A Study on the Factors that affect the Recognition of Policy Effectiveness in the Security Management : Focused on the Hotel Employee (재난위기관리 단계에 따른 보안관리 정책의 효과성 - 호텔 종사자를 중심으로 -)

  • The study is intended to examine awareness of safety as a differentiated service strategy and t to induce offer of more competitive services to the internal and external consumers in service industry of the South Korea. In the pursuit of this purpose, the typical occupations of the service industry targeted hotel employees and this study investigate the policy effectiveness of security management in Korea hotels. Specifically, this study was conducted by survey and involved major hotel(Seoul, Busan, Gyeongsangnam-do, Gyeongsangbuk-do) across the country. This survey went through feasibility study by major hotels managers. The results were as follows: Findings of the study suggested that most of disaster management stages did not have a statistically significant relationship with the policy effectiveness of security management. Only, repair stage have significant impact on the policy effectiveness of security management. This finding was found to be attributable to the fact that hotel employee would be concentrated in the tangible results of security management.

The Effect of Emotional Labor and Emotional Dissonance on Burnout and Turnover Intention for the Hotel's Employee (호텔종사원의 감정노동에 따른 감정부조화가 소진 및 이직의도에 미치는 영향)

  • This paper is 1) to find out what make cause in the emotional labor and emotional dissonance on hotel employee, 2) to investigate relationship between burnout and turnover intention on the personal character, 3) finally to suggest strategical implications for hotel management decision-maker. The questionnaires are distributed 400 on hotel employees, then used for data analysis 351. The results are as followed. First, the higher surface acting, deep acting, and emotional deviance in the emotional labor, the higher emotional dissonance. But the higher expression of natural emotions, it was showed lowly in the emotional dissonance. Second, the higher emotional dissonance, it was revealed highly burnout and turnover intention.

Strategy of Purchasing Management for Hotel Food Materials (호텔 식자재 구매관리 전략)

  • This research, through an empirical analysis of the management of food materials in the super deluxe and deluxe hotels in Seoul, verified the difference, and established strategies according to the difference. According to the study, to enhance the level of the food material management, the introduction of scientific methods and system of the deluxe hotels has to be preceded, the training of special inspectors and the utilization of inspection methods needs improvement, and the purchasing contracts and effective purchasing methods have to be renewed. As for the storing management, the difference between hotel grades was low. The implication of this study as follows. First, to enhance the efficiency of man power operation, we have to introduce computer systems. Second, training based on the food materials purchasing manual has to be achieved. Third, we have to increase inspectors' specialty through the arrangement of man power rotation.

A Case Study of Human Resource Nurturing Achievements through Industry-University Cooperation (산학협력을 통한 인력양성 성과도출 사례 연구)

  • This study analyzed the results and implications of the industry-university cooperation human resource nurturing process based on the I-O model for the Motion Graphics major and the Global Hotelier major in Baek seok University. In this study, based on the analysis of the human resources training performance through industry-university cooperation in the motion graphics and hotelier fields for 5 years, what kind of efforts were made for successful human resource training, and the level of performance was analyzed and improvement points were suggested. In this study, four strategies were set for successful industry-university-tailored human resource nurturing: student-industry matching through industry participation in education, industry-university integrated education, education quality advancement, and customized education infrastructure construction. As a result of the analysis, customized human resource training should first be developed through industry demand survey and a mirror-type practice room should be built to fit the corporate environment. Second, it was found that it is possible to be individual only if there is an active participation of industry experts throughout the curriculum such as subjects and non-subjects.

A Study on the Activation of Convention Hotel : The Case of KangwonLand Convention Hotel (컨벤션호텔의 활성화 방안에 대한 연구 -강원랜드 컨벤션호텔을 사례로-)

  • The purpose of this study was to seek for solutions of activating convention hotels entering to the newly created market, focused on the case study of the convention hotel in KangwonLand in the competitive MICE environment. According to the analysis for reception setup for MICE, it is urgently required to improve shopping facilities, securing manpower, the accessibilities in KangwonLand convention hotel. This study suggests several ways to identify differentiation such as facilities discriminations, reasonable prices when holding conventions/events. It is also proposed that there is a need to focus incentive tour when marketing. To succeed in hosting events of MICE at the convention hotel, it appears to be considered to host large scale of domestic or overseas events, to measure reasonable room rates, promote niche market through middle or small scale events, attract customers to revisit and save transportation costs for participants. From the study, it is expected to find efficient ways to activate convention hotels through MICE market entry.

  • The development of technology based on digital technology has made 'hyper connectivity' between different services a reality, and an example of this is the reinforcement of non-face-to-face services. The non-face-to-face service is a service provided by service providers and customers using information and communication and technology without direct contact. Recently, it has expanded to the hotel industry, which is highly dependent on human resources, centering on the restaurant business. Therefore, this study attempted to identify the case of the "R" hotel in the Gangwon region, which is introducing and operating a kiosk, and to confirm the matters to be considered, the system operation method, and expected effects, etc. for hotels that intend to operate it in the future. It is difficult to affirm that the introduction of KIOSK directly reduced labor costs or increased service efficiency, but it seems meaningful that it has improved the convenience of users. In future research, practical research is needed on the impact of the system on management activities in relation to the introduction of KIOSK.

