Sensory Characteristics of Dehydrated Ginger Rhizomes Prepared using Recycled Dehydrating Liquid as an Alternative Dehydrating Agent (재사용 탈수액을 탈수제로 이용한 생강의 탈수 및 품질특성)

  • Ginger was dried using maltodextrin or recycled dehydration liquid as dehydrating agents, and the quality of dried ginger was compared with that of freeze-dried and hot-air-dried samples in terms of color, moisture content, water activity, dehydration rate, rehydration rate, and sensory properties. Ginger prepared using molecular press dehydration (MPD) retained its original color. The dehydration rate increased when ginger was dried using a dehydrating agent. The rehydration rate was increased in ginger dried using such an agent. Both dehydration and rehydration rates were elevated with increasing concentrations of soluble solids in the dehydration liquid. The sensory qualities of ginger prepared using the MPD method were better than those of freeze-dried and hot air-dried samples. These results indicate that drying of ginger rhizomes using recycled dehydrating liquid is very efficient.

통화(通貨)의 공급경로(供給徑路)가 인플레에 미치는 영향(影響): 현행(現行) 한국은행(韓國銀行) 대출정책(貸出政策)에 미치는 시사점(示唆點)

  • 전통적인 통화론자(通貨論者)의 화폐수량설(貨幣數量說)에 의하면 통화량(通貨量)만이 인플레에 영향을 주는 요인으로 파악되고 있다. 본고(本稿)는 인플레가 통화(通貨)의 공급경로(供給經路), 즉 중앙은행(中央銀行)의 발권대상자산(發卷對象資産)의 구성상(構成上)의 차이에 의해서도 영향(影響)을 받는다는 가설에 대한 역사적(歷史的) 이론적(理論的) 전개과정(展開過程)을 살펴보고, 이를 실증적(實證的)으로 검토하였다. 한국(韓國)을 포함한 41개국의 "패널"자료를 이용한 실증분석결과(實證分析結果)에 의하면 인플레가 총통화증가율(總通貨增加率)뿐만 아니라 중앙은행의 발권대상자산(發卷對象資産)의 구성(構成)에 의해서도 영향을 받는 것으로 확인되었다. 즉 국공임(國公賃) 등 정부부문(政府部門)을 대상으로 공급되는 본원통화(本源通貨)는 진성(眞性)어음재할인(再割引) 등 민간부문(民間部門)에 대한 본원통화공급에 비해 인플레에 미치는 영향이 큰 것으로 나타났다. 정부부문에 대한 통화공급은 미래의 재정정책(財政政策)에 대한 불확실성에 따른 정부의 채무상환능력(債務償還能力) 저하의 가능성이 상존하기 때문에 환수가 확실한 민간부문의 단기우량증권(短期優良證卷)을 대상으로 공급되는 통화와는 달리 인플레기대심리(期待心理)를 유발시킨다. 위의 실종분석결과는 향후 물가안정(物價安定)을 위해서 한국은행(韓國銀行)의 대예금은행(對預金銀行) 대출금이 현행의 재정자금적(財政資金的) 성격의 자금위주에서 진성(眞性)어음재할인(再割引) 등 순수민간부문에 대한 신용중심으로 재구성(再構成)되어야 함을 시사한다.

Effect of Respiration and Transpiration Rates on the Weight Loss of Various Fruits(Peach, Apple, Pear, Persimon, Mandarin) (과실류(복숭아, 사과, 배, 단감, 감귤)의 호흡 및 증산작용이 중량 손실에 미치는 영향)

  • In order to prepare allowable guidelines for weight loss for packed agricultural produces during distribution after harvest, resipration and transpiration rates were investigated for fruits such as peach, apple, pear, persimon and mandarin which produced in Korea. Respiration and transpiration rates were widely different from cultivar and harvesting season among same produces. Respiration rates were increased as an environmental temperature was increased. Moisture amount that produced by respiration in five fruits was 3.55∼107.67mg/kg/h and those moisture amounts were considered as no much influence for the strength of cartons for packing of fruits. Moisture amount produced from transpiration was 24 ∼ 1,195g for 15kg packing unit of fruits in 5 days. after harvest.

