Standardization of the Preparation Methods for Hwajeun (I) - focused on the volume and temperature of water added- (화전 조리법의 표준화를 위한 조리과학적 연구 (I) - 첨가하는 물의 양과 온도를 중심으로 -)

  • The purpose of this study was to develop a standardized recipe of Hwajeun(glutinous rice pancake with flower) by evaluating various methods appeared in the literature. For this purpose, the effects of the volume and temperature of water used to make dough on the sensory and rheological characteristics of Hwajeun were investigated. This experiment consisted of sensory evaluation in acceptance and intensity(appearance, color, moistness, softness, chewiness, adhesiveness, taste and overall preference), objective evaluation by using texture analyser, color difference meter and measurement of water content and oil absorption ratio. The loss ratio of moisture contents between dough and cooked Hwajeun were 2.4 ~2.8%, and the oil absorption ratio of Hwajeun made by 2$0^{\circ}C$water for kneading increased in proportion to the increment of water added(p<0.01). In terms of color, b value of Hwajeun made by 104$^{\circ}C$ salted water for kneading showed higher value compared to the others. In the two bite compression test, adhesiveness, springiness, gumminess and chewiness of Hwajeun made by 2$0^{\circ}C$ water(36%) for kneading showed significantly(p<0.05) high value among the samples. As a result of sensory evaluation, Hwajeun made with 27% of 104$^{\circ}C$ salted water for kneading was most preferred in softness, chewiness, taste and overall preference

Functionality of Low Molecular Weight Peptides of Acceleratedly Manufactured Anchovy Sauce with Bacillus subtilis JM3 Protease (Bacillus subtilis JM3 단백분해효소로 속성제조한 멸치액젓 저분자 peptide의 기능성)

  • Bacillus subtilis JM3 protease from naturally fermented anchovy sauce was partially purified in 40-60% ammonium sulfate fraction. To accelerate fermentation of anchovy sauce, 2 and 4% crude B. subtilis JM3 proteases were added to 6 month-ripened anchovy sauce, and their hydrolysis degrees and amino-nitrogen contents were investigated at different storage times. Low molecular weight (LMW) peptide was purified by ultrafiltration ana gel permeation chromatography from anchovy sauce manufactured with B, subtilis JM3 protease. Anchovy sauces with 2 and 4% proteases increased hydrolysis rate by 27 and 32%, respectively. Amino-nitrogen contents of anchovy sauces fermented with 2 and 4% proteases were twofold higher than that of control. Control showed five peptide peaks on Bio-Rad P2 gel permeation chromatography spectrum, whereas anchovy sauces with 2 and 4% B. subtilis JM3 proteases showed six and seven peaks, respectively. ACE inhibitory activity was highest in peak 6 (43.75%) of anchovy sauce with 2% protease, followed by peak 5 (34.82%) of control. DPPH radical-scavenging effect was higher than 50% in all samples. Cytotoxicity was highest in peak 3 (44.12%) of control, fellowed by peak 5 (42.04%) of anchovy sauce with 4% protease.

Effects of Embryo Density on Development of In Vitro Produced Bovine Embryos (수정란의 밀도가 소 체외수정란의 체외발달에 미치는 효과)

  • This study was carried out to improve of effective culture system on development of IVM/IVF/IVC bovine embryos. The cumulus-oocyte-complexes (COCs) collected from Korean cattle ovaries harvested at a local abattoir were matured in 50 ${mu}ell$ of TCM199 supplemented with 10% fetal bovine serum (FBS) and hormones (35 $\mu\textrm{g}$/$m\ell$ FSH, 10 $\mu\textrm{g}$/$m\ell$ LH, 1$\mu\textrm{g}$/$m\ell$ estradiol 17 $\beta$ under paraffin oil at 39$^{\circ}C$ in a humidified atmosphere of 5% $CO_2$in air. At 24 hrs after culture, matured oocytes were fertilized in vitro for 22~24 hrs with motile semen in which obtained by centrifugation of a frozen thawed semen on Percoll-density gradients (45% vs. 90%) at 500 g for 20 min. The presumptive zygotes were divided into three experimental groups. Single egg (Group 1), 25 (Group 2) or 50 eggs (Group 3) were cultured on cumulus cell in 50 ${mu}ell$ TCM199 supplement with 10% FBS for 6~9 days after fertilization. In vitro developmental rates into the blastocysts in the groups 2 and 3 were significantly (P<0.05) higher than those of group 1 (37,27 vs. 6%, respectively). Cell number of blastocysts obtained in groups 2 and 3 at day 8 were significantly (P${mu}ell$) resulted in higher developmental competence and cell number of bovine blastocysts produced in vitro than those the culture of single embryos with cumulus cells.

