Quality of 4-Recommended Soybean Cultivars for Meju and Doenjang (장려품종 콩을 이용한 메주 및 된장 품질 특성)

  • In order to selection of the suitable soybean varieties, the quality characteristics of meju and doenjang on 4 domestic soybean cultivars(Daeweon, Sodam, Jinpeum and Hwangkeum) were evaluated. Crude protein and lipid content was 26.7∼30.5% and 16.89∼19.31%. The content of total free sugar among 4 soybean cultivars were 4.99∼5.26% and composed mainly stachyose(2.59∼3.51%), raffinose and sucrose. The content of total free sugar of meju were the highest in Jinpeum among 2.10∼2.66% and composed mainly glucose. The lightness of meju lump in Hwangkeum was larger decrease than the others, the redness were higher in Daeweon and Hwangkeum, the yellowness was the highest in Sodam. The lightness of meju powder was the highest in Sodam, the redness was the lowest in Sodam, the yellowness was the highest in Hwangkeum. The chemical composition of doenjang were that : was the highest in Jinpeum among the 7.90∼9.71% crude lipid, in Daeweon among 9.67∼13.50% crude protein, in Sodam among 2739∼3825 mg% Formol nitrogen and in Daeweon among 6.88∼8.36% crude saponin, respectively. The content of total free sugar of doenjang were the highest in Hwangkeum among 1.88∼2.22% and composed mainly fructose and glucose. The lightness and yellowness of doenjang was the highest in Sodam, the redness was the highest in Hwangkeum. Doenjang by Hwangkeum had good score for taste, texture and overall quality in sensory evaluation.

Enhancement of Anti-inflammatory Activities of Fermented Scutellaria baicalensis Extracts using Lactobacillus rhamnosus (유산균 발효를 통한 황금 추출물의 항염증 효과 증진)

  • This study was performed to investigate the anti-inflammatory activities of fermented Scutellaria baicalensis extracts using Lactobacillus rhamnosus. The extracts were WE (water extract at $100^{\circ}C$ for 24 h), EE (70% ethanol extract at $60^{\circ}C$ for 24 h), FWE (fermented and water extract at $60^{\circ}C$ for 24 h), FEE (fermented and 70% ethanol extract at $60^{\circ}C$ for 24 h). The cytotoxicity of the extracts was in the range of 11.2 ~ 15.6 % at 1.0 mg/mL concentratioin. The FEE showed the lowest activity at 1.0 mg/mL concentratioin. Compared to the WE, hyaluronidase inhibitory activity contents in the FEE increased to 9.2% at 1.0 mg/mL concentratioin. Nitric oxide production of WE, EE, FWE and FEE at 1.0 mg/mL concentration was mesured as 7.6, 7.9, 6.9, 6.4 ${\mu}M$, respectively. $PGE_2$ secretion of the human fibroblast of the FEE were lower than 810 pg/mL. Our results suggested that the extracts from fermentation process after 70% ethanol extraction had relatively high anti-inflammatory activities and that the Scutellaria baicalensis could be more extracted in FEE than others.

The Visible Injury and Physiological Responses of Two Varieties of Glycine max to Ozone (오존에 의한 두 품종 콩의 가시피해 및 생리적 반응)

  • A glass chamber experiment was conducted to evaluate the impact of ozone (O$_3$) on the physiology of two soybean, Glycine max L. cultivars, 'Hwanggum' and 'Jangyub'. Thirty-day old plants with 1-2 nodes were exposed to $O_3$ of <10 and 150 n1 1$^{-1}$ in the chambers for 8 h d$^{-1}$ for 3 days. Net photosynthesis, stomatal conductance, chlorophyll a, chlorophyll b and total chlorophyll contents, and foliar injury (% injured leaves) were measured. Although foliar damage was more severe on Jangyub than on Hwanggum, net photosynthesis was decreased by 60% on Hwanggum and 13% on Jangyub due to the $O_3$ treatment. Stomatal conductance on Jangyub was twice higher than that on Hwanggum and it was not changed by the $O_3$ treatment. Whereas, stomatal conductance on Hwanggum was 60-80% decreased by $O_3$, Chlorophyll contents did not change due to the $O_3$ treatment or variety. We can conclude that the reduction of net photosynthesis by $O_3$ was mainly due to the decreases of stomatal conductance and Rubisco (ribulose-1,5-bisphosphate carboxylase/oxygenase) activity on dark reaction. And foliar injury and chlorophyll content did not contribute to the net photosynthetic decrease. The gas-exchange variables measured 24 h after the termination of $O_3$ fumigation showed that there was no significant recovery within a day. Since the physiological responses on Jangyub were not much affected by the $O_3$ treatment, this variety could be $O_3$ resistant.