  • GPUs are stream processors based on multi-cores, which can process large data with a high speed and a large memory bandwidth. Furthermore, GPUs are less expensive than multi-core CPUs. Recently, usage of GPUs in general purpose computing has been wide spread. The CUDA architecture from Nvidia is one of efforts to help developers use GPUs in their application domains. In this paper, we propose techniques to parallelize a skyline algorithm which uses a simple nested loop structure. In order to employ the CUDA programming model, we apply our optimization techniques to make our skyline algorithm fit into the performance restrictions of the CUDA architecture. According to our experimental results, we improve the original skyline algorithm by 80% with our optimization techniques.

Optimization of the Molecular Press Dehydration Method for Ginger Using Response Surface Methodology (반응표면분석에 의한 생강의 분자압축탈수 방법 최적화)

  • The purpose of this study was to determine the optimal mixing ratios for three different concentrations of maltodextrin, dehydration time, and cutting thickness to prepare gingers using molecular press dehydration (MPD) through response surface methodology (RSM) based on the dehydration rate, rehydration rate, and a sensory evaluation. As maltodextrin concentration increased, dehydration rate, rehydration rate, external, flavor, texture, overall acceptability of the gingers tended to be high, and the color tended to be low. As the dehydration time and cutting thickness increased, dehydration rate, rehydration rate and the sensory evaluation of the gingers tended to be high. The maltodextrin concentrations were 70-82%, dehydration time was 5.2-9.2 hr, and cutting thickness levels were 1.0-1.2 mm. The optimal mixing ratios, maltodextrin concentration, dehydration time, and cutting thickness for manufacturing the best quality of gingers using molecular press dehydration were 76%, 7.2 hr, and 1.1 mm, respectively.

Effect of New Cigarette Advertising Method on the Recognition of Warning Pictures (신제품 담배 광고 방식이 경고그림 인식에 미치는 영향)

  • Cigarette warning pictures are one of the most effective smoking cessation policies, and this is an effective way to promote smoking cessation by conveying the risk of smoking through pictures. However, the recent advertisement of new cigarettes in retail stores has potentially increased tobacco purchase intention by weakening the effect of the warning picture. Therefore, this study examined the problems of the new cigarette advertisement method by analyzing the effect of this method on cigarette warning pictures. For this purpose, 275 men and women were surveyed nationwide, and this study compared the cognitive and emotional effects, and purchase intentions of the new cigarette advertisements with existing advertisement methods through MANCOVA. The results show that the new cigarette advertising method affects the emotions, cognitions, and purchase intentions related to the cigarette warning pictures and have adverse effects on the original purpose of the cigarette warning pictures. This implies that regulatory standards and institutional arrangements are necessary for effective new cigarette advertising.

  • This study was conducted from the time when discussion of improvement and keeping heavy taxation on multiple home owners was began, experts who may express professional opinion such as realtors, tax accountants and revenue officers were picked up besides the direct interested parties such as single and multiple home owners. This study collected their various opinions regarding whether keeping the heavy taxation system on multiple home owners or not and the effect of it. As a result of the survey, people living in Seoul who owned more houses showed higher awareness about heavy taxation on multiple home owners, and people agreed more about abolishing the heavy taxation when they own more homes. From this study, it was found out that different recognition about heavier transfer income tax on multiple home owners of each person concerned and necessity of rearranging this uncertain condition of temporary regulation in the future. The tax law should be improved to supply clear policy signals to the market for recovery of housing transactions and supply expansion of jeonsei to monthly rental housing and managing of taxation policy which reflects taxpayers' opinion may correspond to more effective and fair taxation principle.

