A Study on the Contamination of Bacillus cereus in Baby Food on the Online Market (영유아를 대상으로 한 유통식품 중 Bacillus cereus 오염실태 연구)

  • Bacillus cereus is food poisoning bacteria frequently occured in starch food. Most of the delivery foods for infant is classified as ready-to-cook food. But unlike food for infant and young children, there are no standards and specifications of Bacillus cereus in ready-to-cook food. The purpose of this study is to examine the presence of Bacillus cereus, aerobic bacteria and coliforms in the food for infant and young children sold through internet. B. cereus was detected in 9 samples (8.3%), total aerobic bacteria was detected over $10^6CFU/g$ in 4 samples and coliforms were not detected in any samples. This will provide basic data for standards and specifications of Bacillus cereus in ready-to-cook food.

Analysis on Consumption Behaviors Regarding Environment-Friendly Agricultural Products According to the Food-Related Lifestyles of Housewives in Yeungnam Region (영남지역 주부의 식생활 라이프스타일에 따른 친환경농산물 소비행동 분석)

  • The purpose of this study was to examine the consumption behaviors regarding environment-friendly agricultural products by food-related lifestyles of housewives. The data were collected from 298 housewives living in Yeungnam region through a self-administered questionnaire during April, 2010. Frequencies, Cronbach's $\alpha$, factor analysis, cluster analysis, one-way analysis of variance, Duncan's multiple range test and chi-square test were conducted by SPSS Windows. The results obtained from this study were as follows. Lifestyles were categorized into five factors by factor analysis: healthy-seeking type, popularity-seeking type, convenience-seeking type, safety-seeking type and taste-seeking type. The respondents belonged to one of three groups by cluster analysis: popularity-seeking group, convenience-seeking group, and wellbeing-seeking group. The main reason given for purchasing environment-friendly agricultural products was safety. The respondents were satisfied with the safety of environment-friendly agricultural products the most. Many respondents purchased environment-friendly agricultural products at large discount markets, and received information about them from mass media. There were significant differences among three groups in the place of purchase environment-friendly agricultural products, information source for environment-friendly agricultural products, most important factor when purchasing environment-friendly agricultural products, the level of satisfaction with environment-friendly agricultural products and the purchase rate of environment-friendly agricultural products among the monthly food expenses.

Evaluation of Mineral Content in Convenience Baby Food (간편 이유식의 무기질 함량 평가)

  • A total of 101 samples of convenience baby food products were analyzed by microwave digestion and mineral nutrients (iron, zinc, calcium, magnesium) were determined by inductively coupled plasma optical emission spectroscopy (ICP-OES). By type, the samples included 44 rice porridges, 40 soft-boiled rices, 11 purees, and 6 powders. The mean values for iron (Fe) content were 0.05 to 0.45 mg/100 g (excepted powder type, mg/l0 g). This was equivalent to 22.35% for rice porridge, 10.55% for soft-boiled rice, 9.88% for puree and 2.74% for powder type compared to the KDRIs (Dietary Reference Intakes for Koreans), respectively. The mean values for zinc (Zn) was 0.06 to 0.28 mg/100 g (excepted powder type, mg/l0 g) and the KDRI ratio was the lowest at 5.94% in puree, with 27.76%, 28.95% and 10.91% in rice porridge, soft-boiled rice and powder type, respectively. Calcium (Ca) content relative to KDRIs was relatively low compared to other minerals, with 6.65% for rice porridge, 3.61% for soft-boiled rice, 6.24% for puree and 3.07% for powder type, respectively. The magnesium (Mg) content of baby food ranged from 13.4% to 39.0% compared to KDRIs, and was included in all baby food as a whole. For balanced nutritional mineral supply to infants, it is recommended that information on mineral sources and ingredients in convenience baby food be clearly provided to ensure proper growth and development.

  • Physicochemical components of dried green algae, Seaweed fulvescens (Capsosiphon fulvescens) with $96.02{\pm}0.02%$ moisture content, were investigated. Crude protein, crude lipid, ash and carbohydrate content of C. fulvescens were $31.76{\pm}0.26,\;1.01{\pm}0.21,\;13.58{\pm}0.62\;and\;53.65{\pm}0.73$, respectively. Predominant minerals were Na, Mg, Ca, K and P. Fe $(122.83{\pm}11.19mg/%)\;and\;Se\;(0.90{\pm}0.07mg%)$ contents in were higher than those of other seaweeds. Major free sugars were identified as fructose, glucose, sucrose, maltose and galactose. Organic acid including L-malic acid, citric acid, tartaric acid and d-malic acid were detected. Most abundant amino acids were glutamic acid, aspartic acid and alanine. Main fatty acids were palmitic acid, linolenic acid and stearidonic acid, with 58.37% polyenes.

