It has emerged Food-content among various forms of 1-person media through social media. Food-content influencer also market products through 1-person media, generating revenue through increased views and subscribers of 1-person media. It also sells products through sponsorship. In general, there is a profit structure through 1-person media viewing, but research on how restaurant companies generate profits directly through food-content is insufficient. In addition, research on converting subscribers to consumers through food-contents is minimal. In this paper, we propose an experiential application system based on the behavior of food-content creators. The proposed system collects and categorizes food-content information, and maps between highly related words to organize into keyword categories. The ontology tag-based concept network applied to the proposed system connects representative information by pre-extracting/mapping information related to information requests among a wide range of data. This method maps relevant food-content information to provide the user with data collected/storage in the form of an application. The user uses the application while watching the food eaten by the influencer and creator. And, it is meaningful that the user could be provided is provided with information about the food they want to eat.
Objectives: This study was intended to investigate adults' health behaviors and eating habits according to their levels of social media use. Methods: From May 27 to July 11, 2022, an online survey was conducted of 452 male and female social media users in their 20s and 30s, and their eating habits and health behaviors were compared and analyzed according to their degree of social media use. For each of the three levels of food content use, the frequency of social media content use, and the total score range of average social media viewing time per day were divided into three parts, and a group with a score of less than 2 points was classified as low-use; a group with a score of 2 or more and less than 3 points was classified as middle-use; and a group with a score of 3 points or more was classified as high-use. Results: The use of food content was higher in women than in men (P < 0.001), and higher in those in their 20s than in those in their 30s (P < 0.001). The group with a high level of food content use showed a higher rate of post-use hunger than the group with a low level (P < 0.01). The experience of eating after using food content was also higher in the group with a high level of use than in the group with a low level of use (P < 0.001). The group with a normal or high level of food content use had more negative eating habits than the group with a low level. Conclusions: The study highlighted the need to provide desirable food content to people in their 20s and 30s with negative eating habits and to promote them so that they can use the right healthy nutrition-related content.
Society advances through technology, and technology has changed many lifestyles. The need for food is varying, but the availability of food is constantly changing as trends in production change. Combining the food industry and technology, a robot that delivers food and also cooks it has been developed. The time has come for a combination of food content and technology to advance the restaurant industry. This study discusses the application of a recommended food content media providing system using a curation engine that recommends contents according to individual tastes and preferences for the convenience of those who use food contents, using artificial intelligence speakers. We discuss the technologies required to develop video contents optimized for AI speakers with screens and shapes, combined with inset top boxes.
There has been an increase in the viewing of YouTube content among children and adolescents. This, coupled with the popularity of live-streamed video content such as mukbang, where viewers watch the host eat, has raised concerns about media addiction and the indiscriminate imitation of eating behavior. Therefore, there is a need for guidance on the appropriate behavior for viewing YouTube food content to promote healthy eating habits among children. In this study, we aimed to compare the patterns of the main caregivers and their children while viewing media and investigate the impact of viewing YouTube food content on the physical and mental health of the children. The findings suggest that active YouTube food content viewing by the main caregivers may reduce imitative behaviors due to passive media consumption by their children. This study provides valuable insights by comparing and analyzing the YouTube content viewing of the main caregivers and their children. The results can be used as a basis for the development of lifestyle-centered guidelines for children. However, it is important to note that this study was conducted during the coronavirus disease (COVID-19) pandemic when there was a significant increase in the use of media, which is limitation of the study.

To evaluate the effects of amylose content and dissolution media on the molecular structure of maize starch, changes in the hydrodynamic diameter of starch molecules were assessed via dynamic light scattering depending on amylose content and dissolution media. As the amylose content of starch increased, the hydrodynamic diameter of starch molecules proportionally decreased from 204 to 92 nm. To alter ionic strength, hydrogen bonding, or polarity of dissolution media, various contents of NaCl (1, 2, or 3 M), urea (1, 2, or 3 M), or 1-butanol (0.1, 0.5, or 1.0%) were added to media, respectively, resulting in increased hydrodynamic diameter of starch. However, the degree of expansion was dependent on amylose content and the concentration and/or type of additive. The hydrodynamic diameter of starch molecules exhibited significant correlation with amylose content obtained by size exclusion chromatography, regardless of dissolution conditions.

