The association between COVID-19 and changes in food consumption in Korea: analyzing the microdata of household income and expenditure from Statistics Korea 2019-2022 (코로나19와 한국 식품 소비 변화의 관계: 2019-2022년 통계청 소비자 가계동향조사를 활용하여)

  • Purpose: The main goal of this study was to identify the impact of coronavirus disease 2019 (COVID-19) on grocery purchases (i.e., fresh and processed foods by grain, vegetable, fruit, seafood, and meat categories) in Korea. To understand the specific impact of COVID-19, the study period was divided into 3 segments: PRE-COVID-19, INTER-COVID-19, and POST-COVID-19. Methods: We used the microdata of household income and expenditure from Statistics Korea (KOSTAT), representing households across the country. The data comprised monthly grocery expenditure data from January 2019 to September 2022. First, we compared the PRE-COVID-19 period to INTER-COVID-19 and then INTER-COVID-19 to POST-COVID-19 and used multiple regression analysis. The covariates used were the gender and age of the head of the household, the household's monthly income, the number of family members, the price index, and the month (dummy variable). Results: The expenditures on all grocery categories except fresh fruit increased from PRE-COVID-19 to INTER-COVID-19. From INTER-COVID-19 to POST-COVID-19, almost all grocery category spending declined, with processed meat being the only exception. Most purchases of protein sources, increased during INTER-COVID-19 compared to PRE-COVID-19, while ham/sausage/bacon for meat protein, fish cakes and canned seafood for seafood protein, and soy milk for plant-based protein did not decrease during POST-COVID-19 compared to INTER-COVID-19. Conclusion: These results show an overall increase in in-home grocery expenditure during COVID-19 due to an increase in eating at home, followed by a decrease in this expenditure in the POST-COVID-19 period. Among the trends, the protein and highly processed convenience food categories did not see a decline in spending during the POST-COVID-19 period, which is a reflection of the preferences of consumers in the post-COVID-19 period.

Measuring the Effect of Disgust with Meat Mediating the Factors Influencing Meat Consumption (육류 소비에 영향을 미치는 요인들을 매개하는 육류 혐오감의 효과 평가)

  • The purpose of this study was to measure the effect of disgust with meat mediating the factors influencing meat consumption. Structural equation model was used to measure the causal relationships among constructs. The structural analysis Result of the data indicated excellent model fit. The effects of moral concerns for animals, meat texture and satiety from meat on disgust with meat were statistically significant. The effects of color in meat and negative body esteem on disgust with meat were not statistically significant. As expected, disgust with meat had a significant effect on meat consumption. Moreover, disgust with meat played a mediating role in the relationship between moral concerns for animals and meat consumption. Disgust with meat played a mediating role in the relationship between satiety from meat and meat consumption. Disgust with meat did not play a mediating role in the relationship between color in meat and meat consumption. Disgust with meat did not play a mediating role in the relationship between body esteem and meat consumption. In conclusion, based on structural analysis, a model was proposed of interrelations among constructs. It should be noted that the original model was modified and should, preferably, be validated in future research.

Identification of Fungal Strains Isolated from Salami Casing (살라미 외피로부터 분리한 곰팡이의 동정)

  • The fungi play an important role in smell and taste during the fermentation of salami. In this study, the fungi from the salami casing during the fermentation process in Korea were isolated. They were examined by morphological and molecular methods and were identified as Aspergillus cibarius, Penicillium echinulatum, Cladosporium sphaerospermum. Of these, A. cibarius formed white or light green conidial heads on salami casing and it was widely distributed through almost whole casing. P. echinulatum occurred sparsely on the casing of the salami and formed white masses. C. sphaerospermum occurred rarely and formed black spots. It is considered that additional studies on their roles on salami are required.

  • By 2050, 70% more food will be needed to fulfill the demands of a growing population. Among the solutions, cultured meat or clean meat is presented as a sustainable alternative for consumers. Scientists have begun to leverage knowledge and tools accumulated in the fields of stem cell and tissue engineering in efforts aimed at the development of cell-based meat. Cultured meat has to recreate the complex structure of livestock muscles with a few cells. Cells start to divide after they are cultured in a culture medium, which provides nutrients, hormones, and growth factors. An initial problem with this type of culture is the serum used, as in vitro meat aims to be slaughter free. Thus, it is contradictory to use a medium made from the blood of dead calves. The serum is expensive and affects to a large extent the production cost of the meat. A positive aspect related to the safety of cultured meat is that it is not produced from animals raised in confined spaces and slaughtered in inhumane conditions. Thus, the risk of an outbreak is eliminated, and there is no need for vaccinations and animal welfare issues. The production of cultured meat is presented as environmentally friendly, as it is supposed to produce less greenhouse gas, consume less water, and use less land in comparison to conventional meat production.

