유통 사료 중 잔류농약 다성분동시분석법 확립 및 모니터링 (Analytical Method Validation and Monitoring of Pesticide Residues in Animal Feeds)

  • 사료의 안전성은 우리가 먹는 축산식품 및 그 가공품의 안전성과 직결된다. 따라서 이 연구의 목적은 1) 사료 중 관리대상 농약의 동시분석법을 확립하고, 2) 국내외 사료 중 농약 잔류실태를 조사하여 원료부터의 축산식품의 안전성을 확보하고자 하였다. 농약 잔류실태 조사를 위해 국내 유통 사료 126점을 수거하였고, 농약잔류허용기준이 설정된 농약 121성분 중 동시분석이 가능한 105성분에 대해 분석법을 확립한 후 농약 잔류실태를 조사하였다. 농약 잔류실태 조사 결과에 따르면, 126점의 사료 중 106점(84.1%)이 불검출이었고, 20점(15.9%)에서 7성분이 농약잔류허용기준 이내로 검출되었다. 검출빈도가 높은 농약으로는 각각 5점에서 검출된 pirimiphos-methyl과 cyproconazole이었다. 이 밖에도 propiconazole, azoxystrobin, tricyclazole 등이 검출되었다. 이 결과들은 2015년 국내 유통 사료가 잔류허용기준 이하로 안전하게 관리되고 있음을 보여준다. 그럼에도 불구하고, 사료의 안전성 강화 및 불량사료 원천차단을 위해 지속적인 잔류 실태조사가 필요하다.

식품영양정보 제공 인터넷 사이트 평가 (Evaluation for Food and Nutrition Information Sites on the Internet)

  • This study was done to analyze the contents of food and nutrition information sites on the internet. In analysis, 276 web sites were used. Web sites from 3 internet search engines(Yahoo, Empas, Naver) were selected on the date of July 15th, 2004. The trained panels evaluated web sites' contents by the assessment tools using 3-point scale(2:strongly agree, 1:agree, 0:disagree). The contents classified by topics were functional foods(46.4%), cuisine and cooking(38.4%), food sanitation and safety(30.4%) and so on. Operators of web sites were individual(35.9%), company(30.4%) and public institution(33.7%). About 89.5% of web sites were operated for unspecified people. Contents of the web sites were well established especially in consistency in title and contents(1.6), scientific basis of explanations(1.2) and benefit of information(1.2) and so on while not well established in providing relevant sites(0.7), providing contact address and feed back mechanism(0.7) and so on. Web sites operated by public institutions are rated significantly higher than web sites operated by individual or company. In conclusion, in order to qualitatively improve food and nutrition information on the internet, continuing monitoring and evaluation are highly required and web sites operated by public institutions shall be developed further.

인천, 춘천 지역 학교급식 메뉴의 당 함량 및 당 섭취량 실태조사 (Monitoring the Sugar Content and Intake in School Meals from Incheon and Chuncheon)

  • 본 연구에서는 인천과 춘천지역에서 각각 초등학교 4개 학교와 중학교 4개 학교 등 총 16개 학교를 선정하여 주식, 부식 및 후식 등 1334건의 메뉴에서 당 함량 및 당 섭취실태를 조사하였다. 학교급식을 통한 섭취량은 전체 평균 $410.9{\pm}85.8g$/인이었다. 전체 급식메뉴의 평균 당 함량은 $1.93{\pm}3.35g/100g$이었으며, 급식메뉴를 주식, 부식 및 후식으로 나누었을 때 평균 당 함량은 후식류($7.21{\pm}6.32g/100g$)>부식류($1.69{\pm}2.44g/100g$)>주식류($0.32{\pm}0.77g/100g$) 순으로 나타났다. 평균 당 함량은 주식류에서 면류>죽류>일품식밥류 순으로 높았고, 부식류에서는 소스류>튀김류>절임류>무침 나물류>볶음류 등의 순으로 높게 나타났다. 당 섭취량 또한 후식류($4.63{\pm}5.11g$)>부식류($0.64{\pm}1.01g$)>주식류($0.55{\pm}1.48g$) 순으로 높게 나타났다. 급식 중 당 섭취량은 주식류에서는 일품식밥류의 당 섭취량이 높았고, 부식류에서는 튀김류>볶음류>소스류>조림류의 순으로 당 섭취량이 높았다. 후식류에서는 음료와 유제품류의 당 함량과 섭취량이 다른 음식군에 비해 높았다. 급식일별로 점심 급식 한 끼에 섭취하는 평균 당 섭취량은 초등학생 $4.03{\pm}3.67g$/인, 중학생 $6.97{\pm}6.59g$/인이었으며, 전체 평균 당섭취량은 $5.50{\pm}5.53g$/인으로 한국인 총당류 섭취기준치와 비교했을 때 높지 않은 수준으로 나타났다. 그러나 Kang과 Yoon(8)의 연구결과 초등학생의 91.5% 가 주로 하루에 1-2회 간식을 섭취하며, 선호하는 간식이 과자, 과일 또는 과일주스, 빵 또는 케이크류 순으로 나타나 학생들의 간식을 통한 당 섭취는 높을 것으로 사료된다. 따라서 학교급식을 통해 단 맛에 길들여지지 않으며 올바른 식습관을 형성하도록 영양교육할 필요가 있다. 또한 학교별로 조리사와 조리법에 따른 당 함량에 차이를 보임에 따라 당 함량을 줄일 수 있는 조리법의 개발, 통일된 조리법의 보급 및 조리사의 교육과 급식 식단 구성 시 당 섭취량이 높았던 음식군을 중복하지 않고, 후식류로 과일류를 제공하는 등 메뉴의 조합에 주의함으로써 학생들의 당 섭취량을 줄일 수 있을 것으로 사료된다.

