The Effects of Drying Method and Spice Extracts Added to Beef Jerky on the Quality Characteristics of Beef Jerky (건조방법과 향신료 추출물 첨가가 육포의 품질특성에 미치는 영향)

  • To develope Hanbang beef jerky as health food, six kinds of beef jerky were prepared by adding sugar (A), licorice (B) and three kinds of spice extracts (clove: C, fennel fruit: D and Chungyang green pepper extract: E) and mixture of all extracts (F). The effects of the drying method and added spice extracts on the quality characteristics of the beef jerky were evaluated. In general, the air-blast dried beef jerky contained $31{\sim}33%$ moisture, $50.0{\sim}51.2%$ crude protein, $7.2{\sim}7.8%$ crude lipid and $3.0{\sim}3.3%$ crude ash. For the mineral content of the air-blast dried jerky, the most prevalent mineral was Na $(1540.08{\sim}1838.17$ mg%), followed by K, P, Mg, and Ca. The Ca content of the beef jerky was highest in the mixed extract group (88.53 mg%), and the lowest content was in sugar-added group (53.12 mg%). For the color properties, the L-value (lightness), a-value (redness) and b-value (yellowness) were higher in the air-blast dried beef jerky than in the hot air dried samples. The drying methods showed their greatest affect on the redness (a) for all six jerkies (p<0.001). For the preference by sensory evaluation, the beef jerky samples with added sugar (A) and licorice extract (B) had significantly higher scores than the beef jerky samples with the added spice extracts, for both of air-blast drying and hot air drying (p<0.05). Preference for the air-blast dried beef jerkies with added clove (C) and fennel fruits (D) were significantly higher, in terms of taste, color, softness and aftertaste as compared to the respective hot air dried jerkies (p<0.01). Considering all the obtained results, we concluded that licorice and spice extracts can be used as natural preservatives in the development of health foods and the air-blast drying method is recommended to improve the quality characteristics of beef jerky.

Air particulate matters and daily mortality in Ulsan, Korea (울산시의 대기 중 분진과 일별 사망에 대한 연구 (1991년$\sim$1994년))

  • A large number of studies have indicated associations between particulate air pollution and daily mortality. Daily measurements of total suspended particulates (TSP) by high volume air sampler were matched to daily death counts supplied by the National Statistics Office, Korea. All deaths, except deaths from accidents, occurred at Ulsan from 1 January 1991 to 31 December 1994 were considered in the poisson regression analysis. The multiple regression models were used to investigate a main effects of air particulate pollution controlling for $SO_2$ levels, air temperature, relative humidity, seasonal variation, and calendar year. The results indicated that the effects of TSP, $SO_2$, temperature, and relative humidity were not significantly associated with all cause mortality. It could, however, be emphasized that the size of the parameter estimate of TSP was very similar to that of previous studies. An increase in particulates of $100{\mu}g/m^3$ was associated with a 3% increase in mortality. This relationship was observed at TSP levels well below the current National Ambient Air Quality Standard of $150{\mu}g/m^3$ in Korea as well.

  • In this study, the droplet size distribution of a slit injector at different surrounding conditions, such as air flow and fuel temperature, were investigated. Phase Doppler anemometry (PDA) was utilized to investigate the initial droplet size distribution and the effect of fuel temperature and air flow on droplet size distribution. The entrained air motion was also evaluated by the temporal velocity profile of droplets. When the air flow velocity increased, the small droplets were more entrained to the upper and central parts of the spray and this tendency was confirmed by plotting the temporal velocity profile of droplets. This entrainment of small droplets at high airflow velocities caused relatively small mean droplet size at upper and central parts of the spray and the large mean droplet size at downstream and edge of the spray, compared to that of low airflow velocities. The total mean droplet size, obtained by averaging the size of all droplets measured at all test locations, decreased when the high airflow velocities were applied. The increased fuel temperature, with an airflow velocity of 10m/s, caused reduced droplet size at all test locations. However, the decreased value of mean droplet size at high fuel temperatures was relatively higher at upper parts of the spray, compared to downstream, as a result of enhanced entrainment of small droplets to upper parts of the spray.

  • Objective to know about pollution of ventilated system in super market and hotel's air condition in Kunming. Methods to take out 28 ventilated system from super markets and hotels in Kunming in march 2004. To check dirt amount in pipelines and microorganism in dirt. Testing result is appraised under 'Public hygiene standard of ventilated system in air condition'. Results pollution problem exist in different degree in all the super markets and hotels that have been investigated. There is 32.14% which means 8 hotels and 1 super market, pollution is serious, The others (67.86%) is medium. Conclusion pollution problems exist in air condition system in all super markets and hotels of Kunming. Discussion aim at Kunming's special weather, and present condition of public ventilated system, discussing ways of management in hygiene of air condition system.

The Characteristics of a Bypass Air Conditioning System for Load Variation (부하변동에 대한 바이패스 공조시스템의 특성)

  • Bypass air conditioning systems are divided into three types; an outdoor air bypass, a mixed air bypass and a return air bypass system. What makes the return air by pass system more effective is that it directs all of moist outdoor air through the cooling coil. The bypass air conditioning system can maintain indoor R.H (Relative Humidity) less than a conventional CAV (Constant Air Volume) air conditioning system by adjusting face and bypass dampers at part load. When a design sensible load (the ratio of sensible load to total sensible load) is 70 percent (at this time, RSHF (Room Sensible Heat Factor) . 0.7), indoor R.H was maintained 59 percent by the return air bypass system, but 65 percent by the conventional CAV air conditioning system (valve control system). The bypass air conditioning system can also improve IAQ (Indoor Air Quality) in many buildings where the number of air change is high.