Measuring the Causal Relationships among Affective Belief, Ambivalence, Subjective Norm, Attitude, Intention to Consume and Meat Consumption (감정적 신념, 양면 가치, 주관적 규범, 태도, 소비 의도와 육류 소비의 인과 관계 평가)

  • The purpose of this study was to measure the causal relationships among affective belief, ambivalence, subjective norm, attitude, intention to consume and meat consumption. A total of 318 questionnaires were completed. The structural equation model was used to measure the causal effects among constructs. The results demonstrated that the confirmatory factor analysis model provided excellent model fit. The proposed model yielded a significantly better fit to the data than the baseline model. The effects of affective belief, ambivalence and subjective norm on attitude were statistically significant. The effect of subjective norm on intention was statistically significant. As expected, subjective norm and attitude had significant effects on meat consumption. Moreover, affective belief, ambivalence and subjective norm had indirect influences on meat consumption. Subjective norm also had an indirect influence on intention. The overall findings offered strong empirical support for the intuitive notion that improving the level of attitude toward eating meat can increase favorable intentions and decrease unfavorable intentions to reduce future meat consumption.

Econometric Analysis on Factors of Food Demand in the Household : Comparative Study between Korea and Japan (가계 식품수요 요인의 계량분석 - 한국과 일본의 비교 -)

  • This report gave analysis of food demand both in Korea and Japan through introducing the concept of cohort analysis to the conventional demand model. This research was done to clarify the factors which determine food demand of the household. The traits of the new model for demand analysis are to consider and quantify those effects on food demand not only of economic factors such as expenditure and price but also of non-economic factors such as the age and birth cohort of the householder. The results of the analysis can be summarized as follows: 1) The comparison of the item-wise elasticities of food demand demonstrates that the expenditure elasticity is higher in Korea than in Japan and that the expenditure elasticity is -0.1 for cereal and more than 1 for eating-out in both countries. In respect to price elasticity, the absolute values of all the items except alcohol and cooked food are higher in the Korea than in Japan, and especially the price elasticities of beverages, dairy products and fruit are predominantly higher in Japan. In this way, both expenditure and price elasticities of a large number of items are higher in Korea than in Japan, which may be explained from the fact that the level of expenditure is higher in Japan than in Korea. 2) In both of Korea and Japan, as the householder grows older, the expenditure for each item increases and the composition of expenditure changes in such a way that these moves may be regarded as due to the age effect. However, there are both similarities and differences in the details of such moves between Korea and Japan. Those two countries have this trait in common that the young age groups of the householder spend more on dairy products and middle age groups spend more on cake than other age groups. In the Korea, however, there can be seen a certain trend that higher age groups spend more on a large number of items, reflecting the fact that there are more two-generation families in higher age groups. Japan differs from Korea in that expenditure in Japan is diversified, depending upon the age group. For example, in Japan, middle age groups spend more on cake, cereal, high-caloric food like meat and eating-out while older age groups spend more for Japanese-style food like fish/shellfish and vegetable/seaweed, and cooked food. 3) The effect of the birth cohort effect was also demonstrated. The birth cohort effect was introduced under the supposition that the food circumstances under which the householder was born and brought up would determine the current expenditure. Thus, the following was made clear: older generations in both countries placed more emphasis upon stable food in their composition of food consumption; the share of livestock products, oil/fats and externalized food was higher in the food composition of younger generation; differences in food composition among generations were extremely large in Korea while they were relatively small in Japan; and Westernization and externalization of diet made rapid increases simultaneously with generation changes in Korea while they made any gradual increases in Japan during the same time period. 4) The four major factors which impact the long-term change of food demand of the household are expenditure, price, the age of the householder, and the birth cohort of the householder. Investigations were made as to which factor had the largest impact. As a result, it was found that the price effect was the smallest in both countries, and that the relative importance of the factor-by-factor effects differed among the two countries: in Korea the expenditure effect was greater than the effects of age and birth cohort while in Japan the effects of non-economic factors such as the age and birth cohort of householder were greater than those of economic factors such as expenditures.