유통 콜라겐 제품 중 유해중금속 함량 모니터링 (Monitoring of hazardous heavy metals in circulated collagen products in Korea)

  • 국내 유통 중인 콜라겐 제품 120건을 대상으로 중금속 4종(납, 카드뮴, 비소, 수은) 함량에 대해 조사하였다. 수은은 금아말감화법을 이용한 수은분석기로 분석하였고 납, 카드뮴, 비소는 ICP-OES를 이용하여 분석하였다. 검사 결과 납의 평균 함량은 0.097±0.055 mg/kg이었고 건강기능식품, 기타가공품, 음료류, 과·채가공품에서 각각 평균 0.108±0.052mg/kg, 0.084±0.053 mg/kg, 0.131±0.047 mg/kg, 0.149 mg/kg 농도로 검출되었다. 카드뮴의 평균 함량은 0.026±0.011 mg/kg이었으며 검출된 제품은 모두 건강기능식품이었다. 비소의 평균 함량은 0.097±0.048 mg/kg이었고 건강기능식품, 기타가공품, 과·채가공품에서 각각 평균 0.091±0.055 mg/kg, 0.133 mg/kg, 0.086 mg/kg 농도로 검출되었다. 수은의 평균 함량은 0.0025±0.0016 mg/kg으로 건강기능식품, 기타가공품, 과·채가공품, 캔디류에서 각각 평균 0.0012 mg/kg, 0.0028±0.0018 mg/kg, 0.0013 mg/kg, 0.0031 mg/kg 농도로 검출되었다. 중금속 기준·규격이 있는 음료류(납 0.3 mg/kg, 카드뮴 0.1 mg/kg) 및 캔디류(납 0.2 mg/kg)는 모두 기준 이하로 검출되어 적합하였다. 기준·규격이 없는 제품도 국내외 식품의 중금속 기준과 보고된 식품 중금속 함량과 비교하였을 때 비교적 안전한 수준이라고 판단되었다.

Genetic and Epigenetic Biomarkers on the Personalized Nutrition

  • Nutritional genomics is a new field of study of how nutrition interacts with an individual's genome or individual responds to individual diets. Systematic approach of nutritional genomics will likely provide important clues about responders and non-responders. The current interest in personalizing health stems from the breakthroughs emerging in integrative technologies of genomics and epigenomics and the identification of genetic and epigentic diversity in individual's genetic make-up that are associated with variations in many aspects of health, including diet-related diseases. Microarray is a powerful screen system that is being also currently employed in nutritional research. Monitoring of gene expression at genome level is now possible with this technology, which allows the simultaneous assessment of the transcription of tens of thousands of genes and of their relative expression of pathological cells such tumor cells compared with that of normal cells. Epigenetic events such as DNA methylation can result in change of gene expression without involving changes in gene sequence. Recent developed technology of DNAarray-based methylation assay will facilitate wide study of epigenetic process in nutrigenomics. Some of the areas that would benefitfrom these technologies include identifying molecular targets (Biomarkers) for the risk and benefit assessment. These characterized biomarkers can reflect expose, response, and susceptibility to foods and their components. Furthermore the identified new biomarker perhaps can be utilized as a indicator of delivery system fur optimizing health.

