A Study on Body Image Recognition and Dietary Habits of Middle School Students in the Chungnam Area (충남 지역 남녀 중학생의 체형 인식과 식습관에 관한 연구)

  • The purpose of this study was to provide basic information regarding desirable body image recognition by examining body image recognition 395 middle school students in the Chungnam area. The average age of the subjects was 13.7 years for boys and 12.6 for girls. Their average height and weight were 165.4 cm and 57.1 kg for boys, and 155.7 cm and 48.8 kg for girls. As for body shape, girls thought that they were overweight more often and wanted to lose weight compared to the boys. Over half of the respondents answered that their weight control efforts were not systematic such ad via professional counseling. Weight control by students was attempted by themselves in order to control their weight by skipping meals. Further, the subjects exhibit dietary behavioral problems such as overeating, skipping meals, unbalanced diet, and eating speed. In conclusion, correct body image recognition is needed and families and schools should make efforts to help students properly control their weight and adopt proper eating habits.

Recognition and Preference of University Students on Korean Food in Australia (호주 대학생들의 한식에 대한 인식과 선호도 연구)

  • The purpose of this study is to research recognition and preference of university students in Brisbane on Korean food and provide basic data for globalization of Korean food. For analysis methods, frequency analysis and T-test were conducted. The period of the research was from May 3 to June 18, 2010. The study result are summarized as follows: First, they recognize Korean food as delicious, hot and spicy, healthy, using exotic ingredients, having various menu, and using grains and vegetables as main ingredients. For the difference in recognition of Korean food, there were significant differences in the items of: 'Korean food is good for health,' 'There are many fermented Korean foods' and 'Korean food is grains and vegetables oriented.' Second, for preferred taste, sweet taste was the most liked one and bland taste was disliked the most. The most preferred dishes are in the order of bulgogi, bibimbap, kimchi jjigae and gimbap. For expected effects, this study will be helpful for the government and educational institutions related to Korean food and restaurateurs who service Korean restaurants in Australia to establish strategies for globalization and business sales of Korean food.

The Effect of Educational Environment and a Student's Major Recognition on Learning Satisfaction at the Bakery & Confectionery Institute (제과.제빵 학원의 교육환경과 수강생의 전공인식이 학습만족도에 미치는 영향)

  • The purpose of this study was to establish different levels of learning satisfaction concerning bakery and confectionery institute students in relation to their educational environment as well as to determine the relationships between variables. A questionnaire was distributed to 260 students enrolled in the bakery and confectionery institute at Gyeongju in the Pohang and Ulsan area, and 242 were used in the final analysis. Collected data were statistically analyzed using SPSS 12.0 Windows. Results of this study can be summarized as follows. The students were mostly satisfied with the learning environment and teaching methods of the institute. A significant difference was observed between male and female students for recognizing teaching methods and major recognition. Furthermore, the educational environment and major recognition of students were positively related with learning satisfaction. Therefore, the staff at the bakery and confectionary institute should provide the proper curriculum and facilities for the students.

A Study on the Recognition and Preference of Korean Traditional Cookie among College Students (한국 전통 한과류에 대한 대학생들의 인지도 및 기호도에 관한 연구)

  • The purpose of his study was to investigate the perceptions and preferences of college students to Korean traditional cookies. Self administered questionaires were collected from 512 college students in the Seoul, Kyunggi, Chungchung, Kyungsang, Junla and Gangwondo areas. The data were statistically analysed using t-tests, one-way ANOVA and their correlation. The recognition of Korean traditional cookie was generally low with the exception of these items as either a seasonable or festive food. There were significant differences in the mean recognition and preference values for each kind of Korean traditional cookie between the major subject studied, gender and subject grade. (Eds note: how were the mean values different for the 3 specified variables\ulcorner) The preference of some Korean cookies was relatively higher than estimated, (Eds note: how was the original estimate arrived at\ulcorner) such as Yugwa, Gangjeong, Han-gwa, Hobak-yeot, Ddangkong-yeot-gangjeong and Ssal-yeot-gangjeong. However, it is impossible to discriminate low preference, as over 80% of the low preference values had not been completed on the questionnaires.

A Survey on the Recognition and Preference of Commercial Cream Soup Focused on Yungnam Area (시판용 수프에 대한 소비자 인지도 및 기호도 조사 -영남지역을 중심으로-)

  • The object of this research is to assess both the preference and the recognition on commercial cream soup by gender and age group to design reliable proposals for better product. Of 461 questionnaires handed out to residents at Daegu, Busan and Gyeongju in youngnam area. The data were analysed by chi-square test, t-test and one way ANOVA. The results are summarized as following: (1) the response rate of 78.6 percent liked soup because of it's taste, (2) respondents in ages 20${\sim}$30's showed higher preference than respondents in ages 40${\sim}$50's (3) main ingredient is the most important consideration as purchase, (4) vegetable cream soup and mushroom cream soup are shown as highest ranking on the recognition of soup, (5) mushroom cream soup and corn cream soup are shown as highest ranking on the preference of soup.

