호텔 조리사의 이직에 관한 연구 (A Study of Hotel Restaurant′s Cook Separation)

  • This study is about job change hotel kitchen cook. addition, through case analysis, by choosing three hotels in Seoul, the relation job changes was found out, and through the interviews with cooking employees for more than three months, their opinions and reliabilities were collected and analyzed. The surveyed questionnaires were analyzed and studied through SPSS WIN Package, reliability analysis, factor analysis, frequency analysis, correlation, and distribution analysis and T-test were conducted to figure out the population statistical difference. According to the study results. those employees who thought kitchen environment, internal and external working conditions. the welfare for the employees are the most important factors in case of changing jobs scored over average 4 in the statistical analysis. For this reason, in order to reduce the rate of job changes the hotels efforts for and interests in appropriate compensation, improvement of working environment. continuous educational training, fair human resource management, and maintenance of good relation with co-workers are necessary.

  • The purpose of this study was to fine out a relation to the profitability in the view of market-orientation and examine the roles of marketing efficiency and adaptability in foodservice companies. In the previous studies, because of the concepts of market-orientation have mostly focused on hotels or common companies, in this study aimed to foodservice companies. This study was on the basis of Kohli & Jaworski (1990)'s theory. For the validity verification of measured items, SPSS WINDOW 10.0 was used to analyze factors and, for the reliability verification, Cronbach's Alpha coefficient was used. The result was as follows. First, market-orientation has great influence on customer satisfaction and customer loyalty. Second, customer satisfaction and customer loyalty were acquired for the good marketing efficiency and adaptability in foodservice companies. Thus, from now on, the foodservice company need to carry out the market-orientation concept.

히카마 분말을 첨가한 제면의 품질 특성 (Quality Characteristics of Noodle added with Pachyrhizus erosus Powder)

  • This study was conducted to investigate the noodle added with Pachyrhizus erosus powder. Total contents of carbohydrates, crude protein, crude lipid, ash, and total dietary fiber were 87.14%, 3.14%, 0.81%, 7.82%, and 49.12%, respectively. The water-binding capacity was significantly increased by increasing amount of the Pachyrhizus erosus powder. When the volume of the noodles was measured after cooking, there was no difference between the control and Pachyrhizus erosus powder groups. The texture characteristics of hardness increased by increasing amount of the Pachyrhizus erosus powder. As a result of the sensory test, the 1.5% Pachyrhizus erosus powder noodles showed the highest scores for all items including appearance, flavor, taste, texture and overall acceptability. The bacterial counts of noodle decreased with greater Pachyrhizus erosus powder content on the third days. It is considered that research on antimicrobial activity should proceed in the future. As a result, it was finally suggested that optimum level of the Pachyrhizus erosus powder in the product was 1.5% level.

외식 프랜차이즈 가맹점의 주 메뉴에 따른 만족도 및 재계약 의도에 관한 연구 (A Study on Satisfaction and Recharter Intention According to the Main Menu of Franchises in the Food Service Industry)

  • This study investigates the satisfaction with the supply-supplying system and the kitchen operation for the main menu in the food service industry, expecially in the franchisor-franchisee relation. In order to accomplish this purpose of the study, it examines the research on the franchise food industry in terms of research methods and surveys experimental research actually. The total 600 copies of survey had been gathered and 278 copies were used to get the purpose of this study. The SPSS 12.0 version was used to analyze the data. The finding suggests that pork is the very essential material of the supply-supplying system on all kitchen operation of cooking quality, management system, physical supplying system, prime cost and the food hygiene. Comparing results of mean statistic, pork shows much higher mean point than that of chicken on the kitchen operation efficiency. Also, the franchisees will give more satisfaction with main menu using pork than the menu using chicken on the recharter intention.

서양조리에 있어서 요리와 와인에 관한 연구 -와인을 중심으로- (A study on cuisine and wine in the western meal)

  • Wine increase the quality of and is a favorite drink in Europe and developed countries. Wine is effective in promoting appetite and digestion. Wine which is an alkaline beverage neutralizies physical constitution and has various preventive effents. Also wine increases the taste and aroma of food. However, a various binds of wine needs a special control, and expert knowledge is needed in drinking and serving method of wine. It is very difficult to find the method harmonized cuisine with wine. This study approches to find the method which cuisine and wine are nicely matched through literature reviews. First, the method is analyzed by the order of cuisine. Second, the analyzed by the cooking method. Third is analyzed by the taste of cuisine. Fourth is analyzed by the production, management, providing method, temperature and drinking method. Therefore, we'd like to provide the harmonized methods between cuisine and wine to the emplyees.