This study suggests a revised model of Lévi-Strauss' culinary triangle, which is frequently cited in food-related articles. To scrutinize how the media shares content about food and to remediate food discourse, this study conducted a focus group interview and targeted food program viewers and classified discoursal elements or nodes by Nvivo qualitative tools. In the process of classification, it found what seems to be hard to explain in the current food culture with Lévi-Strauss' culinary triangle, even if it still depicts appropriately, in the post-modern era implied complexity. Then, it arranged obtained discoursal nodes and analyzed the relationship between them. Interestingly, food in media plays as an important role beyond food itself, such as it can trigger memories, create social divides, play a role in economic invigoration, etc. Consequently, this paper suggests the revised culinary triangle model expanded from Lévi-Strauss' in which traces the molding process of food remediation with discoursal nodes in stages.

Social media have emerged as new communication channels between consumers and companies that generate a large volume of unstructured text data. This social media content, which contains consumers' opinions and interests, is recognized as valuable material from which businesses can mine useful information; consequently, many researchers have reported on opinion-mining frameworks, methods, techniques, and tools for business intelligence over various industries. These studies sometimes focused on how to use opinion mining in business fields or emphasized methods of analyzing content to achieve results that are more accurate. They also considered how to visualize the results to ensure easier understanding. However, we found that such approaches are often technically complex and insufficiently user-friendly to help with business decisions and planning. Therefore, in this study we attempt to formulate a more comprehensive and practical methodology to conduct social media opinion mining and apply our methodology to a case study of the oldest instant noodle product in Korea. We also present graphical tools and visualized outputs that include volume and sentiment graphs, time-series graphs, a topic word cloud, a heat map, and a valence tree map with a classification. Our resources are from public-domain social media content such as blogs, forum messages, and news articles that we analyze with natural language processing, statistics, and graphics packages in the freeware R project environment. We believe our methodology and visualization outputs can provide a practical and reliable guide for immediate use, not just in the food industry but other industries as well.
Saesongi (Pleurotus eryngii) was cultivated in both potato dextrose agar (PDA) and sawdust media supplemented with Ca salts. The addition of Ca phosphate and Ca carbonate to sawdust media did not affect the growth, whereas Ca sulfate addition suppressed the mycelial growth appreciably. The efficiencies of Ca accumulation in the fruiting were studied based on mycelial growth experiments on Ca-supplemented sawdust media. Supplementation with 0.1 to 5% Ca phosphate increased the Ca content in the fruiting body by 4.5-6.5 fold, to a level of $314.6{\pm}22.7$ to $449.7{\pm}29.3$.
The purpose of this study is to investigate the consumer safety problems appeared in the Korean mass media-the newspaper(the Kong-A Ilbo and the Chosun Ilbo) and the consumer magazines(the Sobija-Sidae and the Sobija) from 1991 to 1993. I use the content analysis of the articles related with consumer safety through the above mass media. The results are (1) the goods-services areas that are severe in the consumer safety problem are food, environment, medicine, electric appliances, services(restaurant, medical service), and etc. (2) the most important problem areas are Toxic ingredients(remaining agricultural chemicals and heavy metal), Food additionals, Sanitary problem, Hygiene products hazard, Safety accident, Environmental pollution, etc. (3) the goods-service area and the consumer safety problem are different according to the publication year and the mass media type.
Purpose: This study examines the impact of YouTube mukbang content characteristics on viewer satisfaction and word-of-mouth behavior. Drawing from theories in media psychology, consumer behavior, and communication studies, we investigate five key content characteristics: credibility, entertainment value, informativeness, visual appeal, and auditory quality. Research design, data and methodology: Using structural equation modeling with data from 206 mukbang viewers, we test hypothesized relationships between these characteristics, viewer satisfaction, and word-of-mouth behavior. Results: Research reveal that credibility and informativeness significantly and positively influence viewer satisfaction, while entertainment value, visual appeal, and auditory quality show no significant effect. Viewer satisfaction positively impacts word-of-mouth behavior. These findings challenge conventional assumptions about video content consumption and highlight the unique nature of mukbang viewing. Conclusions: The study contributes to digital content consumption literature by providing empirical evidence of factors influencing viewer engagement in the mukbang context. It offers practical insights for content creators, marketers, and platform developers, emphasizing the importance of informative and credible content in driving viewer satisfaction and promoting positive word-of-mouth. By extending established media theories to this emerging form of digital entertainment, our research paves the way for future studies. The study's limitations, including its cross-sectional nature and specific cultural context, suggest directions for future research.