Changes in the Quality Characteristics of Muskmelon Treated with Different Concentrations of 1-MCP During Storage (1-Methylcyclopropene(1-MCP) 처리농도에 따른 머스크멜론(Cucumis melo L.)의 품질특성 변화)

  • Changes in the quality characteristics of muskmelon were analyzed by treating samples with 500, 1,000, and 1,500 ppb 1-MCP every 4 days and then storing the samples at $10^{\circ}C$. The weight losses of the MCP treated samples were lower than those of the control, while there were no differences in the concentrations among treatments. The firmness was maintained at a higher value in 1-MCP treated samples than the control during the storage period and showed the highest value in the 1,000 ppb treatment. The L-values (brightness of samples) in the 500 and 1,000 ppb treatments were kept constant during the storage period, while that of the control showed a decreasing trend after four days of storage. The bvalues and yellowness, were decreased after showing an increasing trend in both treatments and the control as the storage period passed. The respiration rates of 1-MCP treated samples were lower than the control, with the lowest value being observed in the 1,000 ppb treatment. The texture observed upon sensory evaluation was higher and freshness was maintained longer in the 1,000 ppb treatment. Therefore, 1,000 ppb 1-MCP was considered to be the most effective concentration for treatment of muskmelon.

Properties of Pectin Extracted from By-product in Citrus Processing (밀감 가공부산물에서 추출한 펙틴의 특성)

  • The amount and characteristics of pectin in the albedo and flavedo layers of the citrus peels, and those of the pulp were investigated. Alcohol insoluble solid(AIS) content was the highest in albedo layer(18.1%), and the lowest in pulp(5.7%). The pulp and the albedo layer showed a potential pectin sources as containing pectins of 40.5% and 35.2% of the total polysaccharides of the pulp and the albedo layer, respectively. Total pectin contents were about 30% of the AIS and showed comparatively constant values among the byproducts. Hydrochloric acid soluble pectin contents were the hightest in the flavedo layer, 14.0%, and the lowest in the pulp, 4.4%. Over 90% of the total pectin could be extracted after 60min with 0.05N HCI at $85^{\circ}C.$ Microwave treatment reduced the extraction time significantly ; a comparable extraction yield was acquired after 10min with microwave treatment. The degree of esterification of the extracted pectin also increased with microwave treatment. Neutral sugars in the hydrolysate of the pectin were rhamnose, arabinose, galactose, glucose and xylose. No differences in molecular weight distribution of the pectin were found between the albedo and flavedo layers. Pectin of the pulp showed different molecular weight distribution from that of the peels.

A Vertical and Spatial Study of Sediment Deposits Developing Along Yeongsan River (영산강유력(榮山江流域) 퇴적층(堆積層)의 수직적.공간적(垂直的.空間的) 발달(發達) 연구(硏究))

  • For the scientific and systematic study of sediment deposits along Yeongsan river, total 13 core samples were taken from Yeongsan river. The thickness of sediment deposits is 22.0m at YS 1, 20.0m YS 2, 18.5m YS 3, 12.0m YS 4, 3.0m YS 5, 5.5m YS 7, 3.0m YS 8, 5.9m YS 9, 5.0m YS 10 on main stream of Yeongsan river. The thickness of deposit is increasing from upstream to downstream. The composition of sediments dominates sandy gravel on the upstream and the lower part on the downstream, and mud deposits of $11m{\sim}16m$ thick on the upper part of on the downstream(YS 1, YS 2, and YS 3). Contents of organic carbon and calcium carbonates occur being contrary to each other toward upstream. The content of organic carbon increases upstream, that of calcium carbonates decreases. According to size analysis of sediment, the content of gravel increases and mud decreases from downstream to upstream. Sediment deposits can be divided into two types whether gravel is or not. But this boundary is clear in the downstream(YS 1$\sim$YS 4) but is vague in the upstream. The result of this study could be provided engineering, environment, and architecture with geological background as the essential basis.