  • 2050년에는 세계인구가 현재의 두 배가 될 것이라고 한다. 지금도 매년 7천만명의 인구가 주로 중국, 브라질, 인도 등 몇몇 지역에서 집중적으로 증가되고 있다. 특히 이들 인구증가지역의 식품소비형태가 곡물과 채소위주의 녹말전분에서 육류와 우유 등 단백질로 바뀌고 있다는 점이 문제이다. 그렇다면 더 많은 우유와 고기가 필요할 것이 분명할 것이고 온실가스 문제도 더욱 문제가 될 것도 분명하다. 가뜩이나 축산업과 낙농업이 환경오염과 지구온난화의 주범이라는 부정적인 시각이 팽배한 이 시점에서 위와 같은 글로벌 전망은 앞으로 낙농과 축산업계에 몰아칠 환경관련 규제가 더욱 심각해 질 것이라는 우려를 낳게 한다. 우리에겐 아직 생소해 보이지만 이미 IDF와 주요 낙농국에서는 지구온난화와 환경현안에 대한 논의가 한창이다. 이번 호에서는 지구온난화 등 낙농업계의 환경현안에 대한 최근 동향과 IDF의 움직임을 살펴보고자 한다.

  • 쌀은 우리 국민의 주식이자 단일 작물로써 재배면적이 가장 많은 105-110만㏊ 수준에 연간 생산량도 500만톤 이상을 꾸준히 유지하고 있는 중요한 식량작물이자 농가의 주 소득원이다. 그러나 이렇게 쌀의 생산량은 꾸준한데 비해 국민의 식생활이 점차 인스턴트 화되고 육류소비가 증가하면서 연간 쌀 소비량이 1990년 119.6kg에서 2002년 87.0kg으로 급격히 감소추세를 보임으로써 2002년도 기준으로 약 1,190만석의 재고가 발생하고 있다. 더욱이 WTO출범이후 MMA 물량이 2002년 125만석에 이르렀고, 2005년 이후 더욱 증가 할 것으로 예상되고 있어 국내 쌀 시장은 이제 과잉공급시대에 직면하고 있다.   • 최근 건강에 대한 인지도가 높아감에 따라 농산물의 안정성 요구도가 증가되고 있으며 환경농업의 필요성이 크게 대두되고 있고, 서구식 식문화의 급속한 도입으로 패스트푸드 식품과 육류 소비량의 증가로 신선채소의 소비가 증가되고 있는데 이에 따른 생산비 절감과 안정생산 기술이 요구되고 있다. 따라서 양액 공급에 따른 전력 등 에너지가 필요치 않고 일종의 폐쇄식 수경재배 방법으로써 작물이 주위 환경에 따라 양수분 흡수량이 다르므로 모세관 현상으로 배지내의 수분이 작물의 흡수한 만큼 공급되어 이용되고 배액이 없으므로 공해의 염려가 없고 고품질 채소의 저비용 생산이 가능한 새로운 모관양액공급시스템을 이용하여 양액공급시스템의 효율성을 검정하고 네트멜론과 몇 가지 엽채소의 생육특성을 구명코자 수행하였다.   • 들깨(Perilla frutescens var. japonica)는 꿀풀과(Lamiaceae)에 속하는 1년생초로써 키는 60-90cm 정도이며, 줄기는 네모지고 곧게 서며 긴 털이 있다. 잎은 마주나고 달걀 모양원형으로 뾰족하며 밑부분은 둥글다. 잎은 길이 7-12cm, 나비 5-8cm로 톱니가 있고 앞면은 녹색이지만 뒷면에는 자줏빛이 돈다. 들깨는 식용계란, 돼지고기, 양식어류 등의 생산을 위한 기능성 보조식품의 사료와 한방에서는 만성위염, 기침, 위산과다 등의 약용으로도 쓰이고 있다. 또한 들깻잎은 특유의 향취로 인해 육류나 생선회, 영양탕 등의 음식점에서 상추와 함께 대량소비가 되고 있다.
