Effects of Clipping Method on Forage Yield and Quality in Pearl Millet [Pennisetum americanum(L.) Leeke] (진주조 예취방법이 청예수량 및 품질에 미치는 영향)

  • The objective of the study was to determine optimum clipping time, interval and height of Suwon 1 pearl millet hybrid in Korea to increase forage yield and quality. Clipping height 20 cm above the ground surface was the best resulting in producing 11.1 tons per hectare of green chop. However, clipping height 5 cm was not good for regrowth of the ratoon crop. Just after the first cutting when the plant height reached two meters around mid-July, four weeks cutting interval was the best for higher forage yield of 11. 4 tons per hectare. Crude protein content of the clipping height 20 cm was the highest being 12.8 percent. Dry matter of the first cut contained 14 percent of crude protein being the highest, and with lower crude fiber content of 24 percent. And also four weeks cutting interval was the highest in crude protein content being 13.1 percent along with lower crude fiber content of 24.2 percent. Thus, the forage yield depended on clipping height greatly, but the quality was dependent upon clipping time, interval and frequency more than cutting height pearl millet plant. It would be desirable for higher yield and quality of Suwon 1 pearl millet hybrid to cut three or four times during the growing season at 20 cm clipping height and at four weeks clipping interval from the first cut when the canopy height is above one meter under the Korean environmental conditions.

Effect of Water Table Depth in Different Soil Texture on Quality of Barley and Wheat Grain (토성별 지하수위가 밀, 보리의 품질에 미치는 영향)

  • This experiment was performed to characterize the optimum water table level for the grain quality, seed germination and diastic power of barley(var. Olbori) and wheat(var. Grumil). Olbori and Grumil grew in the 550 liter plastic pot that filled with silt loam or sandy loam. During the whole growth period, the underground water level adjusted to be 20, 30, 40, 50 and 70cm. Filled grain ratio and specific gravity were not affected by soil texture and water table. Low level of water table caused the increase of 1,000 grain weight in wheat and barley, but soil texture didn't. Crude protein content tended to be high as the water table level was high, especially in wheat. Change in crude protein content was affected by underground water level more than soil texture. And the affection was slightly higher in sandy loam than silt loam, but the difference was small. The higher level of water table led to the lower crude lipid content in barley and wheat grain. Crude lipid content of both wheat and barley grain grown in sandy loam was higher than those grown in silt loam. As the water table level down, the ash content of barley and wheat grain tend to increase, especially in sandy loam. Wheat flour yield was not affected by soil texture. It was about 65% at 20cm of water level and above 67% at 40cm water level. The seed germination of wheat and barley was more than 95% when the seeds were placed at 2$0^{\circ}C$ for three days. Regardless of soil texture, the lowest germination was seen at 20cm of water table level. And the seed germination rate increased as the underground water level became low. Above 89% of barley grains were germinated within 48 hours except 20cm level of water table in sandy loam. Diastic power of germinated barley was the lowest at 20cm of water table level, and it was almost unchanged below 30cm of water table level. And also it was not affected by soil texture.

  • Waste newspapers was used as an amendment to adjust the moisture of household food wastes for composting. The mixture of household food wastes and waste newspapers was composted in an especially designed small home composter, where the early fed composting materials were discharged early. The temperature inside composting materials was influenced very much by that of outside, because the composter was not insulated. Accordingly, the higher the outside temperature was, the higher the decomposition rate was. The temperature inside composting materials did not reach to optimum, because the amount of composting materials added in the composter everyday was too little, and it caused too high water content of discharged compost after 15 weeks. Therefore, it was required that the composter must be insulated to maintain the higher temperature. The inorganic compounds$(K_2O,\;CaO,\;MgO,\;P_2O_5)$ and heavy metals(Zn, Cu, Cr, Cd, Hg, As) were accumulated obviously in produced compost, when dry recycled compost was reused as the amendment for adjusting the moisture.

Functional Properties of Soybean Curd Whey Concentrate by Nanofiltration and Effects on Rheological Properties of Wheat Flour Dough (나노여과에 의한 순물 농축액의 기능적 특성 및 밀가루 반죽의 리올로지 성질에 미치는 영향)

  • This study was designed to investigate the feasibility of utilizing concentrates of sunmul(soybean curd whey), the waste by-product of soybean curd processing, as functional food ingredients. Sunmul was concentrated by nanofiltration fo11owing ultrafiltration and then freeze-dried. The oil adsorption capacity of the nanofiltraion(NF) powder(97.33g/100g) was similar to that of sunmul powder(94.17g/100g), but was lower than that of ISP(isolated soy protein). However, the water holding capacity of NF powder could not be determined because the NF powder completely dissolved in water. The protein solubilities of sunmul powder and ISP in distilled H$_{2}$O, 0.1M and 0.5M NaCl were lowest at pH 4.0 and increased at more acidic or alkaline conditions. However, the protein solubility of NF powder was at its minimum at pH 6.0 and increased at more acidic or alkaline conditions. Emulsifying activity indexes of NF powder in 4% and 6% solution were minimal at pH 4.0 and 6.0, respectively, which were 3 to 8 times lower than that of sunmul powder. The emulsion stability of 4% sunmul solution was lowest at pH 4.0, but that of NF powder was highest at pH 5.0 and decreased at more acidic or alkaline conditions at all concentrations of solution. The total free amino acid contents of protein in sunmul, and NF power were 99.07 and 2,110.10mg%, respectively, and NF powder exhibited especially high threonine content. Rapid viscosity analysis of dough with 1 to 5% added NF powder demonstrated that all of the peak and final viscosities decreased with increasing NF powder concentration compared to the control.

