Quality Characteristics of Non-cooked Meat Patties with Ground Raw Tomato During Freeze Storage (토마토가 함유된 비가열 미트패티의 냉동 저장 중 품질특성)

  • The effects of tomato on the phsycochemical and sensory properties of meat patties during frozen storage were studied. Meat patties were produced with four different formulation including 0, 0.5, 1.0 and 1.5% chopped raw tomato. Meat patties made with the addition of tomato had higher(p<0.05) pH, L* and a* value than those of control sample. TBARS of all treatments were lower(p<0.05) when compared with those for control. In sensory evaluation, treatment groups resulted in slightly higher(p>0.05) score in overall acceptability. In the manufacture of functional meat patties containing tomato, further studied are needs on addition type and ratio of tomato materials during frozen storage than those of products without tomato.

  • 플라스틱 시설원예는 자본과 시설이 요구되지만 제철이 아닐 때도 생산을 통해 생산자의 소득 증대에 기여하고 이는 생산자가 보다 높은 품질의 작물을 생산하는 유인이 된다. 이를 위해서는 재배되는 작물에 최적화된 생육환경을 제공해줄 필요가 있으며 현재까지의 생장데이터를 이용하여 미래의 생장상태를 예측하고, 부족한 부분을 보완해줄 필요가 있다. 본 논문에서는 토마토를 대상으로 플라스틱 시설원예 환경에서의 예측시스템을 설계한다. 동일한 토마토이지만 품종에 따라 생육환경이나 예측모델이 달라질 수 있으므로 다양한 예측모델이 필요에 따라 로딩되어 사용될 수 있도록 한다.

Effect of Packaging Material and Storage Temperature on the Quality of Tomato and Plum Fruits (포장재 및 저장온도가 토마토와 자두의 품질에 미치는 영향)

  • To examine the quality changes of tomato and plum fruits during storage under various storage conditions, the rate of weight loss, pH change, titratable acidity, Hunter a value, firmness, and anthocyanin content were determined during storage. Tomato and plum fruits were stored at 4$^{\circ}C$ and 25$^{\circ}C$. Tomato fruits were packaged with high density polyethylene film (HDPE) and polyvinylidene chloride film (PVDC), and plum fruits were packaged with HDPE. Tomato fruits packaged with PVDC and plum fruits packaged with HDPE at 4$^{\circ}C$ were the most desirable in terms of weight loss. Titratable acidity of tomato fruits decreased with increasing storage time regardless of temperature and packaging method. Hunter a value of tomato fruits stored at 25$^{\circ}C$ increased regardless of packaging method, while it was not changed for tomato fruits stored at 4$^{\circ}C$. Firmness of plum fruits stored at 25$^{\circ}C$ significantly decreased during storage and anthocyanin content increased. Microbial numbers of tomato fruits increased during storage, but its rate was retarded during storage when tomato fruits were packaged with HDPE and stored at 4$^{\circ}C$. These results suggest that cold chain system and appropriate packaging could maintain the quality and prolong the shelf life of fresh produce.

Comparion of Rockwool, Reused Rockwool and Coir Medium on Tomato (Solanum lycopersicum) Growth, Fruit Quality and Productivity in Greenhouse Soilless Culture (시설 내 수경재배에서 암면, 재사용암면, 코이어 배지에 따른 토마토의 생육 및 생산성 비교)

  • This experiment was conducted to find out the possibility of use of reused rockwool and comparison of growth, productivity and quality of tomatoes according to the use of rockwool and coir medium. The experiment was conducted in an automatic controlled greenhouse at Andong National University, College of Life Science, located in Andong, Gyeongsangbuk-do.. As a result of the experiment, there was no difference in the number of leaves, plant height, and leaf area between treatments, and the crown diameter was slightly higher in rockwool medium, also there was no difference between reused rockwool and coir medium. Fruit productivity showed different responses depending on the cultivation environment, but there was no significant difference between rockwool, reused rockwool and coir medium. In addition, the quality of fruit was observed to be different according to the concentration of EC in the medium. Therefore, in tomato hydroponic cultivation, there was no difference in the type of medium in growth, productivity, fruit quality and the environmental and water management had a great effect, and it is expected that the reuse of rockwool will have a positive effect on the economic point of view.

