Quality Changes of Fresh-Cut Tumeric by Packaging Methods during Storage (포장방법에 따른 세절 생울금의 저장 중 품질 변화)

  • The purpose of this study was to investigate the quality change of fresh-cut tumeric (Curcuma Longa Linne) according to packaging method during storage time. The fresh-cut tumeric were packaged in three different methods : degassing valve packaging (DVP), $CO_2$ gas absorber packaging (CAP) and micro-perforated packaging (MPP). After the samples were packaged, they were stored for 15 days at 4 and $23^{\circ}C$ respectively. The following parameters were observed to indicate the quality changes of the samples: weight loss, CIE $L^*a^*b^*$ colour difference, variation of gas composition inside the package, curcumin contents and changes in hardness of fresh-cut tumeric. DVP did not effectively release $CO_2$ gas to the outside. MPP was suitable to release $CO_2$ gas. However, MPP showed very fast browning and erosion, because a large amount of oxygen was introduced through the perforated hole on the film. CAP was most effective packaging method to inhibit browning, to prevent expansion of the packaging by $CO_2$ gas and to minimize weight loss of fresh-cut tumeric.

Effect of Watering Methods on Growth of Soybean Sprout and Culture Temperature (관수방식에 따른 콩나물의 생장과 재배용기 내의 온도 변화)

  • Watering methods for soybean sprouts could be mainly divided into two groups of overspraying and underwatering. The study was carried out to determine the effect of water supplying method on growth, morphological characteristics, colour and cutting resistance of soybean (cv. Junjery) sprouts and culture temperatures. The morphological characters, fresh and dry weights were measured on the 6th day after their culture, but daily mean temperatures inside the plastic culture boxes were measured by data-loggers. Lateral roots were more formed in the underwatering method (UM) than in the overspraying method (OM). Although their total lengths of both methods were nearly same, OM had longer hypocotyl but UM did longer root than the other. Middle and upper parts of hypocotyl were more thickened in UM than in OM. UM showed more hypocotyl fresh and dry weights than OM. There was, however, no significant difference between the two methods in cotyledon, root, total fresh and dry weights although the culture temperature was higher in OM than in UM.

Analysis of Carcass Characteristics in the 3rd Intron of Pig POU1F1 Gene (돼지의 POU1F1 Intron 3영역 유전자에 따른 도체특성 분석)

  • This study was carried out to compare Msp I polymorphisms in the 3rd intron of porcine gene encoding the pituitary-1 transcription factor (POU1F1) from 286 pigs (Landrace $\times$ Yorkshire $\times$ Duroc, LYD) and to determine the associations between its genotypes and carcass traits by using the PCR-RFLP technique. The frequency of the single nucleotide polymorphism (SNP) genotype DD (84.33%) was very higher than that of CC genotype (0.75%). Allelic frequencies for C and D were 0.082 and 0.918, respectively. Each population followed the Hardy-Weinberg equilibrium. Meat colours of Hunter $L^*$ values and visual colour according to two genotypes were all significantly different. However, no significant difference in crossbred (LYD) was found between CD and DD genotypes for other traits. Therefore, this suggests that POU1F1 may be a major gene or marker for carcass traits.

Carcass Grade and Characteristics by Carcass Weight and Backfat Thickness of Pigs (돼지의 도체중과 등지방 두께에 따른 도체 등급 및 도체 특성)

  • This study was carried out to investigate the carcass grade and characteristics of pigs by carcass weight and backfat thickness. Data used in this experiment were collected and analyzed from a total of 656 pigs composed of 128 gilts and 528 barrows at commercial public slaughter house. The carcass grade of gilts was superior to that of barrow. The carcass weight by gender tended to be heavier in castrated pig than in gilt. Backfat was significantly (p<0.05) thicker in castrated pig than in gilt. Differences between castrated pig and gilt on meat colour, marbling standard, water holding capacity, and marketing age were not significantly found. However, the level of carcass grade was higher ratio in gilt group than in castration. The appearance of percentage of PSE (pale, soft, exudative) of gilt group was superior to that of castrated group. There were significant differences among carcass weight in the marbling score (p<0.05) and water holding capacity (p<0.05). There was significant difference among backfnt thickness in carcass weight (p<0.05), marbling score (p<0.05) and water holding capacity (p<0.05).