Package Atmosphere and Quality as Affected by Modified Atmosphere Conditions of Persimmon (Diospyros kaki. cv. Fuyu) Fruits ('부유' 단감의 MA포장 조건에 따른 포장기체조성 및 과실의 품질 변화)

  • Persimmon (Diospyros kaki. cv. Fuyu) fruits were packaged under different conditions, and then stored at $0^{\circ}C$ for 21 weeks. The tried packages were heat-sealed bag of one fruit, heat-sealed bag of five fruits, and tie-sealed bag of five fruits, which used films of three different thickness (0.03 ㎜, 0.05 ㎜ and 0.06 ㎜). Throughout the storage, package free volume, package atmosphere and quality were measured. Package free volume decreased with time with higher rate for heat-sealed bags, in which close contact between fruit and the film was eventually reached in longer storage. However, tie-sealed bags maintained the levels of stabilized free volume. The rate of free volume decrease was faster with thinner film and larger bag size for the packs sealed by the same method. Package atmosphere covered $O_2$ concentration of $1.1{\sim}17.1%$ and $CO_2$ concentration of $1.1{\sim}8.3%$, $O_2$ concentration decreased during storage, whereas $CO_2$ increased. Thinner film package created the internal atmosphere of higher $O_2$ and lower $CO_2$ concentrations. Tie-sealed bags of 5 fruits in the films of 0.05 mm and 0.06 mm thickness maintained the equilibrated package atmosphere of $1.1{\sim}3.0%\;O_2$ and $4.0{\sim}5.5%\;CO_2$, which preserved the fruits best in terms of firmness and less physiological changes of flesh browning and peel browning. At five fruit heat-sealed bag in the films of 0.06 mm thickness with $CO_2\;8.3%$, flesh browning occurred at a high rate, whereas all treatments in the film of 0.03 mm thickness with high $O_2$ and relatively low $CO_2$ contents, flesh and peel browning rates were high.

Studies on the Quick Ripening Process for Soysauce (속양(速釀)간장 제조(製造)에 관(關)한 연구(硏究))

  • This experiment was conducted as a preliminary test to invent the quick ripening process for soysauces. The bran koji extract of 2 kinds of mold (Asp. niger and Asp. sojae) was used as enzyme sources in order to improve the rate of enzymatic conversion of raw materials and shorten the ripening period of soysauces. Soybean koji (inoculated Asp. sojae) and steamed soybean were enzymatically decomposed for 8 hours at $40^{\circ}C$, pH 4-6 with stirring at a rate of 1500 rpm. After the enzymatic treatment, soysauces were fermented by 4 kinds of processes with the above-mentioned salt tolerant microorganisms inoculated. After 4 weeks, sensory evolution for these soysauces products and analysis of chemical components were carried out. The results obtained were summarized as follows. 1. Soysauces prepared from decomposed koji by Asp. niger enzyme complex showed higher extractables, such as total nitrogen, amino nitrogen, pure extract and reducing sugar, than any other procedure. Extracted amounts of each components of soysauces prepared from this process during 1 month were similar to those of soysauces made from general procedure (control) for 5 to 6 months. 2. According to sensory evaluation, soysauce prepared from decomposed koji also showed best taste and were similar to that of soysauces prepared by general method for 6 months.

