가시오가피 추출물이 마크로파지 활성과 발효 중 젖산균 성장에 미치는 영향

  • 본 연구는 가시오가피의 마크로파지 활성 효과를 평가하고, 발효유에 첨가할 경우 젖산균 성장에 미치는 영향에 대하여 실시하였다. 가시오가피 열수 추출물이 NO 분비능이 높은 반면, 알콜 추출물은 $IL-1{\alpha}$$TNF-\alpha$ 분비능이 높았다. 첨가 농도 간에는 열수 추출물 및 알콜 추출물 공히 1,000 ${\mu}g/mL$ 첨가하였을 때 유의성 있게 증가하였다. 가시오가피 열수추출물이 젖산균에 미치는 영향을 조사한 결과, 가시오가피 첨가량이 증가할수록 젖산균 성장이 억제되었고, pH는 완만히 감소됨에 따라 발효유에 가시오가피 열수 추출물을 첨가할 경우 set type보다는 stirred type이나 drink type으로 해야 발효유 제조에 적합할 것으로 보인다.

  • 본 연구는 연맥 및 헤어리 베치를 사일리지로 이용하기 위하여 예건 및 젖산균 첨가에 따른 사일리지 품질에 미치는 영향을 구명코자 축산기술연구소 초지사료과에서 실시하였다. 젖산균 첨가량은 원물 100톤 기준으로 젖산균 1,135g에 물 100$\ell$ 혼합하여 24시간 배양하여 분무하였다. 연맥 및 헤어리 베치의 예취 직후 건물률이 각각 18.4%와 15.9%에서 3일 예건했을 경우 26.5%와 29.9%로 사일리지 조제에 좋은 조건이었다.(중략)

Microfloral Changes of the Lactic Acid Bacteria during Kimchi Fermentation and Identification of the Isolates (김치발효 중의 젖산균의 경시적 변화 및 분리 젖산균의 동정)

  • The microfloral changes of lactic acid bacteria during Kimchi fermentation at 5, 20 and $30^{\circ}C$ were compared by using various selective media, and the lactic acid bacterial strains were isolated and identified. The patterns of microfloral changes in each lactic acid bacterial group, leuconostoc, lactobacilli, streptococci and pediococci, were similar at different fermentation temperature, and the changes were accelerated by increased temperature. Among them, leuconostoc and lactobacilli showed high population, and at low temperature the number of leuconostoc were higher than at high temperature. Leuconostoc and streptococci were increased in number from the beginning, but they rapidly decreased after the optimum ripening period. Pediococci increased their number after streptococci, but they were rapidly decreased later. Lactobacilli were highly distributed throughout the whole fermentation period. However, they were slightly declined as the acidity increased. Those strains of leuconostoc, streptococci, pediococci and lactobacilli were identified as Luuconostoc mesenteroida subsp. musenteroides, Streptococcus fuecalzs, S, faeciurn, Pediococcus pentosaceus, Lactobacillus plarttarum, L. sake and L. brevis. Among lactobacilli, Id. sake and L. brmk, and L. plantarum were isolated mainly at the beginning and around the overripening period of fermentation, respectively.

Effect of lactic acid bacteria on changes of aflatoxin levels during kimchi fermentation (젖산균이 김치 발효 중 아플라톡신 함량 변화에 미치는 영향)

  • Red pepper powder sensitive to aflatoxins contamination is major ingredients of kimchi. This study was conducted to investigate the effect of lactic acid bacteria (LAB) on the changes in aflatoxin levels during kimchi fermentation. Baechu kimchi was contaminated with aflatoxins ($B_1$, $B_2$, $G_1$, and $G_2$) and inoculated with LAB (Lactobacillus plantarum and Leuconostoc mesenteroides), and the following characteristics were investigated for 8 weeks: pH, titratable acidity, salinity, microbial properties, and aflatoxin levels. The pH decreased rapidly during storage, and the titratable acidity was increased. The salinity of the samples was shown to increase from 2.30 to 2.40%. The total number of aerobic bacteria and lactic acid bacteria in kimchi inoculated with LAB was significantly higher than that of the others. Yeast and molds were detected at approximately 1~3 log CFU/g during storage. Coliforms were detected in the control after 4 weeks, whereas in other samples they were not detected until after 2 weeks. The aflatoxin levels reduced during kimchi fermentation. The average reduction rate of aflatoxin levels during kimchi fermentation was 8.39%, but in kimchi inoculated with Lac. plantarum and Leu. mesenteroides, the rate were 25.16 % and 27.86%, respectively. These results showed that aflatoxins can be removed by LAB during kimchi fermentation.

Effect of Addition of Lactic Acid Bacteria and Chlorella on Nutritive Values and Quality of Italian Ryegrass-Hairy Vetch Silage (젖산균과 클로렐라 첨가가 이탈리안라이그라스-헤어리베치 사일리지의 사료가치 및 품질에 미치는 영향)

  • This study was conducted to investigate the effect of the addition of lactic acid bacteria (LAB) and chlorella on the change of nutritive value, quality and microbes regarding the mixture silage of Italian ryegrass and hairy vetch (IRG-HV silage). The content of crude protein of IRG-HV silage in only the LAB treatment was not different as compared to the control. However, the content of crude protein significantly increased in the treatment of LAB with chlorella, compared to both the control and LAB treatments (p<0.05). Acid detergent fiber, neutral detergent fiber, total digestible nutrient and in vitro dry matter digestibility of IRG-Alfalfa silage were not significantly different in all treatments. Further, the pH of IRG-HV silage in only the LAB treatment was not different as compared to control, but decreased in both LAB and chlorella treatments (p<0.05). The content of lactic acid in the LAB treatment increased as compared to the control, and also significantly increased in the LAB treatment with chlorella (p<0.05). In addition, the number of LAB in LAB treatment increased as compared to the control, and significantly also increased in the LAB treatment with chlorella (p<0.05). Therefore, we suggest that IRG-HV silage improved with addition of both LAB and chlorella.

