Comparison of Meat Quality and Fatty Acid Composition of Longissimus Muscles from Purebred Pigs and Three-way Crossbred LYD Pigs

  • This study was conducted to find pork quality to meet the needs of consumers. Thus, the meat quality and fatty acid composition of longissimus muscles from purebred pigs (Landrace, Yorkshire, and Duroc) and three-way crossbred LYD pigs were compared and evaluated. Chemical compositions of longissimus muscles were significant (p<0.05) different among pigs. Duroc contained significant (p<0.05) higher fat contents than other pigs, whereas significant (p<0.05) higher moisture contents were observed in Landrace, Yorkshire, and LYD pigs compared to those of Duroc pigs. The values of pH24 h and pH14 d were the highest in Landrace pigs. Myoglobin contents of LYD pigs were higher (p<0.05) than those of purebred pigs. Regarding meat color, Duroc and Yorkshire pigs had higher redness values than Landrace and LYD pigs, while Landrace pigs had the lowest (p<0.05) color values among all pigs. There was no significant difference in shear force or water holding capacity (WHC). Duroc pigs maintained the lowest drip loss during 14 d of cold storage. In sensory evaluation, the marbling scores of Duroc pigs were higher (p<0.05) than other pigs. Regarding fatty acid compositions, total USFA, poly-, n-3, and n-6 contents were the highest (p<0.05) in LYD pigs, while total SFA contents were the highest (p<0.05) in Duroc pigs. Based on these results, purebred pigs had superior overall meat quality to crossbred pigs.

Isolation and Charaterization of Bioactive Peptides from Hwangtae (yellowish dried Alaska pollack) Protein Hydrolysate

  • Hwangtae, dried Alaska pollack, is a major storage product in the fish processing industry. Hwangtae is prepared by removing the internal organs and drying outdoors during the cold witner months by allowing it to thaw during the daytime and re-freeze at night under sub-zero ($-10^{\circ}C$) conditions and gradually dry from December until the next April for around 5 months from Myungtae. In this study, ground Hwangtae was hydrolyzed using two proteolytic enzymes (pepsin and alcalase) which produced five soluble active peptides from Hwangtae (yellowish dried Pollack, Theragra chalcogramma) protein. Two different peptides with strong antioxidative activity were isolated from the hydrolysate using consecutive chromatographic methods of Sephadex G-25 gel, ion-exchange chromatography on a Sepharose-Sephadex C-25 gel, and high-performance liquid chromatography. The isolated peptides, APO1 and APO2, were composed of 16 and 13 amino acid residues, respectively. Both peptides contained a Gly residue at the C-terminus and the repeating motif Gly-Pro-Hyp. The peptide with a molecular weight less than 1,000 Daltons (APACE) obtained from enzymatic hydrolysates of Hwangtae exhibited the highest ACE inhibitory activity. The APACE peptides was composed of 4 amino acid residues (Gly-Leu-Leu-Pro). These results suggest that Hwangtae hydrolysates could be a good source of peptides with ACE inhibitory activity. Biochemical analysis indicated that two 70 kDa peptides (APG1 and APG2) isolated from the hydrolysate had gelatinoytic activity, which was shown to be a calcium dependent protease type as showed by gelatin SDS PAGE.

  • 영주산 '후지' 사과의 전처리 및 포장방법별 저장기간 동안 품질변호를 알아보기 위하여 사과를 5% $CaCl_2$ 용액에 15분 동안 침지한 후 완전히 건조시켜 $25\;{\mu}m$ 두께의 LDPE 필름으로 박스단위로 포장하여 $0^{\circ}C$의 농협 현지저온저장고에서 21주간 중량감소율, 경도, 적정산도, 가용성 고형분함량, 비타민 C함량, 부패율 조사하였다. 중량감모율, 경도변화, Vitamin C 변화, 부패율 등에서 칼슘처리과 필름포장을 병행한 처리구(Ca-MA)가 다른 처리구에 비해 저장 중 품질변화가 가정 적은 것으로 나타나 영주산 '후지' 사과 저장시 선도유지에 효과적인 것으로 사료된다.

