Quality Improvement in Fish Burger by Addition of Squid Viscera Oil (오징어 내장유를 이용한 어육버거의 품질개선)

  • As an investigation for utilization of squid viscera oil as a food source, we attempted to improve a quality of fish burger by addition of emulsion curd formed from gelatin, water and refined squid viscera oil. Judging from the results of peroxide value, brown pigment formation, color value of Hunter, jelly strength and sensory evaluation, the reasonable amount of emulsion curd for the improvement of a fish burger functionality was determined as 6% on the weight basis of the chopped mackerel meat. Total plate counts, volatile basic nitrogen and histamine contents in fish burger prepared by addition of 6% of emulsion curd were $6.2{\times}10^4\;CFU/g$, 19.0 mg/100 g, and 50.7 mg/100 g, respectively. It may be concluded, from the above results that the emulsion curd-added fish burger is a safe as a food commodity. The ratio of polyenes to saturates of emulsion curd-added mackerel burger was 1.13. By adding emulsion curd formed from gelatin, water and refined squid viscera oil, color in cross section, texture and lipid functionality of mackerel burger could be improved in part.

Using Phenolic Compounds and Some Morphological Characters as Distinguishing Factors to Evaluate the Diversity of Perilla Genetic Resources

  • The objectives of this study were to evaluate total phenolic content (TPC) and individual phenolic compounds in leaves of perilla genetic resources, assess whether they could be used as distinguishing factor among germplasms, and evaluate their relationship with some quantitative and qualitative morphological characters. TPC and individual phenolic compounds were determined using Folin-Ciocalteu method and UPLC-PDA system, respectively. Wide variations in TPC (7.99 to 133.70 mgGAE/g DE), rosmarinic acid (ND to 21.05 mg/g DE), caffeic acid (ND to 1.17 mg/g DE), apigenin-7-O-diglucuronide (ND to 2.21 mg luteolin equivalent (mgLUE)/g DE), scutellarein-7-O-glucuronide (ND to 5.25 mg LUE/g DE), and apigenin-7-O-glucuronide (ND to 2.81 mg LUE/g DE) were observed. Intensities of green pigment at abaxial and adaxial leaf surfaces were positively correlated with phenolic compounds whereas leaf length and width had negative correlation. Purple pigmented accessions were shorter in leaf length and width but exhibited higher amount of phenolic compounds compared to green pigmented accessions in most cases. Leaf shape was not related with content of phenolic compounds, color of leaves, and length/width of leaves. TPC and individual phenolic compounds along with morphological characters could be useful distinguishing factors for perilla genetic resources.

Effect of cobalt sulfate contents on the ceramic surface coating using spray technique (스프레이 기술을 이용한 세라믹 표면 코팅에 대한 황화코발트 첨가량의 영향)

  • This study was carried on the phenomena in reactivity with the clay surface according to the thickness of the cobalt component coating. In the coated specimen, it was observed that the cobalt component was spreaded to diffuse with a constant thickness from the surface of it and the diffusion layer at the white porcelain soil was more increased with the increase of the amount of cobalt sulfate than at the celadon porcelain one. It was evaluated that the color of the surface on the coated specimen at the white porcelain soil was changed from grayish blue to blue and the $L^*$ value was decreased from 51.78 to 37.61 and also in the case of the coated specimen in celadon porcelain soil, $L^*$ value was from 53.91 to 38.93 and the color was from dark olive gray to dark gray. The physical properties of the specimen were characterized by X-ray diffraction, Scanning electron microscope, Dilatometer, TG-DTA, UV-vis spectrophotometer and HRDPM.

Comparative Study on the Pigments Applied on the Wall Paintings of Temple in 18~19C (18~19세기 사찰벽화에 사용된 안료 비교 고찰)

  • This study investigated the properties of the painting materials used in the temple wall paintings of the $18^{th}$ to $19^{th}$ centuries by synthetically comparing the component analysis data on the pigments used in the temple wall paintings. The study subjects analyzed from ED-XRF are the data on the 61 temple wall paintings distributed nationwide. The colors of the wall painting coloring layers are classified into seven categories: white, incanadine, yellow, red, green, blue and black color. No big geographical and temporal differences in the type of the pigments were found in the temple paintings of the late Joseon Dynasty distributed in Gyeongsangdo and Jeollado. On the other hand, there were differences in the use of a color when mixing it with other colors depending on the painted parts.

The Optical Properties of MgF2/Cr/MgF2, MgF2/Cu/MgF2, MgF2/Al/MgF2 Multi-Layered Thin Films (MgF2/Cr/MgF2, MgF2/Cu/MgF2, MgF2/Al/MgF2 다층박막의 광학적 특성)

  • $MgF_2$/Cr/$MgF_2$, $MgF_2$/Cu/$MgF_2$ and $MgF_2$/Al/$MgF_2$ multi-layered thin films were fabricated by evaporation system. $MgF_2$ and Cr(Cu, And Al) was selected as a low refractive index material and mid reflector layer, respectively. Optical properties including color effect were systematically studied in terms of different film layer by using spectrophotometer. Experimental results were compared to the simulation result. The films consistings of $MgF_2$/Cr/$MgF_2$, $MgF_2$/Cu/$MgF_2$, $MgF_2$/Al/$MgF_2$ multi-layered thin films showed wavelength range of $430{\sim}780nm$, typically color range between greenish yellow and orange at view angle of $45^{\circ}$. It was confirmed that this experimental result was well matched with simulation result.

