Effect of Sorghum Flour Addition on the Quality Characteristics of Muffin (수수가루 첨가가 머핀의 품질특성에 미치는 영향)

  • Effects of addition of sorghum flour on the quality properties of wheat flour muffin were investigated. Initial pasting temperature and peak viscosity on amylograph increased with the concentrations of sorghum flour added, but final viscosity decreased. The lightness values decreased with the increase of sorghum flour contents in muffin, but redness values increased. The sorghum flour addition at 10% level did not affect the volume of muffin, but the volume of muffin containing 30% sorghum flour was significantly decreased compared to that of control. Most of texture parameters such as hardness, adhesiveness, gumminess and chewiness were not affected by the addition of sorghum flour up to 20% level. As results of sensory evaluation, appearance and flavor of muffins by addition of sorghum flour differed significantly from the control, but there were no differences among the muffins containing sorghum flour at 10, 20, and 30% levels. Texture of 10% sorghum flour muffin was similar to that of the control, but there was a significant difference in texture by 30% sorghum flour addition. However, taste and overall acceptability did not differ significantly up to 30% level.

Impact of Milling Method on Quality Parameters of Waxy Sorghum Flour (제분방법에 따른 찰수수 가루의 품질 특성)

  • The objective of this research was to investigate physicochemical properties of waxy sorghum flours by different milling methods (pin mill and ultra fine mill). Four different sorghum flours were used for the experiments ; PWS (pin milled whole sorghum flour), PS (pin milled sorghum flour without bran), UFWS (ultra fine milled whole sorghum flour), UFS (ultra fine milled sorghum flour without bran). The contents of crude ash and total dietary fiber were the highest in PWS. Amylose content of pin milled sorghum flour was higher than that of ultra fine milled flour. The mean particle size of pin milled flours was six times lager than ultra fine milled flours. The L values of UFS and UFWS were higher than those of PS and PWS, whereas a and b values were higher in PWS. The water binding capacity was highest in UFWS, and solubility was higher in PS and UFS. Swelling power of flours was highest in UFS. The damaged starch content was higher in PS and UFS, which means damaged starch of sorghum flours significantly affected by polishing than milling method. The pasting properties were higher in the pin milled flours. Initial pasting temperature of pin milled flour was ranging from 70.5 to $73.1^{\circ}C$, which are higher than ultra fine milled flour ($68.6^{\circ}C$). The contents of total polyphenol were higher in PWS and UFWS than those of PS and UFS, there was no difference between the two milling methods. The results of this study indicate that physicochemical properties of sorghum flour were affected by milling methods as well as bran.

Effects of Quality Characteristics and Antioxidant Activities of Yukwa Added with 'Donganme' Sorghum Bran Powder and Extracts (수수겨 분말 및 추출물 첨가가 유과의 품질특성 및 항산화활성에 미치는 영향)

  • This study investigated the quality characteristics and antioxidant activities of Yukwa added with 'Donganme' sorghum bran powder and its extracts. 'Donganme' variety has the highest antioxidant activity among sorghum varieties in Korea. The added contents of sorghum bran to Yukwa were 1% and 5% bran powder of 'Donganme' (BPD 1% and 5%) as well as 0.1%, 0.5%, and 1% bran powder extracts of 'Donganme' (BED 0.1%, 0.5%, and 1%). The contents of protein, ash, and minerals of BPD 1% and 5% added Yukwa were higher compared to non-added and BED 0.1%, 0.5%, and 1% added Yukwa. The contents of flavonoids of BPD 1% and 5% as well as BED 0.1%, 0.5%, and 1% added Yukwa increased by 1.6~17.1 fold, and DPPH and ABTS radical scavenging activities increased by 1.8~7.4 fold and 2.3~13.6 fold, respectively, compared to non-added Yukwa. Yukwa added with BED 1% showed the highest antioxidant activity among the treatments, followed by BPD 5%, BED 0.5%, BPD 1%, and BED 0.1% added Yukwa. The expansion ratios of BPD 5% and BED 1% added Yukwa remarkably decreased compared to those of non-added and other treatments. The sensory evaluation values corroborated the results of the Yukwa expansion ratio. The acid values of Yukwa under high temperature storage ($60{\pm}1^{\circ}C$) increased rapidly after 20 days in all treatments, and those of BPD 5% and 1% added Yukwa increased slowly compared to non-added Yukwa. ABTS radical scavenging activities of Yukwa showed little change during storage in all treatments. As a results, addition of sorghum bran below BPD 1% and BED 0.5% was suitable for antioxidant activity, quality characteristics and sensory evaluation.

