Physicochemical Characteristics of Ethanol Extracts from Each Part of the Pleurotus eryngii (새송이버섯(Pleurotus eryngii) 부위별 추출물의 이화학적 특성)

  • This study has examined the physicochemical properties of the Pleurotus eryngii, including their proximate components, amount mineral content, total dietary fiber, total sugar, reducing sugar and free sugar. Additionally, it measured the P. egii ethanol extracts and the total amounts of polyphenol compounds as well as its electron donating ability (EDA) of the substance fraction (SF). The P. eryngii powder's moisture content was 9.0% and each of the other element content such as carbohydrate, crude protein, crude ash and crude fat was found to be 63.06%, 20.70%, 5.20% and 2.0% respectively. Potassium (K) was shown to be the greatest inorganic content and manganese (Mn) was the lowest. Furthermore fructose, galactose, glucose lactose and maltose free sugar content was found in this order. 387 mg% of the total amounts of polyphenol was found in the P. eryngii whole body ethanol extract, 158 mg% in the stipe extract, 593 mg% in the pileus extract and 607 mg% in the substance fraction (SF). Electron donating ability (EDA) was highest at 91.12% in the whole body extract and lowest at 62.90% in the stipe extract. Additionally, the EDA for substance fraction (SF) 0.02%-0.1% was found to be 57.78-77.33%, which was lower than the 0.02%-tocopherol (93.92%) and BHT (96.72%). From these results, it can be assumed that P. eryngii offers superior antioxidative effects with its high content of fiber, inorganic materials and total amounts of polyphenol as well as high electron donating ability (EDA), thereby making it ideal for use in functional foods and industrial materials.

Yield and Physicochemical Characteristics of Spent Mushroom (Pleurotus ryngii, Pleurotus osteratus and Ammulina velutipes) Substrates According to Mushroom Species and Cultivation Types (버섯폐배지의 발생량 조사 및 새송이, 느타리, 팽이 버섯 폐배지의 버섯종류별과 재배방식별의 물리화학적 특성 평가)

  • This study was conducted to determine the minimal yield of spent mushroom substrates (SMS) and physicochemical characteristics of Pleurotus ryngii, Pleurotus osteratus and Ammulina velutipes according to mushroom species and cultivation types. The annual yield of SMS in 2004 was minimally 1,670,182M/T and 10.7-fold of the mushroom yield. The yield of SMS for Pleurotus ryngii, Pleurotus osteratus and Ammulina velutipes was 972,141M/T and was 58.2% of the total yield of SMS. Data from the chemical analysis of totally 109 SMS samples revealed that bed type cultivation showed low NDF (65.2%), high NFC (12.7%) and high ash (11.5%) contents (P<0.05), resulting in better nutritional characteristics compared with bottle or vinyl bag cultivation. In general, it was more desirable to classify SMS by cultivation types rather than by mushroom species for the effective use of SMS as an animal feed. Among cultivation types, SMS from bed type cultivation needed to be preferably used as feed.

Major Components of Mushroom Mycelia Cultivated with Citrus Juice Processing Wastes (감귤 주스 착즙박을 이용하여 재배된 버섯균사체의 성분)

  • This study investigated the major components of citrus juice processing wastes (CJPW) as well as mushroom mycelia that were cultivated with the CJPW, such as Pycnoporus coccineus (PC), Lentinus edodes (LE), Pleurotus eryngii (PE), Hericium coralloides (HC), Panellus serotinus (PS) and Ganoderma lucidum (GL). The organic acid contents of the mushroom mycelia were similar to or less than those of the CJPW, but the free sugar contents of the mycelia were lower than those of the CJPW. The narirutin contents of the mushroom mycelia ranged from 448.67-932.98 mg% and were similar to or less than those of the CJPW. However, the hesperidin contents of the mycelia ranged from 3019.94-4980.94 mg% (except for the PC mycelium) and were 17.81-52.61% greater than the CJPW. The dietary fiber contents of the mycelia were similar to or more than those the CJPW. With the exception of PE, the electron donating abilities (EDA) and nitrite scavenging abilities (NSA) showed a tendency to decrease.

Appropriate temperature of antler-shaped Ganoderma lucidum using King Oyster Mushroom Cultivation System (큰느타리(King Oyster Mushroom) 재배시스템을 활용한 녹각영지버섯(Ganoderma lucidum) 적정 재배온도)

  • High-income mushroom crops require complex farming. Therefore, we conducted a test to identify the optimum temperature for the production of antler-shaped Ganoderma lucidum using the King Oyster mushroom cultivation facility. T-N showed 0.28% of oak sawdust and 2.2% of nutritional source. The pH of oak sawdust was 6.0, indicating weak acidity, and that of rice steel was 6.6, indicating neutrality in nutrition source. Study on the quality characteristics of mushrooms showed that the number of days at 25℃ were 5~6 and those at 30℃ were 3~5; the representative length at 25℃ was 57.5 mm and that at 30℃ was 92.2 mm; the biological weight at 25 ℃ was 43 g, which was greater than that at 30℃.

