  • This study evaluates the relationship between cone tip resistance ($q_c$) and small-strain shear modulus ($G_{max}$) of cemented sand. For this purpose, a series of miniature cone penetration and bender element tests are performed in calibration chamber specimens with various gypsum contents. Experimental results show that both $q_c$ and $G_{max}$ of sand increase with increasing cementation level as well as relative density and vertical confining stress. However, the relative density and vertical confining stress has more significant influence on $G_{max}$ and $q_c$ of uncemented sand than those of cemented sand. It is observed that the $G_{max}/q_c$ ratio of cemented sand decreases with increasing relative density. This result means that state variables have more affect on $q_c$ than $G_{max}$ of cemented sand. Test results also show that the effect of vertical stress on $G_{max}-q_c$ relation is reduced by cementation effect.

  • This study was conducted to investigate the isoflavone contents including daidzein and genistein in soy sauces made with whole grain soybean Meju(WGSM), comparing with defatted Meju(DM) du.ins fermentation. Total isoflavone contents in 2 soy sauces made with DM, Control and product A, increased with period of fermentation and were 15 and 4.3 times higher after 180 days of fermentation than on the day before fermentation respectively. Meanwhile, 2 soy sauces made with WGSM, product B and C, had the highest amounts with $20.53{\mu}g/g\;and\;19.52{\mu}g/g$ of isoflavones on the day before fermentation respectively, and then decreased with fermentation time. High amounts of isoflavones were detected in 20 days of fermentation of soy sauce which made with WGSM and wheat Meju(product D). Daidzein was the largest amounts in isoflavone contents, regardless of total or free isoflavone types. The level of daidzein increased with fermentation time in 2 soy sauces made with DM, Control and product A, whereas 2 soy sauces made with WGSM, product B and C decreased with fermentation time, instead of increasing of genistein contents.

  • Sterol regulatory element binding factor 1 (SREBF1) and fatty acid synthase (FASN) genes play an important role in the biosynthesis of fatty acids and cholesterol, and in lipid metabolism. This study used polymorphisms in the intron 5 of bovine SREBF1 and in the thioesterase (TE) domain of FASN genes to evaluate their associations with beef fatty acid composition. A previously identified 84-bp indel (L: insertion/long type and S: deletion/short type) of the SREBF1 gene in Korean cattle had significant associations with the concentration of stearic (C18:0), linoleic (C18:2) and polyunsaturated fatty acids (PUFA). The stearic acid concentration was 6.30% lower in the SS than the LL genotype (p<0.05), but the linoleic and PUFA contents were 11.06% and 12.20% higher in SS compared to LL (p<0.05). Based on the sequence analysis, five single nucleotide polymorphisms (SNPs) g.17924G>A, g.18043C>T, g.18440G>A, g.18529G>A and g.18663C>T in the TE domain of the FASN gene were identified among the different cattle breeds studied. Among these, only g.17924 G>A and g.18663C>T SNPs were segregating in the Hanwoo population. The g.17924G>A SNP is a non-synonymous mutation (thr2264ala) and was significantly associated with the contents of palmitic (C16:0) and oleic acid (C18:1). The oleic acid concentration was 3.18% and 2.79% higher in Hanwoo with the GG genotype than the AA and AG genotypes, respectively (p<0.05), whereas the GG genotype had 3.8% and 4.01% lower palmitic acid than in those cattle with genotype AA and AG, respectively (p<0.05). Tissue expression data showed that SREBFI and FASN genes were expressed in a variety of tissues though they were expressed preferentially in different muscle tissues. In conclusion, the 84-bp indel of SREBF1 and g.17924G>A SNP of the FASN gene can be used as DNA markers to select Hanwoo breeding stock for fatty acid composition.

  • The chemical components of radish buds were investigated during the growth stage. The vitamin C and total phenol contents were lowered after 4 days of early sprout growth, and were 22.19 and 4.99 mg%, respectively. These increased according to the growth time, showing the highest value on day 8, 25.85 and 17.87 mg%, respectively. However, these values decreased around day 12, which seemed to be the bud end point. The major free sugar component of the radish buds was glucose, showinged the highest content on day 8. The total organic acid content gradually increased as the growth proceeded. The detected oxalic acid content was only small on day 8. During the early growth stage, the total and essential amino acids contents were 3,020∼3,575 and 1,206∼1,499 mg, respectively. These contents tended to decrease with growth time. Glutamic acid, aspartic acid and alanine were the major amino acid components (39%).