남자대학생의 흡연 및 식사습관에 따른 인체 임파구 SCE 빈도 수의 변화 (The Variations of the SCE Frequency of Human Lymphocytes by Smoking Habits and Dietary Factors in College Students)

  • Sister chromatid exchange(SCE) has recently become a common cytogenic assay system for detecting exposure to chemical mutagens and carcinogens. One application of SCE is the monitoring of populations believed to be exposed to such agents. A cross-sectional study of SCE frequency in peripheral blood lymphocytes from 40 college students aged 18 to 26 years was conducted. The effects of cigarette smoking alcohol and coffee consumption, dietary and environmental factors on SCE were assessed. A mean spontaneous SCE per cell for the smokers(4.88$\pm$0.17). The SCE levels of the smokers were associated with the personal smoking amount ; the observed increase in the SCE frequency correlated with the number of cigarettes smoked per day (P<0.05). There was no effect of age on SCE. There were positive linear relationship between SCE and food frequency score of meat and fish group (P<0.05) or instant food group(P<0.01) in non-smokers. But in smokers, a significant inverse association between SCE and food frequency score of green and yellow vegetable group(P<0.05). Alcohol intake produced a significant increase(P<0.01) of SCE in comparison with the mean SCE for those not drinking alcohol in combine subjects. Other dietary parameters, including coffee intake, use of artificial sweetners and processed foods, did not show any increase in SCE. SCEs were inversely related to blood glucose and serum cholesterol levels of the combine subjects. No significant correlations were found between SCE frequencise and any other hematological parameters of the subjects.

직장인의 건강행위와 운동프로그램 요구도 (Health Behaviors and Perceived Needs for Exercise Programs among Adults in the Workforce)

  • Purpose: The purpose of this study was to examine perceived needs for exercise programs among adults in the workforce based on sociodemographic characteristics and health-related behaviors. Methods: The sample consisted of 182 office workers, sales workers, and service workers recruited at a worksite in Seoul (97 males and 85 females, Mean age=34.6, SD=7.71). Study participants completed a structured questionnaire on health-related behaviors and areas of needs for exercise programs. Analysis of data was performed using descriptive statistics and chi-square tests. Results: Workers with greater interest in exercise reported to engage in exercise. Significant differences were observed in goals of exercise, preferred exercise, preferred methods for delivery of exercise, preferred exercise monitoring, and social support for exercise maintenance according to age, sex, marital status, education, commuting time, occupation, alcohol use, smoking, and current participation in exercise. There were no differences in areas of exercise program needs by consumption of high calorie foods. Conclusion: Public health nurses can use these findings for development and implementation of tailored exercise programs to promote health for workers whose physical activity is insufficient.

Total Diet Studies as a Tool for Ensuring Food Safety

  • With the diversification and internationalization of the food industry and the increased focus on health from a majority of consumers, food safety policies are being implemented based on scientific evidence. Risk analysis represents the most useful scientific approach for making food safety decisions. Total diet study (TDS) is often used as a risk assessment tool to evaluate exposure to hazardous elements. Many countries perform TDSs to screen for chemicals in foods and analyze exposure trends to hazardous elements. TDSs differ from traditional food monitoring in two major aspects: chemicals are analyzed in food in the form in which it will be consumed and it is cost-effective in analyzing composite samples after processing multiple ingredients together. In Korea, TDSs have been conducted to estimate dietary intakes of heavy metals, pesticides, mycotoxins, persistent organic pollutants, and processing contaminants. TDSs need to be carried out periodically to ensure food safety.

국내 중소식품업체의 포장·디자인 기술 관련 현황 분석 (Survey on Status of Food Packaging and Design for Status of Small and Medium Domestic Food Enterprises)

  • The purpose of this study was to analyze the current status relating to food packaging and design for status of small and medium food enterprises. A company survey was conducted from June to October, 2015 and targeted 1300 small and medium domestic food enterprises. Finally, a total of 1300 (recovery rate 100%) useable data were selected. Statistical analyses were performed on the data utilizing the SPSS PASW Statistics 18.0 for Windows, such as descriptive statistics and frequency analysis. According to the results, awareness and importance of food labeling were high, but performance of English inscription of product name was relatively low. The most important reason for food labeling was 'providing correct information on food' 910 (72.8%). Accordingly, a system which can provide the latest information by continuously monitoring mandatory disclosure requirements for types of foods in individual countries is needed.

두부 산업의 생산 실태 분석 (The analysis on the production of bean curd industry in Korea)

  • In Korea, bean curd is one of most important foods and bean curd industry keeps growing. Korean bean curd industry has complicated structure with a few large-scale manufacturers and many small-size manufacturers, which causes difficulty in figuring the strategy for the promotion of bean curd industry. In order to solve this problem, more specific studies are required. The purpose of this paper is to analyze the production sector of Korean bean curd and to present the implications for the promotion of Korean bean curd industry. Survey analyses to producers was conducted for this research. The results of studies present a few findings: First, the solution for the easier purchase of raw material (soybean) should be prepared. Second, the support for marketing as well as R&D to small-size manufacturers is required. Third, the monitoring and controlling of unfair trading in bean curd market should be strengthened. Forth, the certification programs for the bean curd products should be managed.
