Quality evaluation of local brand rice in rice exporting countries

  • This study evaluated the grain quality of local brand rice from 6 major rice exporting countries which are anticipated to export their rice to Korea. Recently, with the end of the postponement of rice import tariffs in 2014, Korea is in a very easy environment to import foreign rice. Therefore, the quality evaluation of local brand rice in those countries is needed to secure the quality competitiveness of Korean rice, also to protect the rice industry in Korea. We provided total 38 local brand rice from USA(7), China(16), Australia(4), Thailand(3), Vietnam(5) and India(3), and 2 imported brand rice through MMA from USA and China to find out the status of the grain quality for each country. For the quality evaluation, we analyzed the physicochemical properties, milling and palatability-related characteristics. The amylose content on country average ranged from 24.4(India)~16.2%(Thailand). The protein content was 6.66% by overall average, and was higher in order of India(7.86), Australia(6.80), Vietnam(6.61), Thailand(6.59), China(6.28), USA(5.82). In Toyo glossiness value, it ranged from 75.7~45.2, and the figures in USA and China were the highest level. The head rice ratio ranged from 95.2~72.4%, and the figures in Thailand, USA and China were distinctly high. When we analyze the palatability of boiled brand rice with Chucheongbyeo as check variety by expert panelists, several rice brands from USA and China showed equal or better scores in shape, smell, taste, stickiness, texture and overall score, although most rice brands showed a tendency to decrease significantly in the taste characteristics compared with Chucheongbyeo. From the above results, it can be seen that the grain quality of USA and China rice is very competitive when imported into Korea. The results will provide basic information for the quality control of foreign rice which will be imported into Korea in the near future, also for the quality information which could be applied on the development of high-quality Korean rice varieties. Continuous monitoring about the foreign brand rice is advisable to improve the quality competitiveness of Korean rice.

Quality Characteristics and Biogenic Amine Production of Makgeolli Brewed with Commercial Nuruks (시판 누룩으로 제조한 막걸리의 품질특성과 biogenic amine 생성)

  • Makgeolli mashes that were brewed using five different commercial nuruks (fermentation starters) were investigated for changes in physicochemistry, microbial diversity, and biogenic amine (BA) production. Mash A brewed with the nuruk (Gaeryang-nuruk) had the highest level of alcohol concentration and the greatest number of yeast cells, whereas mash E had the greatest number of bacterial cells. Only three biogenic amines were detected in the makgeolli mashes: tyramine, putrescine, and cadaverine. Using a PCR-DGGE technique, we observed that mash E had the highest BA production, and had the greatest number of bands on the denaturing gradient gels. We also observed that the numbers of bacterial cells correlated significantly with the putrescine and the total BA content, and that the BA content correlated significantly with the color values (L, a, b). This study shows that the quality of a makgeolli can depend on the type of nuruk. Therefore, we suggest that the quality management of makgeolli should start with the stage of nuruk manufacture.

The Applicability of the Acid Mine Drainage Sludge in the Heavy Metal Stabilization in Soils (산성광산배수슬러지의 토양 중금속 안정화 적용 가능성)

  • BACKGROUND: Recent studies using various industrial wastes for heavy metal stabilization in soil were conducted in order to find out new alternative amendments. The acid mine drainage sludge(AMDS) contains lots of metal oxides(hydroxides) that may be useful for heavy metal stabilization not only waste water treatment but also soil remediation. The aim of this study was to investigate the applicability of acid mine drainage sludge for heavy metals stabilization in soils METHODS AND RESULTS: Alkali soil contaminated with heavy metals was collected from the agricultural soils affected by the abandoned mine sites nearby. Three different amounts(1%, 3%, 5%) of AMDS were applied into control soil and contaminated soil. For determining the changes in the extractable heavy metals, $CaCl_2$ and Mehlich-3 were applied as chemical assessments for metal stabilization. For biological assessments, lettuce(Lactuca sativa L.) and chinese cabbage(Brassica rapa var. glabra) were cultivated and accumulation of heavy metals on each plant were determined. It was revealed that AMDS reduced heavy metal mobility and bioavailability in soil, which resulted in the decreases in the accumulation of As, Cd, Cu, Pb, and Zn in each plant. CONCLUSION: Though the high level of heavy metal concentrations in AMDS, any considerable increase in the heavy metal availability was not observed with control and contaminated soil. In conclusion, these results indicated that AMDS could be applied to heavy metal contaminated soil as an alternative amendments for reducing heavy metal mobility and bioavailability.