Development an Android based OCR Application for Hangul Food Menu (한글 음식 메뉴 인식을 위한 OCR 기반 어플리케이션 개발)

  • In this paper, we design and implement an Android-based Hangul food menu recognition application that recognizes characters from images captured by a smart phone. Optical Character Recognition (OCR) technology is divided into preprocessing, recognition and post-processing. In the preprocessing process, the characters are extracted using Maximally Stable Extremal Regions (MSER). In recognition process, Tesseract-OCR, a free OCR engine, is used to recognize characters. In the post-processing process, the wrong result is corrected by using the dictionary DB for the food menu. In order to evaluate the performance of the proposed method, experiments were conducted to compare the recognition performance using the actual menu plate as the DB. The recognition rate measurement experiment with OCR Instantly Free, Text Scanner and Text Fairy, which is a character recognizing application in Google Play Store, was conducted. The experimental results show that the proposed method shows an average recognition rate of 14.1% higher than other techniques.

Estimating Recognition of Sanitation and Sanitary Education in School Food Service Employees from the Kyunggi Area (학교 급식 조리 종사원들의 위생 의식 및 교육 수행 평가 -경기 지역을 중심으로-)

  • This study investigated school food service employees' recognition of sanitation and sanitary education in the Kyunggi area of Korea. In terms of personal hygiene, over 90% of the food service employees acknowledged personal hygiene and regarded it as important. Inspection of personal hygiene before cooking occurred "everyday" (85.5%); however, 17.2% continued cooking after dissatisfactory personal hygiene was identified. The food service employees thought that contaminated food materials (35.3%) was the biggest cause of foodborne illness. Approximately 71.4% of the respondents answered that sanitation education and testing related to cooking were conducted "once every month". In addition, 56.4% answered that education on cooking sanitation was "lots of help" and 36.3% answered it was "very helpful". Upon examining the food service employees' awareness about cooking sanitation over 90% were aware of sanitary cooking methods, and 46.1% responded that their biggest difficulty in performing sanitary cooking procedures was excessive work duties due to a lack of food service employees.

A Study on Eating Out Behavior and Recognition of Salinity in Restaurant Food in Jecheon Area (제천지역 외식업소 방문객의 외식행동 및 외식음식 염도인지에 대한 조사)

  • In this study, the eating out behavior and recognition of salinity in restaurant food in Jecheon area were examined. Demographic characteristics of the subjects, eating out behavior and perception of salinity in food purchased in restaurants were surveyed. Also salinity of the high Na-containing menus were measured using salimeter. Exactly 51.6% of the study subjects usually ate out more than one to two times per week. A large percentage (88.6%) of the subjects mentioned that they ate more than half the amount of liquid in their dishes. The study participants recognized that the salt concentrations of stews, soups and noodles in their orders were high. JJamppong was recognized as the most salty among nine kinds of eating out menus, whereas mulnaengmyeon was the least. Although the recognized salt concentration of mulnaengmyeon was relatively low, this dish had the highest salinity out of nine eating out menus. Relative salinities of eating out menus were higher than absolute salinity mostly except yukgaejang. It is necessary to supply exact nutrition information and widely implement nutrition labeling. Furthermore, consumers should personally be careful to limit consuming food with high sodium levels when dining at restaurants and eat less liquid in dishes.

Statistical Approach to Test Construct Validity and Obtain Weights for the Children's Dietary Life Recognition and Practice Index (우리나라 초등학교 어린이의 식생활 인지.실천 수준 평가지표 구성타당도 평가 및 산정방법 연구)

  • Constructs with seven latent evaluation indicators and 18 observable survey questions were developed by food and nutrition experts to calculate a food safety recognition and practice index for children. The purpose of this study was to suggest statistical approaches to test construction validity on the constructs, obtain weights of the evaluation indicators, and develop questionnaires to calculate a children's food recognition and practice index. Survey data of 2,400 elementary fifth grade students were used as empirical results. Test validity was evaluated by exploratory factor analysis and confirmed to be highly significant by confirmatory factor analysis [i.e., linear structural relations (LISREL) analysis]. Standardized path coefficients of the LISREL analysis were suggested based on weights, and the weights were compared using the AHP and Delphi methods.

Relationships among Recognition, Preference, and Purchasing Characteristics for Local Agricultural Products and Festival Satisfaction of Changnyeong Area - Compared by the Gender, Age, and Purchase Experience - (창녕지역 축제만족도와 농특산물 인지도, 선호도, 구매특성과의 관련성 - 성별과 연령, 구매경험을 중심으로 -)

  • The purpose of this study was to investigate the relationships among recognition, preference, and purchasing characteristics for Changnyeong onions and garlic as well as festival satisfaction among participants at agricultural product festivals in the Changnyeong region. Results showed that festival satisfaction of 'place of festival' was highest while 'convenience facility & event contents' earned the lowest scores. Most subjects (90.5%) had purchased Changnyeong agricultural and processed products. A major purchasing type was fresh agricultural products (66.7%). The pathways to recognize Changnyeong agricultural products were mostly 'promotion by related institutions' (22.0%), 'family relatives' (20.8%), 'mass media' (16.6%), and 'festivals and events' (16.1%). The most considered factors for purchasing regional products were 'geographical origin' and 'ingredients'. Changnyeong onion showed higher scores for recognition and preference and rate of purchase experience and intention than for garlic. The correlation coefficients of recognition and preference for onion and galic were 0.603 (p<0.001) and 0.598 (p<0.001), respectively. The explanation power ($R^2$) of related variables for purchase of Changnyeong onions was 0.258. The regression coefficients (${\beta}$) for 'recognition', 'preference' and 'convenient facility & event contents' were positive, whereas the regression coefficient for 'price' was negative. Recognition, preference, and convenient facility & event contents with garlic purchase showed a positive relationship ($R^2$=0.253). The most effective promotion method to increase sales of Changnyeong agricultural products was 'local festivals and events' (27.8%).
