재한 중국 유학생의 대학급식 이용빈도에 따른 식생활 실태 (Dietary Life of Chinese International Students according to the Frequency of University Foodservice Use in Korea)

  • Objectives: This study investigated the current use of university foodservice among Chinese international students in Korea, focusing on the relationship between the frequency of university foodservice use and their dietary life. Methods: An online survey was conducted on 452 Chinese international students from February 6 to 12, 2020. The respondents were classified into "the Low-frequency group" (< one time/week; n=144), "the Mid-frequency group" (one-two times/week; n=133), and "the High-frequency group" (≥ three times/week; n=175) according to their frequency of using university foodservice. The dietary life was compared among the three groups. Binominal logistic regression models were constructed to determine the associations between the frequency of university foodservice use and the changes in dietary life. Results: More than 2/3 (68.1%) of the respondents used the university foodservice at least once per week. Chinese international students who were males and Han Chinese people, lived on campus, had stayed longer in Korea, and had no cooking facilities tended to use the university foodservice more often. The level of satisfaction with the university foodservice was not high (3.52 out of 5-points). Only 20% ate meals three times per day, and only 22% ate breakfast almost every day. The frequencies of overeating and skipping meals increased after studying in Korea. The frequency of university foodservice use, along with the length of residence in Korea, was associated with these negative changes in dietary life. Overeating (OR=2.11) and skipping meals (OR=1.79) were more likely to increase after studying in Korea in the Mid-frequency group than in the High-frequency group. Conclusions: The frequency of university foodservice use was associated with the dietary life of Chinese international students in Korea. A high frequency (i.e. ≥ three times/week) of using university foodservice may positively affect the dietary life of Chinese international students in Korea.

Non-Contrast Cine Cardiac Magnetic Resonance Derived-Radiomics for the Prediction of Left Ventricular Adverse Remodeling in Patients With ST-Segment Elevation Myocardial Infarction

  • Objective: To investigate the predictive value of radiomics features based on cardiac magnetic resonance (CMR) cine images for left ventricular adverse remodeling (LVAR) after acute ST-segment elevation myocardial infarction (STEMI). Materials and Methods: We conducted a retrospective, single-center, cohort study involving 244 patients (random-split into 170 and 74 for training and testing, respectively) having an acute STEMI (88.5% males, 57.0 ± 10.3 years of age) who underwent CMR examination at one week and six months after percutaneous coronary intervention. LVAR was defined as a 20% increase in left ventricular end-diastolic volume 6 months after acute STEMI. Radiomics features were extracted from the oneweek CMR cine images using the least absolute shrinkage and selection operator regression (LASSO) analysis. The predictive performance of the selected features was evaluated using receiver operating characteristic curve analysis and the area under the curve (AUC). Results: Nine radiomics features with non-zero coefficients were included in the LASSO regression of the radiomics score (RAD score). Infarct size (odds ratio [OR]: 1.04 (1.00-1.07); P = 0.031) and RAD score (OR: 3.43 (2.34-5.28); P < 0.001) were independent predictors of LVAR. The RAD score predicted LVAR, with an AUC (95% confidence interval [CI]) of 0.82 (0.75-0.89) in the training set and 0.75 (0.62-0.89) in the testing set. Combining the RAD score with infarct size yielded favorable performance in predicting LVAR, with an AUC of 0.84 (0.72-0.95). Moreover, the addition of the RAD score to the left ventricular ejection fraction (LVEF) significantly increased the AUC from 0.68 (0.52-0.84) to 0.82 (0.70-0.93) (P = 0.018), which was also comparable to the prediction provided by the combined microvascular obstruction, infarct size, and LVEF with an AUC of 0.79 (0.65-0.94) (P = 0.727). Conclusion: Radiomics analysis using non-contrast cine CMR can predict LVAR after STEMI independently and incrementally to LVEF and may provide an alternative to traditional CMR parameters.

