Changes in Quality of Crown Daisy and Kale Washed with Cooled Electrolyzed Acid Water during Storage (저온처리 전해산화수로 세정한 쑥갓과 케일의 저장중 품질변화)

  • Quality changes of crown daisy and kale were investigated during storage at 10$^{\circ}C$ after washing with cooled electrolyzed acid water at 3 times in 2 min. Total count and coliform count of crown daisy and kale after immersion in electrolyzed acid water were decreased to 1/130 and 1/1,170 of non-immersed crown daisy and to l/870 and l/470 of non-immersed kale. However total count and coliform count were increased to the similar levels of non-immesed and tap water immersed one after 6 days of storage. Weight loss of crown daisy and ka1e were lower than others for 3 days of storage but higher than that of one after that time. Decay rate of crown daisy and kale immersed electrolyzed acid water showed lower than that of non-immersed and tap water immersed one for 6 days. In case of kale, rupture strength was higher than others at just after immersion and showed similar values after initial storage period. Color value of both crown daisy and kale showed high L, b and low a value in the order of electrolyzed acid water, tap water and non-treatment. Chlorophyll content of crown daisy and kale were lower than those of others just after immersion in electrolyzed acid water, but showed rapid reduction in the order of non-treatment. tap water and electrolyzed acid water after 6 days. Overall organoleptic properties of crown daisy and kale in immersion electrolyzed acid water were higher than those of others.

Evaluation of Chloride Bound Ratio in Cement Pastes by Pore Solution Analysis (세공용액분석에 의한 시멘트의 염화물 고정화율 평가)

  • To evaluate the bind rate and behavior of two types chloride ion-one is the chloride ion added in mixture when un-washed sea sand is used as fine aggregate, one is the chloride ion admitted in the new version of concrete standard specification, pore solution extracted in cement paste were analyzed. The results are follow. 1 As passing the time, the chloride concentration in the pore solution decreases with the Increase in the chloride content absorbed by the hydrate products. As compared with chloride contents in mixing water, the bound ratio of chloride at 49 days is 64∼90%. 2. The bound ratio of chloride in cement paste considering evaporable water as pore solution is obtained. In case of Pl∼P3(added chloride content wt of cement 0.046∼0.16 %), the bound ratio of chloride is 91.8∼93.5 %. P4(added chloride wt of cement 0.3%) is 89.1%, but P5(added chloride wt of cement 0.617%) bound is only 77%. 3. The bound ratio of chloride to wt of cement is 0.015∼0.475% with adding chloride. In case chloride added over 0.091 % wt of cement, the bound chloride content increases 1.7∼1.8 times in spite of added chloride increase twice. The bound ratio of chloride to wt of cement decreased with the increase in the chloride content. 4. The more increase added chloride content, the more increase the bound ration of chloride. But the absolute value of chloride content in pore solution increased.

Effect of Heating Rate and Keeping Time at Maximum Temperature on the Properties of Woodceramics Made from Thinned Logs (승온속도 및 최고온도 유지시간이 간벌재로 제조된 우드세라믹의 성질에 미치는 영향)

  • This research investigated the variation of density, the weight loss, dimensional shrinkage and heat conduction by the heating rate and keeping time at maximum temperature of woodceramics, when sawdust boards made from thinned logs of Pinus densiflora, Larix kaemferi and Pinus koraiensis were impregnated with phenol-formaldehyde resin, and then were formed by heating rate ($2^{\circ}C/min{\sim}6^{\circ}C/min$) and keeping time at maximum temperature (1~5 h). As the heating rate increased, the density and thickness shrinkage decreased, but weight loss and linear shrinkage increased. The more the keeping time at maximum temperature, the greater the linear shrinkage and thickness shrinkage. The heating conduction was superior at the heating rate is $2^{\circ}C/min$ and the keeping time at maximum temperature of 2 hs.

  • Apple sugaring and apple nectar gel were treated with coating agent, and then the rate of weight loss, browning reaction and fungi growth on the storage conditions of those were investigated. The results obtained were summarized as follows; The composition of sucrose, D-sorbitol, corn syrup, gelatin, arabia gum, citric acid, sodium citrate and sodium ascorbate as a nontoxic coating agent was desirable to repress weight loss browning reaction and fungi growth of apple sugaring and apple nectar gel. It was the most effective method that apple sugaring was treated with the coating agent and refrigerated with double packaging. The contraction by weight loss, browning reaction and fungi growth of apple nectar gel treated with the coating agent and freezed with double packaging were repressed.

Effect of Zeolite and Livestock Manure in Composting Materials on Composting of Seafood Processing Wastewater Sludge (수산가공폐수 슬러지의 퇴비화과정중 zeolite 및 가축분첨가 효과)

  • To study the possibility of agricultural utilization of seafood processing wastewater sludges, the change of temperature, decreasing ratio of weight generation quantity of $CO_2$ and $NH_3$, and contents of inorganic elements for composting by adding different rates of zeolite and livestock manure to seafood processing wastewater sludges were investigated. Changes of temperature, decreasing ratio of total weight and generation quantity of $CO_2$ were not little different with increasing addition rates of zeolite for composting. But the less addition quantity of livestock manure is, the higher were temperature and decreasing ratio weight for composting. Ceneration quantity of $NH_3$ in composting materials as adding zeolite ti 5, 10 and 20% and livestock manure to 50, 65 and 80% were 68, 61 and $46mg/kgvs{\cdot}hr$, respectively, for composting periods. So, $NH_3$ generated little quantity as much as possible addition of zeolite and manure. Contents of T-C and T-N little decreased and C/N ratio little increased after composting than before. Content of $P_2O_5$, $K_2O$, CaO also increased a little, that of MgO is not different and that of Mn decreased very sharply in all conditions after composting than before.

