  • The present study was carried out to investigate the changes in chemical and sensory properties, and cholesterol lowering effect of evening primrose oil (EPO) addition in cholesterol-reduced Cheddar cheese. The cholesterol removal rate reached 92.07% by ${\beta}$-cyclodextrin in the cheese before EPO addition. The thiobarbituric acid (TBA) value of cholesterol-reduced and EPO-added cheese increased with both ripening time and amount of EPO addition. Addition of 5% EPO resulted in a significant difference in TBA value after 4-week ripening, compared with no addition of EPO. The production of short-chain free fatty acids (FFAs) increased with ripening period in all treatments. From 4 week of ripening, the amounts of short-chain FFA in 3 and 5% EPO-added groups were significantly higher than those in other groups. Among sensory characteristics, rancidity was mostly affected by EPO addition, however, the rancidity value of 1% EPO-added was not significantly different from that of EPO-free and cholesterol-reduced cheese. Also, Cheddar cheese flavor was not profoundly affected by 1% EPO addition in all ripening periods. Total blood cholesterol dramatically decreased from 184.0 to 137.1 mg/dL with 5% EPO-added and cholesterol-reduced cheese following 8 weeks of feeding. The present results indicated that 5% EPO addition resulted in a profound lowering effect on blood total cholesterol with some adverse effects on chemical and sensory properties.

  • Objectives: The purpose of this study was to investigate the characteristics in elderly population with obesity by analyzing their blood test. Methods: Included 130 subjects of aged 60 or older went through body composition test, and blood test. We divided them into obesity group and normal group based on body mass index (BMI) results, and then the blood test results were compared between the groups. Results: Forty out of 130 subjects had BMI of 25 or more. Two groups showed significant difference in bilirubin total, alanine aminotransferase (ALT), cholesterol total, triglyceride, high density lipoprotein (HDL), red blood cell (RBC), hematocrite, mean corpuscular hemoglobin concentration, and platelet. All but HDL levels showed significantly higher results in obesity group than normal group. When compared with BMI, blood urea nitrogen, creatinine, ALT, cholesterol total, triglyceride, white blood cell (WBC), and RBC had significant positive correlations. Among those, cholesterol total, triglyceride, WBC, and RBC showed significant difference between two groups, with correlation to BMI. Especially, the average of triglyceride was higher than normal limit in obesity group, whereas it was lower than normal limit in normal group. Conclusions: Triglyceride, cholesterol total, WBC, and RBC are highly related to obese elderly in this study. Old people with obesity need to be careful of cardiovascular and metabolic disease that can be caused by these factors.

  • This study was carried out to examine how dietary protein and calcium levels in rats fed fat-enriched diet affect the total lipid and cholesterol contents of blood and tissues. Male Sprauge-Dawley rats weighing approximately 200g were fed six purified diets which contained 18%(w/w) beef tallow, 1% (w/w) cholesterol, two source of protein, casein or isolated soy protein (ISP) and three levels of dietary calcium, 0.1%, 0.4% and 1.0%, first, for four weeks, and second, for eight weeks. The contents of the total lipid, cholesterol and triglyceride in blood, liver, heart and feces were determined. After four weeks feeding serum lipid and cholesterol concentrations significantly decreased in rats fed 1.0% (w/w) level calcium, regardless of dietrary protein sources. After eight weeks, these concentrations were significantly lower in the rats fed soy protein than in casein-fed rats. As dietary calcium level increased serum and tissue lipid and cholesterol contents were decreased and fecal lipid excretion increased. It is concluded that hypolipidemic and/or hypocholesterolemic effects of soy protein and calcium were partly due to decrease in lipid absorption.

  • The purpose of this study was to confirm that regular physical exercise habit and calcium intake play a role in reducing the risk of cardiovascular disease, particularly to confirm that regular exercise is important in reducing serum lipid levels in postmenopausal women. Subjects were classified into regular exercise group(more than 3 times/wk, more than 30 min per exercise) and non-regular exercise group. A convenient frequency method was used to assess the nutritional intake of subjects. Anthropometric measurement such as body weight and height, and blood pressure were measured. There was no significant difference between non-regular exercise group and regular exercise group in energy intake and calcium intake. The total cholesterol and LDL-cholesterol concentrations in non-regular exercise group were significantly higher than those in regular exercise group. There were no significant correlations between age or weight with blood lipids and blood pressure in regular exercise group, while there were significant positive correlations between age or weight with blood lipids and blood pressure in non-regular exercise group. The levels of serum cholesterol, triglyceride, blood pressure and atherogenic index increased with age in non-regular exercise women. The blood pressure in low total Ca intake/plant Ca intake ratio group was significantly higher than that in high total Ca intake/plant Ca intake ratio group. There was a highly significant positive correlation between Ca intake and HDL-cholesterol in non-regular exercise women. And, there was a highly significant negative correlation between Ca intake and blood pressure in regular exercise women. The results suggest that increased habitual physical activity and calcium intake should be recommended by way of decreasing blood lipids and blood pressure in postmenopausal women. • This study intended to compare the effects of the sugar-Omija extract tea (SO) and LuoHanGuo-Omija extract tea (LO) to blood glucose levels and metabolism among streptozotocin (STZ)-induced diabetic mice and to prove the positive effects of LuoHanGuo extract as a sugar substitute. According to the results, the rate of blood glucose increase and the blood glucose level was reduced, and the weight was increased. Aspartate aminotransferase (AST), alanine aminotransferase (ALT), triglyceride, low density lipoprotein cholesterol, and total cholesterol was decreased, and albumin, total protein, and high density lipoprotein cholesterol (HDL-C) was increased in the STZ/LO group as compared to the STZ group. Compared to the STZ/SO group, the rate of blood glucose increase and glucose tolerance was decreased. AST, ALT, and total cholesterol was decreased, and HDL-C level was high. In conclusion, the LO displayed hypoglycemic effect, prevented weight loss caused by diabetes, recovered liver function, and improved lipid metabolism. In addition, such positive effects were obviously shown during comparison with the experimental group treated with the SO. Therefore, the LO were considered as favorable food supplements that can be safely taken by persons with diabetes, obesity, hypertension, and heart disease; they have to control their sugar intake as well as their diet.

