Effects of Dietary Fiber Extracts from Brewer's Spent Grain on Quality Characteristics of Chicken Patties Cooked in Convective Oven

  • Brewer's spent grain (BSG) is a by-product of beer manufacturing. This study was conducted to evaluate the effect of dietary fiber extracts from brewer's spent grain on quality characteristics of chicken patties. The total fiber content of BSG dietary fiber extracts after extraction increased from 58.11% to 68.57%, and the extracted dietary fiber extracts were added to chicken patties at 0, 1, 2, 3, and 4%, respectively. The effects of the BSG dietary fiber extracts on pH, color, cooking loss, reduction in patty diameter, salt-soluble protein solubility, texture, and sensory characteristics of chicken patties were evaluated. The addition of BSG dietary fiber extracts decreased pH and lightness values, and increased redness and yellowness. Chicken patties formulated with 3-4% BSG dietary fiber extracts had the lowest cooking loss among all treatments (p<0.05). The diameter of chicken patties was not affected by the addition of BSG dietary fiber extracts. Additionally, no significant difference was observed in salt-soluble protein solubility after adding 3% BSG dietary fiber extracts compared to that in the control. Textural and sensory properties were different among the chicken patties, and the 3% BSG dietary fiber-added chicken patty had the highest acceptability. Our results indicate that 3% BSG dietary fiber extract can be used as a good source of dietary fiber for improving the quality characteristics of chicken patties.

  • The LM generator is an improved summation generator with maximum period, near maximum linear complexity and maximum order of correlation immunity, and it has a property with the input-output correlation immunity In this paper, we propose the high-speed m-parallel LM-BSG and 8-parallel LM-BSG for detail as a design example. When compared with a conventional stream cipher, the properties of the proposed cipher exhibited the same crypto-degree (security) with a rt times faster processing.

  • BSG(Bounded Sliceline Grid)를 이용한 플로어플랜 기법은 매우 빠르고 효과적이나 모듈 사이에 빈 공간이 존재하여 필요 이상으로 면적을 넓게 차지하는데도 불구하고 그 점을 무시한채 배치 면적을 구하는 문제점이 있다. 본 논문에서는 BSG 구조를 이용한 플로어플랜 과정 중 빈 공간이 생기는 문제점을 해결하기 위해 모듈들을 좌측 또는 아래로 옮길 수 있는데 까지 옮기는 압축 기법을 추가하여 필요한 면적이 최소가 되도록 하였다. 실험 결과는 압축 기법을 사용하는 것이 사용하지 않을 때보다 최소 면적과 평균 면적 면에서 모두 개선되는 것을 보여 준다.

  • 본 연구는 기존의 하우스 랩이 가지는 방풍, 방수 기능 외에 복사열 차단성, 열반사성, 통기성, 투습성, 난연성, 방수성 및 단열성 등의 다기능성이 발현되는 우수한 건축용 하우스 랩을 제조하는 목적으로 시스-코어 섬유로 이루어진 부직포층, 통기성 합성수지 필름층, 니들펀칭 복합 부직포층 및 고분자 필름이 일면 또는 양면에 코팅된 내식성 알루미늄 필름층이 순차적으로 적층되고 핫-멜트 라미네이팅에 의하여 합지 된 다기능성 하우스 랩 및 그의 따른 제조방법에 관한 것이다. 상기 니들펀칭 부직포 내부에 포함 된 아라미드 섬유에 의해 우수한 난연효과를 가지며, 통기성 필름에 의하여 투습방수 기능을 가질 수 있으며, 니들펀칭 부직포층에 다량의 공기가 함유되어 보온성이 우수하고, 내식성 알루미늄 필름층이 가진 빛에 대해 우수한 방사성으로 복사열을 차단하여 단열효과를 나타내는 하우스 랩을 제조하였다.

Binary Sequence Generator with a Large Number of Output Sequences (다수열 출력 이진 수열 발생기)

  • The number of output sequence was proposed as a characteristic of binary sequence generators for cryptographic application, but in general most of binary sequence generators have single number of output sequence. In this paper, we propose two types of binary sequence generators with a large number of output sequences. The first one is a Switched-Tap LFSR (STLFSR) and it applies to the generalized nonlinear function and the Geffe's generator as example. The other is a generalized memory sequence generator(GMEM-BSG) which is an improved version of the Golic's memory sequence generator (MEM-BSG) with a large number of output sequences, and its period, linear complexity, and the number of output sequence are derived.

Selective Emitter Formation of Borosilicate-Glass (BSG) Layer using UV Laser (UV Laser를 이용한 Borosilicate-Glass (BSG)층의 선택적 에미터 형성)

  • In this study, we have investigated a selective emitter using a UV laser on BBr3 diffusion doping layer. The selective emitter has two regions of high and low doping concentration alternatively and this structure can remove the disadvantages of homogeneous emitter doping. The selective emitters were fabricated by using UV laser of 355 nm on the homogeneous emitters which were formed on n-type Si by BBr3 diffusion in the furnace and the heavy boron doping regions were formed on the laser regions. In the optimized laser doping process, we are able to achieve a highly concentrated emitter with a surface resistance of up to 43 Ω/□ from 105 ± 6 Ω/□ borosilicate glass (BSG) layer on Si. In order to compare the characteristics and confirm the passivation effect, the annealing is performed after Al2O3 deposition using an ALD. After the annealing, the selective emitter shows a better effect than the high concentration doped emitter and a level equivalent to that of the low concentration doped emitter.

