Changes in the Quality Characteristics of Cheonggukjang prepared with Hazelnut (헤이즐넛 첨가에 따른 청국장의 품질 특성 변화)

  • This research was conducted to investigate the changes in quality characteristics of cheonggukjang fermented with the addition of hazelnut (10, 20, 30 and 40%) including; water content, pH, hydrophilic and lipophilic substances, color, viscosity and angiotensin converting enzyme inhibition activity. There was no significant change in pH with the addition of hazelnut. The water content significantly decreased with the addition of hazelnut. Hazelnut was also found to brighten the color of cheonggukjang. L-value and b-value increased with the addition of cheonggjuang. There was an insignificant change in the a-value. There was a slight decrease in the content of hydrophilic with addition of hazelnuts. Where there was more than 20% addition of hazelnut to soybean, the viscous substance content in cheonggukjang decreased significantly. Angiotensin converting enzyme inhibitory activity increased proportionally to the amount of hazelnut added. It was identified that the addition of 40% of hazelnut made its angiotensin converting enzyme inhibitory activity 10% point higher than that of control. These results suggests that the addition of hazelnut makes it possible to produce cheongkukjang of excellent angiotensin converting enzyme inhibitory activity.

Protective Effect of Vasopurus on Atherosclerosis Induced by Dietary Cholesterol in LDL $r^{-/-}$ Mice (Vasopurus의 LDL $r^{-/-}$ Mice에서 항동맥경화 효능)

  • Objectives : The protective effect of Vasopurus, a mixture of three medicinal plants, on atherosclerosis induced by dietary cholesterol in low density lipid (LDL) receptor deficient mice was studied. Methods : Experimental groups were divided into three groups of six animals each; a normal group (N); a high cholesterol group (HC), a high cholesterol plus Vasopurus group (HCVA). The experimental groups were fed for 6 months. Results : Vasopurus supplementation significantly lowered plasma total cholesterol and LDL cholesterol conc entrations compared with the high.cholesterol (HC) diet group. In addition, supplementation with Vasopurus significantly increased fecal cholesterol contents compared to mice fed a HC diet. Mice whose diet was supplemented by Vasopurus showed considerably fewer atherosclerotic plagues in the aortic values of heart and aortas compared to mice receiving the HC diet. Conclusions : These results indicate that Vasopurus has efficacy in anti.atherosclerosis medication.

Anti-allergic Effect of Eckolona cava Ethyl Acetate Fraction of on IgE/BSA-stimulated Bone Marrow-derived Cultured Mast Cells (IgE/BSA가 자극한 골수유래 비만 세포에 대한 감태 Ethyl Acetate 분획물의 항알러지 효능)

  • In this study, we investigated the anti-allergic effect of the ethyl acetate fraction of Ecklonia cava (EC-EtoAc) on the immunoglobulin E (IgE)/bovine serum albumin (BSA)-mediated activation of bone marrow-derived cultured mast cells (BMCMCs). We revealed that the $62.5{\mu}g/ml$ of EC-fractions ($EC-CHCl_3$, EC-Hexane and EC-EtoAc) inhibited IgE/BSA-activated ${\beta}$-hexosaminidase release from BMCMCs without cytotoxicity. Especially, EC-EtoAc showed the higher ${\beta}$-hexosaminidase release than the others. Also, EC-EtoAc reduced the expression levels of cytokines such as interleukin (IL)-$1{\beta}$, IL-4, IL-5, IL-6, IL-10, IL-13, interferon (IFN)-${\gamma}$ and tumor necrosis factor (TNF)-${\alpha}$ and a chemokine, thymus- and activation-regulated chemokine (TARC), compared to the only IgE/BSA-treated BMCMCs. Furthermore, EC-EtoAc significantly prevented the binding of IgE to Fc epsilon receptor $(Fc{\varepsilon}R)I$ and reduced the $Fc{\varepsilon}RI$ expression on the sensitized BMCMCs. Taken together, these results suggest that E. cava may be the natural agent with beneficial potentials for the treatment of type I allergic diseases induced by mast cell activation.

