가공반찬류의 저장성 향상을 위한 천연 항균복합제재의 처리효과

  • 식품조리 및 가공은 만들어진 제품의 저장성을 전제로 해야 하기 때문에 식품의 변화 혹은 변질에 깊은 이해를 바탕으로 모든 처리와 가공 방법이 검토되어야 한다. 식품의 변질이나 부패는 미생물 작용에 의한 변질이 그대부분을 차지하고 있으며 미생물학적 변질을 방지하기 위해서 화학적 합성보존 제가 상업적으로 사용되고 있으나 최근 소비자의 건강 지향적 욕구가 증대됨에 따라 인공합성품의 기피현상이 두드러지고 있다. 따라서 천연 항균물질의 개발과 이용은 인공 합성보존제의 대처라는 의미와 소비자기피현상을 유발시키지 않으면서 각종 가공식품의 저장성 향상 및 저온 유통식품의 안정성확보라는 견지에서 그 중요성이 있다. 본 실험에서는 식품의 미생물작용에 의한 변질의 저해 효과가 뛰어난 식물성천연항균제품(Botanical antimicrobial agents-Citrus product : 이하 BAAC라 칭함)에 천연보조제(Ginseng extract, Aloe, 매실추출물)를 첨가하여 Paper disk법에 의한 항균성 검사를 실시한 결과 Ginseng extract를 첨가한 경우 생육저해환이 가장 크고 뚜렷하게 나타났다. 따라서 BAAC에 보조제 (Ginseng extract)를 첨가하여 제조 된 천연 항균복합제재(이하 BAAG라 칭함)를 가공 반찬류인 마늘종 무침과 돈육장조림에 첨가하여 처리한 후 꺼내어 상온에서 저장하면서 주사전자현미경 관찰, 대장균수, 총균수의 변화, 외관상의 변화에 미치는 영향을 무처리 대조구와 비교하면서 조사하였다. 주사전자현미경 촬영사진의 결과 분석을 통하여 BAAG를 처리한 균체 세포는 세포막 및 세포벽 기능이 파괴되어 세포내용물이 균체외부로 유출되어 균체의 생육이 억제되며 성장을 저해 또는 사멸시키는 것으로 나타났다. 대장균수는 모든 처리구에서 BAAG의 첨가에 의해 성장이 억제되었으며 농도가 증가시킬수록 균증식 억제 효과가 뚜렷하였으며, 총균수도 압도적으로 낮은 값을 보여주었다. 외관상의 변화와 상품 가치를 측정한 결과는 무늘 종 무침과 돈육장조림의 대조구에서는 4일 경과후 강한 부패취와 아울러, 표피의 갈변정도가 심하되어 관능적으로 부패상태를 인지할 수 있었으며 7일경과 후부터 점질성 갈변물질이 생성되어 상품가치가 크게 떨어진 상태였다. 이와 같은 결과로 볼 때, BAAG의 처리는 BAAC의 경우보다 가격은 저렴하면서도 항균력은 우수한 천연 항균복합제재로써 가공 반찬류의 저장성을 최대한 연장 할 수 있음을 확인 하였고, 반찬류뿐만 아니라 여러 식품군에 다양하게 적용가능 할 것으로 기대된다.

Distribution of Organic Acids in Traditional and Modified Fermented Foods (재래식과 개량식 발효식품의 유기산 분포)

  • The contents of organic acids in traditional and modified fermented foods were compared, and propionic acid produced during fermentation was investigated. Organic acids in traditional and modified soy sauces were lactic acid, acetic acid, citric acid, formic acid, succinic acid and oxalic acid while propionic acid was found in traditional soy sauces only. Similarly, lactic acid, acetic acid, citric acid, oxalic acid, formic acid, succinic acid and propionic acid were found in traditional and modified soy paste. The organic acids in traditional and modified kochujang were citric acid, acetic acid, formic acid, lactic acid, malic acid, oxalic acid and succinic acid while propionic acid was not found in modified kochujang. The major organic acid in persimmon and commercial (fermented) vinegars was acetic acid. Propionic acid was uniquely found in persimmon vinegars. Also, content of tannic acid in persimmon vinegars was 366.9 ∼ 909.8 mg%.

Biofilm Formation of Food-borne Pathogens under Stresses of Food Preservation (식품 보존 스트레스에서의 식중독세균의 생체막 생성)

  • Most bacteria form biofilm as self-defence system, making efficient food sanitization, preservation, and instrument washing more difficult. Biofilm formation of Salmonella, E. coli, B. cereus, and S. aureus was observed during 24 hr food preservations by performing microtiter plate and glass wool assays. Most cells formed biofilm and attached onto glass wool. When biofilm formation and injury were analyzed on the microtiter plate, 10 and 20% acid-injured E. coli and S. aureus, respectively, 30-50% cold temperature $(4^{\circ}C)-injured$ B. cereus and E. coli, and 30-55% 6% sodium chloride solution-injured Salmonella showed significant biofilm formation. Results indicate biofilm formation level differed within species depending on type of stress.

  • The cytotoxicity that chemical disinfectants of K products and natural disinfectants of naringin & chitosan well-known preservative, have on endothelium and epithelium of rabbit's cornea were obseved by scanning electron microscope. The main component of naringin is grapefruit seed extract, which is one of the flavonoid widely recognized as natural antioxidants and used as preserved food and cosmetics. The chitosan also wildly distributed epithelium of crustacea, epidermis of insects, mould, fungi and so on. It is no harm of cytotoxicity of human body and recognized of antibacterial for various of bacteria. This study was performed to examine the cytotoxicity of natural and chemical preservative.

A Study on Foodstuff Preservation of Antioxidant Beads Using Oyster Shell and Seaweed Pulp (굴 패각과 해조펄프를 이용한 항산화 비드의 식품 보존에 관한 연구)

  • The objective of this research is to reuse and recycle the oyster shell wastes as a useful of antioxidant beads for foodstuff preservation through the treatment of oyster shell and seaweed pulp. This research is divided into two parts. In the first, designing and preparation of pilot scale condition was accomplished. The second part dealt with establishing the optimized manufacturing condition for [A],[B],[C-a],[C-b] compounds, and analyzing these products. The pilot scale preparation was composed of modify synthesized seaweed pulp / Cl-starch and it's various bead form were prepared with various weight ratios using polar protic solvents. In addition, with increased seaweed pulp content in the blends, antibacterial property values of seaweed pulp/Ag-oyster shell blend was decreased, however, the antioxidant and bead's solidity properties increased.

Assessment of Estimated Daily Intakes for Preservatives from Survey Data (설문조사법을 통한 보존료의 일일 추정섭취량 평가)

  • This study has been carried out to estimate the average daily intakes of preservatives commonly used in Korea. The survey method, which is specific approach that can be applicable for Koreans has been proposed to estimate the daily intakes. The ADIS of sorbates, benzoates, and esters of p-hydroxybenzoic acid were less than 1% and judged to be safe. The EDIs of sorbates, benzoates, and esters of p-hydroxybenzoic acid were 0.39, 0.29, and 0.04 mg/kg bw/day respectively. And these data were compared with existing data. In case with sorbates, the EDI of survey data was higher than that of analytical data but much lower than that of maximum permitted level data. Also, the EDIs of benzoates and esters of p-hydroxybenzoic acid showed to be the same results. In conclusion, the EDIs of survey data lie between maximum Permitted level data and analytical data of Preservatives. The survey method could be considered as the possible alternative of refined method.