  • 본고는 상업용 건물에 있어서의 냉난방부하에 대한 외벽의 축열(열용량)효과를 비교$\cdot$분석하는데 그 목적이 있다. 가장 최근에 발표된 에너지 해석 프로그램인 DOE-2.1C를 이용하여 Berkeley Solar Group (BSG) 이 제안한 축열효과를 분석하였다. 본 고에서의 축열효과는 "delta load"로서 표현되어 있으며 "delta load"는 전형적인 나무구조 건물과 벽돌조 건물의 연간 냉난방부하의 차이로서 표시된다. BSG 보고서에 의하면 delta load는 (1)구조물의 위치와 관련한 단열방법 (2)벽의 열용량 (3)벽의 열관류을 (4)기후조건에 따라 달라진다고 되어 있다. 본 고에서의 delta load 계산은 중규모 사무소 건물을 대상으로 하였으며 Lake Charles, LA와 Madison, WI 기후 데이터를 사용하였는데 DOE-2.1C 사용에 의한 delta load는 BSG의 결과와 일반적으로 잘 조화가 되는 것으로 나타났으나 외주부의 방향에 따른 dalta load와 난방에 있어서는 다소 큰 차이를 보여 주고 있으며, 외단열과 중간열의 효과는 BSG의 결과와 마찬가지로 비슷하였다.

Nutritional and Functional Properties of Water Extracts from Achyranthes japonica Nakai-Rice Pilsner Byproducts (Achyranthes japonica Nakai-Rice Pilsner 맥주박 열수 추출물의 영양성 및 기능성)

  • Two byproducts, brewer's spent grain (BSG; germinated rice and malt) and brewer's spent material (BSM; Achyranthes japonica Nakai), were collected during the manufacture of pilsner beer using A. japonica Nakai and germinated rice. Water extracts of BSG and BSM were prepared at different temperatures ($25^{\circ}C$, $60^{\circ}C$, and $100^{\circ}C$) for 5 h, and their nutritional and functional properties were investigated. ${\gamma}-Aminobutyric$ acid (GABA), saponin, and niacin contents were higher in extracts prepared at $60^{\circ}C$ for more than 3 h than the other extracts, whereas total polyphenol content, DPPH radical scavenging activity, and reducing power were higher in samples extracted at $100^{\circ}C$ for 1 h compared to the other ones. Overall, water extraction at $60^{\circ}C$ for 3 h was desirable to effectively collect both nutritional and functional components from BSG and BSM. Under these conditions, BSM extracts showed 4~18 times high niacin and folate contents, 1.4 times high total phenolic content, and 11~60 times high antioxidant activities compared to BSG extracts. This study shows that pilsner beer byproducts would be good sources of health beneficial components, especially GABA, saponin, water soluble vitamins, and polyphenolics.

  • The purpose of the present study was to determine if monocarboxylate transporter(MCT) isoforms and Basigin(Bsg) are expressed in the efferent ductules(ED) and if MCT1 expression is under estrogen receptor(ER)α-regulation in the ED of male reproductive tract. The presence of MCT isoforms and Bsg mRNAs was detected by real-time polymerization chain reaction(PCR), and ERα-mediated regulation of MCT1 expression in the ED was indirectly determined by immuno- histochemistry. Current study found differential expression of MCT isoforms(MCT1, 2, 3, 4, and 8) and Bsg mRNAs in rat ED according to postnatal ages. In addition, comparison of MCT1 expression in the ED between wild type and ERα knockout mice at different postnatal ages showed basolateral localization of MCT1 in ciliated cells of the ED and, in part, ERα- mediated regulation of MCT1 expression. It is suggested that MCTs would play a role in regulation of function of the ED.

Utilization of Porcine Blood and Liver in Yeast Culture for Animal Diets and Effects of Yeast Culture on the Growth of Broiler Chicks (돼지혈액 및 간을 이용한 사료용 효모배양과 효모배양물이 육계성장에 미치는 영향)

  • Optimal conditions for utilizing the slaughtered porcine blood and liver for yeast culture and the effects of the yeast cultures on the growth of broiler chicks were investigated. The quantity of yeast cultured for 24hours in the BSG medium containing blood extracts containing 5% glucose and in the LSG medium containing liver extracts containing 5% glucose were higher by 4% and 10%, respectively, than that in the YEPD medium containing 1% yeast extracts, 2% bacto pepton and 2% glucose. Optimal concentrations of ammonium sulfate supplementation to the BSG medium to increase the quantity of yeast cultured for 24 and 48 hours were 100 mM(1.3%) and 50 mM(0.65%), respectively. The optimal pH for yeast culture in BSG medium ranged from 6 to 7. One percent supplementation of either ammonium sulfate or taurine to LSG medium increased the quantity of yeast by 18% and 9%, respectively, compared to no supplementation. The body weight of chicks fed with 2% and 4% yeast culture supplementations cultivated increased at the 4th week by 10%, with relative to no supplementation. The results from this study suggest that the slaughtered porcine blood and liver can be utilized for yeast culture which is used in animal diets.
