본 연구는 하이부쉬 블루베리(Vaccinium corymbosum) 'Jersey' 품종을 이용하여 적방 1/3, 적방 1/3 +적화 1/2, 적방 2/3 및 적방 2/3 + 적화 1/2처리 후 무처리 과실의 수확량과 과실 품질을 조사하여 적방 적화 정도에 따른 수량과 과실 크기, 가용성당함량, 산함량, 과실 경도를 분석하였다. 적방 적화 처리는 과립중, 종경 및 횡경에 유의한 과립 비대효과를 가져왔다. 과실 수확량은 무처리와 적방 1/3 처리구에서 가장 높았으며, 그 이외의 처리에서는 과립비대는 이루어졌으나 수확량의 감소가 발생하였다. 무처리와 적방 1/3 처리의 경우 전체 수확량은 비슷하였으나, 적방 1/3 처리구에서는 상품성이 큰 대립의 과실이 차지하는 비율이 무처리에 비해서 큰 것으로 조사되었다. 가용성당함량은 적방과 적화 처리에 따라 수량이 감소한 적방 2/3, 적방 2/3 + 적화 1/2 처리구에서 유의하게 증가하였으나, 산함량과 경도에는 영향을 미치지 않았다. 적방 적화에 따른 영향은 과립 비대와 수량에 유의한 차이를 주었으나 과실품질에는 크게 영향을 미치지 않는 것으로 조사되었다.
In this study, kiwi fruit, which has various medical actions and excellent functionality, was used together with gruels for comparison and analysis of to compare and analyze the changes in physico-chemical quality of a kiwi fruit-gruel according to the amount of kiwi concentrate added to the gruel. Analysis on the sensual quality of kiwi fruit-gruel spread was done to indicate to it was executed to find out the merchandising potential of the preparation and to provide basic data for gruel commercialization. Increasing content of kiwi concentrate decreased the solid content and pH of kiwi fruit, and increased sweetness and viscosity. Significant changes in chromaticity to L(lightness) and a(redness), texture qualities of hardness and cohesiveness, gumminess, springiness, color, flavor, sourness, and sweetness were evident with increasing kiwi concentrate. Concerning overall acceptability and sensory evaluation, 20% softness samples were most preferred. The findings may lead to enhanced medical/nutritional activity and functionality of kiwi fruit-supplemented gruel. The more the kiwi concentrate was added to the gruel, solid content and pH of the kiwi fruit-grue decreased. The sweetness and viscosity of kiwi fruit-gruel increased. For chromaticity to L(lightness) and a(redness) of the gruel decreased and showed significant difference between sample groups. For texture, there were significant changes shown for hardness and cohesiveness the amount of kiwi concentrate added was different, increased There was a significant change between samples for gumminess. As for springiness, there was a significant change between samples. There were significant difference between each sample for color, flavor, sourness, sweetness. For softness, overall-acceptability and sensory evalution 20% group was most preferred based on this study, from the physico-chemical and sensual perspective, 20% group is highly recommended for adding kiwi concentrate into gruel. In conclusion, this study is meaningful as it enhanced the functionality and quality of a gruel by combining kiwi fruit with various medical action and excellent functionality, with Kiwi Fruit and presented a basic material for creating a kiwi concentrate combined gruels.
본 연구는 셀레늄(Se) 처리가 '원황' 배 과실품질에 미치는 영향을 구명하고자 실시하였다. 과실의 색상과 과형은 처리 간에 차이가 없었다. 모든 Se처리는 과실 내 칼륨과 Se함량을 높였으며, 과실의 단맛을 높이고 신맛을 줄이는 결과를 나타냈다. 저온 저장 시 과실의 경도를 조사한 결과, 모든 Se 처리구에서 대조구보다 높은 과실경도를 유지했다. 또한 Se 처리구에서, 높은 과실 비중과 과육 내 치밀한 세포 조밀도를 나타내서, 배 과일의 상품성을 저하시키는 바람들이 현상을 감소시켰다. 전체적으로 Se 처리방법에 따른 과실품질의 유의적인 차이는 크지 않았으나, Se 엽면 살포구에서 보다 더 나은 상품성 과실을 생산할 수 있는 토대를 마련하였다.