A Clinical Study of Foreign Bodies in the Food and Air Passages 12-Year Review of 285 cases (식도 및 기도이물의 통계적 고찰)

  • The retrospective analysis of 285 cases with diagnoses of foreign bodies in the food and air passages that were managed at the Department of Otolaryngology, KangNam St.Mary's Hospital from Nov.1980 to Oct.1992 are reported. The results are as follows : 1) Among 285 cases, 254 cases(89.2%) were lodged in the esophagus and 31 cases (10.8%) in the air passage. The ratio between the foreign bodies in the food and those in the air passage was about 8.2 : 1 2) Among all cases, 171 cases were males(59.8%) and 114 cases were females(40.2%). 3) The group under 5 years old having foreign bodies was over half of all cases(56.5%), and the group over 51 years old was 15.5% of all cases. 4) The incidence of foreign bodies in order of frequency was coin(35.6%), fish bone (21.8%) and chicken bone(7.9%) in the food passage. Beans and peanuts were the most common foreign bodies in the air passage. 5) In the location of foreign bodies of the food passage, 208 cases(82.2%) were found in the first esophageal narrowing. In the air passage, the frequent sites of lodgement were the bronchus, trachea and larynx in order. 6) The 67.0% of all cases was removed within 24 hours. The duration of lodgement showed differences in relation with varieties of the foreign bodies.

  • With the increasing concern over the air quality degradation, there are growing demands to accurately and precisely measure air quality. In this article, the general principles and approaches were described to help aid proper evaluation of air quality. In order to introduce the basic approaches for conducting field/laboratory experiments and for interpreting experimental data sets, we explained all the common methodologies involved and provided some insights into the desirable protocols for air quality measurements.

Performance of Local Exhaust Ventilation Systems of Degreasing and Plating Workplaces (일부 탈지세척 및 도금공정 국소배기장치의 성능점검과 개선방안)

  • In order to evaluate and improve the performance of local exhaust ventilation systems for two TCE degreasing (A, B) and two electroplating (C, E) and one acid dipping & plating (D) operations located in Kimhae, the performance test was conducted with trace gases and a thermal anemometer (Kanomax 24-6111, Japan). For the inadequately designed systems, the improvement and redesigns in compliance with recommendation by ACGIH was suggested. The results of performance test for each system are as follows; 1. System of Workplace A was generally well-designed. Actual exhaust air flow rate was in excess of 68% above the recommended standard exhaust air flow rate. 2. System of Workplace B was very well-designed and completely enclosed. 3. All systems of Workplace C including hoods were poorly-designed and actual exhaust air flow rates were insufficient for open tanks. All systems should be upgraded according to ACGIH recommendations. 4. Supply and exhaust air flow rate of push-pull exhaust systems in Workplace D should be greatly increased. The width of flange of dipping tank hood should be increased with the value suggested. 5. System of Workplace E was well-designed. Actual exhaust air flow rate was in excess of 54% above the required.

A Spatial Analysis of the Causal Factors Influencing China's Air Pollution

  • This study investigates the factors that affect China's air pollution using city-level panel data and spatial econometric models. We address three air pollutants ($PM_{10}$, $SO_2$, and $NO_2$) present in 30 cities in China between 2004-2012 using global OLS and spatial models. To develop the spatial econometric analysis, we create a spatial weights matrix to define spatial patterns based on two neighborhood criteria - the queen contiguity and k nearest neighbors. The results show that the estimated coefficients are relatively consistent across different spatial weight criteria. The OLS models indicate that the effect of green spaces is statistically significant in decreasing the concentrations of all air pollutants. In the $PM_{10}$ and $SO_2$ analyses, the OLS models find that the number of buses and population density are also positively related to a reduction in the concentration of air pollutants. In addition, an increase in the temperature and the presence of secondary industries increase $SO_2$ and $NO_2$ concentrations, respectively. All spatial models capture a positive and significant effect of green spaces on reducing the concentration of each air pollutant. Our results suggest that green spaces in cities should receive priority consideration in local planning aimed at sustainable development. Furthermore, policymakers need to be able to discern the differences among pollutants when establishing environmental policies.

우리나라에서의 증발식 냉각의 효용성

  • The effectiveness with which evaporative cooling can be used in Korea was analysed by making use of weather data of 15cities in a past decade. In ASHRAE comfort chart for a still air atmospheric condition was divided into two dimensional array, 14 zones by effective temperature and 10 zones by relative humidity, and all hours of weather condition in those zones were. computed from every 4 hours weather data in a past decade. From this computation obtained were for 15 cities : 1. average annual total hours above $23^{\circ}C$ ET 2. effective temperatures with $5\%$ excess factor, and 3. ratios of all hours in wet (above $25.6^{\circ}C$ WBT), intermediate $(22^{\circ}C\;to\;25.6^{\circ}C\;WBT)$, and dry $(below\;22^{\circ}C\;WBT)$ area to total hours in whole area on comfort chart beyond $23^{\circ}C$ ET to effective temperature of $5\%$ excess factor. It was shown from this computational result that in Korea evaporative cooling was not effective for building and residential comfort air conditioning but could be useful for comfort air conditioning in industry and industrial air conditioning, depending upon the air stream velocity and the type of application.