A Study on the Algorithm on Computing Model of Pulse Oximetry Using 2 Channel Sensor (2 채널 센서 펄스 옥시메터의 산소포화도 계산알고리즘에 관한 연구)

  • 본 논문은 2채널 센서를 이용한 펄스 옥시메터의 산소포화도 계산 모델의 설계 및 분석에 관한 것이었다. 또한 Beer Lambert 법칙에 의거하여 기존 알고리즘 및 새로운 알고리즘들을 이론적으로 분석하였다. 제안된 알고리즘은 손가락을 투과한 2개의 채널에서 나온 광신호를 각각 직류성분 Adc 와 맥동성문 Aasin wt. 잡음성분 Ahnoise , ALnoise 등으로 모델링한다. 모델링 되어진 광신호를 맥동성분이 적분비를 사용하여 고주파 동잡음인 AHnoise 를 제거한 후 각각 산소포화도 계산을 위한 상관계수 그래프를 구한다. 또한 2개의 채널에서 적분비를 사용하여 구해진 상관계수 그래프를 사용하여 산소농도를 추출하는 방법에 관하여 기술하였다. 맥동성분비와 관혈적인 측정에 의한 혈중 산소포화도와의 상관관계 그래프의 선형성을 확보하기 위하여 펄스 옥시메터 시뮬레이터 오차범위를 고려해 75~100%상이의 산소포화도를 중점적으로 관측하였고, 4주기로 면적계산주기를 결정하여 실험하였다. 본 연구에서 제안된 알고리즘의 성능평가는 맥동성분의 적분비를 이용한 방법과 비교하였다. 비교결과는 4주기의 면적계산 주기를 가졌을 때 기존의 방식보다 평균오차가 0.7%정도 향상되었으며, 회귀적선의 신뢰도를 보여주는 결정계수 ${\gamma}$$^2$도 0.995로 기존의 방식에서 나온 0.979보다 더 좋은 결과를 얻을 수 있었다. 따라서 2채널을 이용한 방법이 A Lnoise 제거와 성능면에서 우수하다는 결론을 얻을 수 있었다.

Plot Size for Investigating Forest Community Structure (IV) - Adequate Number of Plots for Shrub Stratum in a Mixed Forest Community of Abies holophylla and Broad-leaved Trees at Odaesan National Park - (삼림군집구조 조사를 위한 조사구 크기에 관한 연구(IV) - 오대산 국립공원지역 젓나무-활엽수 혼효림군집 관목층의 적정 조사구수 -)

  • A mixed forest community of Abies holophylla and broad-leaved trees in Odaesan National Park was studied to determine the adequate number of plots of shrub stratum for investigating forest community structure. Thirty 5m*5m plots were set up in the shrub stratum, and species-area curve and performance curve were made out. The minimum number of plots where a given percentage increase in number of plots produce in number of plots produced less than the same percentage increase in number of species was six. The minimum number of plots where a given percentage increase in number of plots produced less than the half of the percentage increase in number of plots was eleven. The minimum number of plots where the dominant species was distinguished from the subdominant species was five. The minimum numver of plots where the first subdominant species was distinguished from other subdominant species was ten. The diffrence of species diversity(H') between five or more plots and total thirty plots was less than 0.05. Similarity index was more than 70% between five or more plots and total thirty plots, and more than 80% between ten or more plots and total thirty plots. The conclusion is that the adequate number of 5m*5m plots for the shrub stratum was about 5 in general case and about 10 in case of requiring more accuracy.

Effect of Dietary Supplemental Astragalus membranaceus on Performance, Blood Components and Meat Quality of Broiler Chicks (황기의 첨가.급여가 육계의 생산성 및 혈액의 성상과 육질에 미치는 영향)