Asymmetries in Chickens from Lines Selected and Relaxed for High or Low Antibody Titers to Sheep Red Blood Cells

  • Wattle length, width, and area were measured to classify bilateral asymmetries in four lines of chickens. The lines were the S26 generation of White Leghorns selected for high (HAS) or low (LAS) response to sheep red blood cells and sublines in which selection had been relaxed for three generations (high antibody relaxed [HAR] and low antibody relaxed [LAR]). Antibody titers (AB) were greater for HAS than for HAR with both greater than for LAS and LAR which while different for males did not differ for females. The low antibody lines were heavier and reached sexual maturity at younger age than the high antibody lines. In general, wattle length, width, and area were greater in the low than high antibody lines. In 24 comparisons for bilaterality 18 exhibited fluctuating asymmetry and 6 exhibited directional asymmetry with 5 of the 6 being for wattle length. There was not a clear pattern for changes in degree of asymmetry when selection was relaxed for 3 generations. For females, the relative asymmetry (RA) of wattle area was larger ($p{\leq}0.05$) for HAR than for LAR and not different from the selected lines and relaxed lines. There were no differences among lines for RA of wattle length and width of females and wattle length, width, and area of males.

A seroepidemiological survey of Taenia solium cysticercosis in Nabo, Guangxi Zhuang Autonomous Region, China

  • We have observed the seropositive rate of Taenia solium cysticercosis in residents at Nabo Village, Tiandong County, Guangxi Zhuang Autonomous Region, China by enzyme linked immunosorbent assay. The village had been found to be a relatively high endemic area of porcine cysticercosis among roaming pigs. Of 202 persons examined four males aged 15, 25, 35 and 41 year-old exhibited absorbance (abs) at 0.18, 0.20, 0.35 and 0.55, respectively. In addition, two females whose ages were 35 and 39 years revealed specific antibody levels of abs 0.26 and 0.41 in their sera. Overall positive rate among the people was $2.97\%$. All of these persons agreed that they had ingested the pork infected with T. solium metacestode (TsM), while history of proglottid discharge was not noticed from all of them. Three males and one female complained of intermittent headache. Our findings reinforced not only that the prevalence of cysticercosis might be related with roaming pigs infected with TsM but also that behavioral and environmental practices in local community constituted risk factors for transmission of the infection.

일부 한국 노인의 식습관과 식사 섭취 패턴에 따른 혈중 지질 수준과의 관련성 (The Study on Blood Lipid Levels according to the Food Habits and Food Intake Patterns in Korean Elderly)

  • The purpose of this study was to analyze the eating habits and food intake patterns to elucidate the relationship between on blood lipid levels. The subjects based on the nutrition counseling data of medical health examination. The subjects were 774 adults(448 males and 326 females). Survey samples were divided by age $65\leq$ years. The results showed there were significant difference frequency of overeating meal and total cholesterol(p<0.05), meal frequency, regularity of meals, frequency of meal out, eating breakfast, speed of meal et eating habits and blood lipid levels not significant difference. However, food intake patterns were significant difference in some kind of food such butter and cream bakery but there were not significant relationships between eggs, cod roe, Chinese foods, fried foods, Gal-bi-tang, Sun-ji-soup and blood lipid levels. Eating habits and food intake patterns was do not seem to be cause for blood lipid level in Korean elderly.

Esophageal Cancer Mortality during 2004-2009 in Yanting County, China

  • Objective: Yanting County is a high risk area for esophageal cancer (EC) in China. The purpose of this study was to describe the mortality and mortality change of EC from 2004 to 2009 in Yanting County. Methods: EC mortality data from 2004 to 2009 obtained from the Cancer Registry in Yanting were analyzed. Annual percentage changes (APC) were calculated to assess the trends in EC mortality. Age-standardized mortality was calculated based on world standard population of 2000. Results: The average EC mortality was 54.7/$10^5$ in males and 31.6/$10^5$ in females over the 6 years. A decline in EC mortality with time was observed in both genders, with a rate of -8.70% per year (95% CI: -13.23%~-3.93%) in females and -4.11% per year (95%CI: -11.16%~3.50%) in males. Conclusion: EC mortality decreased over the six years in both genders, although it remained high in the Yanting area. There is still a need to carry out studies of risk factors for improved cancer prevention and further reduction in the disease burden.

