GABA 미강 및 미강추출물 첨가에 의한 식빵의 텍스처 및 저장성의 변화 (Changes in physical characteristics of white pan bread by addition of GABA rice bran and its extract)

  • 본 연구에서는 물리적 처리로 GABA 함량을 증가시킨 미강 및 이의 열수 추출물을 밀가루 중량의 20%까지 첨가하여 식빵을 제조하고, 물리적 특성, 저장 중 텍스처의 변화 및 잔유 GABA 함량를 분석하였다. 부피와 비용적율은 대조구에 비해 GABA 미강 첨가구는 감소한 반면, 미강추출물 첨가구는 약간 증가하거나 유지되었으며, 무게는 대조구와 첨가구에 차이가 없었다. 색도는 대조구 대비 GABA 미강과 미강추출물의 첨가량의 증가에 따라 L값은 감소하고, a와 b값은 증가하여 색이 진해지는 현상을 나타냈었다. 저장 중 빵 시료는 밀폐된 용기에 보관되어 수분함량의 변화는 2%이하로 아주 미미하였으나, GABA 미강 및 미강추출물 첨가로 수분감소를 다소 줄일 수 있었다. 경도(hardness) 및 씹힘성(chewiness) 등의 텍스처는 시간이 경과함에 따라 모든 시료에서 증가 되었으나, 경도는 대조구에 비해 첨가구의 증가 폭이 낮게 나타났으며, 특히 미강추출물 첨가구에서는 대조구에 비해 2배 이상의 낮은 경도를 보였다. 탄력성(springiness)은 대조구와 첨가구에서 거의 차이가 없으며, 저장 기간이 경과 후에도 차이가 거의 없었다. 빵의 GABA 함량은 GABA 미강 및 미강추출물 첨가로 대조구 대비 40배 가량의 증가 효과를 나타내어, GABA 일부가 열에 의해 손실되었으나 상당량 잔유함을 나타냈다. 이와 같은 결과를 종합하여 볼 때 GABA 미강을 직접 첨가하는 것보다 미강추출물을 첨가하여 제빵하는 것이 적절하며, 미강추출물을 5-20% 첨가하여 빵의 저장성이 향상될 수 있으며, GABA 첨가 효과로 건강기능성이 우수한 빵을 제조할 수 있을 것으로 생각된다.

한국 정신요양시설의 급식 서비스 현황 분석 (Foodservice Systems of Meal Service Programs for Mental Disorder Care Sites in Korea)

  • The purposes of this study were to: a) examine characteristics of foodservice management practices; b) investigate characteristics of recipients; c) analyze foodservice systems; and d) provide feedback for the efficient and effective foodservice management of mental disorder care sites in Korea. A total of 46 sites was analyzed by questionnaire survey. Statistical data analysis was completed using the SPSS package program for descriptive analysis. As results of site recipients' characteristics, 60% of total sites were males and 40% were female recipients. Average 60% of recipients were from 30 to 40 years old. Major diseases of recipients were mental disorder, high pressure, and obesity. According to the result of foodservice system analysis, the average meal cost per day was about 2,921 won and average food cost percentage was 39%. Average number of meals per day was about 600 meals. All sites had on dietitian and 88.3% of sites had one cook as a full-time employees. In the part of procurement, dietitians were major chargers of sites for purchasing foods. Major purchasing method was the order and delivery contract. About a half of sites used cycle menu system and standardized recipies. Most of sites had recipients survey systems for evaluating meal satisfaction. About 60% of sites provided liquid diets to recepients and 22% provided diabetic diets. Dietitians at sites had problems on low meal cost budget, lack of cooking professionals, and lack of information about treatment meals for mental disorders for providing higher quality of foods cure recipients. The results suggested that financial and systematical supports by the government would be very necessary to meet the goal of nutritional balanced meal services.

외식업체 밀키트(Meal Kit)상품에 대한 1인가구의 주관적 인식유형 분석연구 (Subjectivity Type Analysis Study of Single-person Households on Meal Kit Products of Food Service Industry)

  • 본 연구에서는 사회구조적으로 변화하는 인구구조에 따라 외식기업이 개발 및 출시하는 밀 키트(Meal Kit) 상품이 주요 수요층인 1인 가구에 대해 주관적 의견이나 인식 구조를 분석하여 유형별로 추출이 가능한 Q방법론을 적용하여 그 함의를 분석하였다. 본 연구의 주관적 인식 유형 분석 결과 총 4가지의 유형이 도출되었으며, 유형은 다음과 같이 각각 그 특이성에 따라 명명하였다. 제 1유형(N=6) : 외형평가 구매 유형(Appearance Assessment Purchase Type), 제 2유형(N=6) : 가격비교 구매 유형(Price Comparison Purchase Type), 제 3유형(N=10) : 브랜드 신뢰 구매 유형(Brand Trust Purchase Type), 제 4유형(N=2) : 간편조리 구매 유형(Easy Cooking Purchase Type) 으로 각 각 독특한 특징의 유형으로 분석되었다. 본 연구에서는 밀키트 제품이 주요 수요층인 1인 가구에 대해 주관적 의견이나 인식 구조를 분석하여 유형별 분석을 통해 추후 외식업체의 1인가구를 위한 외식상품개발 및 출시에 대한 방향성과 그 개선책에 대해 제안하며, 분석결과를 바탕으로 학문적 시사점을 제공하는데 목적을 두고자 한다.

