Effects of Extracts of Shanshuyu(Cornus officinalis sieb) on Removal of Lead in Rat (산수유 추출물의 납 제거 효과에 미치는 영향)

  • This study was designed to investigate the effects of Korean 1% Shanshuyu extract in Pb administered rats. Forty male Sprague-Dawley rats weighed 100 l0g were used for this experiment and divided into following 4 groups; Con(control group), Shan(1% Shanshuyu extract), Pb(1,000ppm alone lead administered group), Pb-Shan(1,000ppm alone lead administered group with 1% Shanshuyu extract group). Food intake weight and FER(Food efficiency ratio) were remarkably decreased in lead added group. Tissue weight of liver, lung, stomach, heart, kidney and spleen of lead exposed rats were reduced by 1% Shanshuyu extract group. The lead content in the rats tissue of lead alone administered group was lower than in the rats tissue of lead administered group with 1% Shanshuyu extract group. AST(Asparatate transferase) and ALT(Alanine transferase) were increased in lead-administered group and lower in the 1% Shanshuyu extract group. These results suggested that 1% Shanshuyu extract may have some protective effects from of tissue demage induce with Lead.

  • This study was conducted to investigate the effects of real time communication digital photography method using Kakao Talk application in smart-phone for the fortification of food consumption monitoring and weight reduction. Thirty-four female college students were randomly assigned to the camera-phone (CP) group or smart-phone (SP) group. Each group participated in the weight control program for 8 weeks. The mean energy intake of CP group during program was 1353.5 kcal and the SP group consumed 1289.2 kcal. The total energy intake of both groups was significantly decreased during the program. The CP group lost 1.9 kg of body weight and 1.9% of body fat and the SP group lost 4.3 kg of body weight and 3.0% of body fat. The body weight was significantly decreased in the SP group compared to the CP group. The triglyceride and total cholesterol, and LDL-cholesterol level of SP group were significantly decreased during the program. However, there were no significant changes in CP group during the program. Also there were no significant changes in lipid profile between two groups. In this study, it is considered that real time communication digital photography method using Kakao Talk application in smart-phone might influence weight control through a trained consumption monitoring. Therefore, smart-phone can lead individuals to rely more heavily on easy-to-monitor visual cues.

A Study on the Association among Satisfaction of Nutrition Labeling, Change of Purchase Behaviors, and Dietary Life Care, based on the Awareness of Nutrition Labeling at Expressway Rest Areas (고속도로 휴게소 영양표시 인식 여부에 따른 영양표시 만족도, 구매행동 변화 및 식생활관리에 관한 연구)

  • This study was to investigate the association among satisfaction of nutrition labeling, change of purchase behaviors, and dietary life care, based on the awareness of nutrition labeling at expressway rest areas. The subjects (n=903) were divided into two groups, according to the awareness of nutrition labeling: Awareness of Nutrition Labeling (ANL) group, n=367; Non Awareness of Nutrition Labeling (NANL) group, n=536. Effort of health care and identification of nutrition labeling was significantly higher in the ANL group, compared with the NANL group. As for the main reason for not identifying nutrition labeling, 'not interested in nutrition labeling' was the highest in the ANL group, and 'Don't know nutrition labeling is provided' in the NANL group. Identification ratio of nutrition labeling in future was significantly higher in the NANL group, compared with the ANL group among the subjects who didn't identify nutrition labeling before. After their becoming aware, a change of food purchase after reading the nutrition labeling was significantly higher in the ANL group, compared with the NANL group. Health beliefs on the nutrition labeling were significantly higher in the ANL group, compared with the NANL group. Satisfaction of nutrition labeling was also significantly higher in the ANL group, compared with the NANL group. The ANL group also expressed a necessity of expansion of nutrition labeling, compared with the NANL group. In the ANL group, identification of nutrition labeling was significantly higher in the hard effort group, compared with the little effort group of dietary life care. Therefore, improvement and campaign of nutrition labeling for consumers at expressway rest areas, especially for the NANL group, will be effective in identifying nutrition labeling for their health care.

Effects of Pre-cooking Methods on Quality Characteristics of Reheated Marinated Pork Loin

  • We evaluated the effects of pre-cooking methods on the quality of reheated marinated pork loin. Frozen marinated pork loins cooked using various methods (boiling, grilling, pan frying, infrared cooking, and superheated steam cooking) were reheated in a microwave, and their pH, color, cooking loss, re-heating loss, total loss, thiobarbituric acid reactive substance (TBARS) value, sensory properties, and shear force were determined. Although all parameters varied with different cooking methods, lightness values and TBARS values showed the tendency to decrease and increase, respectively, after reheating. Superheated steam-cooked samples showed the lowest values of cooking loss, total loss, TBARS value, and shear force (p<0.05) and the highest lightness, redness, and yellowssness values and juiciness, chewiness, and overall acceptability scores (p<0.05). These results show that pre-cooking with superheated steam maintains the quality characteristics of marinated pork loin upon reheating. Therefore, pre-cooking with superheated steam may be beneficial for the commercial distribution of frozen cooked marinated pork loin.

