Assessment of the Intake and Availability of Dietary Iron and Nutrition Knowledge in Pregnant Women (임산부의 철분 섭취량과 흡수율 및 관련된 영양지식에 관한 연구)

  • This study was designed to estimate mean daily iron intake and its bioavailabi- lity and to assess nutrition knowledge for 144 pregnant women in the last trimester. Serum ferritin concentration was analyzed to estimate their iron stores. Dietary intakes of iron(heme iron and nonheme iron), the amounts of MPF(meat, poultry and fish) and ascorbic acid were assessed by modified 24-hr recall method. The food frequency questionnaire was used to assess subjects usual food consumption patterns. The mean value of serum ferritin was $21.3\pm{15.2ng/ml}$ and 26.4% of the pregnant women had a serum ferritin level <12ng/ml(i.e. depleted iron stores). The mean daily intake of total orin in the pregnant women was 56.5%(17.0mg) of RDA and heme iron intake was 0.94mg which was 5.5% of total iron intake. Total absorbable iron calculated by the method of Monsen was 2.41mg and bioavailability of dietary iron was 2.41%. Food frequency test score of meats group was positively correlated(r=0.443) with the bioaavailability of dietary iron. The mean score on the nutrition knowledge test of subjects was 12.76(out of a possible 20 points). These results indicate that the nutritional iron status may be improved by increasing either the amount of iron in the diet or its availability.

Analyses on the Factors Associated with Dietary Behavior Regarding Colon Cancer Risk (대장암 위험도와 관련된 식생활 행동 분석)

  • A case-control study was conducted in order to examine dietary behavioral factors associated with colorectal cancer risks. Data were collected from 128 cases with either colorectal cancer or large bowl adenomatous polyps and 129 controls regarding stages of dietary behavioral change, perceived barrier, self efficacy, nutrition knowledge, social support and food availability as well as body mass index and overall dietary quality. Cases showed less desirable behaviors with respect to fat reduction and vegetable intake compared with controls based on the analyses of the stages of dietary change. After adjustment of relevant covariates (age, gender and smoking), significant trends of increasing risk with higher level emerged for perceived barriers resulted from environmental conditions (OR = 1.6 - 2.0) and self-efficacy (OR = 2.2-2.3). No such relationships were found for nutrition knowledge and social support. The risk of colorectal cancer was associated with the kinds of foods available at home showing a borderline protective relation with milk (OR = 0.6) and respective significant and borderline direct associations for fresh meat (OR = 2.1) and soft drinks (OR = 0.6 when reversely scored). Within-group analyses presented best predictors of overall dietary quality as food availability for the case and self-efficacy and social support for the control. The findings of this study suggested a need for focusing on motivational and reinforcing factors in the development of nutrition education programs for colorectal cancer prevention.

Nano-Calcium Ameliorates Ovariectomy-Induced Bone Loss in Female Rats

  • In this study, we examined the effects of organic types of calcium derived from oyster shell (OS-Ca) and nano-calcium (Nano-Ca) on the bio-availability and physiological responses associated with bone health in ovariectomised rats. Increased body weight, which is one of the physiological effects of ovary removal, was significantly recovered by Nano-Ca treatment (p<0.05). The reduced calcium level in the liver in ovariectomised rat was increased significantly with OS-Ca and Nano-Ca treatment (p<0.05), suggesting improved calcium bio-availability. Alkaline phosphatase (ALP), osteocalcin, and deoxypyridinoline (DPD) were analysed as biochemical markers of bone metabolism and health in the presence or absence of OSCa and Nano-Ca. ALP, osteocalcin, and DPD levels increased following ovary removal and tended to decrease after treatment with Nano-Ca, indicating that Nano-Ca induces favourable bone metabolism. This result was reflected in the recovery of bone mineral density (BMD) and bone mineral content (BMC) of the femur after Nano-Ca treatment following ovary removal. Taken together, our data show that the tested calcium treatments, especially using Nano-Ca, enhanced the bioavailability or absorption of calcium and positively affected bone metabolism in ovariectomised rats.

  • The present study analyzes the diversity and usage of NTFPs and evaluates their importance in the day to day life of the people of rural Meghalaya. People use 172 NTFPs belonging to 139 plant species mainly for food, medicine and fuelwood and to a lesser extent for construction, handicrafts and ornamental purpose. These 139 plants belonged to 117 genera and 70 families with Rosaceae, Poaceae and Fagaceae families as the dominant NTFP yielding families. Fruits from shrubs and trees are most commonly harvested by people. Collection and availability of NTFPs for use as food are more during the summer season, which is also the period with least availability of job. NTFPs for subsistence use are greater in number than those having commercial value. The most commonly harvested plant parts are fruits and leaves. Roots, rhizomes and whole plants are extracted in lesser quantity which is a positive approach from sustainability point of view. NTFPs and other forest products also form a vital part of the rural household's income generation activities.

  • 모든 국민이 언제든지 충분한 식량을 충족할 수 있는 상태를 나타내는 식량안보에는 식량의 가용성, 식량의 활용성, 식량의 안전성, 식량의 접근성 네 가지 측정 요소가 있다. 식량의 가용성이란 국내 생산과 수입량 등을 고려한 공급량의 확충 여부를 말한다. 본 연구에서는 한국 농업을 중심으로 농업인구, 경작지, 수입량, 수입 공급망 등 식량의 가용성을 대상으로 통계적 분석을 진행하고 시사점을 도출한다.

