Two experiments were conducted to investigate the effect of feeding cyanidin 3-glucoside (C3G) high black rice bran on nutrient digestibility, blood measurements, growth performance and pork quality of pigs. In Exp. I, a total of fifteen pigs (19.91${\pm}$1.80 kg, average initial body weight) were used in assay of nutrient digestibility and blood measurements. All pigs were allotted to 5 treatments with 3 replicates according to a completely randomized design (CRD) in an individual metabolic crate. Treatments included 1) CON: basal diet, 2) BRB-2: basal+brown rice bran 2%, 3) BRB-4: basal+brown rice bran 4%, 4) CRB-2: basal+C3G high black rice bran 2% and 5) CRB-4: basal+C3G high black rice bran 4%. The digestibility of dry matter (DM), crude protein (CP), crude fat (CF), crude ash (CA) and crude fiber (CF) was not affected by dietary treatments. Serum triglyceride (TG) and high density lipoprotein (HDL) cholesterol concentrations were not affected by addition of C3G high black rice bran. However, at the end of experiment, pigs fed rice bran showed decreased tendency in total cholesterol concentration. Especially pigs fed C3G high black rice bran showed significantly lower total cholesterol concentration compared to pigs fed brown rice bran (p<0.03). There was numerically lower total cholesterol concentration with increasing levels of black rice bran in the diet. In terms of serum glutamate oxaloacetate transaminase (GOT) and glutamate pyruvate transaminase (GPT), there were no significant differences among treatments, even though pigs fed CRB-4 showed the lowest GOT concentration compared to other pigs. In Exp. II, sixteen finishing pigs (average initial body weight 89.96${\pm}$0.35 kg) were divided into 4 treatments to investigate the effect of feeding C3G high black rice bran on growth performance and pork quality. There were no significant differences in average daily gain (ADG), average daily feed intake (ADFI) and feed conversion ratio (FCR) among the treatments. Pigs fed C3G high black rice bran showed numerical decrease in ADG and increase in FCR while not effecting feed intake. There was no significant difference in live weight, carcass weight, carcass rate, backfat thickness and carcass grade. However, pigs fed C3G high black rice bran tended to show lower backfat thickness than pigs fed basal diet. Pigs fed C3G high black rice bran showed a tendency of decreased TBA value than pigs fed basal diet, although there was no overall significant difference among treatments. In conclusion, nutrient digestibility, blood measurements, growth performance and pork quality were not significantly affected by feeding C3G high black rice bran to pigs. However, C3G high black rice bran might have an effect on lowering serum total cholesterol and decrease the TBA value in pork compared to control group and these effects might be due to high concentration of antioxidative compounds in C3G high black rice bran.
The purpose of this experiment was to obtain informations about variation of anthocyanin content within black-seeded soybean testa according to cultivation and harvest time. Three varieties, Ilpumgeomjeongkong, Geomjeongkong 2, Tawonkong were tested in this experiment. Seeds were planted on April 15 (early planting), May 15 (optimum planting), and June 15 (late planting), respectively. Harvest time was R6 (full seed), R7 (physiological maturity), and R8 (harvest maturity), respectively. The content of delphinidin-3-glucoside (D3G), cyanidin-3-glucoside (C3G), petunidin-3-glucoside (Pt3G), and total anthocyanin (TA) had all increased gradually from April 15 to June 15 as well as R6 to R8. There was no varietal difference in D3G, but C3G and TA of Geomjeongkong 2 were higher than other two varieties. Pt3G was the highest Tawonkong of varieties. The value of L as anthocyanin color difference had gradually decreased from April 15 to June 15 and R6 to R8, Geomjeongkong 2 among three varieties was the lowest. The value of a was the highest on May 15 and increased gradually from R6 to R8, Geomjeongkong 2 was the lowest. The value of b was the highest on June 15 as late planting and was the highest Geomjeongkong 2 of varieties. The value of b had increased gradually from R6 to R8. D3G, C3G, Pt3G, and TA contents showed mutually high positive correlation and these four characters were represented high negative correlation with L value but showed high positive correlation with a and b values. The value of L showed high negative correlation with a and b values. The value of a showed high positive correlation with b value.
As mulberry fruit's functionalities are known to the media, the interest in promoting of consumption and processed products is increasing. But there is no C3G(Cyanidin-3-glucoside) data based on the stability of the pigment during processing. To solve this problems, and to expand the use of mulberry fruit, processing methods was developed for mulberry fruit juice improved cyanidin-3-glucoside(C3G) stability. The results obtained are summarized as follows. The food additive citric acid with 0.3 % improved C3G content and antioxidant ability in the treatment of mulberry fruit and sucrose the ratio of 50 % : 50 %(w/w). In the case of the addition of oligosaccharides, citric acid decreased antioxidant ability. Xylitol treatment showed up the lowest of C3 content, but by the addition of citric acid improved the pigment content and antioxidant activity of the mulberry fruit juice. Addition of citric acid was more affected C3G stability than containers (clear glass bottles, brown glass bottles, aluminum foil, green glass bottle, translucent glass bottles). In the processing of mulberry juice, 3 minutes blanching treatment using microwave dropped C3G content somewhat. Therefore, using this method is not recommended. However in the antioxidant ability, microwave blanching showed a stabilizing effect compared to the other treatments.

