A Study on Isoflavones Intake From Soy Foods and Perimenstrual Symptoms (콩 이소플라본 식품 섭취와 월경 전후기 증상에 대한 조사연구)

  • Purpose: This study was conducted to explore the relationship between isoflavones intake from soy foods and perimenstrual symptoms among women. Methods: The research design was a cross sectional study. Subjects consisted of 245 women living in Korea, aged 19-49 years. The measurement tools were MDQ and FFQ. Results: Frequently consumed soy isoflavones foods were rice with soybeans, soybean paste stew, and soy paste with tofu. The amounts of soy isoflavones foods consumed in order from highest to lowest were rice with soybeans, soybean paste stew, seasoned soybean sprouts, and soy paste with tofu. Subjects were divided into three groups by isoflavones intake levels; the small intake group, moderate intake group, and large intake group. There were significant differences in some menstrual symptoms, and postmenstrual symptoms by isoflavones intake levels. In general, the moderate isoflavones intake group showed lower scores in some menstrual symptoms and postmenstrual periods compared to the small and large intake groups. Conclusions: These results suggest some positive health effects of isoflavones from soy foods on perimenstrual symptoms. More accurate, objective measurement needs to be applied and more investigation of soy isoflavones effects on many aspects of women's health need to be done in a future study.

  • In order to maximize the growth of Bifidobacterium lactis BL 740 and soy isoflavone agycones production, we investigated the optimization of a culture medium containing soy hypocotyls, which are the byproducts of the soy manufacturing process, and soy proteins. The ingredients of the medium containing soy materials (S-medium) were selected by fractional factorial design (FFD) and central composite design (CCD) within a desirable range. The FFD was applied by six factors: glucose, cellobiose, fructooligosaccharide, soy peptone, soy protein, and soy hypocotyl. Soy protein, soy peptone, and soy hypocotyl were found to be significant factors from the result of FFD for both the growth of B. lactis BL 740 and aglycone production. The CCD was then applied with three variables found from FFD at five levels each and the optimum values were determined for the three variables: soy peptone, soy protein, and soy hypocotyl. In the case of the growth of B. lactics BL740, the proposed optimal media contained 12.73 g/L of soy protein, 29.55 g/L of soy peptone, and 130.67 g/L of soy hypocotyl. To produce isoflavone aglycones, optimized media was composed of 2.06 g/L, soy protein, 1.25 g/L of soy peptone, and 60.02 g/L of soy hypocotyl.

Changes in Isoflavones and Germination Characteristics of Eunhakong (Glycine max) by Germinated under Dark Condition (암조건에서 발아시킨 은하콩의 발아특성 및 아이소플라본 함량 변화)

  • This study was designed to investigate changes in germination characteristics and color as well as the content of isoflavones of Eunhakong germinated under dark conditions. The wet weight of Enhakong was increased as germination progressed. It reached $299.7{\pm}15.0%$ at 60 h after the beginning of sprouting. The relative dry weight was consistently decreased as germination progressed, and it reached $65.8{\pm}8.2%$ at 60 h after the beginning of sprouting. The length of sprout was rapidly increased at the latter stage compared to the beginning of germination. Most soybean seeds were successfully germinated at 60 h after beginning of sprouting. The L value was considerably increased at the early stage of germination and it reached $63.4{\pm}0.7$ at 60 h. The a value was rapidly increased at the beginning of germination and decreased thereafter. The b value was increased at the beginning of germination and did not changed thereafter. It was confirmed that the total isoflavone content, in which the m-genistin was highest followed by daidzin, and than slightly decreased.

The Effects of Pelvic Muscle Exercise and Soybean Milk Supplement on Body Composition, Bone Mass, Total Estrogen and Progesterone before Postmenopausal of Middle Aged Women (골반근육강화운동과 두유섭취가 폐경 전 중년여성들의 신체조성, 골밀도, total estrogen 및 progesterone에 미치는 영향)

  • The purpose of this study was to develop a exercise program adapted from pelvic muscle exercise, and to analyze the effect of the exercise program on the physical fitness and the physiological parameters including bone density total estrogen and progesterone. The exercise program was composed of warming-up(10 min), main exercise(40 min) and warming-down(10 min). The 20 middle-aged women between 40 and 60 years old were divided into four group; the control group(6 women), the exercise group (7 women), and exercise group with soybean milk supplement(7 women). The exercise group with soybean milk group was applied three times a week and two packs of the soybean milk per day were given. The result of this study were as follows. In the percent fat change of within group, the exercise group showed significant decreased before than after the exercise. In the change of between group, the control group showed significant decreased than the exercise group with soybean milk group. In the body composition change of between group, the exercise group with soybean milk group showed significant decreased in body mass index than the control group. In the total estrogen change of within group, the pelvic muscle exercise with soybean milk group showed the decreased before than after the exercise.