Effects of Protein Functionality on Myofibril Protein-Saccharide Graft Reaction

  • The myofibril protein (MP) isolate-saccharide graft reactions was prepared using the Maillard reaction with saccharides. The effects of various saccharides on protein functionality and quality of the Maillard reaction were investigated and compared with those of MP. The grafting degree of the MP isolate-saccharide graft reaction was significantly higher in the reducing sugar-treated groups (lactose, glucose, fructose, and palatinose). The browning intensity of the MP isolate-saccharide graft reaction with fructose, sucrose, and erythitol was higher than that observed in the control reaction (p<0.05). MP that reacted with reducing sugars (glucose, fructose, palatinose, and lactose) had fainter bands than MP that reacted with non-reducing sugars (sucrose, erythitol, trehalose, sorbitol, and xylitol). MPs conjugated with glucose exhibited higher protein solubility. The palatinose and lactose treatments were maximum in water binding capacity, though no significant difference in oil binding capacity among the saccharide treatments was observed. The emulsion stability of the MP isolate-saccharide graft reaction with palatinose and erythitol was higher than that of the control reaction. Therefore, reducing sugars have good protein functionality in the MP isolate-saccharides graft reaction.

Evaluation of Nutrient Intake and Bone Status of Female College Students according to the Calorie Consumption from Coffee Containing Beverage (중부 지역 여대생의 커피 음료를 통한 열량 섭취 수준에 따른 영양 섭취 상태와 골밀도 평가)

  • This study was designed to investigate the relationship between the dietary intake according to calorie intake from a coffee containing beverage and the bone health status of 189 female collegians. The study was conducted through questionnaires, anthropometric checkup, 3-days food records and ultrasound measurement of calcaneus bone mineral density. Subjects were divided into three groups: students not drinking coffee(non-coffee group, N=56), students consuming <100 kcal daily from coffee(low-calorie coffee group, N=84), and students consuming $\geq100$ kcal of their total daily calories from coffee(high- calorie coffee group, N=49). There were no significant differences in weight, height, body mass index, body fat and calcaneus bone mineral density among the three groups. The low-calorie coffee group usually drank black coffee or instant coffee mix, and the high-calorie coffee group habitually drank coffee with milk or sugar syrup. There were no significant differences in the mean daily energy and food intake among the three groups. However, vitamin $B_2$(p<0.05) and calcium (p<0.01) intake in the high-calorie coffee group were higher than in the non-coffee group. Also, mean intake of sugars, fish and shellfishes, milks and beverages in the high-calorie coffee group were also significantly higher than in non coffee group(p<0.05). There was no significant difference in the Korean Dietary Diversity Score(KDDS) among the three groups. The main calcium source was milk in all three groups, and milk intake(total and included with coffee) was highest in the high-calorie coffee group. Although no significant difference was apparent between the high-calorie and non-coffee groups concerning anthropometric factors and calcaneus bone mineral density, consumption of coffee may have influenced food and nutrient intake. The results suggest that consumption of milk-supplemented coffee may be of nutritional benefit.

Growth Performance and Meat Quality of Broiler Chicks Fed Germinated and Fermented Soybeans

  • This study was conducted to investigate the dietary effects of germinated and fermented (with Monascus pupureus) soybean screenings (GFS) on growth performance and meat quality in broiler chicken. A total of 750 1-day-old Ross ${\times}$ Ross male broiler chicks were randomly allocated into five groups (five replications with 30 birds each) and fed experimental diets for 5 wks as follows: Group 1, negative-control (antibiotics-free diet); Group 2, positive-control (negative-control with 10 ppm of Avilamycin); Group 3, negative-control with 0.3% GFS; Group 4, negative-control with 0.5% GFS; Group 5, negative-control with 1% GFS. The final body weight of each group fed a diet containing 1% GFS was significantly higher than that of the negative-control group. The feed conversion ratios of all groups fed diets containing GFS and the positivecontrol group were significantly improved compared to the negative-control group during the whole period (p<0.05). The relative weights of various organs along with the activities of serum glutamic oxaloacetic transaminase (GOT) and glutamic pyruvic transaminase (GPT) were not influenced by the dietary treatments. The levels of total serum cholesterol in groups fed diets containing 0.5% and 1% GFS were more significantly lowered compared to those of the control groups without GFS (p<0.05). There were no significant differences in the cecal microflora profiles among the groups. Further, the dietary treatments did not influence the physico-chemical properties of the edible meat, including the shear force, pH, meat color (CIE $L^*$, $a^*$ and $b^*$), and content of malondialdehyde (MDA). Cooking loss of breast muscle in the groups fed GFS was significantly lowered compared to that of the negative control group (p<0.05). These results indicate that dietary GFS could improve growth performance in broiler chicken and may affect meat quality in some instances.

