The Effects of Surfactants Including Ginseng Saponins on the Gastric Enzyme-Catalyzed Hydrolysis (인삼(人蔘) 사포닌을 비롯한 계면활성제(界面活性劑)가 위장관내(胃腸管內)의 단백질(蛋白質) 가수분해효소(加水分解酵素) 반응(反應)에 미치는 영향(影響))

  • Objectives : This study was conducted to investigate the effects of ginseng saponins and commercial surfactants such as Triton X-100, sodium deoxycholate, and sodium dodecyl sulfate on the gastric enzyme-catalyzed hydrolysis. Methods : Saponins (a surface-active plant component) from fresh ginseng root were extracted to examine its effect on the gastric enzyme-catalyzed hydrolysis. Commercial surfactants such as Triton X-100, sodium deoxycholate, and sodium dodecyl sulfate were also employed in the hydrolysis system to compare their effects with that of the ginseng saponins. The effects of surfactants on the gastric enzyme-catalyzed hydrolysis were measured by using a spectrophotometer. A spectropolarimeter was used to examine the conformational change of enzymes and substrates by the addition of ginseng saponins into the system. Results : Both the tryptic and the peptic digestion of milk casein or eggalbumin were slightly improved with an increase in the amount of ginseng saponins in the system. Triton X-100 showed an effect similar to that of ginseng saponins, while sodium dodecyl sulfate and sodium deoxycholate diminished the hydrolysis. Circular dichroism spectra of enzymes and substrates was significantly changed by the addition of ginseng saponins into the system. Conclusions : These results show that ginseng saponins affect positively the gastric enzyme-catalyzed hydrolysis, and suggest that the digestion of substrates by gastric enzymes is affected by the change of enzyme conformation by ginseng saponins.

Effects of Early Weaning and Protein Intake on Organ Growth, Metabolism and Physiological Functional in Rats (조기 이유와 단백질의 양적.질적 섭취가 흰쥐의 기관성장 , 질소대사 및 생리기능에 미치는 영향)

  • This study was conducted to investigated the short-term effects of early weaning and protein intake on organ and cell growth, nitrogen metabolism and physiological functions of rats. Five groups of early weaned rats separated from the dam on the 15th day postpartum were each given one five diets consisting of either one of the three levels of casein-low(8%), -normal (16%), and -high(32%), or a normal level (16%) of isolated soy protein(ISP) or egg yolk protein, for 7 days. The normal weaned rats were fed maternal breast milk for three weeks from birth. On the 22nd day postpartum , all the rats were sacrificed . The weight gain of the early weaned rats, especially the ones fed high protein, was observed to be significantly lower than that of the normal weaned rats. By the 15th day, of early weaning and especially in the ISP-fed rats, the total DNA contents of liver and kidney, which may be said to represent an index of cell numbers, significantly decreased, but their fresh and dry weight and protein/DNA ratio, allegedly representing an index of cell size, significantly increased , not affecting the cell number and cell size of brain. There were no differences in total serum protein and albumin concentrations between early and normal weaned rats. In the early weaned rats observed , the serum urea N and $\alpha$-amino N concentrations significantly increased in high protein-fed rats, and decreased in low protein-fed rats. Another observation was that no significant difference was noticed as regards to serum GOT activity, total bilirubin, uric acid, and creatinine concentration, which may represent indices of liver and kidney functions, among rat groups, GPT activity was an exception . These results suggest that premature weaning and the quality and quantity of dietary protein significantly affect organ and cell growth and nitrogen metabolism but does not seriously affect physiological functions in the neonatal development of rats.

Diet Patterns and Risk of Squamous Cell Oesophageal Carcinoma: A Case-control Study in Uruguay

  • Background: Oesophageal cancer presents high incidence rates in the so-called Brazilian-Uruguayan belt. Materials and Methods: The present study included 1,170 participants (234 cases and 936 controls) which were analyzed by unconditional multiple logistic regression in order to examine risk of oesophageal squamous cell carcinoma (OESCC) associated with several food groups. Results: Boiled red meat (OR 2.59, 95%CI 1.69-3.97), lamb meat (OR 1.64, 95%CI 1.07-2.51), processed meat (OR 1.49, 95%CI 1.01-2.21), whole milk (OR 1.78, 1.19-1.68), fresh vegetables and fruits (OR 0.42, 95%CI 0.27-0.63), mate consumption (OR 2.04, 95%CI 1.32-3.16), and black tea (OR 0.10, 95%CI 0.04-0.28) were significantly associated with risk of OESCC. Conclusions: Hot beverages (mate) and hot foods (boiled meat) appear to be important determinants in the risk of OESCC, allowing the penetration of carcinogens in tobacco and alcohol into the oesophageal mucosa.

