Preference Choice Survey of Pork Chop by French and Korean Consumers

  • Digital photographs of 16 pork chops were each modified to give 16 treatments, such as two levels each of fat cover, color, marbling and drip, giving a total of 256 images. Consumers from three locations in France and six locations in Korea selected their preferred chop from 16 treatments in different chops and repeated this selection process eight times from different groups of chops, respectively. Respondents were asked to complete a questionnaire on socio-demographic information. Both the results of the French and Korean surveys gave four clusters of consumers, but they were not the same in terms of the choice strategies used, or in terms of their relationships with the socio-demographic items. The interesting apparent similarities (such as, both color levels being equally important to consumers in both countries) and differences(such as, the strong preference for lean meat in France; no fat preference in Korea) suggest a need to compare the results from the two countries. However, due to the difference of the socio-demographic make-up of the consumer panels from the two countries, a simple and direct comparison of the clusters based on choice and their relationships with the questionnaire items is not possible, but is currently being explored.

Structural relations of late night snacking choice attributes and health promotion behaviors according to dietary style of industrial workers

  • BACKGROUND/OBJECTIVES: This research was conducted to develop a construct model regarding the dietary style, late night snacking choice attributes and health promotion behaviors of industrial workers. SUBJECTS/METHODS: The surveys were collected during the period between January and February 2013. A statistical analysis of 888 industrial workers was conducted using SPSS 12.0 for Windows and SEM (Structural Equation Model) using AMOS (Analysis of Moment Structure) 5.0 statistics package. RESULTS: The results of the correlations between all variables showed significant positive correlations (P < 0.05). Results of factors analysis on dietary styles were categorized into five factors and health promotion behaviors were categorized into four. The reliability of these findings was supported by a Cronbach's alpha coefficient of 0.6 and higher for all other factors. After obtaining the factors from processing an exploratory factor analysis and the end results supported the validity. In an attempt to study the late night snacking choice attributes in accordance to dietary styles and the health promotion behaviors of industrial workers, a structural equation model was constructed and analyzed. CONCLUSIONS: All tests proved the model satisfied the recommended levels of the goodness on fit index, and thus, the overall research model was proved to be appropriate.

A Study of College Students' Actual Conditions of Using Coffee Shops and Choice Attributes - Focused on Seongnam Area - (대학생의 커피전문점 이용 실태와 선택 속성에 관한 연구 - 성남 지역을 중심으로 -)

  • This study investigated college students' patterns of visiting coffee shops which are formed by students' preferences. This study surveyed 300 college students in Seongnam. The subjects were consisted of 45.2% males and 54.8% females and the average age was 20.8 years. 41.3% of subjects visited coffee shops once or twice a month and 42.4% of subjects visited coffee shops on a random basis. 26.7% of subjects stayed in coffee shops for 1~1.5 hours. The main purpose of going to coffee shops was to enjoy specialty coffee. The subjects' first favorites was coffee with various kinds of syrups and second one was Americano. When the female subjects in Seongnam chose the coffee shops, they focused more on variety factors than the male subjects. The group of subjects who had monthly expenses of less than 400,000 won focused on price factors more than the group of subjects who had monthly expenses more than 400,000 won. Moreover, environmental factors were heavily related to the usage rate and staying time of the coffee shops. Above all, price factors and promotion factors affected subjects' choice of the coffee shops in Seongnam.

A Study on the Choice Attribute of Chocolate according to the Purchasing Purpose - Focused on Self-gift and Interpersonal Gift - (구매 목적에 따른 초콜릿 선택속성에 관한 연구 - 본인선물과 타인선물 중심으로 -)

  • This study was conducted to identify the choice attributes in the purchase of chocolate and to identify differences between the choices, by considering the purpose of purchase being self-gift or interpersonal gift. The preferred optional attributes considered and assessed were capacity, package, product composition, brand reputation, and sensuality. The survey included customers who purchased chocolates from June 1, 2017 to August 31, 2017. T-test was applied to verify the difference in optional attributes depending on the purpose of purchase. Our results indicate that people consider packages, product composition, and reputation for interpersonal gifts, and that Valentine's Day purchases are frequently for themselves and others' gifts. Our results will help to identify chocolate consumption behavior, and will facilitate in establishing chocolate product composition and development as well as brand positioning strategies, through factors affecting preferences based on the purpose of purchase.

Constructing Strategic Management Plan for University Foodservice Using Conjoint Analysis and Multidimensional Scaling (컨조인트 분석과 다차원척도법을 이용한 대학급식소의 전략적 운영 방안 모색)

  • This study is designed to 1) understand customers' choice behavior and preference of foodservices in campus and 2) provide recommendation on management strategies for university foodservice manager. Individual interview and focus group interview were used to identify important selection attributes. The questionnaire was developed and distributed to 480 Yonsei university students and statistical data analysis was completed using SPSS WIN/7.5 for descriptive analysis, multidimensional scaling and conjoint analysis. The results of this study were summarized as follows: Students evaluated four foodservices in different ways, and strength/weakness points could be identified from the evaluation patterns. Most students(51.1%) were frequently used 'A' foodservice, though they preferred other foodservices, and cost, mainly, caused the difference. Perceptual map from multidimensional scaling showed that preference and patronage were close with different attributes. Cost was most relatively important attribute to select foodservice in campus from conjoint analysis. Therefore, relative importance of attributes should be considered in customer preference survey for constructing management plan.