황기(Astragalus membranaceus)의 박피 유무와 재배 년 수에 따른 항산화 활성 연구 (Antioxidant Activities According To Peeling and Cultivated Years of Astragalus membranaceus Roots)

  • Astragalus membranaceus has a long history of medicinal use in Chinese herbal medicine. It has been shown to have immunostimulant, tonic, antioxidant, antiperspirant, diuretic, anti-diabetic, expectorant properties, and a supplementary medicine during cancer therapy. In this study, we investigated the effect of anti-oxidation of Astragalus membranaceus root extract. The anti-oxidative activities of water, 80% methanol, and 100% methanol extracts from Astragalus membranaceus were analyzed by DPPH free radical scavenging activity, Superoxide dismutase-like activity, reducing power, and crude ash. The water extract demonstrated to be more effective than methanol extract for a DPPH radicals scavenging activities and reducing power. Superoxide dismutase-like activity showed higher efficiency in 80% methanol extract. Our results indicate that Astragalus membranaceus extracts could be used as a source of antioxidant ingredients in the food industry.

Effects of Human Adipose-Derived Stem Cells in Regenerating the Damaged Renal Tubular Epithelial Cells in an Animal Model of Cisplatin-Induced Acute Kidney Injury

  • Background: We conducted this experimental study to examine whether human adipose-derived stem cells (ADSCs) are effective in achieving a recovery of damaged renal tubular epithelial cells in an animal model of cisplatin-induced acute kidney injury using rats. Methods: To examine the in vitro effects of ADSCs in improving nephrotoxicity, we treated mouse renal tubular epithelial cells with both ADSCs and cisplatin mouse renal tubular epithelial cells. And we equally divided 30 male white Sprague-Dawley (SD) rats into the three groups: the control group (intraperitoneal injection of a sterile saline), the cisplatin group (intraperitoneal injection of cisplatin) and the ADSC group (intraperitoneal injection of cisplatin and the hADSC via the caudal vein). At five days after the treatment with cisplatin, serum levels of blood urine nitrogen (BUN) and creatinine were measured from each SD rat. We performed histopathologic examinations of tissue samples obtained from the kidney. Results: The degree of the expression of TNF-${\alpha}$ and that of Bcl-2 were significantly higher and lower respectively, in cisplatin group (P<0.05). Serum levels of BUN (P=0.027) and creatinine (P=0.02) were significantly higher in cisplatin group. On histopathologic examinations, there was a significant difference in the ratio of the renal injury between cisplatin group and ADSC group (P=0.002). Conclusion: The ADSCs might have a beneficial effect in regenerating the damaged renal tubular epithelial cells.

Protective effect of methanol extract from citrus press cakes prepared by far-infrared radiation drying on $H_2O_2$-mediated oxidative damage in Vero cells

  • In the present study, a suitable drying method was developed for citrus press cakes (CPCs), which are produced as a by-product in citrus juice plants, and the protective effect of methanol extract of CPCs prepared by far-infrared radiation (FIR) drying against $H_2O_2$-induced DNA damage was evaluated versus that of freeze-dried CPCs. Methanol extract of FIR-dried CPCs exhibited comparatively good ROS scavenging activity versus the freeze-dried CPCs at the concentration of 100 ${\mu}g$/mL. The extract strongly enhanced the cell viability against $H_2O_2$-induced oxidative damage in Vero cells. Lipid peroxidation inhibitory activity of the extract from FIR-dried CPCs was comparable to that of the extract from freeze-dried CPCs. This sample also exhibited good protective effects against $H_2O_2$-mediated cell apoptosis as demonstrated by decreased apoptotic body formation in the nuclear staining with Hoechst 33342. In the comet assay, the CPC extracts exhibited strong inhibitory effects against $H_2O_2$-mediated DNA damage in a dose-dependent manner. Thus, this study demonstrated that FIR drying effectively preserves CPC as a functionally important natural antioxidant source and the FIR drying can be adapted for drying CPCs and is more economical for massive production than freeze drying.