Mulberry fruit powder was substituted for wheat flour in pound cake recipes in amounts of 0%(control), 5%, 10%, 15%, and 20%. We measured the specific gravity of the dough, specific loaf volume, dough yield, baking loss, moisture content, pH, color, identified the texture, and conducted a sensory evaluation for each pound cake. Moisture content increased according to the amount of mulberry fruit powder, but specific gravity, dough yield, and pH decreased. Specific loaf volume and baking loss increased as the amount of mulberry fruit powder increased, but not considerably. The chromatic 'L' and 'b' values were reduced as more mulberry fruit powder was added to more pound cake, While the chromatic 'a' value increased. Texture hardness, springiness, gumminess and chewiness decreased as the pound cake contained more mulberry fruit powder. Cohesiveness did not show any considerable differences beteeen the cakes. A sensory evaluation showed a high preference for the pound cake made with 10% mulberry fruit powder.
'한아름' 배는 기본적인 품종 특성이 중소과 범주에 포함되는 품종으로 재배기술의 큰 변화 없이도 고품질의 중소과 생산이 가능할 것으로 예상되는 품종이다. 따라서, 본 연구에서는 '한아름' 품종을 대상으로 중소과로의 활용 가능성을 알아보고, GA 처리와 비교하여 고품질의 중소과 생산이 가능한 최저 과중 기준 설정하고자 하였다. 과실 품질인자간 상관분석 결과, 무처리구와 GA 처리구에서 공통적으로 과중과 당도, 과중과 경도가 높은 상관관계가 있어 각 처리구의 당도와 경도의 관찰을 통한 과중의 예상이 가능하였다. 또한, 당도와 경도는 소비자 선호도를 예측하는데 유용한 지표로 확인되었으며, 당도가 $11.6^{\circ}Bx$ 이상, 경도가 25.6N 이하의 과실이 상품성이 높은 것으로 조사되었다. 관능평가를 통해 도출된 품질 기준을 각각 과중과의 회귀분석 결과에 적용한 결과, 무처리구는 과중 436g 이상의 과실이 당도와 경도의 품질 기준을 충족하였으며, 품질 균일도 또한 높아 436g 이상의 과실을 수확하면 고품질의 중소과 생산이 가능할 것으로 판단되었다. GA 처리구에서 당도와 경도의 품질 기준을 모두 충족시키는 최소 과중은 620g으로, 중소과 범위에서는 품질이 낮고 불균일하여 고품질의 중소과 생산을 목적으로 재배할 경우, GA 처리는 지양해야 할 것으로 판단되었다.

Fruit-specific promoters play an important role in the improvement of traits, such as fruit quality through genetic engineering. In tomato, the development of fruit-specific promoters was previously reported, but less attention has been paid to the promoters involved in the fruit development stage. In this study, we characterized the gene expression patterns of tomato alcohol dehydrogenase 2 (SlAdh2) in various tissues of wild-type tomato (cv. Ailsa Craig). Our findings revealed that SlAdh2 expression levels were higher in the developing fruit than in the leaves, stems, and flowers. The ProSlAdh2 region, which is expressed at different stages of fruit development, was isolated from tomato genomic DNA. Following this, it was fused with a β-glucuronidase reporter gene (GUS) and introduced into wild-type tomato using Agrobacterium-mediated transformation to evaluate promoter activity in the various tissues of transgenic tomato. The ProSlAdh2:GUS promoter exhibited strong activity in the fruit and weak activity in the stems, but displayed undetectable activity in the leaves and flowers. Interestingly, the promoter was active from the appearance of the green fruit (1 cm in size) to the well-ripened stage in transgenic tomatoes, indicating its suitability for transgene expression during fruit development and ripening. Thus, our findings suggest that ProSlAdh2 may serve as a potential fruit-specific promoter for genetic-based improvement of tomato fruit quality.
