The Development of a Natural Seasoning Using the Enzymatic Hydrolysate of Fish Skin (어피의 효소적 가수분해물을 이용한 천연조미료의 개발)

  • A study on the optimum hydrolysis conditions of fish skin through the aid of enzymes and the development of a natural seasoning using the hydrolysate has been carried out for the effective utilization of fish skin. Using the "pH-drop" techniques the collagenase and pronase were identified as most suitable for this purpose. The $K_m$ and $V_{max}$ values of pronase were 1.82 mgN/ml and 0.06 mgN/mL/min, respectively. The hydrolysis conditions of the cod skin for the pronase were as follows: reaction temperature, $50^{\circ}C$; reaction time, 3hrs; pH 6; enzyme concentration, 0.03%. The degree of hydrolysis at these conditions was 76.8%. But after hydrolyzing cod skin with collagenase for 1hr, when the pronase was treated, the degree of hydrolysis was 83.13%. The molecular weight of the hydrolysate was 8,000 daltons. Among the amino acids in the hydrolysate, glycine(27.95%), glutamic acid(10.94%), proline(7.39%), aspartic acid(9.47%) and serine(7.39%) were responsible for 64.23% of the total amino acids. But valine, methionine, isoleucine, leucine, phenylalanine and histidine having a bitter taste were only 13.05%. From the results of the sensory evaluation, the imitation sauce which was made of 20% fermented soy sauce prepared from the hydrolysate was at least similar to the traditional soybean sauce in product quality. The complex seasoning containing 31.7% of the hydrolysate was nearly equal to complex seasonings on the market, too.

Detection of Serum IgG and IgM Antibody in Rats Experimentally Infected with Echinostoma hortense (호르텐스극구흡충을 실험적으로 감염시킨 흰쥐에서 IgG/IgM 항체가 변화)

  • The changes of antibody titer were observed in rats which were experimentally infected with Echinostoma hortense metacercaria. Serum levels of IgG and IgM were measured by enzyme-linked immunosorbent assay (ELISA). The mean absorbance values obtained for specific-IgG were from 0.130$\pm$0.014 (mean$\pm$S.D.) to 0.480$\pm$0.073. The peak appeared in the 4th week after infection, then declined slowly during the 5th and 6th week, although mild elevation apperared in the 8th week. The mean absorbance values of specific-IgM were detected from 0.160$\pm$0.034 to 0.409$\pm$0.084. The peak value (0.409$\pm$0.084) was on the 14th day after infection, then declined on the 8th week. Results showed that the assay could be used for detection of E. hortense infection in experimentally infected rats or laboratory experiments where evidence of infection is required.

Evaluation of Areas and Routes for Construction of a Hub & Spork System for Costal Passenger Ships Using the AHP Method (AHP법을 이용한 연안여객선 지간선 체계 구축 권역 및 항로 평가)

  • This study identified a candidate area and route for construction of a hub & spork system for coastal passenger ships. For this purpose, the characteristics of the hierarchy structure of other transportation and the operating system of coastal passenger ships were analyzed. Evaluation factors for selecting alternative areas and routes for the construction project were then extracted. Secondly, the relative importance of these evaluation factors for alternative routes were calculated using the Analytic Hierarchy Process (AHP) method. Finally, the importance of these evaluation items and quality of the alternative areas and routes were considered to select a primary candidate area and route. Therefore, four evaluation items such as the number of passenger-ship routes, the number of passengers, the number of cars, and the number of residences were extracted, and the Mokpo area was selected as the target area. In addition, four evaluation items such as he number of islanders, the number of local governments, geographical conditions and passenger ship operators were extracted, and the Yeonggwang route was selected as priority candidates for this construction project. Meanwhile, for the expansive implementation, step-by-step promotion is needed along with the expansion of terminal facilities, the securing of large ships, and the introduction of a semi-public system for coastal passenger ships.