HPLC를 이용한 하동 녹차의 Catechin류, Alkaloid류 분석 및 항산화능 측정 (Analysis by HPLC of Catechins, Alkaloids and Antioxidant Activities in Hadong Green Tea Leaves)

  • 하동지역에서 생산되는 잎 녹차(우전, 세작, 중작, 대작)에 함유되어 있는 catechin류, alkaloid류 및 theanine를 HPLC를 이용하여 분석을 함과 동시에 녹차 추출물을 이용하여 총 페놀 물질과 항산화능을 측정하였다. Catechin류와 alkaloid류, theanine, 총 페놀 화합물의 함량은 물 추출물 보다 80% 알코올 추출물에서 더 높았다. 총 catechin과 alkaloid의 함량은 80% 에탄올로 추출한 우전(172.33 mg/g, 30.80 mg/g)에서 가장 높았다. Theanine의 함량도 80% 에탄올 추출물에서 높았고 55.36에서 37.48 mg/g의 범위였다. 녹차의 총페놀 화합물은 우전에서 가장 높았고, DPPH법, FTC법 및 TBA법을 이용한 항산화 활성 측정에서도 우전에서 높은 결과를 나타내었다.

  • We desperately recognize from the economic situation in IMF crisis that only competive goods and serviced. It is anticipated that this difficult situation will probably be continued till 1999. Therefore, it is necessary to think over real aspects of eating=outdoors in IMF period and to provide an opportunity to confront with this crisis. Analysis a recent tendency of domestic eating-outdoors business, there appears, first of all, dual types of eating-outdoors; the one is a sort of 'Cost Sale', which provides some special menu with lowest prices, and the other is a type of 'Family Restaurant', which regards the atmosphere of the place as one of the most essential elements. Both types are getting more popular today. As the result, neither of the alternative cannot recover the current Depression. It is natural that no other conditions can compete with good tastes, fancy atmosphere, and good prices. As a matter of fact, however, it is quite difficult to run this type of bussiness adjusted the above whole conditions. Therefore owners of eating-house must decide to run either ' Cost Sale' or 'Family Restaurant' first and investigate some problems and conditions accordingly. In ane way, the owner intensively visits to some eating houses which is similar style in size and management to that of his style in size and management to that of his and look over what is good and what is bad Right after this investigation, it is efficient for he or she to improve his or her business style in size and management in a short period. It is helpful to check some complements; improvement of signboards, cleaning up of the interior, selecting suitable menu, adjusted prices, tastes, and service quality etc. Although eating-outdoors business is hard hit by IMF, We hope that it would rapidly be brisk in 2000, becaused by that time the basis of each industry would be high qualified, and rich technology would be accumulated.

Phytate 분해능을 지닌 유산균을 이용한 현미의 Phytate 감소효과 및 품질특성 (Phytate Reduction and Quality Characteristics of Brown Rice Inoculated with Phytate-degrading Lactic Acid Bacteria)

  • Brown rice contains both excellent nutritional value and functional advantages. However, its utilization is limited due to its rough texture and higher concentrations of phytic acid compared to white rice. We made brown rice inoculated with Lactobacillus sakei Wikim001 having phytate activity for 12 h (BRWK-12) and 24 h(BRWK-24) at $30^{\circ}C$ and evaluated the quality characteristics in an attempt to solve these problems. The pH of brown rice inoculated with L. sakei Wikim001 was reduced time dependently. A concentration of phytic acid in brown rice inoculated with L. sakei Wikim001 was decreased as compared normal brown rice (BR). BRWK-24 showed significantly high values in the brightness, redness and yellowness (p<0.05). BRWK-24 received higher scores in texture and overall acceptability than those of BR on the sensory evaluation test. Taken together, it is expected that a treatment of L. sakei Wikim001 in brown rice is useful for the development of new fermented brown rice with reduced phytic acid.

Relationships between Antioxidants and Quality Characteristics from Velvet Antlers of Formosan Sambar Deer

  • The quality characteristics of velvet antlers obtained from Formosan sambar deer (Cervus unicolor Swinhoi) (SDVA), harvested from 63 to 81 d during the velvet antler growth period, were evaluated by investigating the relationships between antioxidant levels; including content, activity, and content/activity ratios, and physical properties; including shear force values, color, and Ca content. The hardness of samples from base velvet antler sections increased, and that the color of these samples tended to become reddish-yellow (redder and more yellow), suggesting that the Ca content in the base section of the sample was not ossified yet. Samples from the upper sections of velvet antler showed higher superoxide dismutase (SOD), catalase (CAT), and glutathione peroxidase (GPX) content (3.91 to 1.50 mg/mL, 2.53 to 0.90 mg/mL, and 3.95 to 1.58 mg/mL, respectively) than did samples from the middle and base sections (p<0.05). The activity and content/activity ratios of GPX measured in the upper section were also found to be significantly greater than in the middle and base sections (p<0.05). We further observed that the content and activity of GPX was significantly and negatively correlated with Ca content, shear force values, and the content/activity ratio of this antioxidant (p<0.01). The study findings may serve as a reference index for quality evaluations of velvet antlers of Formosan sambar deer in future.
