Flavor Release from Ice Cream during Eating

  • The main purpose of flavor research using conventional extraction methods, such as solvent extraction, distillation, and dynamic headspace, is to effectively extract, identify, and quantify flavor volatiles present in food matrices. In recent flavor research, the importance of understanding flavor release during mastication is increasing, because only volatiles available in the headspace contribute to the perception of food 'flavors'. Odor potency differs among flavor volatiles, and the physicochemical characteristics of flavor volatiles affect their release behavior and interaction with various food matrices. In this review, a general overview of flavor release and flavor-food interactions within frozen dessert systems is given with emphasis on chemical, physiological, and perceptual aspects. Chemical and sensory analysis methods competent for investigating such flavor-food interactions are illustrated. Statistical analysis techniques recommended for data acquired from such experiments are also discussed.

PSL, TL 및 ESR 분석에 의한 건조과일류 및 버섯류에 대한 검지 특성 연구 (Studies on the Applications of PSL, TL and ESR Methods for the Detection of Dried Fruits and Mushrooms)

  • In this study, we investigated the applicability of the photostimulated luminescence (PSL), thermoluminescence (TL) and electron spin resonance (ESR) methods for various foods. The analysed samples consist of 11 items including dried fruits (6 items) and mushrooms (5 items). To compare between non-irradiated and irradiated food, all samples were irradiated with $^{60}Co$ gamma-ray source. In PSL study, the photon counts of all the unirradiated sample were identified negative (lower than 700). The photon counts irradiated (1, 5, 10 kGy) dried date-palm, dried jujube and mushrooms (Auricularia auricula, Phellinus linteus and Sarcodon aspratus) showed positive (higher than 5,000) and the results for the other samples were negative or intermediate (>700 and >5,000). In TL analysis most of items can be applicable to detect irradiated foods because of showing TL ratio above 0.1. The glow curves by TL method were estimated in the range of $150{\sim}250^{\circ}C$ in irradiated samples. In ESR measurements, the intensity of ESR signal (single-line) increased as the dose of irradiation increased. In particular, the specific ESR signals of irradiation-induced radical were detected in dried papaya, dried date-palm, dried banana, dried pineapple and S. aspratus. According to the results, PSL, TL and ESR methods were successfully applied to detect the irradiated foods. It is concluded that PSL, TL and ESR methods are suitable for detection of irradiated samples and a combined method is recommendable for enhancing the reliability of detection results.

식품 산업에서의 근적외선 분광법을 이용한 비파괴 분석법 동향 (Trends in non- destructive analysis using near infrared spectroscopy in food industry)

  • Near-infrared spectroscopy (NIRS) is one of the representative non-destructive and eco-friendly analysis methods used for rapid analysis of various ingredients in the food industry. To develop analysis model with NIRS, Chemometrics are applied after pre-treatment of spectrum. Many studies have been reviewed on the analysis of general and functional components for agricultural and livestock products. In the case of livestock products, some studies have been conducted for on-line analysis. This study investigated results on various samples and component applying near-infrared spectroscopy. Furthermore, the results according to sample condition were compared. It was confirmed that NIRS is applied to various fields in the food industry.

  • This study was conducted to evaluate the menu of a Japanese restaurant in a first class tourism hotel. The calculations used for the menu analysis were conducted using MS Excel 2003. Several previous studies have been conducted to analyze menus. For example, Pavesic used of the weighted contribution margins (WCM) and potential food cost (PFC%) to evaluate menus, while Kasavana & Smith used the mix margin (MM%) and unit contribution margin (CM) to evaluate menus. The menu engineering method focused on the customer's viewpoints, while the Cost/Margin analysis method considered the manager's viewpoints. The menus that need continuous keeping Kasavana & Smith (Star) and Pavesic (Standard) included 'Assorted sashimi with side dishes (big), 'Lunch box special', 'Tempura course', 'Broiled Spanish mackerel and side dishes', 'Shrimp tempura', 'Special sushi', 'Seafood Udong', 'Buckwheat noodles'. The results of this study should increase customer satisfaction and profits at the Japanese Restaurant.