The investigation of Appropriate Hydroponic System for Cherry Tomatoes in Summer Season (방울토마토의 여름재배시 적정수경재배방식 구명)

  • This study was carried out to investigate the appropriate hydroponic system when cherry tomatoes were grown in summer. The base diameter of the trunk, leaf length, leaf width, and the length of cluster were good in deep flow culture(DFC), and not different between NFT and rockwool culture. The first time of flowering and the fruit coloring per cluster were not different among cultural systems, but the marketable yields were good in DFC. In DFC, % dry weight, firmness, the content of organic acid and sugar were low, and the ratio of sugar/organic acid and vitamin C were high. So DFC is recommended for the summer cultivation of cherry tomatoes.

Study on the Nutrient Solution Content and Growth of Cherry Tomato in Scoria Culture (제주 송이를 이용한 방울토마토 양액재배시 양액성분 및 생육에 관한 연구)

  • The main purpose of these studies were to clarify differences in Cheju - scoria and other solid media on quantity and quality of cherry tomatoes and on shift of component of the nutrient solution, and to use Practically Cheju-scoria as an excellent solid culture medium. The results obtained were summarized as follows ; 1. Among scoria plots, the rates of dry weights, fruits and their sugar-acid ratio were higher in the plot that was drained well with deep flow for one hour once a day. 2. Fresh fruit weights were lighter in rockwool and deep flow technique, but larger in scoria, Hyugashi (artificial gravel, $\Phi$10-12mm) and perlite in moving to higher flower cluster. 3. The results of analysis on microelement among solution components showed decrease of concentrations of P and K in the period of growth and development. 4. Yields and brix of cherry tomato showed a tendency to increase in rockwool and Hyugashi than anothers. 5. The concentration of fertilizer base was increased in general solution culture. Transpiration and absorption were similar in scoria plot and other media. 6. More studies of the Cheju-scoria development is required in order to use it as a solid medium for solution culture.

Comparative study on physicochemical properties of cherry tomato (Solanum lycopersicum var. cerasiforme) prepared using hot-air and combined drying (열풍건조와 복합건조로 제조한 방울토마토(Solanum lycopersicum var. cerasiforme)의 이화학특성에 관한 비교연구)

  • Effects of different drying processes, such as hot air drying (HA), superheated steam with hot air drying (SHS/HA), and superheated steam with far infrared radiation (SHS/FIR), on the properties of cherry tomatoes (Solanum lycopersicum var. cerasiforme) were studied. Characteristics of dried cherry tomatoes were determined by examining the water content, internal microstructure, and rehydration capacity under different drying processes. Moreover, ascorbic acid (AA) and lycopene levels were also measured to evaluate thermal damage caused by drying. Cherry tomatoes dried using both SHS/HA and SHS/FIR had water content and water activity similar to those of intermediate moisture food, indicating partial dehydration after combined drying processes. Although AA and lycopene levels decreased drastically after drying, tomatoes dried using SHS/FIR showed the lowest losses of AA and lycopene among samples. Cherry tomatoes dried using SHS/FIR showed a less compact internal cell structure than that of cherry tomatoes dried using HA and SHS/HA, resulting in the highest rehydration capacity. These results suggest that a combined drying process such as SHS/FIR is more effective than conventional hot air drying for the production of partially dried cherry tomatoes with improved quality attributes.

