  • For measuring calcium content during the manufacturing process of Tofu, conductometric electrodes were made with the copper plate, and the results were compared with chemical analysis methods. Three types of plate material (I, II, III) for electrode were tested to apply for measuring $CaCl_2$ content in solution, drained solution from Tofu and in agar-agar gel ana Tofu. Empirical linear correlation equations between conductivity (Y, mho) and calcium content (C, Mole $\bar{C}$, mg% wet basis) were obtained for the quick estimation of calcium content during Tofu processings. Equations with plate II type electrode were Y=0.6364C+0.0775 for drained solution with r=0.99, and $Y=7.1503{\times}10^{-5}\bar{C}-2.9895{\times}10^{-3}$ for Tofu with r=0.91,respectively.

  • The failure modes analysis by the real process method at the head section of rubble mound breakwaters is more important than other failure modes analysis. because this initial failure modes and failure process will lead to the destruction of the structure. The three-dimensional failure modes are discussed using the experimental data with directional waves considering the failure modes. It was processed step by step failure around the head of rubble mound breakwaters. The spacial characteristics of failure mode by real process analysis was well descript at the rubble mound structures.

Effect of Coagulants and Coagulation Temperature on Physical Properties of ISP-Tofu (분리대두단백 두부의 물리적 특성에 미치는 응고 온도 및 응고제의 영향)

  • An investigation was carried out to study the feasibility of tofu preparation with using isolated soyprotein(ISP) only. The ISP tofu was prepared by boiling the ISP suspension for 2 min before addition of coagulants. Effects of coagulants($CaSO_{4},\;CaCl_{2}\;MgCl_{2}\;GDL$) and coagulation temperature in the range of $2{\sim}95^{\circ}C$ were studied on the amounts of coagulants required, size and shape of coagulates, volume yield and textural properties of tofu. It was found that amounts of coagulants and tofu volume was significantly reduced and the larger and cloud-like shape was obtained as the coagulation temperature increased. A rather precipitation was occured under $40\;or\;50^{\circ}C$, which caused difficulty for tofu formation by pressing. GDL and $CaSO_{4}$ showed higher yields than those of $CaCl_{2}\;and\;MgCl_{2}$ at low temperature range and little difference at high temperature. In the textural properties of hardness, brittleness and gumminess of tofu were almost lineary and rapidly increased as the coagulation temperature increased where $CaCl_{2}\;and\;GDL$ produced highest and lowest of those values, respectively. The elasticity was reduced as the temperature increased for those made with $MaCl_{2},\;CaSO_{4}\;GDL\;and\;CaCl_{2}$, tofu showed little change.

Quality Characteristics and Shelf-life of Tofu Coagulated by Furie Juice of Pomegranate (석류 농축액 첨가 두부의 품질특성 및 저장성)

  • This study was investigated the utilization of pomegranate(P) as coagulants for 새려 manufacture, the quality characteristics and shelf-life on tofu made by P1(fruit juice of pomegranate 1%) and P2(fruit juice of pomegranate 2%) and P3(fruit juice of pomegranate 3%) and P4(fruit juice of pomegranate 4%) and P5(fruit juice of pomegranate 5%) were investigated and compared to G.D.L(C). And also, total microbe and tatal acid of the tofu were determined during storage at $0^{\circ}C^$. The results are summarized as follow P3(493.3g/500ml) compared to C(485g/500ml) showed the highest yield. Turbidity of tofu was increased as the proportion of pomegranate was increased, while pH of tofu was increased as the proportion of pomegranate was decreased. $L^{\ast}^{\ast}^{\ast}$ value of C tofu was highest, $a^{\ast}^{\ast}^{\ast}$ value of tofu was increased as the proportion of pomegranate was increased and $b^{\ast}^{\ast}^{\ast}$ value of C tofu was higher than those of other tofus. The hardness of tofu coagulated with pomegranate showed higher than that of coagulated G.D.L. The cohesiveness of P4, P5 showed higher than C tofu, but those of other tofus showed lower than C tofu. The springiness of tofu showed in the order of P4>P5>P3>P2>P1, gumminess of P5 tofu was highest. The Brittleness of tofu was increased as the proportion of pomegranate increased. The pH value of tofu coagulated with pomegranate increased during storage at $0^{\circ}C^$. During the storage period of tofu, pH and total acid showed a maximum change in C tofu. Generally the total plate counts of bacteria of all tofu increased during storage at $0^{\circ}C^$, and those of tofu with added pomegranate were shown to be lower than C tofu. The results of S.E.M(scanning electron microscopes), the lower hardness showed the more soft and the smaller particle, The particle of C tofu was small and uniformity but the size of P4, P5 tofu showed coarse. In the sensory evaluation of all tofu, sleekness, nutty, chewiness and smoothness, appearance and overall quality was the highest in C tofu. In the sensory evaluation of tofus coagulated with pomegranate. overall quality was the highest in P2.