Correlations between Heterozygosity at Microsatellite Loci, Mean d2 and Body Weight in a Chinese Native Chicken

  • A total of two hundred twenty eight half-sib chickens were scored for allele size at 20 microsatellite loci to estimate individual heterozygosity and mean $d^2$. The averages of microsatellite heterozygosity, allele per locus and mean $d^2$ were 0.39, 3.6 and 49, respectively. The body weight was measured biweekly from birth to twelve weeks of age. Gompertz function was assumed to simulate body weight and to estimate the growth model parameters. Due to sex effect on body weight, the regression of body weight on heterozygosity as well as on mean $d^2$ in males and females was analyzed separately in the present study. Positive correlations were found between microsatellite heterozygosity and body weight in males and females (p<0.05). Positive correlation also observed between individual heterozygosity and simulated maximum daily gain estimated from Gompertz function in female chickens (p<0.05). There were no significant correlations between mean $d^2$ and body weight. The results suggest that local effect hypothesis could explain the correlations between heterozygosity and fitness-related traits in the domesticated chicken population, rather than the general effect hypothesis does.

Effects of Feeding Wastes from Brassica Species on Growth of Goats and Pesticide/Insecticide Residues in Goat Meat

  • The effects of feeding Brassica vegetable market wastes on intake, body weight changes and pesticide/insecticide residues in products of goats were evaluated in two experiments. In the first experiment (Exp. 1) 16 goats (Bach Thao, 9 to 10 kg, 3 months old, 9 males and 7 females) were fed four diets with leaves either from cabbage (Brassica oleracea var. capitata), cauliflower (Brassica oleracea var. botrytis) or Chinese cabbage (Brassica campestris subsp. pekinensis) with 30% of Para grass. The control group was fed 100% Para grass. All diets contained soybean waste as a supplement and the experiment lasted for 136 days. In the second experiment (Exp. 2) 24 goats (Bach Thao, 12 to 14 kg, all males) were assigned to three treatments in a completely randomised block design based on initial body weight. The goats were fed cabbage waste supplemented with 200 g or 100 g DM (dry matter) of concentrate. Para grass with 100 g DM concentrate supplementation was used as a control group. The experiment lasted for 90 days and at the end of the study, 12 goats were slaughtered for pesticide/insecticide analysis. Due to low DM content (5.3 and 3.7%, respectively) feed intakes of cabbage and Chinese cabbage groups were lower than those of other groups in the experiment. The highest feed intake and body weight gain was obtained when the goats were fed cauliflower (529 g DM/day and 87.5 g/day, respectively). In Exp. 2 total intake of cabbage and concentrate was similar (484 g and 453 g DM/day) whether the goats were fed 100 or 200 g concentrate/day but lower than that of Para grass and concentrate probably due to the low DM content of the cabbage (5.9%). Crude protein intake (79 g to 86 g/day) and body weight gain (70 g to 88 g/day) was not significantly different between treatments. Adding concentrate consequently resulted in higher DM intake than in Exp. 1 but did not result in any higher growth rate. Three of the pesticide/insecticide residues tested were found in cabbage, Alpha-Cypermethrin, Bassa-Fenobucarb and Dimethoate with levels of 0.175, 0.074 and 0.028 mg/kg fresh cabbage respectively. Weight of livers from goats fed cabbage was about 90 g higher than from goats fed Para grass but no pesticide/herbicide residues were found in meat or liver.

Sous-Vide 잡채의 앙념 배합 비율에 따른 한국과 중국 소비자 기호도 (Korean and Chinese Consumers' Preferences for Sous-Vide Cooked Jabchae according to Sauce Mixing Proportion)