Examination of Standards of Physical Attractiveness: With focusing on WHR and Golden Ratio (신체적 매력의 기준에 대한 검증: WHR과 황금비를 중심으로)

  • This study aimed at investigating the validity of WHR (or waist-to-hip ratio) and Golden ratio as standards of physical attractiveness. Each of 60 male and 60 female college students were divided into two groups of 30. Using the 3D game program, each person in one group drew a physically attractive figure of the opposite sex while the other group drew a physically attractive figure of the same sex. Then, WHR and Golden ratio of the figures were measured and compared with the ideal WHR (.7 for women and .9 for men) and Golden ratio 1.618. It was found that WHR and Golden ratio for the physically attractive figures were lower than the ideal standards regardless of the participant's gender. That is, the participants preferred to men and women having curvaceous body shapes with a narrow waist and a wide pelvis. In most cases, Golden ratios measured in many ways were not correspondent to the ideal ratio, 1.618. In regards to BR (or Body Ratio), the legs and waist of the physically attractive figures were shorter relative to the Golden ratio and this was more salient for physically attractive man figures. Regarding the facial ratio measured by FR(or facial ratio) and FR_VP(or facial ratio_vertical point), the faces of figures made by participants, regardless of their sex, were shorter and wider compared to the Golden ratio. Further, the participants preferred baby-faced woman and masculine man figures. Finally, implications of the findings, limitations the of the present study, and the suggestions for future research were discussed.

Effects of Scutellaria radix Extract on Osteoblast Differentiation and Osteoclast Formation (황금 추출물이 조골세포와 파골세포의 활성에 미치는 영향)

  • Scutellaria radix (SR) has been utilized as a traditional medicine for a variety of diseases including Rheumatoid arthritis and its major flavonoids - baicalein, baicalin, and wogonin - have been reported to exert beneficial health effects, including anti-bacterial, anti-viral, anti-inflammatory, and free-radical scavenging. However, the mechanisms underlying this effect remain poorly understood. The principal objective of this study was to determine the effect of SR on osteoblast and osteoclast cells. SR extract was prepared using 70% ethanol solvent. Osteoblastic MC3T3-E1 cells and osteoclast precursor Raw 264.7 macrophage cells were utilized. SR extract increased MC3T3-E1 cell proliferation and stimulated alkaline phosphatase activity dose-dependently, 152.0% of the control at concentration $1{\mu}g/mL$. Additionally, SR extract ($1{\mu}g/mL$) stimulated Bone nodule formation activity in MC3T3-E1 cells, approximately 223.3% of the control, 20 days after the exposure. In addition, SR extract significantly reduced the number of tartrate-resistant acid phosphatase-positive (TRAP+) multinucleated cells from Raw 264.7 cells. In conclusion, SR extract stimulates the proliferation and bioactivities of boneforming osteoblasts, and inhibits the activities of bone-resorbing osteoclasts to a certain degree.

A Study on Screeining of Antibacterial Oriental Medicines Against Pulmonary Disease-causing Bacteria (폐렴(肺炎) 유발균(誘發菌)의 생육(生育)을 억제(抑制)하는 한약재(韓藥材) 탐색(探索)에 관(關)한 연구(硏究))

  • The various oriental herbal medicines, which have usually been used for treatment of reducing fever, purging intense heat and detoxication, were screened to determine the antibacterial activity and the minimal inhibitory concentration against pulmonary disease-causing Klebsiella pneumoniae, Streptococcus pyogenes, and Streptococcus pneumoniae. The results obtained were as follows: 1. Among the 23 oriental medicines tested, the water-soluble extracts of Coptis japonica, Scutellaria baicalensis and Picrorrhiza kurrooa showed the antibacterial activity against K.pneumoniae and that of C. japonica against S. pyogenes. The antibacterial activities of C. japonica, Prunusmume, Schizandra chinesis, Scutellaria baicalensis were also found against S.pneumoniae. When C.japonica was used, the high antibacterial activity was shown against Bacillus subtilis and other extracts showed a little activity against B. subtilis and E. coli as a control. 2. The ethanol-soluble extracts of Patrinia scabriosaefolia, P. mume, S. baicalensis, S. chinesis showed the antibacterial activity against K. pneumoniae and those of S. baicalensis, C. japonica, S. chinesis, P. mume agaist S. pyogenes and S. pnuemoniae. However, those extract showed a little antibacterial activity against B. subtilis and E. coli except for that the extract of C. japonica showed comparatively high growth inhibition of B. subtilis. 3. Among the medicinal herbs tested, the water and ethanol extrats of C. japonica showed very extcellent antibacterial activity against the pathogenic bacteria and controls. 4. When the water-soluble extracts of C. japonica and S. baicalensis, minimal inhibitory concentrations (MICs) against K. pneumoniae were $10mg/m{\ell}$ and $22 mg/m{\ell}$, respectively. The MICs of the ethanol-soluble extracts of P. mume and P. scabriosaefolia were $5mg/m{\ell}$ and $20mg/m{\ell}$, respectively. 5. For the MICs against S.pyogenes, C. japonica showed $15mg/m{\ell}$ with the water-soluble extract and P. mume and C. japonica with the ethanol-souble extract did $5mg/m{\ell}$ and $10mg/m{\ell}$, respectively. 6. For the MICs against S. pneumoniae, C. japonica and P. mume with the water- and ethanol-souble extract showed $5mg/m{\ell}$ and $10mg/m{\ell}$, respectively. As a result, the highest antibacterial activity was found in the water- and ethanol-soluble extracts of C. japonica against pulmonary disease-causing bacteria, K. pneumoniae, S. pyogenes. and S. pnuemoniae. Also, the water- and ethanol-soluble extracts of S.chinesis. P.mume, S.baicalensis, and P.kurrooa showed hight antibacterial activities.

