Antioxidant Packaging as Additional Measure to Augment CO2-enriched Modified Atmosphere Packaging for Preserving Infant Formula Powder

  • Al-laminated packaging film incorporating ascorbic acid or tocopherol at inner food contact layer was tested in the potential to improve antioxidative preservation of powdered infant formula under CO2-enriched atmosphere. Product of 200 g was packaged with the packaging film containing 0.3% antioxidant in sealant layer of low density polyethylene and stored at 30℃ for 286 days with periodic measurement of package atmosphere and product's quality attributes. The CO2-flushed package resulted in shrinkage of tight contact between the product and the film not allowing gas sampling of package atmosphere after 140 days. Package of tocopherol-incorporated film allowed some ingress of oxygen after 112 days presumably due to its weakening of heat-seal area. The increased oxygen concentration in the tocopherol-added film package led to the concomitant increase of peroxide value, an index of lipid oxidation. On the other hand, packaging of ascorbic acid-added film pouch could suppress lipid oxidation marginally in consistent manner compared to control package without any antioxidant.

A Study on Color-Image of Chilled Noodle Packages (냉장면류 패키지의 색채 이미지에 관한 연구)

  • This study is about color-image of chilled noodle packages. The improvement of living standard has lead the development of food industry, which has changed consumer's way of thinking toward food products and made clear the preference for food which was obscure before. In the past, the the right of choice for the products were not given to consumers in the market. But today, the market initiatives have been transferred to consumers. They are allowed to purchase their favorite products as the markets provide them with diversified products. Consequently, the importance of package design has increased. Color-image of chilled noodle packages stimulates consumers to purchase the products by offering necessary information which is very important as it is supposed to provide consumers with a good impression about the products.

Perception and Use of Weaning Diets by Housewives in Gwangju-Jeonnam Regions (광주${\cdot}$전남지역 주부들의 이유식에 대한 인식 및 이용 실태)

  • This study was designed to assess the perception and use of weaning diets and to serve as a guideline of processed weaning diets through a survey focused on the Gwangju-Jeonnam regions. The following results were obtained. Most subjects mixed 'home-made' and 'commercial' weaning diets and considered weaning diets as 'a diet for supplementing insufficient nutrition'. The most frequently used type of weaning diet was 'a kind of gruel with vegetables or meat', followed by 'boiling powder with water' and 'grinding or crushing fruits'. Two thirds (68%) of subjects had experienced buying weaning diets, mainly a powder type. The most common reason to buy weaning diets was 'troublesome', followed by 'excellent nutrition', 'convenient to go out', and 'don't know how to make'. The following results according to factors were found. The types of provided and of weaning diets were significantly different by age; the understanding of weaning diets, by education and mothers' employment; and where to get information about weaning diets, by economic status. The highest request for developing weaning diets was a type of 'powder' and 'gruel', and the highest cooking type was 'adding boiling water', followed by 'a semi-cooking product' and 'a finished product'. 'Retort pouch' package, a 'single' package unit, and 'keeping cold' were also requested by the participants. A desirable package unit in developing weaning diets was significantly different by mother's employment; the cooking type of product, by economic status; a way to keep product, by mother's employment; and package types, by education and economic status. When weaning diets were made by environmentally friendly agriculture, 69.5% of subjects were willing to purchase them. With the increase in economic status, education, and employment rate, the use of weaning diets on the market will increase. For this reason, correct nutrition education is needed. With the increasing demand for environmentally friendly agriculture, a variety of weaning diets should be developed to meet this demand.

Modified Atmosphere Packaging of Fresh-cut Onion (최소가공 절단 양파의 MA 포장)

  • The aim of this study was to develop the appropriate packaging method for minimally processed sliced onions. The films of different gas permeabilities (LDPE $30{\mu}m$, PD900 and PD941) were used for packaging 1300g of onion slices cut into octuplicate pieces. Perforated LDPE package was prepared as control for comparison. The package atmosphere and onion quality were measured through storage at $1^{\circ}C$ for 38 days. PD900 package of the lowest gas permeability was the best in keeping the fresh-cut onions by maintaining MA conditions of 1-3% $O_2$ and 4-11% $CO_2$ concentrations. The benefits were reduced discoloration, decay and soakness.

Gas Composition within Kimchi Package as Influenced by Temperature and Seasonal Factor (온도 및 계절요인에 따른 포장 김치의 기체조성 변화)

  • Kimchi, made from seasonal baechu (Chinese cabbage), was sealed in PP trays with a Nylon/CPP lid film and stored at various temperatures (0, 10, $20^{\circ}C$) to investigate the feasibility of detecting its fermentation degree by measuring gas composition inside the packages. The gas composition inside the kimchi package continuously changed due to $CO_2$ evolution during fermentation. Regardless of temperature, the fermentative gas accumulation in the package caused $CO_2$ concentration to increase by two-stepwise pattern, but $O_2$ concentration to decrease exponentially. As $CO_2$ concentration increased secondarily, the pH values of kimchi decreased proportionally (r>0.968). The production of $CO_2$ during kimchi fermentation was stimulated at higher temperatures and affected by seasonal factor. Kimchi made from winter baechu produced more fermentative gas than that from summer baechu. It was suggested that the changes in $CO_2$ concentration could be used as a characteristic index for indicating the fermentation course of packaged kimchi products.

Integrated Management of the Pink Mealybug, Maconellicoccus hirsutus (Green) (Hemiptera : Pseudococcidae) Causing ′Tukra′in Mulberry

  • In India, mulberry (Morus spp.), the sole food plant of the silkworm, Bombyx mori (Linn.), is prone to infestation by the pink mealybug, Maconellicoccus hirsutus (Green). Infestation by this pest causes apical shoot malformation, popularly known as 'tukra'. Occurrence of tukra causes an appreciable reduction in leaf yield and quality, leading to low silkworm cocoon productivity. For management of M. hirsutus (Tukra), an IPM package comprising mechanical, chemical and biological measures was demonstrated in the mulberry gardens of five Government Silk Farms in Mysore District (Karnataka, India) during 1995-96. A suppression of 76.0% in tukra incidence and 90.19% in mealybug population was recorded by employ the IPM package which led to an estimated 4,000 kg recovery in leaf yield/ha/year. The impact of IPM package in the management of M. hirsutus, the role of biocontrol agent (Cryptolaemus montrouzieri Muls.) in pest suppression and the cost-benefit analysis of the IPM package are discussed.