  • In this study, we studied the effect of onion on hyperlipidemia in terms of factors, such as body weight, liver weight, kidney weight, heart weight, blood glucose, total cholesterol, triglycerides, HDL-cholesterol, and LDL-cholesterol. The hyperlipidemia supplement was significantly effective on the liver weight, kidney weight, blood glucose, total cholesterol, triglycerides, and LDL-cholesterol with the fixed effect model. However, the liver weight, blood glucose, total cholesterol, and triglycerides were significantly decreased with the random effect model on the heterogeneous factors selected by Galbraith plot. The existence of publication bias was checked by using a funnel plot.

  • Gestational diabetes mellitus(GDM) is likely to develop type 2 diabetes mellitus, cardiovascular disease, metabolic syndrome after delivery. Infants of diabetic women have higher incidence of congenital malformations than those of non-diabetic women. This study was performed to determine elevation factors associated with increased blood glucose in 350 pregnant women. Subjects were examined in June, 2011 to September, 2011 in Geongnam province. Fasting blood glucose, total cholesterol, triglyceride levels were measured by Olympus AU 680, and their body mass index (BMI) calculated. The mean total cholesterol levels were 223.22 mg/dL, triglyceride 188.38 mg/dL, and fasting blood glucose 100.18 mg/dL. Serum glucose level was significantly higher in the age group of 40 years($109.51{\pm}16.26mg/dL$) than 20 years and 30 years. And increase in triglyceride(>250 mg/dL) was significantly related to high blood glucose level($110.83{\pm}24.78mg/dL$), and increase in BMI(>26) was significantly related to high blood glucose level($114.03{\pm}27.09mg/dL$). However, cholesterol levels were not significantly related to high blood glucose level. In conclusion, the significant elevation factors in relation to the glucose levels were age, triglyceride, and BMI.

  • The purpose of this study was to confirm that calcium intake and healthy status play a role in reducing the risk of cardiovascular disease, to assure that calcium intake and regular exercise are important in reducing serum lipid levels in middle-aged women. Daily nutrient intakes were analyzed by convenient method. Anthropometric measurement such as body weight and height and blood pressure were measured. The subjects divided into two groups : women in group I under 50 years of age($\leq$49 yr group) and those in group II 50 years up($\geq$50 yr group). Average ages of group I and II were 43.87 and 53.46 years. The nutrients intake of subjects were higher than Korean recommended dietary allowances(KRDA) except calorie, iron, calcium, vitamin B1. They showed significant difference each other in vitamin B2(p<0.05), calcium(p<0.01) intake. Mean daily calcium intake was 540.88mg in $\leq$49 yr group and 519.50mg in $\geq$50 yr group. The levels of serum cholesterol, triglyceride, blood pressure, Atherogenic Index(AI), LDL/HDL and Cardiac Index(CI) were increased with age. The triglyceride and total cholesterol concentrations and LDL/HDL in $\geq$50 yr group were significantly higher than those of $\leq$49 yr group. There was a highly significantly positive correlation between age and triglyceride, total cholesterol and Atherogenic Index(AI). Triglyceride, total cholesterol, LDL-cholesterol concentration and Atherogenic Index(AI) were positively correlated with body weight and WHR(waist-hip ratio). Also ther was a significantly negative correlation between exercise and Cardiac Index(CI). Also a significantly negative correlation was found between Ca intake and LDL-cholesterol. Exercise and Cardiac Index(CI) also had a significantly negative relation. The results suggest that increased habitual physical activity and calcium intake should be recommended as a way of decreasing blood lipids and blood pressure in middle-aged women.

  • This study was conducted to examine the influences of chitosan, sericin and collagen extract complexes (1:1:1, w/w/w, CSC-F-005) in blood glucose and lipid concentrations in the sera of streptozotocin (STZ, 55 mg/kg BW, IP injection)-induced diabetic rats (SD strain) fed on experimental diets for 5 weeks. The concentrations of blood glucose, total cholesterol, HDL-cholesterol, ratio of HDL-cholesterol concentration to total cholesterol, atherosclerotic index, LDL-cholesterol, free cholesterol, cholesteryl ester, triglyceride (TG) and phospholipid (PL) in serum were effective on the metabolic regulation in diabetic rats. The activities of alkaline phosphatase (ALP) and aminotransferase (AST, ALT) in serum were lower in the extract complexes (CSC-F-005) than in the diabetic rats. The results shown above suggested that CSC-F-005 extract complexes supplementation effectively improvement of blood glucose and lipid components in the serum of STZ-induced diabetic rats.