  • 정부는 글로벌 헬스케어를 신성장동력 산업 중 5대 고부가 서비스 분야에 포함시키는 한편, 의료관광의 활성화를 위해 외국인 환자유치를 허용하는 의료법을 개정했다. 또 의료 서비스산업 선진화 방안도 발표하는 등 오는 2013년까지 외국인 환자 20만명을 유치해 의료 서비스를 차세대 성장동력으로 키우겠다는 목표를 내세웠다. 이처럼 정부가 의료관광에 관심을 기울이는 것은 황금알을 낳을 것이라는 기대 때문이다. 세계의 의료관광 현황과 우리나라의 발전 과제를 짚어본다.

Ultrastructural antigenic localization in Paragonimus iloktsuenesis during developmental stage by immunogold labeling method (면역황금표지법에 의한 일록춘폐흡충의 발육단계별 항원성부위)

  • Antigenic localization in Parofonimn iloktsuenensis worm tissues (tegument, intestine and vitelline gland) in different developmental stages of 2 weeks, 3 weeks, 4 weeks, 5 weeks and 33 weeks from albino rats (Sprague-Dawley) infected with P iloktsuenensis was observed by electron microscopy. These worm tissues of different developmental stage of R iloktsuenensis was observed on electromicrograph by immunogold labeling method using R iLoktsuenensis infected rat serum of 10 weeks. Antigenic localization was demonstrated as labeling of gold particles in tissues on electronmicrograph. In tegument, gold particles were labeled on tegumental tissue, generally more numerous on secretory granules in tegumental syncytium 2 weeks than those on the other elder developmental stages, but there was a little variation in antigenicity according to individual worm tissue. In general, antigenicity in tegumental tissue was not strong (gold particles: 0.1-5/1 Mm2). In intestine, a large number of gold particles (15-18/1 Mm2) were labeled in intestinal epithelium. Gold particles were concentrated especially on secretory granules in cytoplasm, and gold particles were labeled not only in cytoplasmic protrusions, but also in intestinal luminal contents. Intencity of labeling of gold particles was not correlated with developmental stage of worms. In vitelline gland, a large number of gold particles were labeled on vitelline globules. The gold particles in vitelline globules (8- 11/1 Mm2) were concentrated in protoplasm among segmental globules . Antimicrobial Activities of Scutellariae Radix Extract against Vibrio parahaemolyticus (Vibrio parahaemolyticus에 대한 황금추출물의 항균활성)

  • To investigate the antimicrobial effects of Scutellariae Radix extract against Vibrio parahaemolyticus from food samples, Vibrio parahaemolyticus strains isolated from Tapes philippinarum were examined for their sensitivity to Scutellariae Radix extract. Total 66 Vibrio parahaemolyticus strains were isolated from Tapes philippinarm 72 samples (91.7%). The serotypes of isolated Vibrio parahemolytics were K-I group 7 strains (10.6%), K-IV group 5 strains (7.6%), K-II group 2 strains (3.0%), K-V group 2 strains (3.0%), K-VII group 2 strains (3.0%), K-VI group 1 strains (1.5%), K-VIII group 1 strains (1.5%) and antisera UT K-group 46 strains (69.7%) on antisera agglutination test, but K-III group and K-IX group strains were not found. The growth curves of isolates showed lag phase, logarithmic phase, stationary phase and death phase as typical sigmoid curve on the shellfish samples. After 6 hours, the group containing Scutellariae Radix extract differs from the control on shellfish samples in the growth inhibition curves, and Vibrio parahaemolyticus were inhibited in more than 1000 ppm Scutellariae Radix extract. The morphological changes were observed by transmission electron microscope and the microbial cells membrane was destroyed by Scutellariae Radix extract.