Teachers' Participation and Mealtime Instruction in the Food Service at the Kwanak-gu Child-care Centers: Comparison between Child-care Teachers Caring Different Age Groups, Children Younger than Three Years and Those Three Years or Older (관악구 보육교사의 배식서비스 참여 및 식사지도 실태 : 영아반과 유아반의 비교)

  • This study was conducted to investigate how child-care teachers participate, practice mealtime instruction, and perceive difficulties in food service, focusing on comparison between the teachers caring two different age groups: children younger than three years (Younger Group) and those three years or older (Older Group). Questionnaires were distributed to 151 child-care centers in Kwanak-gu, Seoul, Korea during December, 2011. Only the data from 25 child-care centers, where two respective teachers in charge of Younger Group and Older Group completed the questionnaires, were analyzed. The results showed that there was no difference in terms of child-care teachers' participation in food service practice between the two groups, except for serving method; 'Pre-plated' serving was used significantly more often in Younger Group, whereas 'Line-up' serving was used in Older Group. Approximately, three quarters of the child-care centers had policies or guidelines on mealtime instruction. During mealtime, child-care teachers tended to use frequently verbal instructions such as "sit up straight when you eat" about eating manner, "don't be picky with your food" about eating habit, and "wash your hands before eating" about eating procedure in both the groups. There was no statistically significant difference regarding child-care teachers' perceived difficulties in food service between the two groups. These results indicated that child-care teachers' participation and mealtime instruction in food service did not differ between the two age groups, although children's development of digestion and eating skill differed by age. Therefore, training should be provided to child-care teachers about food service practices and mealtime instruction appropriate to children's age.

A Study on the Dietary Pattern and Degree of Fatigue of Evening college Students (야간 대학생들의 식생활 상태 및 피로도에 관한 연구)

  • The purpose of this study is to investigate dietary pattern and health status related to food habit and degree of fatigue of evening college students. A sample of 476 evening college students in Chonbuk area were surveyed by questionaire examining their food habit, nutrient intakes, degree of fatigue and cornell Medical Index(CMI). In this study, the male and female students were classified into two groups, respectively, the first group is not having jobs and the second is having jobs. The results were summerized as follows: 1. Evaluation status of food habit score indicated that the subjects were included in Fair and Poor group generally. Food habit score of female was significantly higher than score of male. For female students, food habit score of job group was significantly higher than score of non-job group(p<0.05). 2. Average intakes of calorie and protein were 1869.1 kcal and 68.3 g in male and 1612.4 kcal and 58.3 g in female. Other nutrients, such as vitamin $B_1$(1.1 mg), vitamin $B_2$(1.2 mg) and ascorbic acid(41.0 mg) in male, iron(13.5 mg), vitamin $B_2$(1.1 mg) and ascorbic acid(46.5 mg) in female were lower than the korean RDA. 3. The means of degree of physical, mental, neurosensory and CMI scores were 3.1, 1.9, 1.5 and 4.7 in male and 4.0, 2.4, 2.4 and 7.1 in female, respectively. For female students, though significancy was found between job group and non-job group in physical, neurosensory fatigue and CMI score(p<0.05, 0.01), but there were not significant differences in these score for male students. 4. There were significant positive correlation between three types of fatigue and CMI, whereas score of food habit was negative correlation for degree of physical, mental fatigue and CMI. The intakes of protein and vitamin $B_1$ were significantly related to the mental, neurosensory fatigue and CMI.

Isolation and Development of Quantitative Determination of Torilin from the Torilis Fructus (사상자 (Torilis Fructus)의 지표성분으로 Torilin의 분리 및 함량분석법 개발)

  • For the propose of the quality control of Torilis Fructus, one major compound was isolated by several column chromatograpies and identified by its spectral data as torilin (8,11-dihydroxy-8-angeloyl-11-acetyl-4-guaien-3-one). A quantitative analysis of torilin using HPLC method showed that the average contents at 230 and 254 nm were $7.167{\pm}0.168mg/g\;and\;7.052{\pm}0.160mg/g$, respectively, in 18 samples collected throughout the regions of Korea and China. This method provided a tool for standardization of the commercial Torilis Fructus.