Hyperspectral reflectance and fluorescence scattering have been researched recently for measuring fruit post-harvest quality and condition. And they are promising for nondestructive detection of fruit quality. The objective of this research was to develop a model, which measure the quality of apple by using hyperspectral reflectance and fluorescence. A violet laser (408 nm) and a quartz tungsten halogen light were used as light sources for generating laser induced fluorescence and reflectance scattering in apples, respectively. The laser induced fluorescence and reflectance of 'Golden Delicious' apples were measured by using a hyperspectral imaging system. Fruit firmness, soluble solids and acid content were measured using standard destructive methods. Principal component analyses were performed to extract critical information from both hyperspectral reflectance and fluorescence data and this information was then related to fruit quality indexes. The fluorescence models had poorer predictions of the three quality indexes than the reflectance models. However, the prediction models of integrating fluorescence and reflectance performed consistently better than the individual models of either reflectance or fluorescence. The correlation coefficient for fruit firmness, soluble solid content, and tillable acidity from the integrated model was 0.86, 0.75, and 0.66 respectively. Also the standard errors were 6.97 N, 1.05%, and 0.07% respectively.
The quality of Yukbo strawberry (Fragaria ananassa Duch.) fruit declines rapidly after harvest. Therefore, we examined the effects of nitric oxide (NO) on its respiration rate, quality, and shelf life. Strawberries were fumigated for 5 hr at 0, 50, 100, 200, or $500\;{\mu}L/L$ NO atmosphers, followed by a hold at $18^{\circ}C$ in air. Treatment with NO delayed the onset of ethylene production ad reduced respiration, which at $18^{\circ}C$ resulted I a maintained quality and prolonged shelf life. The NO-treated strawberries were also firmer and had a lower incidence of disease than the untreated fruit. The effect of NO on fruit quality was dose-dependent. Strawberries that were treated with low and high concentrations of 50 and $500\;{\mu}L/L$ No, respectively, had severe disease incidence and were of poor quality. Treating with NO at a concentration of $200\;{\mu}L/L$ appeared to slow down the ripening and senescence of fruit stored at $18^{\circ}C$. Calyx browning, respiration, and rot development progressed more quickly in strawberries treated with $500\;{\mu}L/L$ NO compared to those treated with $200\;{\mu}L/L$ No.
Previous studies have addressed the management of phyllosphere pathogens by leaf and root-associated microbes. The present study evaluated the effect of the foliar application of three strains of Bacillus spp. on plant growth and fruit quality. The application of a bacilli spore preparation significantly improved leaf growth parameters such as leaf thickness and photosynthesis capacity, indicating that bacilli treatment directly promoted leaf growth. In addition, foliar treatment resulted in an improvement in the key indicators of fruit quality including water, glucose, and sucrose contents. The present results suggest that foliar spraying of beneficial bacilli is a potential treatment of wide application for the improvement of apple quality. Foliar application of bacilli preparation as effective plant growth-promoting rhizobacteria broadens the spectrum of their availability for orchard application.
황사가 과수의 착과와 과실품질에 미치는 영향을 분석하기 위하여 황사 발원지에서 채취한 황토(losses)를 이용하였다. 우리나라에서 포집된 황사와 황사발원지에서 채취한 황토의 화학적 특성을 분석한 결과, 우리나라 평균 밭토양보다 알칼리성이 강하고, 유기물 함량이 높았으며 다량의 치환성 양이온 중 Ca의 함량이 높은 수준이었다. 사과, 배, 복숭아 3 과종의 개화기에 황토를 처리한 결과, 과총 착과율과 과실 당 종자수에서 무처리와 차이가 없었으며, 적숙기에 수확한 과실의 과중, 당도, 과형에서도 처리 간에 차이를 나타내지 않았다. 그러나 본 연구에서는 황사 대신 황토를 처리하였고, 개화기에 인위적으로 살포한 것으로서 매우 제한적인 결과이며, 실제 황사의 발생빈도, 지속시간, 밀도 그리고 황사 발생기간의 기상조건에 따라 과수의 결실과 과실특성에 줄 수 있는 영향이 달라질 수 도 있을 것으로 생각된다. 또한 황사 내에 포함된 각종 세균, 곰팡이, 미생물의 영향은 본 실험에서 고려하지 못하였다.