To compare varietal differences in Rubus coreanus Miq. (Rosaceae), we evaluated antioxidant activity and the contents of functional substances. In this study, five new cultivars selected as superior berries in yield and weight of fruit, R. coreanus (Jungkeuam 1, 2, 3, 4, and 5), and one foreign berry, R. fructicosus were used. The contents of the major anthocyanin, cyanidin-3-glucoside (C3G) in berries and antioxidant capacity including, free radical scavenging activity and reducing power were measured. The contents of total phenol and vitamin C were also investigated. Among 5 cultivars and one foreign berry, Jungkeuam 1 had the richest C3G and high levels in vitamin C. DPPH radical scavenging activity of berries was ranged from 46.58 up to 78.55%.

The purpose of this study was to determine the content of phenolics and various anthocyanin compounds, and antioxidant and anticancer activities of the extracts from pomergranates, which were produced in two different regions including Goheung, Korea and California, USA. These pomergrantes were divided into juice, pericarp, and seed parts and each part was extracted with 95% methanol. Content of total phenolics [mg chlorogenic acid equivalents/kg DW] was highest in pericarp, followed by juice and seeds from pomergrantes in both regions. The anthocyanins identified in pomegranate fruit were cyanidin-3,5-diglucoside chloride (Cy3,5G), cyanidin-3-O-glucoside chloride (Cy3G), delphini din-3,5-di-O-glucoside chloride (Dp3,5G), delphinidin-3-O-glucoside chloride (Dp3G), pelargonidin-3,5-di-glucoside chloride (Pg3,5G), and pelargonidin-3-glucoside chloride (Pg3G). Among these, cyanidin-3,5-diglucoside chloride (Cy3,5G) was the major anthocyanin in California pomegranate fruit juice and Goheung pomegranate fruit pericarp. DPPH (1,1-diphenyl-2-picryl hydrazyl radical) free radical scavenging activity was dose-dependently increased, and was higher in pericarp part than juice or seed parts from pomergrantes in both regions. By MTT (3-(4,5-dimethylthiazol-2-yl)-2,5-diphenyl tetrazolium bromide) assay, pericarp extracts from pomergrantes in both regions showed the highest anticancer activity, which was higher on Calu-6 for human pulmonary carcinoma than SNU-601 for human gastric carcinoma. Correlation between polyphenols and anticancer activity on Calu-6 was determined to be in the range of $r^2=0.8904$ to 0.9706.
This study was performed in order to determine the relationship between anthocyanin generation and seed coat pigmentation in black soybean. Soybean genotypes were analyzed the individual anthocyanin contents by UPLC, which were sampled at 5-day intervals from the 35th day after flowering. Ilpumgeomjeongkong had begun to accumulate anthocyanin on the seed coat previous 35 days after flowering, and in case Heugcheongkong was 30 days. The seed coat coloration in Ilpumgeomjeongkong run on till the 45th day after flowering, and that of Heugcheongkong was between 55 and 60days after flowering. Cyanidin-3-Glucoside (C3G) was formed the earliest and accumulated the greatest among three anthocyanin pigments existed in black soybean. So we could be concluded that C3G affected on seed coat pigmentation greatly than other pigments. The anthocyanin contents at maturity in Ilpumgeomjeongkong was 4.4 times higher than at beginning stage of anthocyanin formation, while those of Heugcheongkong was 2.5 times.
This experiment was carried out to evaluate the effects of top dressing of nitrogen and harvest time on the growth, feed value and anthocyanin content for developing functional feed of colored barley. A colored barley cultivar, Boanchalbori, was tested in this experiment. Top dressing was applied at seven separate growth stages, regeneration time (RT), and intervals of 20, 30, 40, 50, 60, and 70 days after RT, and harvested at different time from 20 days after heading (DAH) to 40 DAH with 10 days interval in split plot design with three replications. Plant height was increasing with earlier top dressing, but not affected by harvest time. Percent dry matter was increasing with earlier top dressing and later harvests. Protein content was increased with later top dressing and harvests, but percent NDF, ADF and TDN was not significant. Total anthocyanin content was increased with earlier top dressing, included increasing C3G (cyanidin-3-glucoside) and delphinidin. The C3G and delphinidin were detected from 25 DAH and P3G (pelargonidin-3-g1ucoside), cyanidin and perlagonidin from 30 DAH. Their contents were increased significantly as harvest was delayed. This experiment provides some interesting results with respects to optimum top dressing and harvest time for the functional feed production of the colored barley.