In Vitro Antifungal Activity of HTI Isolated from Oriental Medicine, Hyungbangjihwang-tang (형방지황탕으로부터 분리된 HTI의 항진균활성에 대한 연구)

  • Hyungbangjihwang-Tang (HT), an Oriental herbal formula, has been known to play a role which helps to recover vigor of human in the Orient. In this study, antifungal substance (HTI) was purified from the ethyl-acetate extracts of HT by using $SiO_2$ column chromatography and HPLC, and the antifungal effects of HTI and its mode of action were investigated. By using a broth micro-dilution assay, the activity of HTI was evaluated against fungi. HTI showed antifungal activities without hemolytic effect against human erythrocytes. To confirm antifungal activity of HTI, we examined the accumulation of intracellular trehalose as stress response on toxic agents and effect on dimorphic transition in Candida albicans. The results demonstrated that HTI induced the accumulation of intracellular trehalose and exerted its antifungal effect by disrupting the mycelial forms. To understand its antifungal mode of action, cell cycle analysis was performed with C. albicans, and the results showed HTI arrested the cell cycle at the S phase in yeast. The present study indicates that HTI has considerable antifungal activity, deserving further investigation for clinical applications.

A Novel Method for Modeling Emotional Dimensions using Expansion of Russell's Model (러셀 모델의 확장을 통한 감정차원 모델링 방법 연구)

  • We propose a novel method for modeling emotional dimensions using expansion of Russell's (1980) emotional dimensions (Circumplex Model). The Circumplex Model represents emotional words in two axes (Arousal, Valence). However, other researchers have insisted that location of word in Russell's model which is expressed by single point could not represent exact position. Consequently, it is difficult to apply this model in engineering fields (such as Science of Emotion & Sensibility, Human-Computer-Interaction, Ergonomics, etc.). Therefore, we propose a new modeling method which expresses emotional word not as a single point but as a region. We conducted survey to obtain actual data and derived equations using ellipse formula to represent emotional region. Furthermore, we applied ANEW and IAPS which are commonly used in many studies to our emotional model using pattern recognition algorithm. Using our method, we could solve problems with Russell's model and our model is easily applicable to the field of engineering.

Taste Components and Sensory Characteristics of Long-term Mature Korean Soy Sauce (장기 숙성된 한식간장의 맛성분 및 관능적 특성)

  • In this study, 30 kinds of long-term and mature Korean soy sauce were collected and classified by the fermentation period, and the components related to taste and sensory characteristics were analyzed. A total of 4 kinds of organic acids were detected. The total organic acid content was in the range of 97.2~341.6 mg%, but did not show the tendency to increase or decrease in proportion to the aging period. The total free amino acid content was within the range of 3,001.0~3,834.7 mg% and showed a tendency to increase in proportion to the ripening period of the soy sauce. The contents of aspartic acid and glutamic acid subsequently increased in the long-term matured soy sauce. The ratio of essential amino acid to total amino acid was 31.6~35.7%, and the ratio of glutamic acid to total amino acid was 19.6~23.9%, respectively. The panel of 20~29-year-old indicated that the longer the aging period of soy sauce, the lower the preference while the panel of 30 or more years indicated that the longer the aging period of soy sauce, the higher the preference. This study was the first to investigate the quality of long-term matured soy sauce in more than one year.

A Study on DEA-based Stepwise Benchmarking Target Selection Considering Resource Improvement Preferences (DEA 기반의 자원 개선 선호도를 고려한 단계적 벤치마킹 대상 탐색 연구)