Fish Growth Experiment in a Green water Recirculating System (순환 Green Water 사육장치 내에서의 어류의 성장실험)

  • A recirculating water system without filter bed was used for a high density experimental rearing of common carp, Cyprinus carpio, during the summer of 1981. Of the water system, 3 tanks were used for stocking each tank with 10,000, 20,000 and 30,000 common carp fingerlings which averaged 0.6 g. The water in the system was maintained in dark green colour by heavy growth of phytoplankton during the most period of the experiment. In this experiment, the best daily growth rate, $3.7\%$, was obtained from the 10,000 fish group followed by $2.8\%\;and\;3.0\%$ from the 20,000 and 30,000 fish groups respectively. Thus there was no significant difference between the latter two groups. Especially, notably high concentration of total ammonia, $5\sim7$ ppm ammonia-N, in the culture water appeared during the most experimental period, but this did not seem to have affected feeding and growth of the fish when the water was kept at heavy bloom. It was also obvious that the outbreak of columnaris disease was effectively depressed in this green water recirculating system compared to that in clarified recirculating system. One tank ($7m^2$) of this system was stocked with 446 common carp of intermediate size averaging 352.2 g and after 40 day rearing they grew to 486.3 g in average with a daily growth rate of $0.8\%$. This result was a little inferior to that reared in a tank of the clarified water system as control which showed $1.0\%$ daily growth rate. Therefore, before an initiation of the commercial production of fish in this method, further studies concerning the amount of ammonium with its effect on the fish under rearing in this system and the columnaris disease problem should be carried out.

Appropriateness of Labelling Practice for Pesticides in Korea (국내 농약 제품표지 내용 및 유독성 표시의 적절성)

  • Purpose: The morbidity of pesticides are largely related with accidental ingestion in human. The four principal ideals of clarity, completeness, conformity and consistency of label are important to make a correct usage and prevent unnecessary health risk. The aim of this study is to evaluate the appropriateness of pesticides labelling practice in Korea. Methods: The photographic label images of pesticide products were gathered through visiting thirteen manufacturers that produce pesticide products in Korea. We scored labelling practice by guidelines of Food and Agriculture Organization of the United Nations in 1995. Results: From August 2005 to November 2005, we gathered 1,296 label images of pesticide and $58.3{\%}$ (755/1,296) of images were scored by check lists for reviewing label content. The average score of four check list categories was $71.9{\pm}2.2$. Each categorical score were $91.7{\pm}0.9$ for the information appearing on the label, $31.3{\pm}0.0$ for safety precaution, $77.7{\pm}2.0$ for instructions for use, $87.0{\pm}8.7$ for general configurations. In safety precaution, the sentence of keeping locked up the product and two mandatory safety pictograms were missed in all label images. In general configurations category, there was score difference in product package types between bottle and bag container ($85.1{\pm}9.0$ vs. $90.3{\pm}7.2$, p < 0.01). Conclusion: Although there was no comparable previous data, the score of safety precaution was lowest than other categories because the two mandatory safety pictograms and locked up warning sentence were missed. In general configurations, the colour contrast was more inappropriate in the labels on bottle than bag container.

Inhibitory Effect of PME88 MelonSOD on the Ultraviolet-Induced Photo-aging (PME88 멜론SOD의 자외선으로 인한 피부 광노화 억제 효과)

  • PME88 (gliadin-combined) melon superoxide dismutase (SOD) is known to promote the production of the body‘s own natural antioxidants including superoxide dismutase, catalase and glutathione peroxidase. In this study, we investigated the inhibitory effects of PME88 melonSOD on the ultraviolet-induced photo-aging by the evolution of minimal erythemal dose (MED), erythema quotation and spectrocolorimetric measurements of erythema. The analysis of the evolution of the MED showed a significant increase 28 days after the daily taken of the PME88 melonSOD. The analysis of the erythema quotation showed that on D29, for the dose 1.25 MED, erythema intensity is significantly higher for placebo group than for PME88 melonSOD group. At doses 0.64 MED$_{D14}$, 0.80 MED$_{D14}$ and 1 MED$_{D14}$ the value of parameter $a^*$ (the most sensitive to the colour changes bound to the variations of blood flow. It permits to assess the evolution of erythema) is significantly higher for placebo group. No significant difference has been observed between groups (PME88 melonSOD and placebo) on the evolution of the number and consistency of feces after 4 weeks of treatment. No intolerance has been observed during the 4 weeks of treatment. These results mean that PME88 melonSOD as a dietary supplement could be useful to attenuate ultraviolet-induced skin photo-aging.

Effects of a Commercial Activating Treatment Agent on Cultured Porphyra yezoensis thalli (양식 방사무늬김, Porphyra yezoensis의 활성처리제 처리 효과)

  • The use of activating treatment agent (formerly acid treatment agent) has been an effective strategy to remove deleterious epibiont organisms such as diatoms and green seaweeds, and it has greatly contributed to increase in Porphyra production. Although many manufacturers supply many kinds of activating treatment agent with different components in these days, no report about their effects on Porphyra culture was found. In this paper, effects of a commercial activating treatment agent were evaluated for practical use in Porphyra culture. No difference was found in dead cell ratios(%) of Porphyra yezoensis thalli between treated and control groups. However, dead cell ratios of Monostroma nitidum thalli were increased from 0~4.6% to 99.0~100% after the treatment. Bathing Porphyra thalli in activating treatment agent resulted in a great decrease in epiphytic bacterial number attached to the thalli from $10^2{\sim}10^{11}$ cells/g to $0{\sim}10^5$ cells/g but did not change the colour of the thalli. These results suggest that bathing Porphyra thalli in activating treatment agent could be a promising strategy to remove green algae, diatoms and bacteria.