The Effects of Culinary Employees' Stress Coping Styles on Counterproductive Work Behaviors and Turnover Intention in a Deluxe Hotel (특급 호텔 조리사의 스트레스 대처 전략이 반생산적 과업 행동 및 이직의도에 미치는 영향 연구)

  • The purposes of this study is to understand the influence of culinary employees' stress coping styles in the deluxe hotel industry on counterproductive work behaviors and turnover intention. Based on total 345 culinary employees obtained from empirical research, this study reviewed the reliability and fitness of the research model and verified a total of 2 hypotheses using the AMOS program. The hypothesized relationships in the model test simultaneously by using a structural equation model(SEM). The proposed model provided an adequate fit to the data, ${\chi}^2$=736.474(p<0.001), df=233, GFI=.853, NFI=.901, CFI=.930, RMSEA=.079. Hypothesis $1^a$, which hypothesized a positive relationship between employees coping styles(avoid coping, ${\beta}$=.325; emotion coping, ${\beta}$=.261; job coping, ${\beta}$=-.203) and person-counterproductive work behavior was supported. As predicted by, Hypothesis $1^b$, employees' coping styles(job coping, ${\beta}$=-.307; avoid coping, ${\beta}$=.262; emotion coping, ${\beta}$=.146) had significant positive effects on organization-counterproductive work behavior. Also, employees' person-counterproductive work behavior(${\beta}$=.431) had significant positive effects on turnover intention(Hypothesis 2 was partially supported). Limitations and future research directions are also discussed.

The Causal Relationships among Management Strategies, Performance Assessment and Management Performance in the Hotel Industry (호텔 기업의 경영전략, 성과평가와 경영성과 간의 인과관계 - 특 1, 2급 호텔 조리종사자를 대상으로 -)

  • The purpose of this research is to analyse the cause and effect relations among management strategies, performance assessment and management performance in the hotel industry. The research result is as follows. A management strategy of the hotel industry has influence directly on a performance assessment through the non-financial factor, the financial factor and the study evaluation factor. And a financial performance assessment and a non-financial performance assessment have influence directly on the management performance. Total effects on a management performance of the hotel industry were 0.769 in a management strategies and 1.755 in a performance assessment. In comparison in the direct effects, the management strategies do not influence the management performance directly, and management performance is revealed through a performance assessment.

Macroeconomic Forces Effect on the Hotel Profitability (거시경제변수가 호텔기업의 수익성에 미치는 영향)

  • The purpose of this study is to find out the effect of macroeconomic variables on the hotel profitability and suggest the reasonable way to handle them. To achieve this purpose, seven macroeconomic variables were used as an independent variable. These were the index of industrial production, West Texas Intermediate, the consumer price index, the unemployment rate, the money supply, the trade balance and the exchange rate. And ROA and ROE of total hotels were used as a dependant variable respectively. As the result of regression, it was found that the index of industrial production and the exchange rate had a significant and positive effect on ROA. And West Texas Intermediate, the consumer price index and the unemployment rate had a significant and negative effect on ROA. Also the consumer price index and the unemployment rate had a significant and negative effect on ROE and the exchange rate had a significant and positive effect on ROE. Through the analysis two key variables were found to be very important ones. These were the unemployment rate and the exchange rate. So the hotel managers need to emphasize on the good price of domestic hotel products and supply the various productions and services to the guests when the exchange rate is increased. But when the unemployment rate is increased, the hotel managers should consider to supply the middle price products with the hight price products.

Determinants of Hotel Customers' Use of the Contactless Service: Mixed-Method Approach (호텔 고객의 비대면 서비스 이용의도의 영향요인에 대한 연구)

  • The development of information and communication technology and COVID-19 have caused an unusual change in the hotel industry, and the demand for the contactless services such as service robots from hotel customers has surged. Therefore, this study investigates the perception of hotel customers on contactless services by applying a mixed-method analysis. Specifically, this study identified the causal correlations between variables through the structural equation model, and further applied the fuzzy set qualitative comparison analysis to derive patterns of variables that form the intention to use the non-face-to-face services. As a result of the analysis, it was shown that service experience co-creation, palyfulness, personalization, and trust had a significant effect on intention to use through the contactless service use desire. On the other hand, in the results of fuzzy-set qualitative comparison analysis, playfulness was derived as a core factor in all patterns. Based on these analysis results, this study provides academic basis for in-depth understanding of hotel customers' perception of contactless service and specific guidelines for hotel managers on the contactless service strategies in the era of COVID-19 pandemic.