  • 급격히 성장하고 있는 중국의 외식시장을 겨냥한 한식 외식상품의 개발 및 진출 가능성을 알아보기 위해 sous-vide 잡채의 양념 배합 비율에 대한 한국과 중국 소비자의 기호도를 조사하였다. 잡채 시료는 각 재료를 개별 조리한 후 최종단계에서 혼합하는 전통적인 방법 대신 모든 재료를 한꺼번에 진공포장한 후 저온 조리하는 sous-vide 조리법을 적용하여 외식 상품으로 개발하였다. Sous-vide 잡채에 대한 소비자 기호도 조사는 한국인 119명과 중국인 136명을 대상으로 각각 서울과 북경에서 실시하였다. 소비자 기호도 조사는 sous-vide 잡채 양념의 간장 설탕, 샐러드유의 배합비를 달리하여 간장 설탕 혼합물의 비율을 저(8%), 중(13%), 고(18%) 3개 수준으로, 샐러드유의 비율을 무(0%), 중(12%), 고(24%) 3개 수준으로 첨가하여 제조한 9개의 잡채 시료에 대하여 전반적, 외관, 향미, 짠맛, 단맛, 기름진 맛의 기호도와 구매의향을 알아보았다. 잡채에 대한 소비자조사에서 한국인의 경우 전반적, 외관, 향미, 짠맛, 단맛 기호도 및 구매의향은 샐러드유의 양과 관계없이 간장 설탕 혼합물을 중 고비율로 첨가한 군에서 유의적으로 높은 경향을 보였다(P<0.001). 기름진 맛의 기호도는 간장 설탕 혼합물을 중 고비율, 기름을 무 중비율로 첨가한 군에서 유의적으로 높은 경향을 나타냈다(P<0.001). 중국인의 경우 전반적 기호도, 향미 기호도와 구매의향은 간장 설탕 혼합물이 고비율, 샐러드유가 중 고비율로 첨가된 군에서 유의적으로 높게 나타났다(P<0.001). 짠맛과 단맛 기호도에서는 모두 샐러드유의 양과 관계없이, 짠맛 기호도는 간장 설탕 혼합물을 고비율로 첨가한 군, 단맛 기호도는 간장 설탕 혼합물을 중 고비율로 첨가한 군에서 유의적으로 높게 나타났다(P<0.001). 기름진 맛 기호도는 간장 설탕 혼합물의 비율과 관계없이 샐러드유를 무 중비율로 첨가한 군이 유의적으로 높게 나타났다(P<0.01). 외관 기호도에서는 모든 시료 간에 유의적인 차이가 나타나지 않았다. 대체로 한국인과 중국인 모두 샐러드유량과 관계없이 간장 설탕 혼합물을 중 고비율로 첨가한 군을 선호하는 것으로 나타났다. 특히 한국인은 간장 설탕 혼합물을 저비율로 첨가한 군을 일관적으로 가장 좋아하지 않는다고 답했으며, 중국인은 한국인보다 간장 설탕 혼합물 저 고비율 첨가군을 더 선호하였다. 반면 샐러드유의 첨가비율은 간장 설탕의 첨가비율에 비하여 양 국가소비자의 기호도에 크게 영향을 주지 않는 것으로 나타났다. 본 연구에서는 한국인과 중국인의 한식과 잡채에 대한 인식을 조사하고, 선호하는 잡채 양념의 간장 설탕 및 샐러드유의 양을 찾아내었다. 이 결과를 통해 한식 외식 상품으로서의 잡채 개발을 위한 방향의 제시와 중국시장 진출 가능성을 확인하였다. 본 연구 결과는 한식의 중국 현지화를 위한 외식 상품 개발 시 기초자료로 활용될 수 있을 것으로 생각한다.

일부 프로 축구선수들과 성인 남성의 건강보조제 섭취 실태에 관한 비교 연구 (The Comparative Study on the Supplement Use Habits of Korean Professional Soccer Players and Non-Athletic Males)

  • This study was performed to compare nutritional supplementation habits for Korean professional soccer players with those for the non-athletic male adults. Information about prevalence and kinds of supplements taken, information sources, nutrition knowledge were collected. Data were obtained from 53 football players working for Korean professional football clubs and 44 non-athletic males, who answered a list of questionnaires which had been prepared in advance. The prevalence of supplement use in the soccer player group (96%) was strikingly higher than in the nonathletic male group (34%). Vitamins were taken most frequently, followed by red ginseng, multivitamin, Chinese medicine and amino acids supplements in the soccer player group, with each player taking 2.96 kinds of supplements in average. Multivitamin was the most popular supplement in the non-athletic male group. The major reason for taking supplements was not to feel and recover from fatigue in both groups. It appeared that the non-athletic males started to use supplements mostly by recommendation of friends or colleagues. Meanwhile, soccer players took supplements on their needs, with half of them (50.1%) provided with nutrition information. The most important information source was coaches for soccer players group, and mass media for the non-athletic male group. The average scores of soccer players group on basic nutrition and athletic nutrition were lower than the respective values of the non-athletic males. Among the soccer players, 68% had taken more than 3 kinds of supplements during the last year; nonetheless, more than half could not perceive the effectiveness of the supplements. Our results show that supplementation practices were widespread in soccer players, and suggest that nutrition education for proper use of supplements and overall health care is needed for soccer players.