Characteristics and Biological Properties of Pleurotus eryngii grown on Monosodium Glutamate-enriched Media (글루탐산나트륨 첨가배지에서 재배된 새송이버섯의 특성 및 생리활성 연구)

  • This study was performed to investigate the composition of amino acids and biological properties with the ethanol extract of fruiting bodies of Pleurotus eryngii grown on the sawdust compost mix (400 g sawdust plus 200 g rice bran) supplemented with various dosages of monosodium glutamate (MSG). Amino acid composition analyses showed that arginine, glutamic acid, alanine and glycine increased as the dosage of MSG was increased, whereas histidine, serine, methionine, isoleucine, leucine and phenylalanine did not increase. $\gamma$-Aminobutyric acid (GABA) content increased significantly up to 1.18 mg/g extract when 6 g MSG was supplemented to the sawdust mix. Antioxidant activity of the extract was estimated and compared to the standard antioxidant (ascorbic acid). The antioxidant property such as 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity increased with the extract samples of increasing dosage of MSG. Although the extract showed low levels of nitrite scavenging activity, this activity increased up to 1.5-2.0 fold when MSG was supplemented to the sawdust mix above a dosage of 0.5 g. The results obtained from the present investigation would appear that Pleurotus eryngii grown on the MSG-enriched sawdust mix can be used more effectively as one of potential sources of functional foods.

Quality Characteristics of Pleurotus eryngii Cultivated with Different Wavelength of LED Lights (LED광의 파장을 달리하여 재배한 새송이버섯의 품질특성)

  • The effect of the wavelength of the light emitted by the light-emitting diode (LED) on the growth characteristics and physicochemical and sensory qualities of Pleurotus eryngii were investigated. Pleurotus eryngii were grown under different light sources: blue light (450 nm), red light (650 nm), green light (525 nm), UV-A (365 nm), and mixed light ($B^*R$, $B^*G$, $R^*G$, $B^*R^*G^*UV-A$). The quantity of LED light was set up at 50% (LED: 64.9-108.0 $pmolm-2{\cdot}s-1$;fluorescentlight:11.7lux). Fluorescent light was used as control. There were no significant differences in the flesh firmness. In the case of the Pleurotuseryngii cultivated under red, green, and mixed light ($R^*G$), the color of the pileus and the length of the stipe were similar to those of the control group. The sensory scores were not significantly different between the LED lights (red, green, and $R^*G$) and the control. Among the three LED light conditions, the sample cultivated under red light recorded the highest score. The samples under UV-A, blue, and mixed light ($B^*R$, $B^*G$, $B^*R^*G^*U$) had a dark pileus color and had a short stipe. These results showed that the wavelength of LED light affected the growth and quality characteristics of Pleurotus eryngii, and that using red LED light is preferable for the cultivation of Pleurotus eryngii with better quality.

Physiological Activities of Extract from Edible Mushrooms (주요 식용버섯 추출물의 생리활성 효과)

  • This study was conducted to investigate the physiological activity of extracts of fresh mushrooms. The components were extracted by hot water; subsequently, the hot-water extract was subjected to 60% ethanol precipitation to yield high-molecular-weight (HMW) and low-molecular-weight (LMW) fractions. Total polyphenol contents, $\beta$-glucan contents, electron-donating ability (EDA), superoxide dismutase (SOD)-like activity, nitrite-scavenging activity, fibrinolytic activity, nitric oxide (NO) production, and inhibition of NO production of the mushroom extracts were measured using lipopolysaccharide (LPS)-stimulated murine macrophages, RAW 264.7 cells. The extracts of Lentinus edodes (Berk.) Singer and Pleurotus ostreatus (Fr.) Kummer contained the highest levels of $\beta$-glucan (33.5% and 25.57%, respectively). Further, the LMW fractions of the Phellinus linteus contained the highest levels of polyphenols (233.23 mg/g). The EDA of LMW fractions (10 mg/mL) of the Phellinus linteus and Agaricus bisporus were 80.74% and 51.35%, respectively. Further, SOD-like activities of the LMW fractions were high as compared to those of the HMW fractions. Nitrite-scavenging activities of the LMW fractions (pH 1.2; concentration, 10 mg/mL) of the Phellinus linteus and Pleurotus ostreatus (Fr.) Kummer were 75.95% and 41.05%, respectively. The fibrinolytic activity of the LMW fractions of all mushrooms showed no enzyme activity by fibrin plate assay. The fibrinolytic activity of the extracts of Tricholoma matsutake was the greatest inhibitory activity at 60.4%. Further study revealed that the mushroom extracts exhibited anti-inflammatory effects on RAW 264.7 cells. The LMW fraction ($500\;{\mu}g/mL$) of the Phellinus linteus considerably inhibited NO production (100%).