A Survey of Weeds Occurrence on Paddy Fields in Chungnam Province in Korea (충남지역 논 잡초 발생분포조사)

  • The survey of weed occurrence was conducted to identify problematic weed species on the paddy field. Total 524 sites of the 17 regions in Chungnam Province in Korea were investigated from June to August, 2013. In the whole region, 23 weed species were identified including 19 annuals and 4 perennials. The most dominant weed species in Chungnam paddy fields were Echinochloa crus-galli (25.3%), followed by Monochoria vaginalis (11.9%), Eleocharis kuroguwai (10.3%), Bidens tripartite (9.3%) and Aneilema japonicum (8.5%). The 95.2% of the investigation sites was determined under dominance value 1 (range of cover <10: numerous individuals) by Braun-Branquet indicating proper weed control in the paddy fields. This information could be useful for estimation of future weed occurrence, weed population dynamics and establishment of weed control methods in Chungnam Province in Korea.

Effects of the LOHAS Image of Restaurants on Involvement and Willingness to Pay (레스토랑의 로하스 이미지가 관여도 및 지불의사에 미치는 영향)

  • With the changing consciousness of consumers, there has been an increasing interest in nature-friendly lifestyles and safety of food ingredients. Therefore, the LOHAS image, which has value in social health and sustainability, is expected to be a factor that helps restaurants establish differentiation strategies. This study examined the LOHAS image of restaurants on involvement and willingness to pay. The results were as follows. First, eco-friendly food ingredients and interiors among the LOHAS image factors of restaurants had a significant effect on involvement. Second, the perception of LOHAS in the LOHAS image factors of restaurants had a significant effect on involvement. These results may be due to the lack of a conceptual understanding of LOHAS among restaurant customers, who fail to properly grasp its meaning. Therefore, in order to promote the LOHAS image of restaurants to customers, it is necessary to consider presenting POPs or signs that will enable customers to understand the concept of LOHAS inside the restaurant. Third, consumers' involvement turned out to have a significant effect on their willingness to pay. Thus, it is necessary to imprint the image of a LOHAS restaurant using eco-friendly colors, sculptures, and agricultural products so that customers can perceive food ingredients or interior elements as eco-friendly.

Quality Evaluation of Fresh-Cut Products in the Market (시중 판매중인 Fresh-Cut 채소 제품의 품질평가)

  • Most fresh-cut agri-food products are less stable than unprocessed materials from which they are made. The objective of this study was the development of a quality control system for fresh-cut agri-food products. In this study, vitamin C, minerals, residual heavy metals, and pesticides of various fresh-cut agri-food products were analysed. Sensory evaluation revealed that overall acceptability scores were less than expected in most products since fresh-cut products are likely to cause browning and easily lose their freshness. Therefore, the postharvest technologies that can maintain the quality, freshness and appearance must be supplied. Although vitamin C and minerals are main nutrients that can be supplied from salads, the results showed that vitamin C and mineral contents were very small and extremely small compared with the values from the food composition tables. It is possible that vitamin C and most minerals that are easily destroyed were lost through minimal processes like peeling and cutting. In safety side, the remaining heavy metal contents of fresh-cut agri-food were investigated and the results showed that copper and lead existed in some products because only cadmium in agricultural produce is controlled by the minimum standard of heavy metal contents in Korea. No residual pesticides were detected in all products.

