Key to the Korean Freshwater Cladocera (한국 담수산 물벼룩류에 대한 검색표)

  • 41 species of Korean freshwater Cladocera have been recorded up to now, but very few taxonomic works on this animal group have been carried out . As there is shortage the references useful to identifiy the Korean materials, the present key is made to fill it up. This key comprises 53 Korean species, of which 42 including 11 new records in Korea have been collected from Korean from 1978 to 1986. 42 species, except 11 species that could not be examined by the author , are all figured on the basis of their morphological characters.

New Records of Fungi Growing on Jejudo (제주 국내 미기록 자생버섯)

  • In this study, among the wild mushrooms collected on Jeju Island for the recently 9 years, 5 species are newly reported to Korea. They are identified as Ramariopsis subtilis, Coltriciella pusilla, Lactifluus ochrogalactus, Microstoma insititium and Morchella semilibera based on macromorphological and microscopic observation. In addition, Lactifluus ochrogalactus and Microstoma insititia were re-identified by analysis of internal transcribed spacer of ribosomal DNA.

  • A taxonomic study on the marine sponges was conducted with material collected by SCUBA diving from Ulleungdo Island, Korea during July 2001 to August 2003. They were identified 19 species belonging to 14 genera in 12 families of six orders in two classes identified. Among them, Haliclona (Reniera) permollisimilis Hoshino, 1981 is newly recorded to the Korean fauna and Geodia ulleungensis n. sp. is new to science.

  • Using a novel pine needle agar, fifteen bacterial species were isolated from pine litter. These bacteria were able to degrade aromatic hydrocarbons derived from lignin and utilize the ortho-cleavage of the $\beta$-ketoadipate pathway to degrade protocatechuate or catechol. A different utilization array of aromatic hydrocarbons by these bacteria was also determined. This study provides the information on bacterial species living in pine litter and suggests that these bacteria have metabolic abilities to utilize aromatic hydrocarbons derived from lignin biodegradation.

  • A taxonomic study for clarifying the decapod fauna of Gejedo Island, Korea was performed. Seventy nine species in 28 families were identified through the present investigation and of which 9 species of shrimps, 7 species of anomurans, and 39 species of crabs are newly added to the decapod fauna of this area. With the previously known 40 species, a total of 93 decapod species from this island and its adjacent islets are listed, and Pugettia quadridens intermedia Sakai, 1939 is redescribed with illustrations. The zoogeographical aspects of Geojedo Island are also discussed based on the composition of geographical forms of brachyuran decapods.

Antifungal activity against cheese fungi by lactic acid bacteria isolated from kimchi (김치 분리 유산균의 치즈 곰팡이 항진균 활성)

  • The antifungal activity against cheese fungi by lactic acid bacteria isolated from kimchi was investigated. Eight fungi were isolated from cheese in the cheese ripening room. Two of them were identified as Penicillium and Cladosporium via ITS-5.8S rDNA analysis. Twenty-two species of lactic acid bacteria with antifungal activity were isolated from kimchi. Two of them were identified as Lactobacillus and Pediococcus via 16S rRNA sequence analysis. Of the 22 lactic acid bacteria species, six were selected (L. sakei subsp. ALJ011, L. sakei subsp. ALI033, L. sakei subsp. ALGy039, P. pentosaceus ALJ015, P. pentosaceus ALJ024 and P. pentosaceus ALJ026) due to their higher activity against the eight fungi isolated from cheese in the cheese ripening room; and among the six species, the P. pentosaceus ALJ015 and P. pentosaceus ALJ024 isolates from the Jeonju area kimchi and the L. sakei subsp. ALI033 isolate from the Iimsil area kimchi had higher antifungal activity than the other lactic acid bacteria. The minimum inhibitory concentration (MIC) of L. sakei subsp. ALI033 against the eight fungi isolated from cheese in the cheese ripening room was $62.5{\mu}g/mL$.

Analysis of Volatile Compounds in Kimchi-Flavored Steak Sauce (김치를 이용한 스테이크소스의 휘발성 향기성분)

  • Volatile compounds of kimchi-flavored steak sauce were isolated using simultaneous steam distillation and solvent extraction methods and identified by matching mass spectrum and retention index (RI) with the reference data. Twenty-three compounds including five aldehydes, four alcohols, four acids, three sulfur-containing compounds, one ketone, and six others were identified, among which the most abundant compound was eugenol. Sulfides such as dimethyl dis- and trisulfides, and acids such as acetic and dodecanoic acids showed strong effects on the kimchi flavor. Aroma extract dilution analysis with three fold dilution factor shown in over the FD value 34 identified 2-butanal, 2-pentylfuran, methyl-2-propenyl disulfide, and 2-furanmethanol. Strong good aroma was detected in the RI range between 1030 and 1357, bad aroma in RI 1561, sweety aroma in RI 2057, clover aroma of eugenol in RI 2122, and rancid flavor in RI 2251.