Abundance and Biomass of Macroinvertebrate Association in a First Order Stream at Mt. Jumbong, Kangwon-do (점봉산의 한 일차하천에 서식하는 대형무척추동물의 풍부도와 현존량)

  • Macroinvertebrates from a first order stream at Mt Jumbong, Kangwon-do, was examined for their abundance and biomass. Sampling was done by using a pipe sampler (${\phi}$ 20 cm) for 11occasions (n = 5) at 4${\sim}$6 weeks intervals during November 1997 through October 1998. Water temperature and electronic conductivity of the study stream ranged $0\;{\sim}\;14^{\circ}C$ and 15${\sim}$25 ${\mu}s$/cm, respectively. During the study, 53 insect taxa and 3 non-insect taxa were collected. Annual mean number of individuals (${\pm}$1 SD) was 77741${\pm}$69232${\cdot}$m$^{-2}$ ${\cdot}$yr$^{-1}$, being high in winter (${\pm}$1 SD) (December: 171178${\pm}$130468 $m^{-2}$) and low in summer (${\pm}$ 1 SD) (June: 29872${\pm}$13078 $m^{-2}$). Non-predatory subfamilies of Chironomidae and Nemoura sp. occupied 53.3% and 21.8% of annual abundance. Annual mean biomass was 10g${\cdot}$m$^{-2}$${\cdot}$yr$^{-1}$ in ash free dry weight (AFDW), being high in late winter (February: 16 gAFDW $m^{-2}$.) and low in summer (June: 3 gAFDW $m^{-2}$). Gammarus sp. represented 39.8% of the total biomass and was followed by non-predatory subfamilies of Chironomidae (15.2%) and Hydatohylax sp. (8.5%, Limnephilidae: Trichoptera). Since the non-predatory subfamilies of chironomidae were composed of many species, Nemoura sp. was the most abundant taxon. However, Cammarus sp. was surely the most important taxon to the functional aspects of this first order stream ecosystems.

  • Hand deboned and mechanically deboned chicken meat were produced from domestic broilers and spent layers. Meat yield, chemical composition, functional characteristics, storage stability and microbiogical properties were investigated. The results obtained were as follows: 1. 35% of carcass freight was recovered primarily as hand deboned chicken meat (HDM) and 45% secondarily as mechanically deboned chicken meat(MDM), total meat yield reaching 80% of carcass weight. 2. Moisture, protein, fat. ash and calcium content of MDM were 65, 12, 20, 1.7 and $0.2{\sim}0.4%$, respectively MDM was higher than HDM in fat, ash and calcium, but significantly lower in moisture and protein Total pigment content of MDM was 2.5 times higher than that of HDM, such high content being attributed to the increased inclusion of hemoglobin during the mechanical masceration of carcass in the deboning process. 3. The emulsifying capacity (ES) of MDM per g meat was only 70% that of HDM, but when ES was expressed on unit g of protein basis MDM showed even higher ES than HDM primarily due to the higher proportion of salt soluble protein fraction of MDM. 4. Since the TBA value of MDM increased rapidly after 4 weeks of frozen storage at $-20^{\circ}C$, the maximum possible storage period of MDM is estimated to be about 4 weeks. 5. Total microbial counts of MDM was approximately $1.8{\times}10\;cells/g$ showing no great difference from HDM or red meat.

Nutrient Composition and Physicochemical Properties of Korean Taro Flours According to Cultivars (품종별 국내산 토란 분말의 영양성분 및 이화학적 특성)