The Effects of the Hot Air Drying of Red Pepper on the Quality (고추의 열풍건조(熱風乾燥)가 품질(品質)에 미치는 영향(影響))

  • Hot air drying of red pepper was studied on the quality of dried products at various drying conditions. In order to investigate the effects of drying methods on the red pepper quality, color appearance, capsanthin (red pigment) and capsaicine (hot taste principle) were analyzed. Color appearance and red pigments of dried red pepper powder were excellently superior to the conventional sun dried products, in spite of partial decolorization by cut drying, at moderate drying temperature ranges from $55^{\circ}C$ to $65^{\circ}C$. A better capsaicine content was recorded at hot air whole dried peppers than the conventional sun dried products. on the other hand about 20 percent loss was observed in cut dried ones. And hot air dried red pepper powder showed better preservative properties than sun dried pepper.

Preparation and Application of Charcoal-Encapsulated Methyl Silica Microcapsules (활성탄을 함유한 메틸실리카 마이크로캡슐의 제조 및 응용)

  • The charcoal-encapsulated methyl silica microcapsules were prepared by a O/W microemulsion sol-gel method, and the adsorption properties on aquatic humic acid were investigated. The capsules prepared were spherical, $100{\sim}1000{\mu}m$ in size. The size distribution was controllable by adjusting the size of charcoal powder, charcoal/methyl silica ratio, and agitating speed in O/W sol-gel process. Adsorption efficiency of charcoal for aquatic humic acid was decreased after encapsulation by methyl silica shell. The decreased adsorption efficiency can be dependent on the decrease of the BET surface area and pore volume after encapsulation. Diffusion properties of humic acid through the capsule shell also played an important role on adsorption efficiency. Therefore, the reasonable target pollutants for the capsules can be VOC or odor molecules which can overcome diffusion barrier through shell of capsules in air condition. Functionalization methods for the charcoal-encapsulated $CH_3(SiO)_n$ microcapsules by incorporation of $TiO_3$ as a phtocatalytic function and by incorporation of inorganic pigment as a color function were also investigated. $TiO_2$ coating properties were controllable by adjusting pH, temperature, and the concentration of $TiOSO_4$. In XRD measurement, the crystal form of the coated $TiO_2$ was anatase. For the colorization of the capsules, inorganic pigments were more efficient than organic dyes, and various color was introduced to the capsules using inorganic pigments.

  • In order to produce color cocoon, 3 rd day 5 th instar silkworm was cultivated with dye mixed artificial diet. Silkworm fed by artificial diet mixed with gardenia pigment spun blue colored cocoon, by Orange II orange cocoon, by methyl orange yellowish cocoon, and by Acid blue R bluish cocoon. Cocoon weight and cocoon shell weight ratio of silkworm fed by colored artificial diet were lower than those of normal silkworm.

Comparison of Dyeing Ability of Acid Hair Dye Using Chestnut Shell Dye (율피 색소를 함유한 산성 염모제의 모발 염색력 비교)

  • The purpose of this study was to increase the power of color and examine the long-lasting power, which is a disadvantage of one-pack acid hair dye by using chestnut shell pigment. For this, hair dyeing power was measured using a spectrophotometer, the optical density(O.D.) value was measured to examine the degree of fading of the hair, and the elasticity of the hair was analyzed by measuring the tensile strength. As a result of comparing the results of applying different leaving times and treatment methods to the hair samples of each level, the experimental group that was heat-treated for 20 minutes showed the highest dyeing power. Then, it was confirmed in the order of 40 minutes of natural exposure, 10 minutes of heat treatment, and 20 minutes of natural exposure. And it was also confirmed that the color expression visually improved as it went up to level 10. However, at level 10, it was confirmed that some water loss occurred even after 3 days and the tensile strength was low. These findings that indicated the beauty industry will popularize a one-step acid hair dye containing various natural dye ingredients to help maintain modern people's well-being and healthy mind and body.

Formulation Studies for Surface Modification and Application to Cosmetics of Jadeite Powder (경옥 가루 표면 개질과 화장품에의 응용을 위한 제형 연구)

  • The jadeite powder has a disadvantage affecting the stability of the formulation due to the agglomeration of the powder when applied to cosmetic formulations. To overcome this problem, a new composite powder was prepared by modifying the surface of jadeite powder and applied to foundation pact and sun stick. In this study, a triethoxycaprylylsilane among various surface modifiers was selected as an optimum component, and applied to each formulation by making the jadeite powder composite. As a result, the foundation pact maintained the clarity of the product color, and the sun stick gave about 30% higher UV blocking effect in the UVB area compared with that of the blank. In the user sensory evaluation, the formulation containing the jadeite powder composite showed a high score for the overall indicator. The stability evaluation of the formulation was also confirmed that it was stable against discoloration, detachment and hardness. In conclusion, the jadeite powder composite is stable as an inorganic pigment which is applicable to cosmetics as a multifunctional material while maintaining the color clarity of the product and acting as a booster for sunscreen agents.