정부주도형 및 민간주도형 푸드뱅크(Food Bank) 사업의 운영 형태 및 특성 분석 (Analysis on the Characteristics of Government-dominant and Non-governmental Food Bank Programs from the Operators' Perspective)

  • The objectives of this study were to: (a) examine the overall operating conditions of both government-dominant and non-governmental food bank programs, (b) understand the operational management attributes on the target based on IPA (importance performance analysis) (c) analyze the present status of donating management, and (d) suggest a direction based on the analysis of advantages and disadvantages of food banks in each part. The random samples of 120 food bank operators were selected by a proportionate stratified random sampling method. A total of 60 government-dominant food banks and 25 non-governmental food banks were analyzed. The main results of this study were as follows: Accord-ing to the Importance-Performance Analysis of operational management, 'assistance for operating funds' and 'deployment of experience staff' were placed at 'Focus Here'. There was a great shortage of experienced staff with food bank-specific knowledge. The average number of the government-dominant and non-governmental food bank program employees was 0.29 and 0.30 respectively, while the ratios of employees with other jobs were 0.96 and 0.83 respectively. Shortages of refrigeration facilities were an area that needs to be addressed. While 51.6% of donated food required cold storage, only 45% of government-dominant and 60% of non-governmental food bank programs had refrigeration facilities. Most of food bank operators (96.3%) were required to visit the donators' locations to pick up the donated foods. And the foods were distributed to the people in need, especially to the livelihood protectee.

  • This paper was able to indicate to the results the following thing that attempted a required potential development demand, through the contents and cost analysis in Rural Community Development Project. Nowadays, Rural Areas comparatively have a lot of development demands related to improvements environmental of residence life and construction of Urban-Rural Exchange Facility, on the other and, there is comparatively a few facilities demands regarding agriculture production. Demand is cold storage facilities and agricultural products direct sale facilities expansion to be able to raise value added of agricultural products as facilities related comparatively a little agriculture production, and an improvement of residence life comparatively has a lot of repair environmental uninhabited house repair, river-front and the roadside, rest shelter creation demands. However, that should be forecasted so that aging of rural, population decrease and development demand is caused by a lot of issues such as maintenances operation of many Urban-Rural Exchange Facilities and a similar program and content has a lot of them in bilateral adjacent zones. Therefore, in the future plan shall attempt efficiency operating facilities and a program through characterization and network of zone so that facilities and program can have complementary relation in the adjacent zones. And item development and an investor are necessary regarding new labor force supply for continuous value maintenance of space and returning to the farm that there were the reverse agriculture production and Amenity which are an rural village. Furthermore, developmental plan of rural village is necessary through the demand analyses that a citizen wishing for things.

빛에 의한 아스팔트 개질에 관한 연구 (A Study on the Modification of Asphalt with Light)

  • 여름철 아스팔트의 표면 온도 상승으로 인한 도로의 소성변형과 겨울철 온도 강하로 인한 도로균열이 도로안전운전을 위협하는 문제로 등장하면서 아스팔트 물성향상을 위한 아스팔트개질의 필요성이 대두되고 있다. 본 연구에서는 소성변형 저항성을 증가시키기 위해 소성변형의 직접적인 원인인 햇빛을 이용하기 위해, 고분자중합에 사용되는 광개시제를 사용하여 개질아스팔트를 제조하였다. 인장시험기와 레오미터를 이용하여 기계적 물성과 유변적 물성을 실험한 결과 개질아스팔트는 자외선에 의한 분자간 결합으로 인해 인장강도와 저장탄성률이 크게 증가하였다. 열분석에서는 온도에 따른 잔류 무게 분율이 증가하는 거동을 보여 분자간 결합이 가교반응의 결과임을 나타내었다. 장시간 자외선조사 시험에서는 조사시간이 길어짐에 따라 그 물성이 증가되거나 유지되는 거동을 보임으로써 사용수명이 연장될 수 있는 효과를 나타내었다.

자외선 경화제가 고분자개질아스팔트의 물성에 미치는 영향에 관한 연구 (Effects of UV Initiator on Properties of Polymer-Modified Asphalt)

  • 여름철 아스팔트의 표면 온도 상승으로 인한 도로의 소성변형과 겨울철 온도 강하로 인한 도로균열이 도로안전 운전을 위협하는 문제로 등장하면서 아스팔트 물성향상을 위한 아스팔트개질의 필요성이 대두되고 있다. 본 연구에서는 아스팔트의 탄성과 소성변형저항성을 증가시키기 위해 아스팔트 물성 노화의 직접적 원인인 햇빛, 특히 자외선을 이용하기 위해, 고분자중합에 사용되는 광개시제를 사용하여 고분자로 개질된 아스팔트를 다시 개질하였다. 인장시험기와 레오미터를 이용하여 기계적 물성과 유변학적 물성을 실험한 결과 열가소성고분자개질아스팔트는 자외선에 의한 가교반응으로 인해 인장강도와 저장탄성률이 크게 증가하였으나 열경화성고분자개질아스팔트에는 영향을 끼치지 못하였다. 장시간 자외선조사 시험에서는 조사시간이 길어짐에 따라 그 물성이 증가되거나 유지되는 거동을 보임으로써 자외선이 아스팔트의 사용수명이 20년이 될 수 있는 효과를 나타내었다.