Establishment of National Quality Control System for Analytical Laboratory of Pesticide Products by Proficiency Testing (농약 이화학시험 분석기관의 숙련도시험을 통한 정도관리체계 확립 연구)

  • Performance of proficiency testing and the validation of analytical method was included a scheme of quality assurance in analytical chemistry laboratory to monitor a laboratory's performance abilities and produce consistently reliable data. This study was assessed the applicability of proficiency testing scheme proposed for analytical laboratories of pesticide product in domestic. The validation of analytical methods, stability and homogeneity for formulated pesticide products (emulsifiable concentrate) of emamectin benzoate and lufenuron was confirmed for the proficiency testing. The z-score of 33 participation laboratories for emamectin benzoate were that the numbers of outlier were 2 laboratories (6.0%), z-score outside the range from -3 to 3 designated "unaccptable" were 2 laboratories and z-score in the ranges -2 to -3 and 2 to 3 designated "questionable" were 3 laboratories (9.0%). Three laboratories (9.0%) showed the z-score designated "questionable" for lufenuron. The additional proficiency testing for various product types will be needed to establish the scheme of quality control.

Changes of asparagine content in potato (Solanum tuberosum L.) tuber during storage (저장 중 감자 아스파라진 함량의 변화)

  • In order to research changes of asparagine content according to stage after harvest to storage, it was analysed asparagine content of potato tuber and potato sprout. The results of the asparagine content in potato cultivars after harvest ranked in cv. Superior, cv. Gahwang, cv. Atlantic and cv. Goun in descending order. The content of asparagine in potato was approximately 1300 mg/100g (D.W.) The changes the asparagine content according to storage condition and the difference of asparagine between tuber and sprout can be summarized as follows. In the asparagine content of potato cultivars, Little variation in the content was observed while potato tubers were stored at $4^{\circ}C$. However, after 3 months of storage at $10^{\circ}C$, the content increased by 9.7%, indicating that the content increases as the storage temperature and period increases. The content of asparagine also increased during sprouting of potato tubers. In the sprout, the proximal region contained 21% higher content of asparagines than the distal region, which suggests that the sprout develops with the increasing of the content of asparagines.

Identification of Spoilage Bacteria Isolated from Aseptic Packaged Cooked Rice and Application of Acidic Electrolyzed Saline Solution as Water-for-Cooked Rice (무균포장밥으로부터 분리된 부패 미생물의 동정 및 전해산화수의 취반수로서의 이용 효과)

  • In this study, it was investigated that the isolation and identification of spoilage bacteria from contaminated aseptic packaged cooked rice, the potential for application of acidic electrolyzed saline solution (AESS) as water-for-cooked rice and the microbiological safety of AESS-based cooked rice. Five strains of Bacillus subtilis and a B. cereus strain among the total six isolates were partially identified by biochemical method and by Microbial Identification System (MIS). The bactericidal effect of AESS was similar as 0.1% NaOCl and 70% ethanol solution, or better than that. All of the test microorganisms except Bacillus spp. that were exposed to AESS for five seconds were destructed. The effect of AESS against Bacillus spp. was much better than that of the two solutions and all of them were destructed or inhibited on exposure for five minutes. The pH value of cooked rice prepared using AESS was in the range of 3.6 to 4.3 and was not almost changed through the storage period. Various concentrations of cell suspension of Bacillus isolates were inoculated to cooked rice, which were prepared with tap water and AESS, and stored at $37^{\circ}C$ for two weeks. The result was shown that the bacteria in tap water-based cooked rice appeared normal cell growth, while they were completely repressed in AESS-based cooked rice.

Physiological responses to drought stress of transgenic Chinese cabbage expressing Arabidopsis H+-pyrophosphatase (애기장대 H+-pyrophosphatase 발현 형질전환 배추의 건조스트레스에 대한 생리적 반응)

  • Plant tolerance to drought is a beneficial trait for stabilizing crop productivity under water deficits. Here we report that genetically engineered Chinese cabbage expressing Arabidopsis $H^+$-pyrophosphatase (AVP1) shows enhanced physiological parameters related to drought tolerance. In comparison with wild type plants under soil water deficit stress created by cessation of irrigation, soil water potential in pot with AVP1-expressing plants was more rapidly decreased that might lead to increased relative water content in leaves, while both genotypes had indistinguishable wilting phenotypes. Transgenic plants subjected to drought treatment also exhibited higher photosystem II quantum yield in addition to lower electrolyte leakage and $H_2O_2-3,3^{\prime}$-diaminobenzidine content when compared to wild type plants.