축산식품 중 벤지미다졸계 구충제 잔류실태 조사 (Determination of Benzimidazole Residues in Livestock Products)

  • 본 연구를 통하여 확립된 시험법은 고감도를 가지고 선택성이 뛰어난 LC/MS/MS를 이용하여 한번의 시료전처리와 분석을 통하여 축산식품 중 잔류하는 벤지미다졸계 구충제인 albendazole, fenbendazole, thiabendazole, flubendazole 및 oxibendazole 5종의 잔류량 분석을 가능하게 하였다. 추출용매로 ethyl acetate를 사용하고 MCX 카트리지를 이용하여 정제를 한 시험법으로 Codex guideline(20)에 따라 검량선의 직선성, 회수율, 검출한계 및 정량 한계 등에 대한 실효성을 검증한 결과 검량선은 모두 0.999 이상의 좋은 직선성을 가졌으며 회수율은 albendazole 71-74%, fenbendazole 70-72%, thiabendazole 79-83%, flubendazole 79-83%, oxibendazole 81-86%로 좋은 결과를 얻었다. 또한 검출한계 및 정량한계는 0.01 ppb, 0.03 ppb로 잔류허용기준이 가장 낮은 flubendazole의 10 ppb보다 100배 정도 더 좋은 감도를 가지고 있으며, 소의 근육, 간, 및 천엽에서 MSPD법으로 분석한 실험(21)과 정제과정 없이 유기용매로 추출하여 LC/MS로 분석한 실험의 회수율(22)보다 본 연구의 시험법이 더 좋은 회수율을 보여주었다. 또한 확립된 시험법을 이용하여 유통 중인 돼지고기, 쇠고기, 닭고기 총 270건을 수거하여 잔류량을 모니터링 한 결과 경기, 충청, 전라, 경상 지역에서 수거한 돼지고기에서 fenbendazole이 0.0012-0.0031 mg/kg의 수치로 검출이 되었고, 그 검출률은 4.4%이었으나 잔류허용기준인 0.1 mg/kg보다 낮은 수준이었다. 또한 fenbendazole에 대한 노출량 평가 결과 JECFA에서 정하고 있는 ADI의 0.01% 이하로 나타났다. 그러나 축산 농가에서 축산물의 생산량을 높이기 위하여 벤지미다졸계 구충제를 과다 사용하거나 안전 휴약기간을 준수하지 않을 경우 축산물의 체내에 잔류가능성이 높기 때문에 지속적인 잔류실태 조사가 수행되어야 할 것으로 사료된다.

GC-MS를 이용한 건강기능식품 중 옥타코사놀 분석법 개발 연구 (Optimization of Analytical Methods for Octacosanol in Related Health-functional Foods with GC-MS)

  • 본 연구는 건강기능식품의 복합제품 개발 및 일반식품 형태의 제품개발 확대에 따라 옥타코사놀의 특이성 및 감도 등이 개선된 분석법을 마련하여 향후 공정시험법에 활용할 수 있도록 하였다. 건강기능식품 중 옥타코사놀의 함량분석을 위해 GC-MS를 이용한 분석법을 확립하고 유통중인 제품을 대상으로 적용성을 검토하였다. 분석법 검증은 특이성, 직선성, 검출한계 및 정량한계, 정확성, 정밀성에 대해 수행하였다. $12.5{\sim}200{\mu}g/L$의 농도범위에서 $r^2=0.999$ 이상의 우수한 직선성을 확인할 수 있었으며, 검출한계와 정량한계는 각각 4.5, $13.8{\mu}g/L$이었다. 공시료에 표준물질 첨가법을 이용하여 정확성을 검토하였으며 50, 100, $150{\mu}g/L$의 농도에서 각각 94, 93, 109%의 회수율을 확인할 수 있었다. 정밀성 결과에서는 시료 채취량을 80 mg, 120 mg, 220 mg으로 각기 달라하여 측정한 결과 상대표준편차는 1.8~2.4%로 확인되었다. 실험실간재현성은 1.0~2.3%로 나타났다. 본 연구에서 확립된 분석법을 적용하여 유통제품 9건에 대해 적용성 검토를 실시한 결과 전체 시료에서 분석이 용이하였으며, 모두 표시기준에 적합함을 확인하였다. 본 연구를 통하여 확립된 GC-MS를 이용한 건강기능식품 중 옥타코사놀 분석법은 향후 공정시험법으로 활용할 수 있으며 국내 건강기능식품의 관리 기반을 강화하는데 기여할 것으로 사료된다.

중국인의 식생활 유형에 따른 음료 선택속성에 관한 연구 - 천진 지역을 중심으로 - (A Study on Chinese Beverage Selection Attributes according to Dietary Style - Focusing on Tianjing Area -)

  • The study is part of the Chinese beverage selection attributes according to dietary style purchases based on the different dietary styles among different factors and consumer behavior analysis of consumer characteristics. The subjects of study were for the people living in Tianjin China objects directly in the local implementation of the questionnaire survey. A statistical analysis of 455 was conducted using SPSS 19. Using the general statistical analysis and cause analysis and reliability analysis, ANOVA test and cross analysis. Investigation object types related dietary style 20 projects, selection attributes 14 exploratory analysis of the causes, according to the results of dietary style in five factors, respectively of the health oriented, convenience oriented, economy oriented, gourmet oriented, food safety oriented convenient type named pursuit. Selection attributes is to consider three items of the preference factors, production and functional factors, information factors named. Food safety oriented showed a high percentage, Gourmet oriented compared to other types of higher proportion of singles. Food safety oriented production and functional factors to purchase consideration magazine and newspaper has obtained the information. Gourmet oriented production and functional factors to purchase consideration TV and radio were obtained by using the information. Health oriented green tea beverages have been preferred.