Factors Which Affect Mental Health of Dental Hygiene Students (치위생과 학생들의 정신건강에 영향을 미치는 요인)

  • The purpose of study is to understand the relation with factors which affect the mental health and to investigate self-esteem, department satisfaction and career stress among dental hygiene students. The study performs self-administered questionnaires survey from March to May, 2013, among dental hygiene students of college in Busan and Ulsan with the convenience sampling and finally analyzes 376 questionnaires. The study performs the path analysis to analyze the impact of the mental health on self-esteem, department satisfaction and career stress and the correlation among these variables. The analysis result shows that the self-esteem most affects and the direct effect on the mental health. The factor which affects the self-esteem is the department satisfaction show direct effect, also career stress has direct and indirect effect. Self-esteem is important factors in the department satisfaction, career stress and mental health. Thus, a stable mental health for students and groups of individuals who need to take advantage of professional counseling and career exploration program structured should be configured.

Study on Tax Exemption and Reduction for Religious Bodies in Korea - Proposals for improvement in the systems of tax exemption and reduction for religious bodies under the Local Tax Law - (지방세법상 종교단체 비과세·감면의 연구)

  • In Korea, religious bodies are being given tax benefits like tax exemption and reduction in accordance with the Local Tax Law. By the way, there's no difference between tax benefits given to religious bodies and other kinds of non-profit corporations. In other words, tax exemption and reduction for religious bodies are being made without considering the very nature of the bodies. This is causing lots of problems. Currently, tax supports to religious bodies are mostly focusing on tax items related to their property, considerably diverting from the ultimate purpose and objectives of tax exemption and reduction for religious organizations. This is not also weakening local finance, but also diverting from the basic intent of so-called the induction system that if necessary, tax supports are given, but they have to be minimized. To solve these problems, comprehensive actions need to be taken, for example, reducing tax benefits given to religious bodies' property and motivating the bodies to make a variety of donations like in developed countries. Now, religious bodies should change their consciousness of tax liability that is imposed by the Local Tax Law. And the government should be more systematic in the collection and management of data that are necessary to levy taxes on religious bodies. If required, the government show the data to religious bodies, convincing them to positively fulfil their tax liability without complaint. This study discusses the current state and problems of existing local tax systems in relation to religious bodies and then propose how to improve the systems. If the systems of tax exemption and reduction for religious bodies under the Local Tax Law can be improved, it would contribute to improve the finance of local autonomous bodies.

  • Social enterprise has moved from periphery to take center stage. Social enterprises are a truly global phenomenon and associated with solving social problems with business approaches. While the numbers of social enterprises have grown and their impact is likely to continue to do so, it would be dangerous to assume that the revolutionary momentum will automatically continue, because social enterprise faced sustainability challenges. This study collected the data from directory of Korean Social Enterprise to conduct a quantitative research on the growth of social enterprise in South Korea. This study conducted longitudinal analysis of 491 social enterprise certified between 2007 and 2010, of economic performance with financial index and social impact with employment structure. Though global financial crisis, Korean social enterprises show that there is a considerable increase in all of quantitative and qualitative aspects. Korean social enterprises have provided meaningful work to those normally excluded from the labour market and tried to raise their life of working. In the future, Korean social enterprises should find a way to balance social and financial performance and ensure the sustainability of the business.

EFFECT OF ADMINSTRATION METHOD OF FLUMAZENIL ON THE PLASMA CONCENTRATION AND THE REVERSAL OF SEDATION INDUCED BY MIDAZOLAM (Flumazenil의 투여 방법에 따른 혈장내 농도와 midazolam에 의해 유도된 진정 상태의 환원 효과)

  • The purpose of this study were to evaluate the effect on the reversion of sedation induced by midazolam with flumazenil and to determine the plasma concentration of flumazenil according to the method of administration. Intranasal and intravenous flumazenil were administered to sedated health volunteers aged from 23 to 25 years, in doses typical of those used clinically to induce sedation with midazolam and for reversal with flumazenil. Objective assessment for degree of sedation and vital signs, plasma concentration were made for 2 hours period. 1. Systolic and diastolic blood pressure, $SpO_2$ were not changed by adminstration of flumazenil in sedated subject with midazolam, but pulse rate was increased temporarily. 2. Flumazenil showed the reversal of the sedative effect induced by midazolam regardless of administration methods. But intravenous administration showed more effect on the degree and the duration of reversion than intranasal administration with the exception of on set time. 3. Peak plasma concentration of flumazenil administered by intranasal route reached after 2 min and that of flumazenil administered by intravenous route was 4 min. Thus uptake of flumazenil did not showed any difference in accordance with the adminstration route. 4. Administration of flumazenil resulted in the temporary increase of midazolam plasma concentration.