Comparative Study of Electron Donating Ability, Reducing Power, Antimicrobial Activity and Inhibition of ${\alpha}$-glucosidase by Sorghum bicolor Extracts (국내산 수수(Sorghum bicolor) 품종에 따른 전자공여능, 환원력, 항균활성 및 ${\alpha}$-glucosidase 저해활성의 비교)

  • Electron donating ability (EDA), reducing power, total phenolic contents, total flavonoid contents, antimicrobial activity, and ${\alpha}$-glucosidase inhibitory effects of twenty-two sorghum varieties were examined using ethanol extracts (70%, v/v). The electron donationg abilities (EDA) of Mesusu and Bulgeunjangmoksusu (94% at 10 ${\mu}g$/mL) indicated higher antioxidant activity compared to those of other varieties and standard antioxidants such as BHT (13%) and BHA (74%). The reducing power of Mesusu ($OD_{700}$=0.71) suggested higher antioxidant activity, which was dependent on sample concentration. Bitjarususu showed the highest content of total phenolics (22.9 mg GAE/g); however, extracts from Heuinsusu exhibited the lowest content of total phenolics (16.4 mg GAE/g). Jangmoksusu showed the highest total flavonolic contents (3.5 mg QE/g), and Sigyeongsusu and Chal (GS) susu displayed the most antibacterial activity (MIC=8 ${\mu}g$/mL) against Escherichia coli. Extracts of Bulgeunjangmoksusu, Moktaksusu, and Ginjangmoksusu showed the highest ${\alpha}$-glucosidase inhibitory effect (98%) at the concentration of 5 ${\mu}g$/mL.

Viscometric Properties of Waxy Starches (찰전분류의 이화학적 특성(점성)비교)

  • The viscometric properties of six kinds of waxy starches of Olchal and Hankang(waxy rice), Chalborie (waxy barley), Yullmoo (waxy Job's tears), Chajoe (waxy foxtail millet), Chalsusu (waxy great millet) and Chalocsusu (waxy corn) were investigated. The increase in optical transmittance of 0.1% starch suspensions occurred at $55^{\circ}C$ for Hankang, $60^{\circ}C$ for Olchal, Chalborie, Chajoe and Yullmoo and $65^{\circ}C$ for Chalsusu and Chalocsusu, and further inrreased $70^{\circ}C$ for Hankang and Olchal, $75^{\circ}C$ for Chajoe, Chalsusu, Chalocsusu and Yullmoo and above $85^{\circ}C$ for chalborie. Amylogram on 5%, starch suspensions showed that gelatinization temperature and maximum peak height were 850 B.U. at $62^{\circ}C$ for Hankang, $65^{\circ}C$ and 980 B.U. for Olchae, $64^{\circ}C$ and 1,080 B.U. for Chalborie, and 1,410 B.U. at $69^{\circ}C$ for Yullmoo, and 1,280 B.U. at $71^{\circ}C$ for Chajoe, and 1,260 B.U. at $71^{\circ}C$for Chalsusu and 1,420 B.U. at $70^{\circ}C$ for Chalocsusu. Swelling power of starches was $38{\sim}55$, and Hankang, Olchal, Chajoe, Chalocsusu and Yullmoo starches had higher swelling power than Chalsusu and Chalborie starches. Intrinsic viscosity of them was $1.43{\sim}1.75$ and hardness of them highly relevant to the gelatinization properties.

부로일러사료에 있어서 수수와 옥수수의 대체사양시험

  • 우리나라 축산업은 과거 10년동안에 농업의 다른 어떤 분야보다도 크게 발전하였다. 그중에서도 양계산업은 사양 규모나 수수가 급격히 증가하여 이에 필요한 사료량 또한 급격히 증가하게 되었다. 가축사료중 곡류를 비롯한 농후사료는 주로 수입에 의존하고 있는 실정으로서 1967년도에는 사료 도입량이 45,300M/T에 불과하였으나 1971년도에는 464,000M/T으로 늘어났고 이에 필요한 외화도 322만$\$$에서 3,700만$\$$로 증가되고 있다. 이러한 현실에 비추어 수입의 주종을 이루고 있는 곡류는 옥수수 단일품목에 한하고 있으나 사료가격의 저렴화와 적기 확보를 위하여는 수입 곡류품목의 다양화가 필요하다고 인정되므로 가축사료에 있어서 수수의 사료적 가치를 옥수수와 비교 검토하기 위하여 다음과 같은 시험목적을 가지고 본연구를 착수하게 되었다. (1) 곡류의 상호 대체 이용이 가능시되고 있는 수수로서 옥수수의 일부 대체 시험을 실시하여 배합사료중 수수의 적정사용수준과 경제적 유의성을 규명하고, (2) 수수의 수입가격이 옥수수 수입보다 유리할 때 옥수수의 일부를 수수 대체수입하여 외화의 절약은 물론 사료가격의 적정화를 기하고자 함.

