Influences on the environment from the consumption of livestock have increased drastically during the last 50 years in Korea. Reduction of bovine meat consumption is one of the alternatives as sustainable food supply. The consumption of bovine meat and the ecological footprint (the sum of the cropland, grazing land, and carbon footprint) from the consumption of bovine meat have increased over 13 and 12 times over the last 50 years. Especially, the consumption of imported bovine meat and the ecological footprint from the consumption of imported bovine meat have increased significantly about 346 and 369 times over the last 40 years. If the consumption of bovine meat decreased by half in Korea in 2023, the ecological footprint from the consumption of bovine meat would be reduced by 40~65% depending on the scenarios. The supportable population number for the consumptions of environmental resources (food (crops, livestock, and fish), energy, forest, and built-up land) and the crops were 0.57~1.56 million and 3.42~6.83 million, respectively, depending on the scenarios and the nationality of the supported people.
Twenty-four new born crossbred (Bos indicus$\times$Bos taurus) calves were distributed in two equal groups and assigned to two different pre-starter diets with (Group 1) and without (Group 2) fish meal to study the effect of replacement of animal protein by vegetable protein in the diet and the age of animals on ruminal metabolic development. All calves were fed colostrum for 24 h and whole milk until weaning at 8 weeks of age. Rumen fluid samples were collected on 4 d, 1 wk, and then weekly interval up to 8 wk of age. Rumen fluid samples were analysed for pH, TVFA, lactic acid and N fractions (total N, total soluble N, trichloro acetic acid (TCA) soluble N, TCA precipitable N and ammonia N). Weekly feed intake and live weight gain pattern showed an increasing trend with the advancement of age, but were similar in both groups. The pH fell steadily during 0-4 wk of age and then stabilized in later period. A close relationship (r=0.80) between starter intake and TVFA concentration was observed in both the groups. Lactic acid (meq/l) and ammonia N (mg/dl) concentration showed initial rise (0.55 and 14.97 on day 4 to 3.38 (7 wk) and 32.85 (4 wk), respectively) to fall (2.74 and 17.60) again during 8 wk of age in response to increase in dry feed consumption (10% initially to 83% of diet dry matter at 8 wk of age). The TCA precipitable fraction of N did not show any change during 0-8 wk of age. Data indicate that the metabolic changes responded rapidly to dry feed intake which did not differ in fish meal and non-fish meal groups, and a poor voluntary consumption of oat hay retards the progressive changes in live weight and rumen microbial development.

The levels of five heavy metals (mercury, cadmium, lead, copper and zinc) were analyzed in edible tissues of Lophius piscatorius Linnaeus, 1758 marketed in Sinop coasts of the Black Sea by using inductively coupled plasma mass spectrometry. With the present study, heavy metal values of this fish in the Black Sea were examined for the first time. The mean concentrations in mg kg-1 wet wt. of Hg, Cd, Pb, Cu and Zn were 0.022, 0.009, 0.035, 6.3 and 16 mg kg-1 wet wt., respectively. The results of the present study indicate that the consumption of muscle from anglerfish can be considered safe in terms of permissible legal limits. It is clear that, Zn showed the high accumulation in muscle tissue followed by Cu, while non-essential metals Hg, Cd and Pb showed the low accumulation. This could be explained by the fact that Zn and Cu are essential elements in the bodies of living organisms and has an important role in different physiological processes. In the present study, heavy metal levels in angler fish were low. Likewise, the calculated HI values were lower than one. In conclusion, the results of the present study indicate that the consumption of muscle from anglerfish can be considered safe in terms of permissible legal limits and hazard index values.
Since the existing mass production and consumption systems are no longer sustainable, countries are pushing for policies to make fisheries by-products as resources in an eco-friendly manner, and international standards are also being strengthened to increase the value of by-products. In Korea, economic and environmental perceptions of the by-products are rapidly changing, such as realizing carbon neutrality and enhancing circular resources by Korean Sustainable Development Goals. Raw materials derived from the by-products have been steadily imported from 2018. In particular, the number of imports of fish collagen peptides was only 16 number of times in 2017, but was rapidly increased to 483 number of times in 2020. Simultaneously, the demand for raw materials and nutrients for health functional food derived from fish by-products, which did not exist statistically until 2017, started to arise from 2018, and in 2019, consumption of high-value-added raw materials for fish by-products increased by 45% compared to the previous year. However, limitations are in legal and biotechnical industry aspects while its value as a biomaterial is recognized in the by-products-related industry. In this study, therefore, the status of by-products for upcycling biomaterials was reported and provided a scientific basis for supporting governmental strategies. In order to fulfill with the principles of a sustainable circular economy, the factors on hinder the marine bio-industrialization of the by-products were derived and suggested directions and plans for development into a high-value added the by-products as the marine bio-industry by substituting imported raw materials to support the development.