수산기업의 자본구조 결정 요인에 대한 실증분석: 외환위기 전후의 자본조달 행태 비교 (The Determinants of Fisheries Firms' Capital Structure : Comparative Analysis of Financing Behavior in Pre and Post the Asian Financial Crisis)

  • We try to find the determinants of fisheries firms' capital structure during the years from 1992 to 2007 in this paper. We also have a comparative analysis of capital raising behavior in pre and post-IMF financial crisis. Regression analysis is used for this empirical study. Dependent variable is leverage ratio and independent variables are firm size, operating risk, proportion of tangible asset, non-debt tax shield effect, sales growth ratio, profitability and dummy variable. We compared the characteristics of fisheries industry with that of manufacturing industy. The determinants of fisheries firms' capital structure and correlation between pre and post-IMF financial crisis are roughly same as the hypothses except a little difference. As a peculiar difference, corrlation between fisheries firms' operating risk and leverage ratio is (+) in the pre-IMF financial crisis, but (-) in the post-IMF financial crisis. Proportion of tangible asset has a (+) correlation with leverage ratio in pre and post-IMF financial crisis, but in case of manufacturing industy, (-) correlation shows in the pre-IMF financial crisis. Because, in the pre-IMF financial crisis, high proportion of tangible asset doesn't play a role of a collateral, but only increase the bankruptcy probability. Non-debt tax shield effect and leverage ratio have (-) correlation in all industry and all period, but only (+) correlation in case of fisheries industry in the pre-IMF financial crisis. Sales growth ratio has no significant relationship with leverage ratio in fisheries industry, and this is not coincide with our hypothsis. We have a limitation of the sample size of fisheries firms and sample period in this study. Further study is required to classify the fisheries industry with in-shore fisheries, deep sea fisheries and cold storage industry.

한국형발사체 3단 터빈배기부 개념설계 (Conceptual Design of Turbine Exhaust System for 3rd stage of Launch Vehicle)

  • 3단 터빈배기부 구성은 터빈 플랜지, 열교환기, 배기덕트와 추력노즐로 이루어진다. 냉가스 가압 방식에 비하여 열교환기 가압 방식을 사용함으로서 추진제탱크 가압을 위한 헬륨가스 자체 무게와 저장 탱크 무게가 감소하는 장점이 있기 때문에 발사체에 열교환기를 사용한다. 가스발생기는 추진제 연료과농 조건에서 연소가 이루어지며, 연소가스 중에 그을음이 많이 포함되어 있기 때문에 열교환 효율이 감소하는 것을 고려하여 열교환기를 설계해야 한다. 본 논문에서는 터빈배기부 구성품 배치, 열교환기 내부 구조 및 제작성을 고려한 설계기법, 기 설계된 노즐 설계를 바탕으로 3단 터빈배기부 재 노즐 설계 형상에 대한 장점을 기술하였다.

칼슘처리와 MA포장이 딸기의 품질에 미치는 영향 (Effects on Quality of Strawberry Fruit by Dipping of Calcium Solution and MA Packaging)

  • 딸기를 $20^{\circ}C$$45^{\circ}C$$1\%\;CaCl_2$ 용액에 각각 15분간 침지시킨 후, PE film (0.011mm)으로 포장한 군과 포장하지 않은 군으로 나누어 $5^{\circ}C$에 저장하였다. 그리고 $CaCl_2$, 용액에 침지시키지 않고 PE film(0.011mm)으로 포장한 군과 포장하지 않은 군으로 나누어 $5^{\circ}C$에 저장하였다. $45^{\circ}C\;CaCl_2$ 용액에 침지시킨 후 포장한 처리구에서 부패율은 낮고 경도가 높게 나타났다. 또한 비타민 C함량이 높았고 외관이 가장 좋은 것으로 나타났으며 다른 처리군에 비해 pH가 낮고 산도가 높게 나타났다. 그러나 당도는 처리군 간에 유의성이 없었다. 따라서 수확 후 칼슘 처리와 포장의 병행은 딸기의 저장에 효과적인 것으로 사료된다.
