinforce the firm's competitiveness. This study is to propose the plan for accelerating the tourism business connected to the bicycle, and to contribute to the government policy, to boost the green image of the railroad. Approaching in the strategic way to increase the customer's value and environmental preservation, this study will contribute to providing high quality customer service for both of the business performance and the customer satisfaction.

파래 분말을 첨가한 설기떡의 품질특성 (Quality Characteristics of Sulgidduk Prepared with Different Amounts of Green Laver Powder)

  • The aim of this study was to investigate the effects of adding different amounts (0, 4, 8, 12, 16%) of green laver powder to Sulgidduk, a traditional Korean rice cake product, in terms of textural properties and sensory characteristics. During storage, moisture content was reduced less in the green laver-added samples as compared to the control group. With increasing additions of green laver powder, L-values decreased, a-values increased significantly, and b-values decreased; however, no changes were observed in the control group. In the mechanical evaluations, hardness increased less during storage in the green laver added samples than in the control group. Adhesiveness did not differ significantly by the addition of green laver powder. Springiness, cohesiveness, gumminess, and chewiness showed significant differences, and increased or decreased repeatedly during storage. In the sensory evaluations, the 16% green laver group received the highest scores for color, flavor, and taste Moistness and softness were evaluated higher in the green laver groups as compared to the control group; however, moistness, softness, and elasticity did not differ significantly during storage.

지역 농특산물을 활용한 농업공원 공간기본계획 -청송군 '청송사과'를 활용하여- (Space Planning of Agricultural Park with Local Special Products: Case Study on 'Cheongsong Apple Park', Cheongsong-gun)

  • Rural tourism is primarily a domestic tourism activity with visitors traveling to non-urban area. Therefore, local agricultural and special products as one of rural amenity resources have been used revisitation carriers of rural tourism. For these purpose, this study selected Cheongsong-gun in Gyeongsang province, which has been famous for Cheongsong apple and planned space program on that sites as on-farm research. The sites are divided into 6 districts, agricultural production, leisure, cultural space, events or festival, green space, infrastructure for local residents and tourists. Above all, this study led local government to develop related policies using local agricultural and special products, which can be an example to plan for regional development.