The consumption of a wide variety of food groups is considered one of the key components of nutritional adequacy. The 2005 Dietary Guidelines for Koreans includes the consumption of a variety of foods from diverse food groups as a component of a normal diet. A survey was conducted to evaluate the relationship between the dietary diversity of food groups and nutrient intake in elderly patients (age 65 and above) at a rural area in Korea (Inje). 296 subjects (111 male and 185 female) were probed in a 3 day 24-recall dietary survey. Subjects were grouped according to food group intake frequency, based on six food groups (grain, meat/fish/legume/egg, vegetable, fat/oil, dairy, fruit). Nutritional quality was evaluated according to the numbers of nutrients under EAR (Estimated Average Requirements), and MAR (mean adequacy ratios). The frequency of elderly subjects consuming a meat/fish/legumes/egg food group less than once per day was 29.4%. The frequency of elderly subjects consuming fat/oil food group less than once per day was 65.8%. The percentage of subjects who did not eat dairy food was 88.8%, and that of subjects who did not eat fruit was 57.5%. A stepwise multiple regression analysis was used to develop models relating nutritional quality to possible food group intake frequency factors. Using the number of nutrients under EAR as a dependent variable, the meat/fish/legume/egg food group intake frequency explained 9.9% of variance, followed by the grain group, fat/oil group, dairy group, and vegetable and fruit group (Model $R^2$=0.260). For mean nutrient adequacy ratio as a dependent variable, the model $R^2$ was 0.326. The results of this study suggest that a highly varied diet in elderly might be associated with better nutritional quality, as assessed by nutrient intake. Accordingly, dietary guidelines should take into consideration nutritional characteristics in order to improve intake from all major food groups and to provide a variety of foods in the diet.
This study aimed to examine the effect of external pop-up satellite archival tags (PSATs) attachment and water temperature on the oxygen consumption rate (OCR) of the olive flounder (mean body weight 2281.7 g). The OCRs of fish were measured under conditions of three different water temperature conditions (15, 20, and 25℃) and two different tagging methods [non-tagging, control; bio-logger external attachment with a miniature PSAT (dummy mrPAT), BEA] using a closed flow-through respirometer. The OCRs of fish linearly increased with the increase in water temperature in both the control and BEA (P<0.001); however, the OCRs of BEA were approximately 1.8-1.9 times lower than those of the control at each water temperature (P<0.001). The Q10 values of the control and BEA were the highest in the water temperature range of 15 to 20℃, but sensitivity to water temperature changes was higher in BEA than in the control. The metabolic energy loss rate (MEL) of fish increased with increasing water temperature regardless of external tagging, but the MEL of the control was higher than that of BEA (P<0.001). These results demonstrate that OCR, thermal sensitivity, and energy expenditure are all affected in adult olive flounder with external PSAT attachment.
An experiment was conducted to investigate the effects of four water temperatures (10, 15, 20, and $25^{\circ}C$) in combination with three photoperiods (24L:0D, 12L: 12D, and OL:24D) on the oxygen consumption rate of juvenile dark-banded rockfish, Sebastes inermis (mean body weight $20.5{\pm}0.7g$). The oxygen consumption rates of S. inermis were measured in triplicate for 24 hours using a continuous flow-through respirometer. Different combinations of water temperatures and photoperiods resulted in significant differences in the mean oxygen consumption rate of S. inermis (P<0.001). The oxygen consumption increased with increasing water temperatures for all photoperiod treatments (P<0.01). Mean oxygen consumption rates at 10, 15,20 and $25^{\circ}C$ ranged $178.3\sim283.5,\;386.7\sim530.7,\;529.2\sim754.3$ and $590.0\sim785.5mg\;O_2kg^{-1}h^{-1}$, respectively. $Q_{10}$ values ranged $3.17\sim5.51$ between 10 and $15^{\circ}C,\;1.87\sim2.10$ between 15 and $20^{\circ}C$ and $1.08\siml.24$ between 20 and $25^{\circ}C$, respectively. Fish held in continuous darkness (OL:24D) used consistently less okygen than fish exposed to continuous light (P<0.05). The mean oxygen consumption offish in a 12L:12D photoperiod was higher than that offish in 24L:0D and 0L:24D photoperiods under all temperature treatments except $10^{\circ}C$. The oxygen consumption of fish exposed to the 12L:12D photoperiod was significantly higher during the light phase than during the dark phase under all temperature treatments except $10^{\circ}C\;(P<0.05)$. This study provides empirical data for estimating oxygen consumption of S. inermis under given condition. This result has application for culture management and bioenergetic model for growth of this species.