Determination of Riboflavin Content in Fishes (어육중의 riboflavin 함량의 측정)

  • A slightly modified method of Rashid and Potts(1980) to determine riboflavin in milk in which lead acetate was used as a precipitant was employed in tile present study to test applicability to determine that of fish as well. The lead acetate method was found to be sensitive, simple, inexpensive and rapid compared to the modified A.O.A.C. method by Cordon et al. (1979). But higher riboflavin values were obtained in this study than those reported so far. The riboflavin contents of 9 white fleshed fishes were in the range of $0.29\~0.48mg$ per 100g fresh sample. Linear regression equation Y=125.70X+0.71 (R=0.9993) was obtained for the calculation of riboflavin content in the white fleshed fish. Y is the concentration of riboflavin in the final solution to be chocked its OD at fluorometer and X is the dial reading of fluorometer. The stability of riboflavin as the freshness changes during icing storage$(at\;0^{\circ}C)$ was studied with file fish. During the initial stage of storage, the riboflavin content was found to by increased by $14\%$, but the difference was not statistically significant (p>0.05). K-value and VBN-value were increased along with storage time, but Proximate composition was not changed significantly during entire storage of 18 days.

Study on Eating Habits and Food Preference for Breakfast of Elementary, Middle, or High School Students in the Incheon Area (인천지역 초, 중, 고등학생의 아침식사 섭취 실태 및 식품 기호도 조사 연구)

  • The study surveyed the dietary behavior, food intake, and food preference for breakfast of elementary, middle, or high school students, a total of 354 boys and 305 girls. The students skipped breakfast due to no appetite, followed by no time. Elementary school students ate grains and potatoes more often than middle or high school students(p<0.05), and bap was the most frequently consumed cereals, with juk and tteok as the least. High school students ate meat, ham, sausage and boiled fish cake (eomuk) more often than the elementary or middle school students(p<0.05). Middle school students ate milk and dairy products as well as vegetables and fruits more often(p<0.05) than other foods. Preference for fish and fresh vegetables and salad was significantly high in middle school students. The score of dietary behavior was the highest in elementary school students, followed by middle and high school students(p<0.001). As the students advanced to the upper grade schools, breakfast skipping increased, with lowered dietary behavior scores. The results suggest that a variety of breakfast menus and recipes should be developed at home and schools by considering the preference of students in order to reduce breakfast skipping and to improve their satisfaction with breakfast.

The Impact of Proteolytic Pork Hydrolysate on Microbial, Flavor and Free Amino Acids Compounds of Yogurt

  • The aim of this study was to investigate the influence of proteolytic pork hydrolysate (PPH) on yoghurt production by Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus. Fresh lean pork was cut into pieces and mixed with deionized water and dealt with protease, then the resulting PPH was added to milk to investigate the effects of PPH on yoghurt production. The fermentation time, the viable cell counts, the flavor, free amino acids compounds, and sensory evaluation of yoghurt were evaluated. These results showed that PPH significantly stimulated the growth and acidification of the both bacterial strains. When the content of PPH reached 5% (w/w), the increased acidifying rate occurred, which the fermentation time was one hour less than that of the control, a time saving of up to 20% compared with the control. The viable cell counts, the total free amino acids, and the scores of taste, flavor and overall acceptability in PPH-supplemented yoghurt were higher than the control. Furthermore, the contents of some characteristic flavor compounds including acids, alcohols, aldehydes, ketones and esters were richer than the control. We concluded that the constituents of PPH such as small peptide, vitamins, and minerals together to play the stimulatory roles and result in beneficial effect for the yoghurt starter cultures growth.

  • This study was investigated the herbage productivity and nutrient contents of corn (Suweon 19 and Kwanganok) and sweet sorghum (Ramiki sorgo and Silage sorgo) at the stage of maturity (10-DBS, silking, milky and dough stages) to identify the utility value of sweet sorghum as a substituting crop for corn. The silage materials (dough stage) were chopped and were storaged for 90 days in polyethlene bag with O.lmm thickness. Chemical composition, nitrogen content and in vitm dry matter digestibility were evaluated. Also, daily intake and palatability were checked in the feeding trial with four male sheep in average weight about 57kg. Both fresh and dry matter yield of corn and sweet sorghum were increased as the maturity processed (P< 0.05), and sweet sorghum showed higher total yield potential than corn. Crude protein content of the cultivars was decreased as the maturity was processed (P< 0.05). Neutral detergent fiber (NDF) content of the cultivars, in general, showed highest at silking stage, followed by 10 days before silking (10-DBS), and milky and dough stages (Pi0.05) in order. Acid detergent fiber (ADF) content was increased as the maturity processed, and it showed the highest value at milk stage. However, the contents of ADF in sorghum plant was decreased during the late maturity. Crude protein content of the silage was not significantly different among cultivars used, while NDF content was highest in Ramiki sorgo, followed by Silage sorgo, Kwanganok and Suweon 19. In v i m DM digestibility of the silage was highest in Kwanganok, followed by Suweon 19, Silage sorgo and Ramiki sorgo. Total N content of the silage was highest in Ramiki sorgo, followed by Suweon 19, Silage sorgo and Kwanganok. DM intake of the silage was highest in Ramiki sorgo, followed by Suweon 19, Silage sorgo and Kwanganok and it was closely related to the palatability value.