파베직 분석 방법을 이용한 효율적 메뉴관리에 관한 연구 (A Study on Effective Menu Management Using David V Pavesic's Method)

  • Recently, hotel industry has realized the importance of food and beverage sales for the profit maximization, and the focuses on restaurant management has been growing. Accordingly, menu management in the F/B department is one of the most key factors determining the success or failure of business. Therefore, in this study, entree menu items of french restaurant in the deluxe hotel was analysed with presently theorized model of menu analysis, classified into four menu items. Also it was analyzed how those classified menu items influence on sales, number of sold, food cost percentage, contribution margin And, proper ways was presented to make restaurant managers and menu planner in order to increase food operation sales through proper modifications and methods on various menu analysis matrix. In Pavesic's menu analysis method, all of menu items have impact on the sales, number of sold, contribution margin and Primes, Sleepers do so on the food cost. The finding of this study was that Pavesic's menu analysis is superior to menu analysis in terms of the sales, number of sold, food cost percentage, contribution margin. Therefore, Pavesic's menu analysis is useful and efficient method in order to conduct menu engineering.

음식관여도 유형에 따른 레스토랑 간편식 선택속성 중요도-수행도 분석 (Importance-Performance Analysis of Restaurant Meal Replacement (RMR) Selection Attributes According to Food Involvement Type)

  • This study evaluated the consumers' demands and points of improvement for restaurant meal replacement through importance-performance analysis by the restaurant meal replacement segment market using food involvement. The results were as follows. First, after segmenting the restaurant meal replacement market using food involvement, it was classified into three markets (multiple involvements, exploration-oriented, and product quality-oriented). Second, an analysis of the importance of restaurant meal replacement selection attributes revealed taste, sanitation, quality, freshness, price, saving time, texture, ingredients, preparation process, and quantity to be highly important. An analysis of the differences according to the market type revealed the multiple involvement type to be more important than other groups, considering the restaurant meal replacement selection attribute element. Third, an analysis of the importance-performance analysis of restaurant meal replacement selection attributes revealed that quantity and price as the selection attributes that needed to be improved first in all three markets. In addition, in the multiple involvement type, food additives appeared as a selection attribute requiring priority improvement, revealing the characteristics of a market that cares about diet and health.

곡류 및 그 가공품 중 아플라톡신과 데옥시니발레놀의 안전성 평가 (The Safety Assessment of Aflatoxins and Deoxynivalenol in Cereals and Their Products)

  • This study was carried out to assess the safety of cereals and their products (20 species, 205 samples) distributed in Gyeonggi province by analyzing contamination levels such as exposure frequency of Aflatoxins and Deoxynivalenol (DON). Aflatoxins were detected in 16 (8%) samples in total with a range of 0.01~27.88 ${\mu}g/kg$, including 3 of 9 bake flour (33%), 2 of 6 dried corn (33%), 3 of 12 frying flour (25%) and 2 of 11 sorghum (18%). DON was found in 56 (27%) samples including 11 of 13 adlay (85%), 6 of 8 wheat (75%), 6 of 10 processed corn for popcorn (60%), 6 of 11 sorghum (55%) and 7 of 16 barley (44%) with a range of 2.2~754.4 ${\mu}g/kg$. In particular, both Aflatoxins and DON were detected in 8 samples (2 millet, 2 wheat, 1 sorghum, 1 adlay, 1 dried corn, 1 bake flour) simultaneously. As a result of this study, we found that an adult is exposed to Aflatoxins of $0.80({\times})10^{-3}{\mu}g/kg$ b.w./day and DON of 0.18 ${\mu}g/kg$ b.w./day. The quantity of exposure to DON amounted to 18.5 percentage level compared with PMTDI 1 ${\mu}g/kg$ b.w./day suggested on JECFA, therefore we can assess that the possibility of health risks by intake cereals distributed in Gyeonggi province is low. However the concentration of Aflatoxins in one dried corn was 27.88 ${\mu}g/kg$ which was over the maximum residue limits (MRL) suggested on internal and external level, the monitoring about mycotoxin should be conducted on continuously.