It is then seasoned with kochukaru, garlic, soy sauce and if needed, more kochujang to suit everyone's taste buds. Restaurants that offer this dish often allow you to select your fish from a tank. Many specialty seafood restaurants have several tanks from which you may choose a fish. Popular fish for this dish may include Korean rockfish, flounder, yellow corvina, codfish, croakers, pollacks, and even fresh water fish like carp and trout. In addition, other shell fish such as crabs, clams and oysters can be also added to this soup to compliment and enhance its spicy but refreshing flavor. This soup is one of Korean's most popular dishes while drinking soju. If you order sushi or sashimi, the soup is made from the left-over parts of the fish. The objective of this study is to determine a standardized recipe of Maeun-Tang and to investigate consumption so as to increase its intake opportunities for consumers through its development. Fish species used in Maeuen-Tang's recipes were flounder, Korean rockfish and other fish. Onion, radish, chilies, crown daisy, garlic and some times, pumpkin and bean curds were added to the mixture to absorb the kochujang which is the base flavor of this dish. Most of the stock used in Maeuen-Tang's recipes is pure water, fish stock and vegetable stock, 1.0-1.5 Korean rock fishes and 0.5-1.0 flounders, with its head and bone, which were used in 3-4 portions of Maeun-Tang. Most of the seafood restaurants used seasoning which didn't age and was made by the restaurant. The cooking equipment used in the Maeuen-Tang's recipes were a cook-port and earthen bowl.
Background: To minimize the use of antibiotics and to obtain a more sustainable fish culture and aquaculture industry, development of alternative natural source of immunostimulant to replace antibiotic in aquafeed is highly needed. Objective: Dietary inclusion effect of yacon (YC), ginger (GG), and blueberry (BB) on growth, body composition, and disease resistance of black rockfish against Vibrio anguillarum was compared to ethoxyquin (EQ). Methods: Four hundred eighty juvenile (an initial weight of 4.2 g) fish were randomly distributed into 12 of 50 L flowthrough tanks (forty fish per tank). Four experimental diets were prepared; the control (Con) diet with 0.01% EQ inclusion, and YC, GG, and BB diets at 1% each additive inclusion. Each additive was included into the experimental diets at the expense of wheat flour. Each diet was assigned to triplicate tanks of fish and hand-fed to satiation twice daily for 8 weeks. At the end of 8-week feeding trial, 20 fish from each tank fish were artificially infected by intraperitoneal injection with 0.1 mL of culture suspension of pathogenic V. anguillarum containing 3.3 × 106 cfu/mL respectively. Fish were monitored for the following 8 days after V. anguillarum infection and dead fish were removed every 6 h for the first 4 days and 12 h for the rest of the study. Results: Weight gain, specific growth rate (SGR), and feed efficiency ratio (FER) of fish fed the YC diet was higher than those of fish fed all other diets. However, feed consumption, protein efficiency ratio, and protein retention was not affected by dietary additive. Moisture, crude protein, and crude lipid content of the whole body of fish were affected by dietary additive. Analysis of the Kaplan-Meier survival curves showed that survival of fish fed the YC, BB, and GG diets was higher than the Con diet. Conclusion: Oral administration of YC can improve not only weight gain, SGR, and FER of black rockfish, but lower mortality of rockfish at occurrence of V. anguillarum.

The toxicity of five species of puffer fish, Arothron firmamentum (Byeolbok), Lagocephalus gloveri (Heukmilbok), L. wheeleri (Eunmilbok), L. inermis (Minmilbok) and L. lunaris (Milbok), collected from fish markets in Korea, was determined using a mouse bioassay. In A. firmamentum, the proportion of toxic specimens containing >10 MU/g was 87.5% in the ovaries, and 10.0% in the skin; no toxicity was detected in the muscle, fin, liver, intestine and gallbladder using the mouse bioassay. The highest toxin levels were found to be 87 MU/g in the ovaries, and 13 MU/g in the skin. Toxic specimens containing >10 MU/g were not detected from samples taken from any of the organs in L. wheeleri and L. inermis. In L. gloveri, most specimens were found to be non-toxic, but toxin levels of 11-72 MU/g were detected from within the skin, fins, and intestines in one specimen. In L. lunaris, the proportion of toxic specimens was 50.0% in the ovaries, and 7.1% in the gallbladder; no toxicity was detected in the other organs by the mouse bioassay. The highest toxin levels were 75 MU/g in the ovaries, and 14 MU/g in the gallbladder. Therefore, the toxicities of edible muscle and skin in the five species of puffer fish marketed in Korea were found to be within acceptable levels for human consumption.