Effect of Addition of Lactic Acid Bacteria on Fermentation Quality of Miscanthus sinnensis (젖산균 첨가가 억새 사일리지의 사료가치 및 품질에 미치는 영향)

  • This study was conducted to investigate the effect of microbial inoculation as additive consisting of novel lactic acid bacteria on quality and fermentation characterization of Miscanthus sinnensis silages. The contents of crude protein, acid detergent fiber, neutral detergent fiber in treatments of additive of lactic acid bacteria (ALAB) inoculation had similar to control. pH of Miscanthus sinnensis (MS) silage in treatments of ALAB inoculation significantly decreased as compared to control (p<0.05). The content of lactic acid in in treatments of ALAB inoculation significantly increased (p<0.05), but the content of acetic acid in treatments of ALAB inoculation decreased. In addition, number of lactic acid bacteria in treatments of ALAB inoculation significantly increased as compared to control (p<0.05). Therefor, we suggest that MS silage improved by inoculation of additive consisting of novel lactic acid bacteria.

  • This study was conducted to investigate the effect of addition of lactic acid bacteria inoculants on quality of rye silage harvested at early heading stage. The nutritive values in lactic acid bacteria (LAB) inoculated group showed similar results to control. The pH of rye silage in LAB inoculation significantly decreased as compared to control (p<0.05). In addition, the content of lactic acid in LAB inoculation significantly increased (p<0.05), but the content of acetic acid in LAB treatments decreased. In addition, lactic acid bacterial counts in LAB inoculation significantly increased as compared to control (p<0.05). Therefore, we suggest that rye silage could be improved by LAB inoculation.

Effect of Lactic Acid Bacteria notated to Kimchi Fermentation on the Quality of Bread (김치숙성 관련 젖산균이 식빵의 품질에 미치는 영향)

  • The effects of lactic acid bacteria from kimchi fermentation, specifically Lactobacillus plantarum(LP) and Leuconostoc mesenteroides (LM) on the quality of the bread product was investigated. The two types of bacteria were cultivated in the sterilized radish juice used for kimchi fermentation. The concentration of bacteria was measured at 3.0$\times$10$^{9}$ ~3.3$\times$10$^{9}$ /mL. The bacteria were added at the ratios of 5% and 10% to a mixture with wheat flour before subsequent dough fermentation. An LM+LP treatment to the mixture was also made at 5% of LP and 5% of LM. The measured pH in the dough with LM+LP was the lowest among all of treatments. The products of 5% LM treatment showed the shortest fermentation time. Loaf production by volume was the highest from the 10% LM treatment. The % of moisture loss of the bread during the shelf-storage was less when treated with lactic acid bacteria than when left untreated. The least moisture loss was observed when the bread was treated with the LM+LP mixture. Hardness of the bread also decreased with the presence of lactic acid bacteria. The order of hardness was: control > 5% LP > LM+LP > 5% LM > 17% LM > 10% LP. Staling degree of the bread when treated with lactic acid bacteria was lower than that of the control. The least staling occurred when treated with LM 10% and LP 10%.

Study on Growth and Acid Production by Lactic Acid Bacteria in Soy Milk (두유(豆乳)에서 젖산균의 생육(生育)과 산생성(酸生成)에 관한 연구)

  • Four types of soy milk prepared from soybean, defatted soybean, soy protein concentrate (SPC) or soy protein isolate (SPI) were fermented with Lactobacillus acidophilus, L. bulgaricus, L. casei, Leuconostoc mesenteroides or Streptocroccus lactis. Growth and acid production by each organism in soy milks were investigated. Acid production by L. acidophilus was miximum in soy milk while acid production by other organisms was maximum in defatted soy milk. All the organisms produced least amount of acid in SPI-milk. Addition of yeast extract (0.5) to four types of soy milks stimulated acid production by lactic acid bacteria, particularly in case of L. acidophilus. Higher concentration of total solids in soy milks resulted in better growth and more acid production by L. acidophilus and L. bulgaricus.

  • This study investigated the effect of improved liver function in rats administered with ethanol by kimchi lactic acid bacteria with high GABA producing capacity. Sprague-Dawley male rats were divided into four groups; normal diet control (NC), ethanol control (EC), ethanol+Lactobacillus sp. OPK2-59 normal powder (EL1), ethanol+Lactobacillus sp. OPK2-59 GABA powder (EL2) and fed for 6 weeks. Analysis showed that there were no significant differences in body weight and feed consumption among the groups during the experimental period. Also, there were no significant differences in organ weight among the groups. The test results showed total cholesterol and triglyceride in the blood concentration that were increased by ethanol administration were significantly lowered in EL2 group. Liver triglyceride was also significantly lowered in the EL2 group compared with the EC group. Serum GOT and GPT, and liver GOT levels were significantly lower in the EL2 group compared with the EC group. Serum ethanol concentration was lower in the EL1 and EL2 groups compared with the EC group. SOD activities in liver were significantly increased in the EL1 and EL2 groups compared with the EC group. These results suggest that Lactobacillus sp. OPK2-59 GABA powder improves lipid and enzyme profiles of rats administered with ethanol.