MAXILLARY INCISOR CROWN-ROOT ANGLE(COLLUM ANGLE) IN DIFFERENT MALOCCLUSIONS (부정교합 분류에 따른 상악 중절치의 치관-치근 각도(Collum Angle)에 대한 연구)

  • Most commonly used axis for central incisors in lateral cephalometric radiographs is the line connecting root apex and incisor edge. However, crown axis and root axis do not always coincide in cases of malocclusion patients. The angle created by these axis are called the collum angle, which should be considered in orthodontic diagnosis and treatment. In this study, 31 Class I malocclusion, 30 Class II division 1 malocclusion, 31 Class II division 2 malocclusion, and 31 Class m malocclusion patients were selected and their collum angles were measured. Correlation between these angles and malocclusions was investigated, and the correlation analysis with other parameters in cephalometrics was done. The results were as follows ; 1. The mean collum angles according to the types of malocclusions are ; $3.11^{\circ}{\pm}3.54^{\circ}$ for Class I, $1.23^{\circ}{\pm}2.41^{\circ}$ for Class II division 1, $3.77^{\circ}{\pm}4.39^{\circ}$ for Class II division 2, and $3.90^{\circ}{\pm}4.08^{\circ}$ for Class III malocclusion. 2. Statistically significant differences in collum angles were noted between Class II division 1 group and Class II division 2 and Class III group. 3. Significant correlations were found between collum angles and other parameters used in cephalometrics, namely IMPA for Class I, Wits for Class II division 1, Overbite for Class II division 2 and for ClassIII.

Rheological Properties of Soymilk and Curd Prepared with Micronized Full-fat Soyflour (콩미세분말로 제조된 두유 및 전두부의 물성)

  • Rheological properties of micronized full-fat soyflour (MFS ) milk were determined according to solid content, heat-treatment and type of coagulants. Heat-treated MFS milk showed a pseudoplastic flow pattern. The consistency and flow index of heated MFS milk was greatly affected by increasing the concentration of MFS and/or soy protein isolate (SPI). Apparent viscosity of MFS milk was gradually decreased by heating below 6$0^{\circ}C$, but was drastically increased by raising temperature further. Addition of coagulants and SPI resulted in dropping the temperature that allows to increase apparent viscosity drastically. A coagulant for MFS tofu was formulated based on the gelling Property of a single coagulant. The textural properties of MFS tofu were improved using 7.1% total protein fortified with SPI.

A Study of Shelf-Life and Antimicrobial Activity on Putrefactive Microorganisms related to Soybean Curd of Persicaria hydropiper L. extracts (두부 부패 미생물에 대한 여뀌 추출물의 항균활성과 저장성 연구)

  • The objective of this study was to provide basic data that would help develop the natural preservatives that could replace them. This study examined antibacterial activity and preservative effects in soybean curd. When the concentration of Persicaria hydropiper L. was 1,000 ppm in the antibacterial activity by the paper disk law of three cultures(Bacillus subtilis KY-3, Bacillus sp. KY-7, Bacillus methylotrophicus KY-11) selected from 21 kinds of microorganism separated from tofu anaerobes, the clear zone (mm), which was similar to benzoic acid 0.1 M, the comparison group, was measured. The results were as follows. The result of impeding growth in liquid culture indicated considerable suppression of the growth of bacteria in the concentration of 800 ppm and 1,000 ppm respectively. In the measure of MIC, KY-3 and KY-7 were 0.06%, and KY-11 was 0.05%. For the changes in pH by concentration, three cultures and tofu anaerobes were not increased to $10^{5-6}/g$ in 1,000 ppm. In addition, in the search of total number was employed to find the preservative effects of tofu. Therefore, this study expect the Persicaria hydroper L. extract on preservative effects of tofu, which can be easily exposed to food poisoning bacteria in the food safety as well as improving the possibility of natural alternative preservatives.

  • To evaluate the possibility of using a by-products of skipjack canning as a food or feedstuff, the proximate composition, total and free amino acids, total lipid composition, and nucleotide related compounds were analyzed. The crude protein was highest in dark muscle, while lipid was highest in head. The important total amino acids in by-products were founded to be glycine, glutamic acid, alanine and histidine. The important free amino acids from dark muscle and head were taurine, histidine and anserine. The amounts of histidine, anserine and carnosine in dark muscle was higher than those of cooking drips, head, and raw vicera. The major fatty acids in by-products were palmitic, stearic, oleic and docosahexaenoic acid (DHA). The inosine and hypoxanthine were important nucleotide related compounds in by-products. The results suggests that by-products from skipjack can be used as food sources and feedstuffs especially for marine fish culture.