  • Three varieties of taro flours (Altoran, Josaengjong, and Jaeraejong) were analyzed to evaluate their nutrient composition and physicochemical properties. Moisture contents of the three taro cultivars varied from 5.74-10.30%. Among the three cultivars, Altoran flour had higher protein and fat contents than other cultivars. There were 17 kinds of amino acids in the three taro flours. The major fatty acids in the three taro flours were linoleic acid (46.5-51.4%), palmitic acid (21.7-25.8%), and oleic acid (12.3-18.7%), and two thirds of the total fatty acids were unsaturated fatty acids. Potassium, phosphorus, magnesium, and calcium were the most plentiful minerals in the three taro flours, and the free sugars were glucose, fructose, and sucrose. The total dietary fiber contents of the three taro flours ranged from 12.97 to 17.60%. From these results, Altoran contained a high level of dietary fiber, minerals, essential amino acids, and free sugars. Jaeraejong showed the highest water absorption index. The water soluble index of Altoran was higher than that of the other cultivars. From the differential scanning calorimeter results, the gelatinization temperatures of the three taro flours were $84.98-89.91^{\circ}C$. The pasting temperature of the three taro flours was from 46.77 to $49.30^{\circ}C$ by rapid visco-analyzer. Among these varieties, Josaengjong had the highest peak viscosity and final viscosity, whereas Altoran had the lowest. These taro cultivars are expected to be potential material for application in taro processed foods, due to their gelatination and pasting properties.

  • This study was performed to understand the effect of cultivation periods on the physicochemical characteristics of the starch of five sweetpotato cultivars, cultivated in Muan, Korea. Starch, protein, and ash contents increased with increased cultivation period, whereas amylose content decreased. Rapid viscosity analysis showed that the pasting temperature, peak viscosity, breakdown, setback and final viscosity increased with increased cultivation period. However, trough and final viscosity decreased. Although the onset temperature and peak temperature values increased, the conclusion temperature did not show any consistent patterns by differential scanning calorimetry. X-ray diffraction showed that the starch samples had C-type crystallinity irrespective of the cultivation period and cultivar. The starch granules were dominantly round and oval, or polygonal irrespective the cultivation period. The bigger the particle size was, the longer the cultivation period was.

Bioavailability and Digestibility of Organic Calcium Sources by Bone Health Index (뼈건강 지표를 이용한 유기태 칼슘 급원의 생체이용성 및 소화율)

  • This study was carried out to evaluate the bioavailabilities and the digestibilities of oligopeptide chelated (peptide-Ca), anchovy bone (anchovy-Ca) and methionine hydroxyl analogue (MHA-Ca) calcium compared to those of calcium carbonate in rats. In exp1, $CaCO_3$, were added to the basal diet at level of 0, 30 and 60% calcium of the AIN-93G diet. In test groups, peptide-Ca, anchovy-Ca and MHA-Ca, were added to the basal diet to provide calcium at the level of 40% of AIN-93G. In exp1, the bioavailabilities were evaluated from the regression equation of the ratios of theological/ actual calcium intakes of each dietary treatment. In exp2, urine and feces was to evaluate the true- and apparent digestibility and apparent retention. In exp1, Ca-60% group had higher bone mineral density (BMD), bone mineral content (BMC) and bone breaking strength (BBS) than those of the other standard groups. The bone weight and ash content of the peptide-Ca and anchovy-Ca groups were significantly higher than those of the MHA-Ca. Bone calcium content were not significantly different from the test group. The bioavailability of the MHA-Ca group was shown higher BMD (71%), BS (38%) and BBS (27%) compared to another control group. But the regression coefficient for BMD, BS and BBS were lower compare with that of bone ash and BMC. In exp2, the true- and apparent digestibility of test groups were shown to over 90%. Peptide-Ca was not significantly different from other test group, but digestibility and retention were higher compare to other test groups. In conclusion, peptide-Ca, anchovy-Ca and MHA-Ca improved Ca bioavailability in the rats. The compounds were higher Ca digestibility compared with those of $CaCO_3$. It is assumed that difference of digestibility for test groups may be correlated to the bioavailability of test groups in BMD, BMC, BS, BBS and bone ash respectively.

The Influence of Pig Breeds on Qualities of Loin (돼지의 품종이 등심의 육질에 미치는 영향)

  • A total of 30 pigs (average 60kg) were used to investigate the influence of breeds on meat quality. Pigs were alloted into one of three experimental groups [A (Landrace×Yorkshire×Duroc), B (England Berkshire), and C (Kagoshima Berkshire)]. Pigs were slaughtered at approximately 110kg of live weight for measurement of meat qualities. Crude protein was significantly higher in B than those of other pig breed groups. Shear force value was higher and pH was lower in A than those of other pig breeds. In color, C was significantly higher in a* of meat color and lower in b* of fat color and in brittleness, hardness, springiness, chewiness as compared with other pig breeds. Essential fatty acid were significantly higher in A and lower in B than those of other pig breeds. Aspartic, threonine, serine, glutamic and phenylalanine were higher in C, whereas glycine, alanine, cystine, valine, leucine, tyrosine, histidine, lysine and arginine were significantly higher in A. In sensory evaluation of fresh meat, color was significantly higher in C. However, moisture, crude fat, crude ash and drip loss, marbling score, overall acceptability of fresh meat and all items in sensory evaluation of cooked meat were not significant difference among the pig groups. In conclusions, loin from Kagoshima Berkshire had the lowest shear force and the highest a* value. In the current study few effects of pig breeds were observed. Further studies are needed on the relationship between physico-chemical properties and the pig breeds.