  • Purpose: This study proposed a DEA (Data Envelopment Analysis)-based stepwise benchmarking target selection for inefficient DMU (Decision Making Unit) to improve its efficiency gradually to reach most efficient frontier considering resource (DEA inputs and outputs) improvement preferences. Methods: The proposed method proceeded in two steps. First step evaluates efficiency of DMUs by using DEA, and an evaluated DMU selects benchmarking targets of HCU (Hypothesis Composit Unit) or RU (Real Unit) considering resource improvement preferences. Second step selects stepwise benchmarking targets of the inefficient DMU. To achieve this, this study developed a new DEA model, which can select a benchmarking target of an inefficient DMU in considering inputs or outputs improvement preference, and suggested an algorithm, which can select stepwise benchmarking targets of the inefficient DMU. Results: The proposed method was applied to 34 international ports for validation. In efficiency evaluation, five ports was evaluated as most efficient port, and the remaining 29 ports was evaluated as relative inefficient port. When port 34 was supposed as evaluated DMU, its can select its four stepwise benchmarking targets in assigning the preference weight to inputs (berth length, total area of pier, CFS, number of loading machine) as (0.82, 1.00, 0.41, 0.00). Conclusion: For the validation of the proposed method, it applied to the 34 major ports around the world and selected stepwise benchmarking targets for an inefficient port to improve its efficiency gradually. We can say that the proposed method enables for inefficient DMU to establish more effective and practical benchmarking strategy than the conventional DEA because it considers the resource (inputs or outputs) improvement preference in selecting benchmarking targets gradually.

A Study on Factors Affecting the Effect of Blue Light Blocking in Sunscreen (자외선 차단제품에서 블루라이트 차단 효과에 영향을 주는 인자에 관한 연구)

  • Blue light is a blue-based light existing at a wavelength between 380 and 450 nm, and it has been reported that it induces active oxygen and causes aging, and accordingly, interest in the blue light blocking effect is increasing. In this study, the effects of the polarity of oil, viscosity of the formulation, type of emulsifier, emulsified particles, and inorganic UV blocking agents on the blue light blocking effect in UV blocking products were investigated. As a result, it was confirmed that the blue light blocking rate increased as the polarity of the oil became similar to that of the organic UV blocker, and the higher the viscosity of the formulation, the higher the blue light blocking rate. The types of emulsifiers and emulsified particles had little effect on the blue light blocking effect, and the presence of inorganic UV blocking agents was found to be one of the factors that greatly influenced the blue light blocking rate. These results can effectively increase the efficiency of blocking blue light, and may be used in the development of blue light blocking products and formulation research in the future.

A Study of Whitening Functional Activity Verification from Red Bean (Phaseolus angularis) Shell Extract (팥 껍질 추출물의 미백 기능성 활성 검증)

  • Whitening effect of the extract of Phaseolus angularis (PA) shell was investigated for its potential application as a functional ingredient for cosmetic products. The tyrosinase inhibitory effect, which is related to whitening, was 76.4% at a concentration of 1,000 ㎍/ml. Cell viability of melanoma cells was measured to test toxicity of the PA shell extract at concentrations showing at least 90% viability. In addition, western blot and RT-PCR assays of the PA shell extract showed concentration-dependent decreases of MITF, TRP-1, TRP-2 and tyrosinase protein and inhibitory effect of mRNA expression. These findings suggested that extract from PA shell has great potential as a cosmeceutical ingredient with whitening effect.

The Effects of Smartphone Overdependence Communication Competence in Nursing Students - Focusing on Mediation Effect of Academic Stress (간호대학생의 스마트폰 과의존이 의사소통능력에 미치는 영향 - 학업스트레스의 매개효과를 중심으로)

  • This study was conducted to investigate the mediating effect of academic stress on the relationship between smartphone overdependence and the communication competence of nursing students. The research subjects were nursing students in cities A and Y. The research period was from March 2 to March 9, 2023, and the number of subjects analyzed was 139. Descriptive statistics, Pearson correlation were analyzed using SPSS/WIN 26.0, Process macro program the collected data. The results of the mediating effect of academic stress on the relationship between smartphone dependence and communication competence showed that academic stress (β=.226, p=.005) mediated the effect on the relationship between smartphone dependence and communication competence(Z=-3.131, p=.002). As a result, the combined explanatory power of the variables on nursing student's communication competence was 15.4%. In addition, in order to reduce nursing students' smartphone overdependence, it is necessary to educate them about smartphone use and develop self-control, provide interventions to cope with academic stress, and develop intervention programs to improve communication competence.