Comparison of Biological Activity Between Soybean Pastes Adding Sword Bean and General Soybean Pastes (작두콩 첨가 된장과 일반 된장의 생리활성 특성 비교)

  • This study was carried out to analyse the biological activity in soybean pastes with the sword beans and general soybean pastes. The electron donating activity of soybean pastes with the sword beans(J2, J4) was higher than other soybean pastes with value of $81.5{\pm}2.2%$ and $88.3{\pm}0.7%$, respectively. And the content of total phenol compounds was higher in J2 and J4 compared to the others with value of $1773.8{\pm}2.9\;mg/kg$ and $1785.7{\pm}3.9\;mg/kg$ respectively. ACE inhibitory effect was higher in J2 and J4 than other soybean pastes with value of $63.1{\pm}1.0%$, $62.1{\pm}1.4%$, respectively. And aglycone type(daidzein, genistein) isoflavone content was higher than glucoside type(daidzin, genistin). But tyrosinase inhibitory effect was not different among test samples. From the results, soybean pastes with the sword beans(J2, J4) have higher anti-oxidant activity and ACE inhibitory effect than other soybean pastes, therefore, it may have potential to prevent hypertension.

The Phytoestrogenic Effect of Daidzein in Human Dermal Fibroblasts (피부 섬유아세포에서 다이드제인의 파이토에스트로겐 효과)

  • Estrogen deficiency results in a reduction of skin quality and function in postmenopausal women. Over the past decade, many studies have supported that estrogen provides anti-aging effects as a result of the ability of estrogen to prevent skin collagen decline, restore skin elasticity, and increase skin hydration in postmenopausal women skin. Due to their structural similarity with estrogen, isoflavones have been called phytoestrogens. Photoprotective effects of isoflavones are well established while their estrogenic-like activities are not fully understood in human skin. In this study, we investigated whether daidzein, an effective isoflavone, has phytoestrogenic activity and induces transcriptional change of extracellular matrix components in dermal fibroblasts. We examined the luciferase activity of daidzein and ${\beta}$-estradiol using transiently transfected NIH3T3-ERE cells. The estrogenic receptor-dependent transcriptional activity was increased in a dose-dependent manner when treated with daidzein, with a maximum of 2.5-fold induction at $10{\mu}g/mL$ of daidzein compared with non-treated control. In addition, daidzein significantly in creased the expressions of collagen type I, collagen type IV, elastin, and fibrillin-1 in human dermal fibroblasts. By comparing with the effects of ${\beta}$-estradiol through out all the experiments, we confirmed that daidzein had estrogenic activity and function in fibroblasts. These results suggest that daidzein-based application, having both photoprotective and phytoestrogenic effects, may be a powerful approach for skin anti-aging of postmenopausal women.

Antioxidant Activity of Soy-sprout Extracts Prepared by Enzyme and Ultra High Pressure (효소 처리와 초고압 처리에 의한 콩나물 추출물의 항산화 활성)

  • We investigated the antioxidant activities and effects of soy-sprout extracts (SE) against $H_2O_2$-induced oxidative stress in HepG2 cells. The major free amino acids were asparagine, valine, pheylalanine, histidine, isoleucine, and leucine in SE. Both soy-spout extract by enzyme (SEE) and soy-spout extract by ultra high pressure (SEP) showed higher contents compared with soy-sprout water extract (SEW). The total polyphenol and isoflavone contents were highest in SEE. SEE had the highest DPPH and ABTS radical scavenging activities as well. To determine the effects of SE on $H_2O_2$-induced oxidative damage, cell viability was measured using XTT assay. Pre-treatment with SEE and SEP significantly increased cell viability compared with $H_2O_2$-treated control cells by 29% and 32%, respectively. These results indicate that SEE and SEP possess antioxidant activity.