Effect of incorporation of soy protein isolate and inulin on quality characteristics and shelf-life of low-fat duck meat sausages

  • Objective: Low fat duck meat sausages were prepared by replacing the fat in the formulations with soy protein isolate (SPI) and inulin to find the best formulation having superior shelf-life without affecting its quality attributes. Methods: Four sausage mix formulations were prepared viz.control (0% SPI and inulin), T1 (2.5% inulin), T2 (2.5% SPI), and T3 (2.5% SPI+2.5% inulin) replacing duck fat as per the recipe. Five batches of duck meat sausages of each formulation were prepared, and the final products were evaluated for physico-chemical, organoleptic, and microbiological qualities. Results: The % moisture and crude protein content of the sausages revealed an increasing trend (p<0.01) from control to the treated formulations, while the % total ash contents were found to be non-significant (p>0.05). On the contrary, the per cent ether extract decreased significantly (p<0.01) from the control to the treated groups. In terms of calorie value, control samples exhibited the highest values with a significant (p<0.01) regression from control to treated formulation, respectively. The colour profile study (L, a*, b*) of the formulations were found to be non-significant. Texture profile study in terms of springiness, cohesiveness, chewiness, and resilience revealed no significant difference in all the treatment groups except the hardness scores, which revealed a significantly (p<0.01) increasing trend from control to the treated formulations. The total viable count showed a significant decrease in the treated groups. However, there was a significant increase in the bacterial load during the storage till day 15th. The total viable psychrophilic bacterial count showed a significant (p<0.01) increase in bacterial load from day 5th to 15th day of storage. Colititre counts were negative for all the formulations until the 15th day of storage. Conclusion: The present study results may conclude that duck meat sausages could be prepared satisfactorily by replacing duck fat with SPI and inulin at the rate of 2.5% of each with superior quality attributes.

Fundamental Studies for the Breeding of Marine Algae 3. Effects of Plant Hormones on the Growth of Porphyra-fronds (해조의 육종을 위한 기초적 연구 3. 김 엽체에 미치는 식물호르몬의 생장효과)

  • As one of the fundamental studies for the breeding of marine algae, the effects of several plant hormones (IAA, Gibberellin, 2.4-D, NAA, Kinetin) on the growth of Porphyra-fronds, P. tenera Kjell. form tamatsuensis Miura, were investigated from January 21 to February 21 1981. The fronds used for the experiment were dissected out at $25mm^2$ size, and cultured in modified Provasoli's ESP medium supplemented with various concentrations of each plant growth regulators. The culture was kept under constant water temperature of $5^{\circ}C$ in 14 hrs. photoperiod and illuminated with 2,400 lux by fluorescent light. Based on the results of first experiment, the culture of fronds for the secondary experiment was carried out at $5^{\circ}C\;and\;10^{\circ}C$ in medium containing various levels of Kinetin from April 6 to 24, and compared the growth of two groups at each concentrations with each other, The results obtained are summarized as follows : (1) The best growth efficiencies were observed at 5.0mg/1 of each plant hormones except Gibberellin. Among them, the highest growth-rate was $312.5\%\;(345.3\%\;in\;frond\;size)$ in contrast with control at 5.0mg/1 of Kinetin, and was followed by $257.5\%\;(236.1\%)$ in 2.4-D,$166.7\%(147.6\%)$ in IAA and $141.7\%\;(167.7\%)$ in NAA, but that in Gibberellin was $247.9\%(241.9\%)$ at 10.0mg/l. (2) Especially, the fronds cultured at 5.0mg/1 of Kinetin were deep black-brown in colour, and had vivid, healthy chloroplasts in their all cells. On the contrary, the fronds cultured in other media were discoloured to light black-brown or green-drown, and almost all cells were vacuolated or shrunk gradually into death.(3) There was an obvious difference between the best growth-rates of the fronds cultured at 5.0mg/l of Kinetin at $5^{\circ}C$ and those at $10^{\circ}C$. The former was $366.7\%$, the latter $318.8\%$ but the difference was little at lower concentrations. (4) Many abnormal cells grown up to $25.0-27.5\mu$ in diameter were found among the marginal cells of fronds which showed the best growth in Kinetin, and the fronds wire $41.0-42.0\mu$ in thickness which was thicker by $10.0\mu$ or so than the others. (5) In two fronds at 1.0mg/1 of Kinetin cell-divisions were observed, which might developed into antheridium, but it was doubtful whether due to the efficiency of Kinetin.