Improvement for Marine Environmental Impact Assessment on the Coastal Development Project Type (연안개발사업 유형에 따른 해양환경영향평가 개선방안)

  • This paper suggested the improvement of marine environmental impact assessment of different types of project by analyzing the consultation on the coastal area utilization(133cases) of the coastal development project for 4years(2010-2013). According to the analysis results, the erosion protection project needs to precede the accurate analysis of erosion reasons, predict exactly possible problems and establish the systematic system to verify the effect of erosion protection by monitoring after projects. The construction projects of revetments and coastal roads have to require to sublate, examine the reliability in structures, give consideration to the problems of coastal erosion by increase of reflected waves. In addition, flooding protection projects have got to require to select the waves for evaluation items in conjunction with the effects of abnormal waves. furthermore, waterfront construction projects need to establish comprehensive and methodical space plans and reinforce the review to conserve the natural environment and conduct nature-friendly development. There are many problems inherently related to coastal development Project. To these problems, however, it is required to support the project on the side of the legislation and conduct additional studies reflecting the characteristics by sea areas and projects.

Antioxidant and anti-inflammatory activities of hot water extracts of Ligularia fischeri (곰취 열수 추출물의 항산화 및 항염증 활성)

  • This study was carried out to investigate the anti-oxidative and anti-inflammatory effects of hot water extracts of Ligularia fischeri cultivated in Youngyanggun. We obtained hot water extract (HWE) and cold water extract (CWE) from L. fischeri. The anti-oxidative activities of L. fischeri extracts were measured by 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity. The anti-inflammatory effects of L. fischeri were evaluated in human mast cell line-1 (HMC-1) cells stimulated with phorbol-12-myristate-13-acetate plus A23187 (PMACI). The solid yields of HWE was 150% higher than CWE solid yield. Total polyphenol contents of HWE were $198.07{\pm}0.24mg/g$. The value of anti-oxidative activities of HWE were shown $IC_{50}$ $28.2{\pm}0.04ug/mL$. We showed that HWE significantly reduced the PMACI-induced the production of IL-6 (0.01-1 mg/mL), IL-8 (0.1-1 mg/mL), and $TNF-{\alpha}$ (0.01-1 mg/mL). These results indicate that the HWE of L. fischeri can be used as a functional material due to its antioxidant and anti-inflammatory activities.

Optimization of supplementation with maltodextrin and grape seed extract for improving quality of shredded Korean cabbage (Brassica rapaL. ssp. Pekinensis) during salting process (절임 공정 중 절단 배추의 품질 향상을 위한 maltodextrin과 grape seed extract 첨가조건 최적화)

  • The aim of this study was to develop a new salting condition that included added maltodextrin (MD) and grape seed extract (GSE) to ensure the microbiological safety and quality of salted shredded Korean cabbage. Response surface methodology (RSM) was used to analyze the effects of four independent variables (NaCl concentration, salting duration, MD concentration, and GSE concentration). The following response variables were evaluated: reduction in total aerobic bacteria, yeast, and mold counts; weight loss and salt content; and taste, texture, and overall acceptability of salted shredded Korean cabbage. The optimal salting conditions include a combination of 10.09~10.32% NaCl, 9.45~10.00% MD, and 234~300 ppm GSE in a ternary salting solution and a salting duration of 5.68~5.94 hr. This optimal combination reduced total aerobic bacterial and yeast/molds counts by 3.33 and 1.45 log CFU/g, respectively, while maintaining high sensory scores for taste, texture, and overall acceptability of the salted shredded Korean cabbage. In addition, the optimal conditions yielded more acceptable weight loss and salt content characteristics. The results suggest that use of the optimized combination of salting conditions can improve the microbiological safety and quality of salted shredded Korean cabbage used for commercial kimchi production.