  • This experiment was conducted to investigate the effect of dietary supplemental Astragalus membranaceus on performance and meat quality of broiler chicks for 5 weeks. Basal diets based on corn and soybean meal contained 21% crude protein for the first three weeks and 19% for the rest of two weeks. Four levels of dietary Astragalus membranaceus(0, 0.25, 0.50, 1.00%) were fed in a one way design. There were four replicates of 50 chicks per treatment. Weight gain, feed intake, feed efficiency, blood component, breast meat lipid and protein were measured at the end of experiment. No increased growth rate was observed in chicks fed the basal diet supplemented with Astragalus membranaceus. Chicks fed the diet containing 0.5 and 1.00% Astragalus membranaceus tended to depress the growth rate. Feed intake of 0.25% Astragalus membranaceus treatment was significantly lower than control group(P<0.05), Dietary supplemental Astragalus membranaceus improved the feed efficiency compared to the control group, but was not significantly different between them. However, Astragalus membranaceus treatment exhibited decreased serum cholesterol and AST compared to those of control group, but was not significantly different between supplemental groups. Serum hematocrit, triglyceride, phosphate and BUN decreased at 0.25% Asparagus membranaceous supplementation. Growth hormone and IGF-1 (ng/ml) of chicks fed more than 0.50% Astragalus membranaceus significantly decreased compared to those of control(P<0.05). The total lipid and protein content of chicks fed 0.25 and 0.50% Astragalus membranaceus tended to increase, but did not show consistency at more than 0.50% supplement. The results of this experiment indicated that optimum dietary Astragalus membranaceus level to improve the performance and meat quality of broiler chicks may be less than 0.25%.

Effects of Dietary Protein Levels and Feeding Regimes on Performance of Broilers (단백질수준별 급여시기가 계육생산에 미치는 영향)

  • This experiment was conducted to study the most economical and effective dietary protein level and feeding regimes in the performance of broilers. Four kinds of dietary protein level (25, 23, 20 and 18%) were prepared for this experiment. This experiment was carried on for 7 weeks and the results were shown as follows; 1. Increasing the dietary protein level resulted in a significant increase in the body weight gains (P〈0.05). 2. With a higher level of the dietary protein, the feed intake tended to be increased and the feed efficiency had same trends. 3. Increasing the dietary protein level resulted in a significant increase in the protein requirement per kg body weight gains (P〈0.05). 4. Viabilities were not affected by the different dietary protein levels. 5. The highest income had attained in the highest level of protein supplement, and the middle level of protein supplement was not higher than the lowest one. Conclusively, the highest level of protein supplement was considered to be adequate for the broiler's productiveity and income.

Constant Time RMESH Algorithms for Polygon Intersection Problems (다각형 교차 문제를 위한 상수 시간 재구성메쉬 알고리즘)

  • 본 논문에서는 두 단순 다각형의 교차 영역을 구하는 문제를 재구성메쉬(RMESH) 상에서 상수 시간에 해결하는 두 개의 알고리즘을 제시한다. 먼저, 두 다각형이 모두 볼록 다각형일 때, N$\times$N RMESH에서 상수 시간에 교차 영역을 구하는 알고리즘을 제시한다, 여기서 N은 두 다각형의 정점의 개수의 합이다. 그리고, 두 일반적인 단순 다각형의 교차 영역을 구하는 문제에 대해서 (N+T)$\times$(N+T)2 RMESH에서 수행되는 상수 시간 알고리즘을 제시한다, 여기서 T는 최악의 경우 두 다각형의 경계선 상의 교차점의 개수로서 두 다각형의 정점의 개수가 각각 n과 m일 때 n.m에 해당한다. 두 다각형 중 하나가 볼록 다각형인 경우는 T = 2.max{n, m}이다. 이 알고리즘은 두 다각형의 모든 교차 영역 조각들을 구한 후 RMESH의 0번째 열에 차례로 배치해 준다. Abstract In this paper, we consider two constant time algorithms for polygon intersection problems on a reconfigurable mesh(in short, RMESH). First, we present a constant time algorithm for computing the intersection of two convex polygons on an N$\times$N RMESH, where N is the total number of vertices in both polygons. Second, we present a constant time algorithm for computing the intersection of two simple polygons on an (N+T)$\times$(N+T)2 RMESH, where T is the worstcase number of intersection points between the boundaries of them. T = n m, where n and m are the numbers of vertices of two polygons respectively. If either of them is convex, then T = 2 max{n,m}. The algorithm computes the intersection of them, and then arranges each intersection component onto the 0-th column of the mesh.