참외.포도.방울토마토의 고품질 유통을 위한 저온유통용 골판지 포장상자 개선에 관한 연구

  • 원예작물은 수확 후 여러 가지 요인에 의해 품질이 저하되어 상품성을 잃게되는데, 특히 수확 후 품온상승에 의해 호흡작용이 왕성해져 품질변화를 촉진하게 된다. 그러므로 수확 후 품온을 가능한 한 빠르게 낮추어 신선도를 유지하기 위한 예냉, 저온저장, 저온수송기술등 저온유통시스템을 활용하는 것이 매우 필요하다. 저온유통시스템을 효과적으로 활용하기 위해서는 냉기의 순환이 원활하여 냉각효율이 좋고 파손의 위험과 물류비용을 줄일 수 있는 포장상자의 구조에 대한 연구가 필요하다. 포도, 방울토마토, 참외의 소비형태는 핵가족화와 더불어 신선 고품질의 농산물을 소량 구매하는 소비패턴으로 변화하면서 저온유통 및 소포장을 위한 포장형태의 개선이 요구되고 있다. 따라서 예냉.저온유통에 적합한 포장상자를 개발하기 위하여 연구소, 농협중앙회, 상자제작회사, 포장디자인 업체, 산지농협 작목반이 개발협의체를 구성하여 참외, 포도, 방울토마토의 저온유통용 골판지 상자를 개발하여 압축강도 및 냉각시험을 실시하여 소비지에 시범 보급하였다. 1. 참외 포장상자는 3kg용 상부 개방형 골판지상자로써 손잡이를 부착하고, 포장상자 상부에 덮개용 필름을 부착하였다. 제작된 상자의 압축강도는 저온유통 후 에도 안전압축강도 이상인 343kgf의 압축강도를 나타냈고, 냉각효율도 기존상자에 비하여 높게 나타났다. 또한 개발된 상자를 사용하여 시중에 출하할 경우 기존 5kg 상자에 비하여 8%이상의 부가가치를 높일 수 있었다. 2. 포도 포장상자는 소비자 기호도를 충족하고 다층적재시 손상을 방지하기 위하여 내용물을 1단 적재하고 상자를 개방형으로 하여 덮개용 필름을 부착하므로써 소비자가 내용물을 확인할 수 있도록 하고, 상자의 압축강도는 소비지까지 유통이 완료된 후 에도 수직압축강도가 400kgf이상으로 안전압축강도 보다 높아 저온에서 안전하게 유통할 수 있었다. 또한 개발된 상자를 사용하여 시중에 출하할 경우 기존 5kg 상자에 비하여 2kg상자는 21%, 4kg상자는 12%이상의 부가가치를 높일 수 있었음. 3. 방울토마토 포장상자는 외포장 상자를 4kg용 상부 개방형 골판지상자를 사용하고, 내포장상자는 500g용 PET용기를 사용하여 1상자에 8개의 내포장상자가 적재될 수 있도록 제작하였다. 제작된 외포장상자의 압축강도는 저온유통후에도 320kgf으로 안전압축강도보다 높게 나타났고, 파랫트 적재효율도 96%이상으로 나타나 물류의 효율성을 높일 수 있었다. 개발된 상자를 사용하여 시중에 출하할 경우 기존 산물형태의 4kg용 상자에 비하여 500g 내포장상자에 출하할 경우 20%이상의 부가가치를 높일 수 있었다.

The effects of Stigma Removal and Auxin Treatment on Fruit Shape and Quality in Strawberry (딸기의 주두 제거와 옥신 처리가 딸기의 과형 및 품질에 미치는 영향)

  • The effects of stigma removal from floral organ and treatment of auxin on those regions were evaluated on the fruit growth and quality in strawberry (Fragaria ananassa Duch.). The removal of stigma reduced the fruit weight, fruit length, and fruit width, while fruit growth declined as the number of removed stigma increased. The removal of stigma also resulted in reduced fruit firmness, sugar content, and total anthocyanin content, and decreased value of Hunter a for red color and increased value of Hunter b for yellow. The number of seeds deceased as the regions of removed stigma increased. The treatment of auxin on the region of removed stigma improved fruit size, while it reduced fruit firmness, sugar content, and anthocyanin content. The delay in fruit ripening was observed from both stigma removal and auxin treatment. The incidence of malformed fruits increased as the regions with removed stigma increased. The treatment of auxin also promoted fruit malformation.

Prolongation of Cherry Tomato Shelf-life Using Perforated Film Packaging (천공필름을 이용한 방울 토마토의 저장 수명 연장에 관한 연구)

  • Whole and stem-off cherry tomatoes were packaged using perforated films(LF05, LF10, LF20, and LF40). Gas composition(ethylene, $O_2$, and $CO_2$), firmness(compression and penetration force), color, brix degree, acidity, and total microbial counts were assessed during storage at $10^{\circ}C$ and 85% relative humidity. Gas composition varied with film gas permeability, indicating that modified atmospheric(MA) conditions were achieved. Firmness fell during storage; samples packed using LF05 showed the lowest firmness, corresponding to low gas transmission conditions. L(lightness) and a(redness) values respectively decreased and rose slightly with increasing storage time, but the b(yellowness) values fell notably. Film permeability significantly affected acidity and soluble solid levels. When LF40 packaging was used, acidity and brix scale changes were similar to those seen after PET container packaging. Total microbial counts increased with time after packaging in most films, and pretreatment differences were not significant. Microflora varied between stem on/off tomatoes. Skin wrinkling and juice appearance were common in tomatoes stored in PET containers and LF films of low gas permeabilities(LF05, LF10, and LF20). White molds were partially found on stem-on tomatoes stored using packaging systems. When film packagings were compared, LF40 was optimal, permitting minimal pretreatment yet offering maximal sanitation.