Validity of Self-administered Semiquantitative Food Frequency Questionnaire by Conditions of One Portion Size (식품섭취빈도조사법의 1회 섭취분량 제시여건에 따른 정확도에 관한 연구)

  • This study was designed to estimate the improvement of Validity for food frequency questionnaire(FFQ) by offering multiple choice portion size in developing a questionnaire. Validity of the two methods(food frequency questionnaire I=FFQ I & Food frequency questionnaire II=FFQ II) was tested in comparison with reference method of the 7-day weighed record(7DWR). Dietary consumption data of the three methods(FFQ I, FFQ II & 7DWR) were collected from 101 female university students for the analysis. Validity was measured in two categories : One was the nutrient intake value from the three methods, the other was the identification of between individual variation within the group. Spearman's rank order correlation test and distribution graphs were used for the analysis. The result showed that individual intake value of the FFQII was closer to that of the 7DWR than that of the FFQ I.Spearman's rank order correlation between the FFQII and the 7DWR did not show any improved correlation. The distribution graphs of nutrient intake derived from both the FFQ I and the FFQII were different from that of the 7DWR. Therefore, it could be suggested that single one portion size food frequency questionnaire is an equally efficient method as a multiple choice food frequency questionnaire to be adopted in epidemiologic studies.

Ascophyllum Nodosum Supplementation Strategies That Improve Overall Carcass Merit of Implanted English Crossbred Cattle

  • English crossbred steers (n = 32) and heifers (n = 32) were fed a corn-based finishing diet and supplemented with 2% Ascophyllum nodosum on a DM basis to for various feeding stages of the 119 d feeding period determine the supplementation strategy that maximized intramuscular fat deposition as determined by quality grade. All cattle were implanted with Ralgro$^{(R)}$ on d 36 of the trial and re-implanted with Revalor-S$^{(R)}$ or Revalor-H$^{(R)}$ on d 92. Cattle were blocked by sex and divided into one control and three treatment groups receiving Ascophyllum nodosum. Treatment 1 (trt 1) received Ascophyllum nodosum from d 36 to 50 of the feeding period, trt 2 received Ascophyllum nodosum for the last 14 d of the feeding period, and trt 3 which received Ascophyllum nodosum for both d 36-50 and the last 14 d of the feeding period. Cattle were weighted initially ($385{\pm}4.53kg$) and every 28 d following until they reach an average BW of $554{\pm}7.46kg$. No effect for Ascophyllum nodosum supplementation was found on measured performance characteristics. All treatment groups supplemented with Ascophyllum nodosum had higher actual marbling scores (p<0.05) than controls. Trt 1 was found to have a highest marbling score (572.5; p<0.05), whereas the control group having the lowest marbling score (473.8). Trt 1 had a higher quality grade (5.25; p<0.05) than the control (3.94) group, but did not differ from trt 2 (4.56; p = 0.105) and trt 3 (4.75; p = 0.236) where high Select = 4, and low Choice = 5. Trt 2 did not differ from trt 3 (p = 0.655), or the control group (p = 0.140) for quality grade. However, trt 3 did tend to differ (p = 0.057) from the control group for quality grade. Control group animals graded 25% Choice, 62.5% Select; trt 1 graded 75% Choice, 18.8% Select; trt 2 graded 62.5% Choice, 25% Select and trt 3 graded 56.3% Choice and 31.2% Select. Overall, treatment groups had a 39.6% increase in Choice quality grade and a 37.5% decrease in Select quality grade when compared to the control animals.

  • This study has the purpose to show superiority of Korean food, strategies for competition and infinite possibilities of Korean food to students by making them to recognize accurate and right values for each work world, examining satisfaction level for studying Korean-style food in culinary high schools and how such satisfaction could influence their decision on career. Both literature study and demonstration study were carried out for this study. The literature study includes the research on the significant effect of satisfaction with a major on career decisions among technical high school students. Three hypotheses were established for this research. First hypothesis was that satisfaction with the curriculum of Korean-style food(satisfaction level of their major study and prospects of their major study) among high school students majored in cooking would have significant effects on their sense of insecurity for choice of career. Second hypothesis was that satisfaction with the curriculum of Korean-style food(satisfaction level of their major study and prospects of their major study) among high school students majored in cooking would have significant effects on their mental conflicts for choice of career. Third hypothesis was that satisfaction with the curriculum of Korean-style food(satisfaction level of their major study and prospects of their major study) among high school students majored in cooking would have significant effects on their sense of security for choice of career.

  • This study aims to examine the consumer preference for packaged bean curd that takes a growing public interest. Specifically, this study tried to examine which is more important - the place of origin of the raw bean or the environmental-friendliness of the raw bean. Surveys were conducted to obtain information, such as the consumer evaluation for food safety on imported food products from China and the consumer perception of Chinese organic food products, Using the binary probit model, the relationship between consumer's choice of packaged bean curd and potentially important factors that can affect the consumer's choice was analyzed. A summary of this research and some policy implications follow. The results of this study can be used as the basic guideline as to how to extend the safety of imported food products, in general, and how to further develop the packaged bean curd industry in Korea, in particular.