Screen of Green Manure Crops for Cultivation on Agricultural Land with Spring Season in the Central Regions of Korea

  • The green manure crops are returned to soil when the plants are still green. The green manure crops play a role in reducing chemical fertilizers, improvement of soil fertility, reduction of soil erosion, weed control, and landscapes effect. Typical green manure crops are barley green manure, hairy vetch, chines milk vetch and clovers. We sowed 49 species of green manure crops in upland soil to increase the usage of green manure crops. We searched the effectiveness of green manure yield, C/N ratio, soil mulching, and landscape effect. The green manure crops that have $5tonha^{-1}$ or more of green manure yield (fresh weight) were 6 gramineous crops, 4 leguminous crops, and 3 others. Green manures yield in a short growth period was higher in gramineous crops than leguminous crops. Among the green manure crops, 3 gramineous crops, 12 leguminous crops, and 3 others were under 25 in C/N ratio. Seven gramineous crops, 8 leguminous crops, and 5 others were over 50% of soil covering rate. Green manure crops that have beautiful flowers were in total 16 kinds, such as 4 gramineous crops, 6 leguminous crops, and 6 others. In result, based on green manure yield and C/N ratio, excellent species in the green manure crops were 4 species (triticale, 2 kinds of hairy vetch, and lupin). Green manure crops that were effective at soil mulching were 20 species, like hairy vetch, oats, sorghum, phacelia, buckwheat, etc. Buckwheat, crotalaria, mustard plant, phacelia, and etc. could be available for landscape crops.

The Investigation and Comparison of Sensory Attributes of Smear-Ripened and Mold-Ripened Cheeses; a Review (도포 숙성 치즈와 곰팡이 숙성 치즈의 관능적 특성 비교 분석에 관한 총설)

  • The objectives of this review are to be aware of the differences between the smear-ripened and mold-ripened cheeses and to compare the sensory attributes of smear-ripened and blue-vein cheeses. Sensory attributes of cheese occupy a prominent place for the desirable overall quality of smear-ripened and blue-vein cheeses. Smear-ripened cheeses characterized by a smooth and brittle texture. Furthermore, smear-ripened cheeses have common grittiness characteristics, also slightly salty and sour flavor compared to blue-vein cheeses. Blue-vein cheeses are characterized by a softer, creamy texture and stronger smells when goat milk is used. Blue-vein cheeses have a fresh, clean, somewhat salty and acid with a slightly bitter tastes compared to smear-ripened cheeses. Finally, the differences in sensory attributes of smear-ripened and blue-vein cheeses such as texture, aroma, and flavor, can make them useful to determine the quality of cheeses.

Effect of Natural Additives on In Vitro Growth Medium of Strawberry 'Seolhyang' (배지내 천연유기물 첨가가 딸기 "설향" 배양묘 기내 생육에 미치는 영향)

  • Strawberry which is the genus Fragaria under family Rosaceae is one of the most important fruit plants for both fresh consumption and food processing in the temperate and subtropical countries. Propagation of strawberry is achieved either through runners or by in vitro micropropagation. Meristem tips, generally obtained from runners of virus-free plants, are commonly used to establish in vitro cultures, which are employed for mass propagation or as a source of plant material for regeneration and transformation experiments. This study was conducted to determine the optimal natural additives strength to improve sprouting shoot rate of apical meristem of strawberry 'Seolhyang'. Strawberry apical meristem at size (0.2 mm to 0.3 mm) with leaf primordials were cultured on the 1/3MS(Murashige & Skoog) medium supplemented with five natural additives such as coconut milk, maple sap, banana powder and peptone. The sprouting ratio and growth characteristics were evaluated after eight weeks after in vitro culture. Shoot ratio of 'Seolhyang' apical meristem was 72.9% in 1/3MS medium supplemented with maple sap. On the other hand, the low shoot ratio was observed 47.7% in 1/3MS medium supplemented with banana powder. Shoot length was different as natural additives but numbers of leaf was not significantiy different among the natural additives. As a result, the sprouting ratio and plant growth were enhanced effectively in 1/3MS medium with maple sap compared to the others.