Consumer's Perceptions of Industrial Foodservice Institutions in Pusan city and Kyeung Nam Provinces -I. Emphasis on the Foodservice Operation- (부산 경남지역 산업체급식소의 급식평가 연구 -I. 급식소 운영특성을 중심으로-)

  • Consumer's perceptions of the quality of food and food-related servcie were surveyed through questionnaires by 672 adults randomly selected from 20 industrial foodservice in Pusan Kyeung Nam area. Data from consumers were analyzed by using $SPSSPC^+$ program in terms of $x^2-test$, oneway ANOVA, t-test. The results are as follows: 1) Among the food characteristics, the mean rating for temperature of food was 3.18 over 5, for quality of food vs. food price 2.97, for fresshness 2.96, for taste 2.86, and for combination of colors 2.73; 2) In the food-related service, the mean rating was 3.20 for cleanliness of dishes, 3.18 for quality of dishes, 3.01 for varity of food items, 2.95 for courtesy of employees, and 2.57 for availability of favorite food. 3) Self-operated foodservice showed higher mean ratings in nutrition of food, quality of food vs. food price, and availability of favorite food than does the contracted one. 4) The rice (85.0%) and the kimchi (81.4%) were right in amount, but the soup (42.5%) and the side dish (49.0%) were not enough. 5) In seasoning of food, 45.2% of the respondents agreed that the salty taste and the amount of MSG were just right. However, 38.0% and 37.9% of them responded that the salty tast was strong and the amount of MSG was much. 6) The respondents mostly required the improvement of the taste of side dish, nutrition of food, sanitation of food, and variety of menu items.

  • This study was conducted to determine contents and estimated availabilities of trace minerals (Cu, Fe, Mn, Zn) in soybean sprouts depending on culture periods such as 1, 3 and 5 days. The proportional changes of Cu estimated availability in cotyledon were between 57.31 and 98.34%, between 63.69 and 82.56% for Fe, 99.19 and 99.82% for Mn and 48.60 and 94.56% for Zn, respectively, based on dry matter. The estimated availabilities of Cu, Fe, Mn, and Zn in hypocotyl were between 34.63 and 56.0%, 20.74 and 40.33%, 86.5 and 95.88%, and 96.11 and 96.61%, respectively, on dry matter basis.

  • Agriculture and forest are basis for livelihood in Nepal while both sectors constitute around 40 percent of the national product and over two-thirds of the economically active population is dependent on agriculture. However, radical changes in land use, depletion in crops production and food availability are major threats due to loss of soil fertilityand severe environmental degradation. In this study, we used time series data from 1986/87 to 2005/06 about food crop production and population published by Government of Nepal, Ministry of Agriculture and Cooperatives and Central Bureau of Statistics. Descriptive statistics and ArcGIS were used to assess and map the food security status of Nepalese Terai based on the local food demand and supply system. Food supply to demand ratio(FSDR) was the main idea of assessment. Our results showed that out of 20 districts, only 8 districts were categorised under secured food districts whereas 5 districts were still under food unsecured situation. The analysis further revealed that 7 districts had faced food deficit more than 8-16 times during the last 20 year periods. Data further showed that there was surplus food supply relative to the requirements dictated by FSDR. However, the average FSDR was less than 1.2(less than 20% surplus) exploring fact that most of the districts were not producing sufficient food to cope up the food shock and after 1995 it was relatively stagnant. Our prediction reveals that food supply in Terai even in the future would remain at almost the same level as now, and there will not more than 16-17% surplus by 2021 considering medium vibrant population growth. The findings thus, indicate that Terai may not be a food secure region in the future, even though the region is considered as a food storage house of Nepal. In addition, this paper suggests ways to make future comprehensive case studies more widely comparable in Terai, Nepal.

EFFECT OF BACTERIAL INOCULATION ON NEUTRAL DETERGENT FIBRE DIGESTION AND ENERGY AVAILABILITY IN GERM-FREE CHICKENS

  • The present study was done to examine whether inoculated and established bacteria in the digestive tract of germ-free (GF) chickens affect growth performance, energy availability, nitrogen utilization and neutral detergent fibre (NDF) digestibility of the host bird fed a high-fibre diet. Gnotobiotic (GB) chicks were made from GF birds by co-inoculating with Ruminococcus albus, and Staphylococcus warneri, only the latter of which was established in the chicken gut. No difference was detected among conventional (CV), GF and GB birds in body weight gain, food intake or food efficiency from 7 to 21 d of age. The amount of nitrogen retained was larger in CV than in GF and GB chicks. DE and ME values of the diet and NDF digestibility were higher in CV birds than in GF and GB counterparts. It was concluded, therefore, that the established bacterium S. warneri did not give any beneficial effects on the host bird as judged by growth performance, energy availability, nitrogen utilization, and NDF digestibility.

  • Feeding habits of Syngnathus schlegeli were studied by using samples collected from the eelgrass bed in Kwangyang Bay, Korea from January 1994 to December 1994. Syngnathus schlegeli was a carnivore which mainly consumed copepods and epiphytal gammarid amphipods. Its diets included small quantities of caprellid amphipods, tanaids and mysids. It showed ontogenetic changes in feeding habits. In its initial feeding stage, copepods were major food organisms. However, gammarid amphipods were heavily selected with the incretment of the fish size. Food availability in the eelgrass bed changed seasonally. Its main food items were changed according to variations of food availability. Copepods were mainly consumed in spring, and gammarid amphipods in summer and fall.