Comparison of the physicochemical properties of native and cultivated Artemisia fukudo Makino (자생 및 재배 큰비쑥의 이화학적 특성 비교)

  • Artemisia fukudo Makino belongs to the Asteraceae family, is a halophyte that can grow in salinity soils and is known for its various physiological activities. However, few studies were comparing it according to the growth environment. Therefore, in this study, we analyzed the antioxidant activity, functional ingredients, and safety of Artemisia fukudo Makino according to the growth environment. Total polyphenol content was the highest in native mature leaves, but 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) and 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity was higher in cultivated leaves than in native leaves. The total mineral content, excluding sodium, was higher in cultivated than in native leaves. The content of potassium and calcium was higher in cultivated leaves than in native leaves. In addition, heavy metal analysis showed that cultivated leaves were generally lower than those of native leaves. Residual pesticides were not detected in all samples. In conclusion, since there is no significant difference in cultivated leaves compared to native leaves, it was judged that cultivated leaves could be used as a variety to be grown and mass-produced.

Satisfaction and Recognition Level of Environment-Friendly Agricultural Products in Cheongju Area (청주지역 초등학교 학부모들의 친환경농산물 사용에 대한 만족도와 학교급식 사용에 대한 인지도 분석)

  • The purpose of this study was to investigate basic data on the degree of parents' recognition and satisfaction with the use of environment-friendly agricultural products. The conclusions of this study are as follows. The survey on the use of environment-friendly products in households showed that 68.7% of the respondents used environment-friendly products at home. The frequency of purchasing organic products by household consumers showed that 25.1% of the respondents bought organic products one to two times per week. The most popular items of the environment-friendly agricultural products used were vegetables, comprising 63.9%. The households with more than 3,000,000 won of monthly income tended to consume more domestic livestock products (p < 0.05). In comparison to general agricultural products, environment-friendly agricultural products users showed higher satisfaction level with a better quality in term of safety, quality, nutrition, taste, appearance, diversity and price. The degree of satisfaction with safety was the highest ($3.8{\pm}0.68$), and price showed the lowest ($2.76{\pm}0.79$). The degree of parents' recognition of the governmental support for environment-friendly agricultural products showed that those who were aware of the supporting policy were 44.5%, but 55.5% of them didn't know about the fact that 46.6% of the respondents agreed that environment-friendly agricultural products should be used in more than 50% of the foods used for school food service. The respondents pointed out that vegetables (45%) sprayed with pesticide are the most urgent food item that need to be replaced by environment-friendly farm products.

Monitoring of Melatonin Contents in Nuts, Seeds, and Beans in Gyeonggi-Do (경기도 내 유통 중 견과종실류 등의 멜라토닌 함량 조사)

  • Nuts are essential components of a healthy diet as they provide nutritional value and bioactive components. Melatonin, is a hormone secreted from the pineal gland of the brain that prevents oxidative damage in various tissues, and also found in plants. This study presents a validation method for extracting and quantitatively analyzing melatonin in nuts, seeds, and beans in Gyeonggi-do; the method utilized chromatographic techniques and optimized extraction procedures, considering the high oil content of nuts. The average content of melatonin in nuts, seeds, and beans was 1200.83 (409.76-2223.56), 934.83 (454.10-1736.60), and 616.46 (494.70-825.12) pg/g, respectively. Melatonin content was higher in the kernel with pellicle than that in the kernel alone in walnuts and chestnuts. Furthermore, the presence of melatonin was lower in newly harvested walnuts, chestnuts, and peanuts than in those stored after being harvested the previous year.

Isolation, Characterization, and Application of Chitosan-Degrading Fungus from Soil

  • A chitosan-degrading fungus, BSF114, was isolated from soil. The culture preparation showed strong chitosanolytic enzyme activity at an optimum pH of 4.0 and optimum temperature of $60^{\circ}C$ after 36-40 h fermentation. The rapid decrease in the viscosity of the chitosan solution early in the reaction suggested an endo-type cleavage of the polymeric chitosan chains. To identify the isolated fungus, molecular biological and morphological methods were used. The fungal internal transcribed spacer (ITS) region 1 was amplified, sequenced, and then compared with related sequences in the GenBank database using BLAST. The phylogenetic relationships were then analyzed, and the results showed that the fungus belongs to Aspergillus fumigatus. Morphological observations were also used to confirm the above conclusion. The chitooligosaccharides (COS) obtained through hydrolyzing the colloidal chitosan showed that A. fumigatus BSF114 is suitable for degrading chitosan and producing chitooligosaccharides on a large scale. High concentrations of the COS (1,000 and 500 ${\mu}g/ml$) significantly proliferated mice marrow cells.

  • The treatment method of leachate was increasing with the progress of science and technology, the management system was more perfect. The paper gathered so far the leachate treatment technology, including physical, chemical and biological treatment technology, and found the technology to be improved, the paper expounds the advantages and disadvantages of each method, applicable scope in the future, leachate treatment technology.

  • Korea, China and Japan are countries located in Northeast Asia territory sharing similar natural environment. Countries are also using rice as a main diet material accompanied with vegetables, marine products and bean or fermented bean food. Yet, at the same time each country's food culture appeared as to be unique in food space due to their diverse food materials from different natural, cultural and religious background. This research is probing a way to recover subjective food culture and accomplish food environment which appropriates to modern globalized era by developing simple and economical repast tools meeting public's needs and distributing unique repast tools becomes Korean food culture and can be used in the life pattern of modernized nuclear families.