Growth and Morphological Characteristics of Introduced Sorghum Germplasm (도입 수수 유전자원의 생육 및 형태적 특성)

  • This study was conducted to obtain fundamental information on forage sorghum breeding in forage crop field of Livestock Experiment Station at Suwon from 1986 to 1991. The charcterization of sorghum germplasm was performed through 1986 to 1987, and after parental lines were selected from diverse sorghum germplasm on the basis of flowering date, plant height and several morphological characters for forage sorghum Fl hybrids. The range of variation of 50% flowering date and plant height were greater in order of forage sorghum sudangrass and male sterile line of grain sorghum. The average flowering date was earlier in sudangrass and male sterile line of grain sorghum than forage sorghum lines from the tested sorghum germplasms. And the average plant height was tall in order of forage sorghum, sudangrass and male sterile lines of grain sorghum. There were remarkable morphological variations between sudangrass lines and male sterile lines of grain sorghum such as plant color, leaf midrib color, glume color, seed coat color, head compactness and shape, awns, grain covering and 100 seed weight.

Effects of Ice Cooling Storage on Chemical Components in Vegetable Corn (풋옥수수의 얼음 저장이 종실성분 변화에 미치는 영향)

  • This experiment was carried out to obtain the basic information necessary to establish suitable postharvest handling techniques and to keep high quality of the sweet(Danok 2), supersweet(Cooktail 86) and waxy(Chalok 1) corn which are mainly consumed as vegetable in Korea. Vegetable corns were cooled with ice fragments in the insulation box immediately after harvest and stored in low temperature warehouse at 0 to 2$^{\circ}C$. During the 15 days short-term storage, changes of chemical components were compared with those of uncooled corns. The losses of moisture in kernels were as high as 7.4 to 24.4% in uncooled corns while those of ice cooled corns increased 0.4 to 0.5% of their weight. The ratio of pericarp and alcohol insoluble solid(AIS) content increased as the storage days prolonged in all treatments but increasing rates were much higher in uncooled samples. On the other hand, the total sugar loss during storage was the least in supersweet corn when they were cooled with ice fragments in insulation box. After 5 days storage, the ice cooled samples showed the highest free amino acid contents compare to those of uncooled and stored at room temperature (25 to 3$0^{\circ}C$) or low temperature warehouse, and ${\gamma}$-aminobutylic acid (GABA) which was known as a fuctional amino acid was detected in all three kinds of vegetable corns.

Variation of Fractionated Protein Content by Solubility in Korean Local Sorghum Seed (국내 수수 종자의 용해도별 단백질 함량 변이)

  • Sorghum seed is traditionally used as health supplements and the secondary food mixed with rice in Korea. While the research of reserve protein in sorghum seed have been carried out in many countries used as major food, much less is known about reserve proteins of Korean local sorghum seeds. To obtain protein characteristics in 20 Korean local sorghum seed, quantitative content of reserve protein was determined after fractionation by modified 'Osbone' method and ${\alpha}$-kafirin of prolamin was determined by SDS-PAGE. Mean albumin, globulin, prolamin and glutelin contents based on total seed protein content of 20 Korean local sorghum seed were 6.2%, 0.9%, 57.9% and 35.1%, respectively. Sorghum cultivar with high prolamin were 'Whin-susu', 'Whin-Chalsusu', 'Whanggeum-Chalsusu', and 'Daepungshushu'. Sorghum cultivar with high ${\alpha}$-kafirin were 'Whin-susu', 'Geumsan-Chalsusu', 'Whin-Chalsusu', and 'Jangmok-susu'. Among the 20 varieties, 'Whin-susu' and 'Whin-Chalsusu' were selected as high ${\alpha}$-kafirin and prolamin sorghum cultivar, which showed 64.5 and 71.9% of prolamin contents, respectively.

Effects of Cultivated Area on Antioxidant Compounds and Antioxidant Activities of Sorghum (Sorghum bicolor L. Moench) (수수의 항산화성분 및 항산화활성에 미치는 재배지역의 영향)

  • Effects of cultivated area on antioxidant compounds and antioxidant activities of sorghum were determined. The cultivated areas were Miryang (plain area of interior), Wonju (mountainous territory), and Sinan (coastal area), and the cultivated varieties were Hwanggeumchal-susu (HGCS), Daepung-susu (DPS), Whinchal-susu (WCS), Tojong-susu (TJS), and Mae-susu (MS). The highest total polyphenol contents of methanolic extracts were 19.64 and 19.32 mg gallic acid equivalent (GE)/g in un-hulled MS and DPS on the cultivated Wonju. The highest total flavonoid content was 7.54 mg catechin equivalent (CE)/g in un-hulled DPS on cultivated Wonju. Generally, antioxidant compound contents of sorghum on cultivated Wonju were higher than those of Miryang and Sinan. Further, un-hulled HGCS, DPS, and MS were higher than un-hulled WCS and TJS. The DPPH and ABTS radical scavenging activities of the methanolic extracts of sorghum did not significantly change with the cultivated areas, whereas there were significant changes with cultivated varieties. The radical scavenging activities of un-hulled HGCS, DPS, and MS with red or dark brown seed coats were higher than those of un-hulled WCS and TJS with white seed coats.