웰빙 이후 외식 소비자들의 생활 성향 변화에 대한 연구 - 한식당을 중심으로 - (A Study on the Changed Lives of Customers Visiting Korean Restaurants from)

  • A lifestyle changes according to environment. It appears more in the dietary life connected with the necessities in life. This study is executed empirically through the questionnaire that consists of selection attribute and variables connected with "well-being" that is examined in empirical analysis. It was carried out for 20 days from July 15 to August 5, 2003 with the customers who live in Seoul and the suburbs. With collected data, there were frequency analysis and factor analysis, reliability analysis using SPSS 10.0 packages, and T-test and ANOVA were enforced for the verification of differences between demographic elements with each factor. The result indicates that the inclinations of customers changed from the "well-being" trend have four factors: health consideration factor, food materials factor, cooking factor, and habit factor. And the housewife group shows the great changes in habit factor. In case of the changes according to incomes, the larger income earners tend to consider health more. In conclusion, people came to prefer the healthy Korean style food from the well-being trend.

위 불쾌감, 학습된 음식 거부와 식욕이 음식 신공포증과 음식 거절의 관계에 미치는 매개효과 평가 (Mediating Effects of Nausea, Learned Food Aversion, and Appetite on the Relationship between Food Neophobia and Food Rejection)

  • The purpose of this study was to examine the mediating role of nausea, learned food aversion, and appetite on the relationship between food neophobia and food rejection. A total of 250(122 healthy males and 128 healthy females) questionnaires were completed. Path analytic model was used to measure the mediating effect. Results of the study demonstrated that the path analytic result for the data also indicated excellent model fit. Furthermore, the mediating analysis indicated that the influence of food neophobia was mediated by mediator. The effect of food neophobia on appetite was perfectly mediated by nausea and learned food aversion. In the contests of general food rejection, the effect of food neophobia on food rejection was perfectly mediated by appetite. It should be noted that the original model was modified and should, preferably, be validated in future research.

행동의도에 미치는 지각된 희생, 서비스질, 가치와 만족의 영향 평가 (Measuring the Effects of Perceived Sacrifice, Service Quality, Value and Satisfaction on Behavior Intention)

  • The purpose of this study is to measure the effects of behavioral intention. A total of 273 questionnaires were completed. The equation model was used to measure the causal effect. The results demonstrated that the confirmatory factor analysis model provided an excellent model fit. The comprehensive model yielded a significantly better fit to the data and accounted for a greater share of the variance in behavioral intentions than the five competing models. The effects of satisfaction, perceived value and service quality on behavioral intention were statistically significant. As expected, service quality and value had significant effects on satisfaction. Service quality and perceived sacrifice had significant effects on value. Moreover, service quality and value perceptions had an indirect influence on behavioral intentions. The overall findings offer strong empirical support for the intuitive notion that improving service quality can increase favorable behavioral intentions and decrease unfavorable intentions.

웰빙 트랜드가 메뉴 선택에 미치는 영향에 관한 연구 (A Study on the Effects of Well-being Trend on Menu Selection Behavior)

  • The purpose of this study is to initiate a systematic approach to maximize profits through continuous development of menu and build a strong image of Western restaurants located inside hotels by identifying their guests' knowledge and concern and menu selection behavior in well being trend. Findings from the analysis are as follows. First, among the Western menu selection behavior, organic grain and seafood, seasonal event menu, less spicy and more natural cooking methods are favored as the most important consideration. Second, customers' knowledge and concern in well being trend and menu selection behavior were found to be statistically significant. Third, customers' awareness in health and obesity were found to be statistically significant to the concern in well being trend. Fourth, demographical characteristics of customers such as gender, marital status, age, income level and education were tested for their relationships with knowledge and concern in well being trend.

  • We studied medicinal theory on processing drugs of Wang-Ang. Wang-Ang used various methods of medicinal processing. He used such as soaking(浸), maceration(泡), washing(洗), elutriation(淘), mixing together(拌), refining powder with water(水飛) and floating(水漂) in medicinal processing with water. He used such as making hot(?), roasting in ashes(?), stir-frying with liquid(炙), parching(炒), heating(燒), baking(焙), stirring-baking(?) and distilling(煉) in medicinal processing with fire. He used such as steaming(蒸), boiling(煮), making hot and soaking(??) in medicinal processing with water and fire. And He used such as cooking(熟), making drugs into gelatin(制膠), making drugs into frostlike powder(制霜法), making drugs into bead(制珠), fermentation(生衣) and compound medicinal processing(複制法).