Effect of Quality Change of 'Fuji' Apple by Pressure Cooling (차압예냉 처리가 '후지' 사과의 품질 변화에 미치는 영향)

  • The research was conducted to measure the effect of pressure cooling of 'Fuji' apple during of 24 weeks. Weight loss in pressure cooling was lower than control at 24th week, and firmness in pressure cooling was higher than control. Titratable acidity in control and pressure cooling was 0.0823% 0.1103% in 24 weeks, respectively. Soluble solid content (SSC) in pressure cooling were higher than control. Decayed rate in control and pressure cooling was 46.4% 34.5% in 24 weeks, respectively. Total ascorbic acid contents were decreased in control and pressure cooling during 24 weeks. Therefore, it could be suggested that pressure cooling is more effective than control in storage of 'Fuji' apple.

Effect of Sugar Infusions and Pretreatment Conditions on Quality Characteristics of Dried Sweet Pumpkin (전처리 조건과 당침지액이 건조 단호박의 품질특성에 미치는 영향)

  • This study prepares dried sweet pumpkins to optimize pretreatment conditions of blanching, steaming and microwave heating and to investigate the quality characteristic of each method. The sweet pumpkin blanching treatment of moisture content decreased gradually with increasing temperature, and soluble solids, and weight loss was increased. Color temperature is lower, and a higher value of L value and b value increased. As for the sweet pumpkin steaming treatment of moisture content, it was observed that the longer the steaming time was decreased, sugar content was increased. Change of color in the L value, the longer the steaming time a and b values. Also, as for the microwave treatment of the sweet pumpkin, the longer the time the moisture content decreased, it slightly increased soluble solids and weight loss. Blanching showed the lowest hardness of texture, followed by steaming, and microwaves, in order. Penetration per 20 hours per type was determined by sensory evaluation of sugar, and sugar:fructose(1:2)ratio were higher in the composition.

Changes in Components of Ume Fruit during Development and Maturation (매실의 수확시기별 성분의 변화)

  • To elucidate the effect on the quality of products, various components of ume fruit(Prunus mume)flesh of six species during development and maturation. The weigh and the rate of flesh of ume fruit was increased until maturation, except of small ume. The relative hardness of ume fruit flesh was 2.5~3.9 Kg and decreased at full ripe. The major organic acids of ume fruit flesh was citric acid and malic acid. Citric acid became increased, but malic acid was decreased during maturation and total content of that was increased during maturation Free sugars determined from the ume fruit flesh were fructose, glucose, sucrose. Ascorbic acid content was $0.6\sim2mg%$ in the ume fruit flesh. The contents of K and Ca were abundant minerals in ume fruit flesh.

Development of the Experimental Apparatus to Measure a Pore Size of Micro-pore Fabrics Used for a Bedding to Block the House Dust Mite Allergen (집먼지 진드기 알레르겐 차단 침구에 사용되는 극세 공극 직물의 공극 측정을 위한 입자 투과 실험 장치의 개발)

  • In order to measure the allergen penetration of micropore fabrics, it is necessary to develop a convenient and appropriate experimental method for measuring a pore size of micropore fabrics. In this study, a simple and economical experimental apparatus was developed for the analysis of the pore size of micropore fabrics by measuring the weight reduction rate. In addition, the allergen blocking properties was evaluated by measuring the pore sizes of various fabrics. According to this study, the size of the pores of the microporous fabric could be obtained by measuring the weight reduction rates. In addition, higher weight reduction rate was obtained as the suction pressure passing through the particle permeation device decreased and the suction time was increased. It is expected that the developed experimental method and apparatus can be utilized as an experimental standard for quality control methods to verify the effectiveness of micropore fabrics used for house dust mite blocking bedding.

Effect of Storage Condition on the Quality and Microbiological Change of Strawberry “Minyubong” during Storage (저장조건이 딸기 “미녀봉”의 저장 중 품질 및 미생물학적 변화에 미치는 영향)

  • To examine the effect of storage condition on the quality and microbiological change of strawberry “Minyubong”, the rate of weight loss, decay rate, pH and titratable acidity, and microbial (total bacterial count, mold and yeast) changes were determined during storage. Strawberry fruits were packaged with low-density polyethylene (LDPE). Strawberries were then stored at 4$^{\circ}C$ and 20$^{\circ}C$, respectively. LDPE package was effective on the decrease of decay rate of strawberry as well as the rate of weight loss, compared with the non-packaged. Microbial changes of strawberry stored at 4$^{\circ}C$ and 20$^{\circ}C$ were monitored during storage. Packaging affected the microbial change, resulting in retarding the growth of total bacteria as well as mold and yeast, compared with the non-packaged, regardless of storage temperature. These results indicate that storage of strawberry fruits wrapped with LDPE at 4'C should be recommended in terms of quality as well as its shelf-life.
